  • This study was carried out to determine the composition of fatty acids from the samples such as Korean and Chinese sesame oils and adulterated sesame oils with commercial edible oils including soybean and corn oils collected in Gyeongnam area. The fatty acid composition of sesame oils extracted from commercial Korean and Chinese sesame showed similar pattern except the result that Korean sesame oils contained lower levels of palmitic acid, stearic acid and higher level of linolenic acid than Chinese sesame oils. In adulterated sesame oils with commercial soybean oil, the composition of linolenic acid was increased 0.73$\pm$0.05%, 1.25$\pm$0.04% by adding of commercial soybean oil, 3%, 9%, respectively. And that of the linoleic acid was 50.22$\pm$0.06%, 51.14$\pm$0.05% by 5%, 9% addition of commercial corn oil, respectively. From these results, sesame oils and adulterated sesame oils with commercial edible oils will be verified by the composition analysis of fatty acids.

  • Flax (Linum usitatissimum L.) has been used for the only edible oil in Korea. We carried out the field experiment in order to investigate the possibly combined effects of mepiquat chloride (MC) and trinexapac-ethyl (TE) on oil composition, lignan content, seed yield and endogenous gibberellins content of flax cultivar. Plant growth retardants mepiquat chloride (300 and 600 ppm) and trinexapac-ethyl (100, 200 and 300 ppm) were foliar-sprayed to flax plant at 50days after seeding. The plant height was decreased in the combination of mepiquat chloride 600 ppm with trinexapac-ethyl 100, 200 and 300 ppm. Mepiquat chloride treatment combined with trinexapac-ethyl observed the highest response on seed yield, followed by mepiquat chloride 300 ppm with trinexapac-ethyl 100 ppm, mepiquat chloride 300 ppm with trinexapac-ethyl 200 ppm and mepiquat chloride 300 ppm with trinexapac-ethyl 300 ppm. Lignan content was increased in all of the combination treatments. It concludes that the combination of mepiquat chloride 300 ppm with trinexapac-ethyl 300 ppm will be useful to increasing oil and lignan content in flax plants.

  • Triglyceride compositions of cottonseed, soybean, sesame, perilla corn and rapeseed oils have been determined by a high performance liquid chromatographic analysis. An optimum condition was obtained by using a ALC/GPC 244 type, from Waters Association, Japan with $\mu$ Bondapak $C_{18}(1/4^{'}\times1^{'})$ column. A similar distribution pattern of triglycerides was found in cottonseed, soybean, sesame, rapeseed and corn oils. It was noted that $C_{40}$, $C_{42}$ and $C_{44}$ were the major components in these seed oils, except perilla oil. The results showed that contents $O_{40}-C_{48}$ triglyceride types in cottonseed, sesame and corn oil were within $2.23{\sim}41.24%$ and $C_{38}-C_{48}$ triglyceride types in soybean oil were within $3.01{\sim}10.02%$ and $C_{34}-C_{46}$ triglyceride types in rapeseed oil were within $2.38{\sim}28.68%$.

  • The antioxidative activities of the water solution of crude extract from edible mushroom enokitake Flammulina velutipes were compared with those of ascorbic acid and ascorbic acid 6-palmitate in oil-in-water (O/W) emulsions of cod liver oil. Oxidation of the emulsions was carried out at 40 and $50^{\circ}C$ in the dark. The antioxidant activities were measured by in vitro assay against oxygen uptake, 2-thiobarbituric acid value, hydroperoxide formation of the oils. Also, residual docosahexaenoic acid content was measured as indices of lipid oxidation. The cod liver oil in O/W emulsions with added enokitake crude extract (ECE) was significantly more stable against lipid oxidation than the control emulsions without the extract in terms of any oxidation indices used. Moreover, ECE provided remarkable antioxidative properties to eicosapentaenoic acid ethyl ester in emulsion system. These observations demonstrate that F. velutipes can be used as a natural antioxidant, which effectively prevents oxidation of polyunsaturated oils in emulsion system.

  • Pongamia (Pongamia pinnata L.) as a source of non-edible oil, is potential tree species for biodiesel production. For several reasons, both technical and economical, the potential of P. pinnata is far from being realized. The exploitation of genetic diversity for crop improvement has been the major driving force for the exploration and ex situ/in situ conservation of plant genetic resources. However, P. pinnata improvement for high oil and seed production is not achieved because of unsystematic way of tree improvement. Performance of P. pinnata planted by Karnataka Forest Department was assessed based on yield potential by collecting 157 clones out of 264 clones established by Karnataka Forest Department research wing under different research circles/ranges. It was evident that the all the seed and pod traits were significantly different. Further, selection of superior germplasm based on oil and pod/seed parameters was achieved by application of Mahalanobis statistics and Tocher's technique. On the basis of D2 values for all possible 253 pairs of populations the 157 genotypes were grouped into 28 clusters. The clustering pattern showed that geographical diversity is not necessarily related to genetic diversity. Cluster means indicated a wide range of variation for all the pod and seed traits. The best cluster having total oil content of more than 34.9% with 100 seed weight of above 125 g viz. Cluster I, II, III, IX, XV, XIX, XXI, XXIII, XXVI and XXVII were selected for clonal propagation.

  • Apart from being used as food, seed oils have also been used traditionally as medicinal products by several communities. However, the full medicinal potential of many seed oil plants is yet to be properly reviewed, particularly for their antimicrobial and antioxidant properties. North-East India has rich resources of seed oil plants. The availability of detailed information on these plants is quite limited. This review aims to explore and evaluate these seed oil plants of the North-East India with particular emphasis on their antimicrobial and antioxidant activities as well as chemical compositions. A comprehensive literature search on seed oil plants of this region has been performed. Seed oil yielding plants of this region can be categorized into two categories: plants that are used traditionally as sources of edible or medicinal oils and plants that are used for purposes other than as sources of oils. Many seed oil plants of this region have been reported to possess antimicrobial and antioxidant properties, and to produce various types of compounds. This review also highlights the importance of these plants in contributing to the local as well as the national economy of India.

  • Solid-liquid phase change (i.e. melting or solidification) occurs in a number of situations of practical interest. Some common examples include the melting of edible oil, metallurgical process such as casting and welding, and materials science applications such as crystal growth. Therefore, due to the practical importance of the subject, there have been a large number of experimental and numerical studies of problems involving phase change during the past few decades. Also, this study presented the effective way to enhance phase change heat transfer.

(Noh et al., 2000). 현재까지 식용유는 생산과정에서는 품질관리가 엄격하게 되어 왔지만 유통과정과 소비과정에서의 품질 관리와 풀질 검사 면에서는 미흡했던 것이 사실이다. (중략)

  • Many monoterpen-erivatives are contained in edible plants. Some monoterpen-derivatives have been assessed as negative factors in the food safety. Among them thuone and 4-caranone are important toxic constituents of many plant essential oils. In this study, convenient detection methods of thujone and 4-caranone in oil were developed. The colour reactions of toxic thujone and 4-caranone were performed in oder to detect those in foods and oils. Sodium pentacyanonitrosylferrate (II) react with thujone to produce thujzoximinocarboxylic acid which becomes the six ligand in the ferrate complex (red colour reaction for thujone). Sodium pentacyanonitrosylferrate (II) cleaves 4-caranone to the red ferrate complex of caranketonic acid.
