The purpose of this study was to investigate the difference of body composition, eating habits and dietary intake in three Sasang constitutions. This survey was carried out using anthropometry, a questionnaire about eating habits, and 24-hour recall of dietary intake on 45 male and 29 female students of the fifth grade at C elementary school. The results are summarized as follows: A total of 44.6% of the subjects were Taeumin, 35.1% were Soyangin, and 20.3% were Soeumin. The average weight, WHR, Triceps, Rhrer index and BMI in the Taeumin group were significantly higher than those of the Soeumin and Soyangin groups. The body fat mass (kg) and abdominal fat (%) in the Taeumin group were significantly higher than those of the Soeumin and Soyangin groups. The soft body mass (%) in the Soeumin group was significantly higher than that of the Soeumi and Soyangin groups. The Taeumin’s energy expenditure in physical activities was little high than that of the Soyangin and Soeumin groups, but the Soyangin’s energy expenditure in physical activities per weight was a little higher than that of the Taeumin and Soeumin groups. The calorie and most of the nutrient intake were lower than those of Korean RDA. In the case of males, most nutrient intake, except for fiber, carotene and vitamin C were high in the Taeumin. For females, most nutrient intake, except for calcium and retinol were significantly higher in the Taeumin group. Conclusively, anthropometry characteristics, body composition, energy expenditure in physical activities, eating habits and dietary intake are different among the three Sasang constitutions. This study suggests the possibility of using Sasang consitutions as a basis for providing nutritional education and health guidelines.
This study was conducted to investigate the dietary intake, anthropometric data, and association between two factors and main food sources contributing macronutrients for overweight and obese females. Subjects were 85 adult females (overweight : 28, obese 57) where mean age was 38.7y. The results are summarized as follows. Mean fat percent, BMI, obesity rate were 29.3, 23.9 and 15.1%, respectively for overweight women and 32.7, 28.3, 36.4%, respectively for obese women. There were significant differences for most of the anthropometric data between groups. Fat percent for all subjects was significantly correlated with weight, waist circumference, hip circumference, mid arm circumference or skinfold thickness for the triceps, subscapular and suprailiac (p < 0.001). The parameter which showed the highest correlation coefficient (r=0.6156) with fat Percentage was the waist to hip ratio. Any significant differences were not found in dietary intake of nutrients or in diet composition between groups. The mean energy intake was 2090.1kcal (104% of RDA) for overweight women and 2113.0kcal (106% of RDA) for obese women. PFC ratio for overweight was 17 : 24 : 59 and 18 : 23 : 58 for obese subjects, which can be regarded as higher fat and lower carbohydrate percentages compared to recommended PFC ratio (15 20 65) .4) Fat intake was positively correlated (r : 0.2301, p < 0.05) with the triceps skinfold thickness, protein intake was also positively correlated with waist circumference (r=0.2668, p < 0.05) or fat weight(r: 0.2406, p < 0.05) .5) The main food items that contributed to energy intake for overweight or obese subjects were similar (rice, pork, bread, grapes, barley) except com oil in overweight or instant noodle for obese group. The subjects in this study were taking less energy from rice and more energy from pork and bread than women from 98 National Health and Nutrition Survey. Because there were no significant differences of dietary data between overweight and obese group, further investigation considering basal metabolic rate or activity would be needed.
This study was conducted to investigate instant coffee-mix intakes and its relations with anthropometric measurements, nutrient intake, and blood lipid in Gangneung and Samcheok residents. Coffee-mix is a mixture of instant coffee, sugar and coffee-creamer. It is a standardized convenience food in Korea. Recently, Koreans appear to consume too much of instant coffee-mix. The respondents of this study were 218 Koreans (Gangneung region 133, Samcheok region 85). The average age was 56.0 years (male), 57.5 years (female). They were divided into 2 groups, the instant coffee-mix drinkers and the non-drinkers. The nutrient intake and anthropometric measurements and their relations with coffee-mix intakes were analyzed (nutrient intakes were calculated by converting per 1,000 kcal and adjusted by age, region). As for male, body fat was significantly higher in coffee-mix drinkers (18.1 kg, 25.0%) than in non-drinkers (17.1 kg, 23.8%). In the case of females, serum triglyceride was significantly higher in coffee-mix drinkers (109.1 mg/dL) than in nondrinkers (102.9 mg/dL). Coffee-mix intakes and coffee-mix's contributions to energy were higher for participants from Samcheok (21.2 g, 4.7%) than those from Gangneung (16.6 g, 3.4%). In addition, for Samcheok, coffee-mix's contribution to energy was significantly higher in male (5.6%) than in female (4.2%). Coffee-mix intakes and energy contribution of coffee-mix were not significantly correlated with anthropometric measurements. Only HDL-cholestrol showed significantly negative correlation with coffee-mix's contributions to energy. Based on the above results, we conclude that usual instant coffee-mix intake may increase intakes of sugar and fat and exert negative effects on serum lipids. Therefore, it is needed to control too much instant coffee-mix intake in the dietary management of rural residents.
