초석잠 부위별 영양성분 및 항산화효과 (Nutritional Components and Antioxidant Activities of Various Stachys Sieboldii Miq Parts)

  • This study was carried out to compare the major nutrient components and antioxidant activities of Stachys sieboldii Miq leaf and root powders. For proximate compositions, crude protein and crude fat contents of leaf powder were higher than those of root powder, whereas contents of crude ash and carbohydrates were lower in leaf powder. The content of glutamic acid was greater in amino acids of leaf and root powders, and contents of total amino acids and essential amino acids were higher in leaf powder compared with root powder. Root powder contained a higher level of total unsaturated fatty acids than leaf powder. Total contents of organic acids were higher in leaf powder; tartaric acid was the major organic acid in leaf powder, and malic acid was the major organic acid in root powder. The content of vitamin A was higher in leaf powder than in root powder. However, vitamin E content was higher in root powder than in leaf powder. Total mineral contents of leaf powder were higher than those of root powder, and mineral contents of leaf and root powders were in the order of K>Ca>Mg. Extract yields of leaf and root powders were 27.21% and 58.51%, respectively. Total polyphenols and total flavonoids of leaf extract were 236.35 mg/g and 1.90 mg/g, respectively, which were higher than those of root extract. The $IC_{50}$ values of leaf and root ethanol extracts based on DPPH hydroxyl scavenging were 0.69 mg/mL and 5934.31 mg/mL, respectively, and antioxidative activities of ethanol extracts from all Stachys sieboldii Miq parts dose-dependently increased. These results suggest that Stachys sieboldii Miq can be recommended as an edible functional food material.

참외 비식용부위(꼭지, 줄기.잎, 씨) 에탄올추출물의 항산화 활성 (Antioxidant Activity of Ethanol Extracts of Non-Edible Parts (stalk, stem.leaf, seed) from Oriental Melon)

  • 참외의 비식용부위인 씨, 꼭지, 줄기 잎 부위의 항산화 기능성을 구명하기 위하여 DPPH, ABTS, FRAP, SOD 등 다양한 항산화 실험법을 이용하여 항산화 활성을 평가하였다. 그 결과 참외 비식용부위의 항산화 활성은 참외 꼭지부위에서 가장 높은 항산화 활성을 보여주었으며, 농도 의존적으로 활성이 증가하였다. 총 페놀 성분 또한 꼭지 생체 100 g당 143.4 mg으로 가장 높게 나타났다. 항산화 활성과 총 페놀간의 상관관계를 조사한 결과 높은 상관관계가 있음을 확인할 수 있었다. 위의 결과를 종합하면 참외의 비식용부위 중 꼭지에서 항산화 활성과 총 페놀 함량이 가장 높게 나타났다. 따라서 예로부터 약용으로 사용되고 있는 참외 꼭지에서 항산화 활성 및 기능성분 함량이 높게 나타남으로써 향후 다양한 생리활성 및 활성성분 규명 등에 대한 지속적인 연구가 필요할 것으로 사료된다.

국내 야생식용식물 7종 에탄올 추출물의 항산화 활성 비교 (Comparison of antioxidant activities of ethanol extracts from seven species of wild edible plants in Korea)

  • 본 연구는 야생에서 자란 식용식물 7종을 선정하여 항산화 물질과 활성을 측정하였다. 야생식용식물 7종 에탄올 추출물의 총 페놀 함량은 찔레나무 순(57.76 mg GAE/g), 감나무 잎(46.55 mg GAE/g), 쑥 잎(41.35 mg GAE/g)순으로 높은 함량을 보였고, 총 플라보노이드 함량은 감나무 잎(46.50 mg NE/g), 쑥 잎(38.13 mg NE/g), 찔레나무 순(35.21 mg NE/g) 순으로 높은 함량을 보였다. DPPH 라디칼 소거능은 찔레나무 순(IC50 232.52 ㎍/mL), 쑥 잎(IC50 504.77 ㎍/mL), 감나무 잎(IC50 553.42 ㎍/mL)이 높았으며, ABTS+ 라디칼 소거능은 찔레나무 순(IC50 470.10 ㎍/mL)과 감나무 잎(IC50 854.60 ㎍/mL)이 높은 활성을 보였다. superoxide- 라디칼 소거능은 찔레나무 순(IC50 431.88 ㎍/mL)이 다른 추출물들에 비해 현저히 높은 활성을 나타냈고, 아질산염 소거능은 찔레나무순(IC50 363.38 ㎍/mL)이 가장 높았고 그 다음으로 감나무 잎(IC50 598.97 ㎍/mL)이 높은 소거능을 보였다. 환원력은 각 시료별 추출액의 농도가 증가할수록 환원력도 증가하였으며, 모든 농도에서 찔레나무 순(0.39-2.47 O.D.)의 환원력이 높게 나타났다. 따라서 본 연구의 결과 찔레나무 순이 총 페놀 함량과 항산화 활성이 가장 높게 나타나 천연 항산화제로서의 활용성이 가장 높을 것으로 기대된다.

