THE INFLUENCE OF DIETARY PROTEIN AND ENERGY LEVELS ON EGG QUALITY IN STARCROSS LAYERS

  • The interaction of 4 dietary crude protein (13, 16, 19 or 22%) and 4 metabolizable energy (2600, 2800, 3000 or 3100 kcal ME/kg) levels on egg quality performances of Starcross layers were assessed between 245 and 275 days of age. The egg weight increased significantly with the increasing dietary protein and energy levels. But egg shape index, albumen index, yolk index, yolk dry matter, yolk protein, yolk fat, albumen protein and shell tickness were similar at all dietary protein and/or energy levels. The egg specific gravity and albumen weight increased but the yolk, weight, Haugh unit and albumen drymatter decreased with the increase of dietary protein levels and showed irregular trend with energy levels. The albumen dry matter and egg shell weight, however, were not affected by energy and protein levels. Simultaneous increase of protein and energy increased specific gravity, albumen index and shell thickness at a greater rate than that increased by the increase of protein or energy alone.

  • High-quality protein ingredients have been used in nursery diets, in spite of expensive ingredients, to minimize nutritional deficiency and disease problems. Recent dramatic increases in prices of protein products for nursery diets have exacerbated the challenge. Spray-dried egg may be a part of the solutions. Therefore, this review describes the value of spray-dried egg in nursery diets as a high-quality protein source. Spray-dried egg is egg by-product and is produced by only eggs without shell that are below the USDA Grade B standards. Spray-dried egg is an excellent nutrient source: 1) highly digestible, 2) excellent balance of amino acids, 3) rich content of fat, and 4) high metabolizable energy. These can be attributed to growth of nursery pigs. Beyond the provision of bioavailable nutrients, spray-dried egg also may provide specific physiological benefits. Spray-dried egg contains 1) immunoglobulin antibodies (IgY: IgG in egg yolk) that may attach to intestinal pathogens and excrete them and 2) lysozymes antimicrobial protein that can damage bacteria cell wall. Thereby feeding spray-dried egg may reduce concentration of intestinal pathogen and thus improve potential gut health or enteric disease resistance in nursery pigs. This is important for physiologically immature weaned pigs. Based on these benefits, spray-dried egg is believed to have the same benefits as spray-dried plasma protein and milk products in diets for nursery pigs. Therefore, it is suggested that spray-dried egg has a great potential as a valuable protein source in nursery diets.

Studies on the Optimum Dietary Energy and Protein Levels in Laying Hen (산란계사료의 적정에너지 및 단백질수준에 관한 연구)

  • A total of 1,440 White Leghorn pullets hatched in summer and winter, aged 20 to 72 weeks were fed 9 rations differing in dietary protein (13, 15 and 17%) and energy (2,500, 2,700 and 2,900 kcal/kg) levels for a period of 52 weeks in order to evaluate the optimum dietary energy and protein levels for laying hens. As metabolizable energy level increased from 2,500 to 2,900 kcal/kg of feed egg production, daily feed and protein intake and egg shell quality decreased, but reverse was true for the daily energy intake, energy requirement and feed cost per kg egg, body weight gain, nutrients utilizability and abdominal fat accumulation, Egg weight, viability and egg yolk Pigmentation were not affected by the dietary energy level. On the other hand, as dietary protein level increased from 13 to 17%, egg production, egg weight, daily protein intake, protein requirement per kg egg and body weight gain icreased, but daily feed and energy intake, feed and energy requirement per kg egg, egg yolk pigmentation and dry matter utilizability decreased, and no significant difference in the feed cost per kg egg, viability and egg shell quality was observed among dietary protein levels. However: the hens fed 15% and 17% Protein diets did not show significant differences in egg production, egg weight and body weight gain. For the entire laying period of 52 weeks, metabolizable energy level of 2,500 kcal/kg of feed and 15% dietary protein level were considered to be adequate to support the optimum productivity.

Effect of Protein Feeding Systems for Egg-type Growing Pullets on Pullet Growth, Nutrient Consumption and Subsequent Laying Performance (난용계 육성기의 단백질 공급체계가 육성계의 성장 및 영양소 섭취량과 산란능력에 미치는 영향)