The purpose of this study were to analyze the staple food consumption trend of Koreans using KNHANES(Korea National Health and Nutrition Examination Survey) data. Nutrient intake of 38,840 participants of 1998~2008 KNHANES, over 6 year old were analyzed. For the analysis of major staple food intakes, twenty four hour recall data was used. The results were analyzed by SAS Program, as follows. Despite westernized diet, ranking in the primary energy source of food showed similar patterns. But total calory intake was reduced over the past 11 years and percentage of carbohydrate intake was increased. Relative proportions of protein and fat intake was reduced. The major carbohydrate and protein source of Koreans was rice and grains. Pork and ramen were the major fat source food. Although intake levels were different by gender, age and areas, carbohydrate of rice was primary source of energy in Korea.
The purpose of this study was to measure and investigate the acute effects of two fatty meals (high-SFA & high-PUFA) on post-prandial thermic effect, substrate oxidation, and satiety. Eight healthy adults (four males and four females) aged 19-22 years were assigned to consume two isocaloric meals: high in saturated fatty acids from butter and high in polyunsaturated fatty acids from sesame oil. Indirect calorimetry was used to measure resting energy expenditure (REE), post-prandial energy expenditure for five hours, and substrate oxidation. Satiety of the subjects after meals was estimated by using visual analogue scales (VAS). Five hours thermic effect of food (TEF) was not significantly different between butter meal (6.5% of energy intake) and sesame oil meal (7.3% of energy intake), but, the TEF of butter meal reached the peak point at 150 min and decreased more rapidly arriving to REE in 270 min. On the other hand, TEF of sesame oil meal reached the peak at 90 min and decreased slower than butter meal (still higher than REE at 300 min). No significant differences in substrate oxidation rates were found between the two meals. Post-prandial fat oxidation rates increased significantly after the consumption of both butter and sesame oil meal than that of the pre-prandial state. Satiety values (hunger, fullness, and appetite) were similar among the meals, but recovery of hunger and fullness to the pre-prandial state was faster in butter meal than that of the sesame oil meal.
In order to investigate the effects of frequent eating-out and breakfast skipping of working men on body mass index and nutrients intake status, working male adults aged 20 or over were selected (n = 1883) from the data of 2001 Korea national health and nutrition survey. The subjects were divided into 4 groups according to the eating-out frequency(high: once or more daily, low: less than once daily) and breakfast eating or not. Four groups were high eating-out with breakfast eating (n = 609), high eating-out with breakfast skipping (n = 192), low eating-out with breakfast eating (n = 877), and low eating-out with breakfast skipping (n = 205). High eating-out group showed higher body mass index (BMI) than low eating-out group, but the difference of BMI was disappeared when adjusted with age, residence region and family income. However high eating-out group in case of breakfast eating, compared with the low eating-out, showed higher intakes or densities of energy, fat, fat-energy% and higher ratio of energy-fat overintake, and also showed higher mean nutritional adequacy ratio and lower ratio of nutrients intake deficiency. Calcium, iron, vitamin A and C intakes were not affected by eating-out frequency, but were lowered by breakfast skipping. Breakfast skipping also decreased intake frequency of unprocessed cereals and increased those of ramyon and carbonated and alcoholic beverages. From the results frequent eating-out with breakfast eating caused increased intakes of energy and fat, but did not cause BMI increase. Breakfast skipping, but not eating-out, had negative influences on mineral and vitamin intakes. Accordingly good eating-out as well as breakfast eating should be exceedingly emphasized at nutrition education for the working males.
The purpose of this study was to explore dietary patterns and compare dietary patterns using cluster and factor analysis in Korean adults. This study analyzed data of 4,182 adult populations who aged 30 and more and had all of socio-demographic, anthropometric, and dietary data from 2005 Korean Health and Nutrition Examination Survey. Socio-demographic data was assessed by questionnaire and dietary data from 24-hour recall method was used. For cluster analysis, the percent of energy intake from each food group was used and 4 patterns were identified: "traditional", "bread, fruit & vegetable, milk", "noodle & egg", and "meat, fish, alcohol". The "traditional" pattern group was more likely to be old, less educated, living in a rural area and had higher percentage of energy intake from carbohydrates than other pattern groups. "Meat, fish, alcohol" group was more likely to be male and higher percentage of energy intake from fat. For factor analysis, mean amount of each food group was used and also 4 patterns were identified; "traditional", "modified", "bread, fruit, milk", and "noodle, egg, mushroom". People who showed higher factor score of "traditional" pattern were more likely to be elderly, less educated, and living in a rural area and higher proportion of energy intake from carbohydrates. In conclusion, three dietary patterns defined by cluster and factor analysis separately were similar and all dietary patterns were affected by socio-demographic factors and nutrient profile.