First Report of Leaf Rust Caused by Puccinia caricis in Farfugium japonicum in Korea

  • Farfugium japonicum is used in traditional medicine and as an edible herb in China and Korea. In July 2013, leaf spots were observed in F. japonicum seedlings at Ulleung Island, Gyeongsangbuk Province, Korea. Early symptoms on the leaf adaxial surface included roughly circular yellow spots that later developed brown, necrotic centers. The aecia were hypophyllous, cupulate, yellowish, $180{\sim}430{\mu}m$ in diameter, clustered, and erumpent with a peridium with a recurved margin. The aeciospores were globoid, $14{\sim}17{\times}13{\sim}16{\mu}m$, light yellow or colorless, and densely verrucose. The 28S rDNA sequence of the isolate was identical to each other and shared 99% identity with Puccinia caricis. This is the first report of rust caused by P. caricis in F. japonicum in Korea or elsewhere in the world.

HPLC 분석에 의한 해동피와 개두릅의 성분함량 비교 (Quantitative Determination on the Constituents of the Stem Bark and the Leaf Shoot of Kalopanax pictus by HPLC Analysis)

  • To evaluate the leaf shoots and stem barks of Kalopanax pictus (Araliaceae) as an edible vegetable and a traditional medicinal drug, respectively, the compounds of syringin, liriodendrin, astragalin, quercetin, and kalopanaxsaponins were quantitatively measured by HPLC analysis. The leaf shoot exhibited low contents of syringin, liriodendrin and kalopanaxsaponins but a high chlorogenic acid content, whereas the grown leaves contained very high amounts of kalopananxsaponins. In contrast, the stem bark had very high amounts of syringin and liriodendrin and relatively low kalopanaxsaponins. In particular, the kalopanaxsaponin contents were rapidly increased with monthly variation until October but decreased from September. It was also observed that the leaf shoot contained chlorogenic acid by 30.73 mg/g and the barks showed the concentration of liriodendrin by 20.75 mg/g. These results indicate that high contents of syringin and liriodendrin in the stem bark and high contents of chlorogenic acid in the leaf shoot support scientific bases on the traditional uses of K. pictus as a medicinal drug and a functional food, respectively.

차광정도(遮光程度) 및 질소시비량(窒素施肥量)이 배추 수량(收量)과 가식부위(可食部位)의 NO3- 집적량(集積量)에 미치는 영향(影響) (Effects of Shading and Nitrogen Fertilization on Yield and Accumulation of NO3- in Edible Parts of Chinese Cabbage)

  • 차광의 효과가 있다고 알려져 있는 비닐 하우스내에서의 질소다비재배시 일조부속으로 인한 배추의 가식부위내 $NO_3^-$ 집적량의 변화를 밝히고자 차광정도를 달리한 하우스내에서의 질소수순별 처리를 두어 배추 수량과 가식부위내의 $NO_3^-$ 함량을 분석한 결과, 보비구, 배비구 모두 전일광 조건에 비해 15% 차광조건에서 엽장 엽폭, 엽수, 근장, 근폭 근중 및 수량이 최고에 달했으나 30% 이상의 차광조건에서는 오히려 감소하였다. 배추의 최고 수량은 452g으로서 배비구+차광 15% 처리구에서 나타났다. 전일광조건에서 $NO_3^-$ 집적량이 $4,373mg\;kg^{-1}$으로 높았던 외부중록은 차광처리에 따른 $NO_3^-$ 집적량의 증가폭이 적었으나, $NO_3^-$ 집적량이 $1,159mg\;kg^{-1}$, $212mg\;kg^{-1}$으로 낮았던 내부엽중륵 및 내부엽신은 $3,492mg\;kg^{-1}$, $2,435mg\;kg^{-1}$으로 3배, 11.5배로 상승하였다. 차광조건의 경우 엽신보다는 중륵이 내부보다는 외부 가식부위의 $NO_3^-$ 집적량이 많았으며 외부중륵($4,872mg\;kg^{-1}$) >내부중륵($2363mg\;kg^{-1}$) >외부엽신($1.405mg\;kg^{-1}$) >내부엽신($727mg\;kg^{-1}$)의 순으로 낮았다. 15% 까지의 차광에서 보비구의 가식부위별 $NO_3^-$ 집적량은 지상부 지하부 생육 및 수량과 비례적인 증가를 나타냈으나. 배비구의 경우 가식부위인 지상부, 지하부 및 수량의 증가폭 보다 $NO_3^-$ 집적량 증가가 더 컸고, 30%이상의 차광조건에서는 지상부, 지하부 생육 및 수량은 감소하나 오히려 $NO_3^-$ 집적량은 더욱 급격히 증가하였다. 외부엽 중륵의 경우 배비구는 차광정도에 관계없이 $5,000-6,000mg\;kg^{-1}$ 내외에서 일정한 수준을 유지하였으나 보비구는 차광정도가 증가할수록 $NO_3^-$ 집적량도 증가하였다. 결론적으로 비닐하우스내에서의 과다한 질소시비는 바람직 하지 않으며 중륵이 얇은 신품종 배추의 개발보급과 배추이용시 가식부위중 $NO_3^-$ 집적량이 가장 높은 외부엽 엽신과 중륵 부위의 제거가 바람직하다고 판단되었다.