  • Three protein feeding systems for egg-type pullets involving conventional step-down protein 18-15-12%), step-up protein(12-15-18%) and single-stage low protein (13-13-13%) with an iso-energy level of 2,900 ME kcal /kg were compared to examine the effect on pullet growth and subsequent laying performance. During the growing period, pullets subjected to the step-up and single-stage low protein feeding systems were lighter in body weight and consumed less feed and netabolizable energy than those on the conventional step-down protein feeding system(P<0.05). 3ut the pullets on the step-up protein diet consumed more protein, and those on the single-stage low protein diet consumed less protein than those on the step-down protein diet(P<0.05). Also, he feed cost was less in pullets on the single-stage low protein diet than in those on the other systems(P<0.05). During the laying period, sexual maturity was later in hens reared on the step-up and single-stage low protein diets than in those on the step-down protein diet(P<0.05), however, average hen-day egg production and egg weight were not significantly affected by the protein feeding systems in the growing period. Daily feed intake and feed required per egg were significantly reduced in hens on the single-stage low protein diet compared to those on conventional protein feeding system(P<0.05). It was concluded that the 13% single-stage low protein feeding system produced smaller pullets with less feed, energy, protein, and feed cost during the growing period, and hens reared on that system consumed less feed during the laying period without any impairment of production compared to the conventional rearing system.

  • The "crescent-egg" a new spontaneous mutant was detected in a white egg strain k37. Studies were carried out the linkage analysis, to investigate phenotypic characteristics and biochemical analysis of haemolymph and ovarian protein. The mutant, ore was independent from 20 linkage groups P(2), Ze(3),L(4), oc(5), sn8), Ia(9), w-1(10), K(11), ch(13), U(14), bl(15), cts(16), bts(17), mln(18), nb(19), oh(20),Lan(21), or(22), tub(23) and Xan(27). The fertilization, hatchability and larval growth were not different from the those of normal eggs. The content and composition of yolk protein were similared to normal eggs. Scanning electron microscopy revealed the areal specific structure in dorsal region of egg-shell of cre mutant. Analysis of chorion protein by isoelectrofocusing(IEF), was resolved no difference in the composite of the chorion protein. We conclude that the egg mutant ere is expressed only in the egg-shape formation and region specific determination.

A Study on the Allergenicity of Egg Protein (달걀 단백질의 Allergenicity에 관한 연구)

  • Egg is an important foods containing many good proteins. But it is well known that egg protein has a lot of allergenicity. The purpose of this study is to develop the methods to reduce the allergenicity of egg. I tried various experimental methods ; For example, heat treatment, irradiation with ultraviolet and microwaves, treatment with polyphosphate, enzyme hydrolysis and PCA inhibition test using guinea pigs and degrees of hydrolysis. The results obtained were as follows ; 1. Heat treatment reduced allergenicity of egg protein. The longer the heat time, the better the effect. 2. Irradiating with ultraviolet and microwave increased both the degree of protein hydrolysis and PCA inhibition reduced the allergenicity. Ultraviolet was more effective than microwaves on egg protein. Fertilized eggs did not reduce allergenicity. 3. Enzyme treatment increased the degree of hydrolysis and PCA inhibition, and reduced allergenicity considerably. Alcalase was more effective than neutrase. 4. Adding polyphosphate did not induced protein hydrolysis, but increased PCA inhibition and reduced allergenicity. 5. The picture of various treatments of egg gel by SEM showed a light surface which indicated that protein was desolved. Neutrase was lighter than alcalase, and the longer the heating time, the lighter the surface became. 6. Measurements of the hardness of egg gel by Instron showed that the longer the reaction time with enzyme, the softer it became.

Effects of Dietary Protein and Energy Levels on Egg Production and Egg Weight of Laying Hens (산란계 사료의 에너지와 단백질 수준이 산란율과 란중에 미치는 영향)

  • Three experiments were conducted to investigate effects of dietary energy and protein levels on performance of laying hens. A total of 360 hens each of 352-day old Manina Brown (Exp.1), 280-day old Brown Warren (Exp.2) or 3174ay old Brown Warren (Exp.3) was divided into 20 pens of 18 birds. Each pen was assigned to one of the four dietary treatments with 5 replications according to a 2${\times}$2 factorial design, consisting of all possible cominations of two levels of metabolizable energy (2,500 and 2,800 kcal/kg of diet) and two levels of crude Protein (13 and 16%). All hens were housed two birds per cage. Exp.1 and 2 were conducted for four weeks and hens were fed experimental diets ad libitum, and Exp.3 lasted two weeks and feed consumption was restricted to 130g/hen/day. In Exp.1 and 2, increasing either energy or protein level in the diet numberically improved egg production. However, in Exp. 3, where feed consumption was restricted, egg Production was affected significantly 〈0.05) by the energy levies and numerically by the protein levels. Neither protein nor energy level influenced egg weight in Exp. 1 and 2, but in Exp. 3 the higher level of energy improved egg weight numerically, In all three experiments increasing either protein or energy level increased egg mass. Higher levels of either protein and energy tended to decrease feed consumption and improve feed conversion rate numerically. It should also be noted that the higher level of energy improved egg mass produced per unit intake of protein and the higher level of Protein improved egg mass produced per unit intake of energy.