This study was conducted to investigate the physical activity pattern, activity coefficient, basal metabolic rate and energy expenditure of female university students. One-day activity diaries were collected from 95 female university students in Seoul. Body composition was measured by Inbody 720. Subjects spent 7 hr 8min on sleeping, 6 hr 31min on studying, 2 hr 50min on physiological activity, 2 hr 3min on leisure, 2 hr 2min on walking and jogging, 1 hr 58 min on commuting and 22min on house chores. The activity coefficient of these subjects was 1.58. The comparison of body composition of subjects according to PAL showed that body weight, body fat mass, arm circumference and arm muscle circumference of physically active group were significantly higher than those of the sedentary group. BMR calculated by Harris-Benedict (H-B) formula and DRI formula and BMR measured by Inbody 720 was 1375 kcal, 1306 kcal and 1209 kcal, respectively. Total energy expenditure (TEE) examined by one-day activity diaries and calculated by H-B formula and estimated energy requirement (EER) formula in DRI was 2102.1 kcal, 2184.4 kcal, and 2164.5 kcal, respectively. The Pearson correlation coefficient between TEE examined by one-day activity diaries and H-B TEE was 0.795 (p < 0.001) while that between TEE examined and DRI EER was 0.604 (p < 0.001). Overall data indicated that female university students seemed to be less active. Therefore it is recommended that universities develop good exercise programs for their students. Further studies are needed to generate more meaningful results with a larger sample size and using machine attached to the body, which are able to detect physical activity more accurately.
Objectives: The associations between the eating behavior and energy and macronutrient intake from meals and snacks consumed during different times of the day across the menstrual cycle were investigated in 74 healthy female college students. Methods: A 9-day food record was collected during the last 3 days before menstrual onset (phase 1) and the first 3 days after menstrual onset (phase 2) and from the 4th to the 6th day after menstrual onset (phase 3), respectively. Anthropometry was assessed and eating behaviors were measured using the Dutch Eating Behavior Questionnaire (DEBQ). Results: External eating was the most prevalent type of eating behavior, followed by restrained eating and emotional eating. Restrained eating was positively associated with energy, carbohydrate and lipid intake at the breakfast and midmorning snack during phase 3. However, emotional eating was also positively related to energy and macronutrient intake at the dinner and after-dinner snack during phase 1 and phase 3, with higher level detected in the phase 1. The association of emotional eating with the snack consumption was highest in phase 1. External eating was positively associated with energy and macronutrient intakes at the dinner and after-dinner snack across the three phases, the highest level being phase 1. In addition, restrained eating was positively associated with the weight, body mass index(BMI), fat mass, waist and hip girth of the subjects. Conclusions: Eating behaviors varied with regard to meals and snacks consumed during different times of the day across the three menstrual phases. Dinner and afterdinner snack consumption in premenstrual phase could be considered as a time when women are more prone to overconsumption and uncontrolled eating.
Purpose of this study was to compare nutrient intakes of disabled children and non-disabled children. Subjects consisted of 86 disabled children from a special education school and 127 non-disabled children from an elementary school in Seoul. Nutrient intakes were assessed by modified 24-hr recall method, with the help of children's parents and teachers. Almost all nutrient intakes (energy, protein, fat, carbohydrates, vitamin B$_1$ and niacin) of children with cerebral palsy were significantly lower than those of other groups. But nutrient intakes per body weight of children with cerebral palsy were not significantly different with those of other groups. There was no significant difference between disabled and non-disabled children in almost % RDA (rate of actual intake to RDA) except of energy %RDA in children with cerebral palsy. NARs (nutrient adequacy ratio) for energy and vitamin B$_1$ of children with cerebral palsy were significantly lower than those of children with autism and mental retardation, and non-disabled children. The proportions of energy, carbohydrate and protein intakes from lunch were significantly higher than those from breakfast and dinner in children with mental retardation and autism. The nutrient intakes of disabled children were different between other groups according to the type of handicap. For example, children with cerebral palsy had the risk of undernutrition. On the other hand, autistic children had the tendency of overnutrition. These results suggest that nutrition educational programs and educational materials for disabled children, their teachers and their parents should be developed considering the type of handicap.