유해미생물에 대한 참나무과 식물 잎 추출물의 항균효과 (Antimicrobial Activities of Quercus spp. Leaf Ethanol Extract Against Foodborne Disease Microorganism)

  • Eighteen kinds of medicinal edible herbs, which are nontoxic and has been widely used in traditional folk medicine, were extracted and antimicrobial activity of the extracts was investigated against various foodborne pathogens or food poisoning microorganisms. Among them, the ethanol extract of Quercus mongolica showed the strongest antimicrobial activities against Gram positive and Gram negative bacteria and followed by Quercus aliena and Quercus dentata, respectively. Thus, further study was conducted to determine the antimicrobial activity of Quercus species extracts. The plants were extracted with ethanol, methanol and water, respectively. The ethanol, methanol, and water extracts of Quercus mongolica leaf showed 10~21 mm inhibition zone against Gram positive and Gram negative bacteria at two thousand $\mu\textrm{g}$ per disc, but little antimicrobial activity was observed against fungi and yeast. The minimal inhibitory concentrations (MIC) of the ethanol extract of Quercus mongolica leaf was 250$\mu\textrm{g}$/mL against Bacillus cereus. Salmonella typhimurium, and Pseudomonas aeruginosa and 62.5~125 $\mu\textrm{g}$/mL against Staphylococcus aureus and Listeria monocytogenes, respectively.

전남 무안 회산지 자생 백련의 잎과 연근의 생산력 (Productivity of Native White Lotus Leaves and Root Grown in Hoesan, Muan of Jeonnam Districts)

  • This study was conducted to examine the yield of lotus leaves and roots per one native white lotus grown in Hoesan, Muan of Jeonnam districts, which were promoted by Muan-Gun, Jeonnam as a local speciality. We planted the rhizomes with 2 internodes in a rubber pot in the middle of April. Then on September, 24, 2008, we dug out the main rhizomes and it had grown by 810cm. From the data, the leaf area was $34,442\;cm^2$, the fresh leaf weight was 1,230g, and the dry leaf weight was 235.4g. The weight of the edible fresh stalk and dry weight leaf were 1,325g and 164.3g. Yield of the white lotus root were 1,480g on Sept. 4, 3,880g on Sept. 20 and 4,172g on Oct. 18. Native white lotus are able to be harvested early as September, however, it is be better that it is harvested in the middle of October based on the yield.

Anti-melanogenesis Effects of Schizophragma hydrangeoides Leaf Ethanol Extracts via Downregulation of Tyrosinase Activity

  • Whitening agents derived from natural sources which do not have side effects are sought after. Schizophragma hydrangeoides is an edible plant that grows wild on Jeju Island. We aimed to determine whether S. hydrangeoides extracts show anti-melanogenic activity. Here, we found that 70% ethanol extracts of S. hydrangeoides leaf suppressed α-melanocyte-stimulating hormone-induced melanogenesis in B16F10 mouse melanoma cells. This activity of anti-melanogenesis in B16F10 cells were investigated by determining melanin content and tyrosinase activity, and by performing western blotting. The 70% ethanol extract downregulated tyrosinase and tyrosinase-related protein 1. In addition, the n-hexane fraction of S. hydrangeoides leaf (HFSH) exhibited significant anti-melanogenic activity among the various solvent fractions tested without reducing the viability of B16F10 cells. Taken together, these results indicate that extracts from S. hydrangeoides leaf can influence cellular processes via modulation of tyrosinase activity. Hence, S. hydrangeoides can be used as a whitening agent in the cosmetic industry and as a therapeutic agent for treating hyperpigmentation disorders in the clinic.

시금치의 유통중 조위(凋萎)현상과 Vitamin C의 함량 (Wilting Phenomena and Vitamin C Content of Spinach during Consignment)

  • This experiment was investigated on weight loss, vitamin C content, and its relationship to evaluate visual quality during spinach consignment from a viewpoint of consumer. Vitamin C content of spinach leaf, 35.38mg% fresh weight, was 3 times higher than those of stem. Under $20^{\circ}C$ of spinach consignment, the spinach was edible in a half day of unpackage and 3 days with package. However, under $10^{\circ}C$ of spinach consignment, it was good through 6-7 days with unpackged and 10 days with package. Weight and vitamin C content of stem and leaf in spinach during consignment were closely related to the temperature condition at $20^{\circ}C$ than at $10^{\circ}C$ in both of package and unpackage. The regression equation of relationship between loss(X) and vitamin C loss(Y) of spinach, during consignment with Package and unpackage at $20^{\circ}C$ and $10^{\circ}C$ was Y=21.30X+40.32(r=0.69.)