Studies on the Nutrient Contents and Optimum Prices of Eggs in Relation to Egg Weight (계란의 란중별영양성분 및 적정가격에 관한 조사연구)

  • These studies were conducted to compare the nutritive values and optimum prices of eggs among 6 groups of different egg Weight. With the total of 100 eggs of each weight group, after the weight percentage of egg yolk, albumen and shell in the whole egg were investigated, protein and fat contents of e99 yolk and albumen were analyzed. and then protein and fat contents in the whole eggs were calculated. Finally, the optimum prices of eggs in relation to the egg weight were studied on the basis of egg weight, protein content and protein plus fat contents of eggs, respectively. The results obtained are summarized as follows; 1. As the egg weight (X, g/10 eggs) increased, egg yolk (Y$_1$, %) and shell(Y$_2$, %) percentages tended to decrease, but egg albumen(Y$_3$, %) percentage increased lineally; Y$_1$=44.34-0.02X, Y$_2$=15.358-0.006 X, and Y$_3$=40.136+0.026 X. 2. There were no significant differences in protein and fat contents of eggs among 6 different groups of egg weight. 3. Protein (Y$_1$, %), fat (Y$_2$, %) and protein plus fat (Y$_3$, %) contents in the whole eggs declined progressively as the egg weight (X, g/10 eggs) increased ; Y$_1$=11.943-0.00032X, Y$_2$=13.996-0.00614X, and Y$_3$=25.939-0.00646X. 4. Similar results were obtained whether the optimum prices of eggs were estimated on the basis of egg weight or protein content of eggs, and they were higher in the large size eggs and lower in the small size eggs than the optimum prices of eggs estimated on the basis of protein plus fat content of eggs.

Effect of Substitution of Groundnut with Soybean Meal at Varying Fish Meal and Protein Levels on Performance and Egg Quality of Layer Chickens

  • Two hundred and sixteen single comb white egg layers of the White Leghorn hens of 24 weeks of age were randomly allocated to 12 groups with three replications of six hens in each. Hens were fed in a factorial arrangement 2${\times}3{\times}$2, on diets containing either 16 or 18% crude protein with 0, 3 or 6% fish meal, replacing groundnut meal with soybean meal. Soybean meal incorporation improved (p<0.05) egg production, feed intake, feed conversion efficiency and egg weights. Egg quality traits of specific gravity, shape index, albumen index, yolk index and shell thickness remained unchanged. Laying performance was significantly (p<0.05) better at 18% than on 16% dietary protein level. Use of fish meal linearly improved egg production and feed conversion efficiency on diets supplemented with groundnut meal and fish meal incorporation showed quadratic improvement on feed conversion efficiency with SBM diets at 16% dietary protein level. Therefore, use of soybean meal as substitute of groundnut meal is recommended in layer diets, at 16% dietary protein level and fish meal incorporation could be beneficial for layers.

Effects of Dietary Chromium Picolinate on Performance, Egg, Quality, Serum Traits and Mortality Rate of Brown Layers

  • This experiment was conducted with total 960 brown layers, consisted of 8 treatment to investigate the effects of dietary chromium as chromium picolinate on egg production, egg quality, nutrient utilizability, serum traits and mortality in brown layers. Layers were fed diets with two levels of dietary protein (14% and 16%) and supplemented with 0, 200, 400, 800 ppb/kg of chromium as chromium picolinate, respectively. The highest egg production, egg weight and egg mass were found in 800 ppb chromium picolinate supplementation group with high protein level (16%) (p < 0.05). Although there was no significant difference, layers receiving 400 ppb of chromium picolinate with high protein (16%) represented the lowest broken eggs. The utilization of energy, dry matter and crude protein of 400 ppb chromium picolinate group with low protein level (14%) were significantly higher than those of control or other chromium picolinate group (p < 0.05). 400 ppb chromium picolinate with low protein level (14%) showed the lowest serum glucose concentration. But serum glucose concentrations in all treatments showed no significant differences. Present date revealed that the lowest serum cholesterol concentration of layers was found at 400 ppb chromium picolinate group with high protein level (16%) (p < 0.05). Crude protein content in yolk was significantly higher in eggs of layers received 800 ppb chromium picolinate and the lowest in eggs from layers received 400 ppb chromium picolinate among chromium picolinate levels (p < 0.05). Mortality was remarkably decreased by chromium picolinate supplementation and the lowest mortality value was found in layres receiving 800 ppb chromium picolinate with high protein level.
