흰점박이꽃무지와 장수풍뎅이 유충에 대한 사료 첨가제로서 클로렐라의 효과 (Effect of Chlorella Supplementation on Survival and Larval Growth of the Edible Beetles, Protaetia brevitarsis and Allomyrina dichotoma)

  • 국제연합식량농업기구(FAO)의 보고에 따르면, 미래의 식량문제 해결 방안으로 식용곤충을 지목하였다. 식용곤충은 단백질을 비롯한 무기질과 비타민 등의 함량이 풍부하여 영양학적 가치가 높은 것으로 평가된다. 따라서 국내 곤충산업의 확대를 위해서는 안정적인 대량사육 시스템의 개발과 안전한 식용곤충 전용 사료의 개발 등에 대한 연구가 요구된다. 본 연구에서는 액상과 분말 클로렐라를 식용곤충종인 흰점박이꽃무지와 장수풍뎅이의 사료 첨가제로 이용하여 각 유충의 생육에 미치는 효과를 분석하였다. 두 곤충 모두에서 클로렐라 액상과 분말을 첨가했을 때 유충의 생존율이 대조구보다 높았다(흰점박이꽃무지; p>0.05, 장수풍뎅이; p<0.05). 클로렐라 분말을 첨가한 사료를 급여했을 때 흰점박이꽃무지와 장수풍뎅이 유충의 3령 기간이 각각 최대 24일(p<0.05)과 19일(p<0.05) 단축되어 곤충 사육농가의 노동력 절감 효과를 기대할 수 있을 것으로 생각된다. 또한, 장수풍뎅이는 주로 학습애완용으로 판매되는 것에 비해 식용 소재로 활발히 활용되고 있는 흰점박이꽃무지 실험구에 대하여 영양 성분 분석을 실시하였다. 그 결과, 클로렐라 액상 및 분말 첨가 처리구에서 수분, 조단백질, 조섬유 및 구리, 아연, 마그네슘과 같은 무기질의 함량이 높았고, 납과 카드뮴, 수은 및 비소 등 중금속은 모든 실험구에서 검출되지 않았다. 이러한 연구결과를 바탕으로 흰점박이꽃무지와 장수풍뎅이 사육 시 사료 첨가제로서 클로렐라가 활용될 수 있을 것으로 기대된다.

Infrared Assisted Freeze-Drying (IRAFD) to Produce Shelf-Stable Insect Food from Protaetia brevitarsis (White-Spotted Flower Chafer) Larva

  • In this study, the potential of infrared assisted freeze-drying (IRAFD) was tested for the production of shelf-stable edible insects: Protaetia brevitarsis larva (larva of white-spotted flower chafer). The IRAFD system was customized using an infrared lamp, K-type thermocouple, controller, and data acquisition system. The infrared lamp provided the sublimation energy for rapid freeze-drying (FD). The IRAFD conditions were continuous IRAFD-5.0 kW/㎡ and IRAFD-5.0 kW/㎡ at different weight reduction (WR) (10%, 20%, and 30%). The continuous IRAFD reduced the drying time to 247 min compared to the 2,833 min duration of FD (p<0.05). The electrical energy could be reduced by more than 90% through infrared radiation during FD (p<0.05). The Page model resulted in the best prediction among the tested drying kinetic models. In terms of quality, IRAFD showed significantly lower hardness, chewiness, and higher protein levels than hot air drying and FD (p<0.05). IRAFD better preserved the glutamic acid (6.30-7.29 g/100 g) and proline (3.84-5.54 g/100 g). The external product appearance after IRAFD exhibited more air pockets and volume expansion, which might result in a good consumer appeal. In conclusion, this study reports the potential of IRAFD in producing shelf-stable and value-added edible insects.

Quality characteristics of muffins added with fresh ginseng and different amounts of Gryllus bimaculatus powder

  • Edible insects, such as the two-spotted cricket (Gryllus bimaculatus, GB), have high nutritional value but are not widely consumed because of their appearance and smell. Consequently, the development of foods containing these insects in less recognizable forms, e.g., flour-like powders, has drawn considerable attention. Herein, we investigated the quality characteristics of muffins prepared from wheat flower supplemented with fresh ginseng (5%) and GB (0, 10, 20, and 40%) powders. GB loading was negatively correlated with muffin volume, height, moisture content, and textural properties (hardness, springiness, cohesiveness, and chewiness) and positively correlated with crude protein content and antioxidant properties. Significant (p<0.05) color differences were observed between samples with different GB loadings. The contents of hexanal and nonanal, which are the major volatiles responsible for off-flavor, increased with increasing GB loading, and the number of volatiles maximized at 40% GB. Sensory preference decreased in the order of 0% GB>10% GB≈ 20% GB>40% GB. Based on these results, a GB loading of 20% offered the best trade-off between attractiveness and nutritional value. Thus, this study promotes the widespread use of GB in the food industry and the development of various edible-insect-based food products.

식용곤충별 단백가수분해물의 항산화 활성 비교 (Comparison of antioxidant capacity of protein hydrolysates from 4 different edible insects)

  • 열풍 건조된 흰점박이꽃무지 유충, 장수풍뎅이 유충, 쌍별귀뚜라미 성충 및 갈색거저리 유충의 분말을 4% (w/v)의 기질용액으로 제조한 후, 단백질 분해효소인 alcalase를 기질 대비 1% (v/w) 첨가하여 8시간 가수분해 시킨 단백가수분해물을 제조하였다. 각 식용곤충별 단백가수분해물의 특성과 실제 생산된 펩타이드의 양을 알아보기 위해 SDS-PAGE와 TNBS법을 실시하였다. 그 결과, 모든 식용곤충 가수분해물의 가수분해가 우수하게 진행되었음을 확인하였으며, 8시간 가수분해 시 펩타이드 생산량은 갈색거저리유충이 2.45 mg/mL로 가장 높았고, 쌍별귀뚜라미 성충 1.48 mg/mL, 흰점박이꽃무지 유충 1.20 mg/mL, 장수풍뎅이 유충 0.74 mg/mL 순으로 나타났다. 각 식용곤충별 단백가수분해물(${\leq}3kDa$)의 DPPH 라디칼 소거 활성은 쌍별귀뚜라미 성충, 흰점박이꽃무지유충, 갈색거저리 유충, 장수풍뎅이 유충 순으로 나타나 쌍별귀뚜라미 성충 단백가수분해물의 항산화 활성이 가장 우수하였다(p<0.05). ABTS 라디칼 소거 활성은 갈색거저리 유충, 쌍별귀뚜라미 성충, 장수풍뎅이 유충, 흰점박이꽃무지 유충 순으로 나타났으며(p<0.05), $H_2O_2$ 소거 활성은 네 가지 식용곤충 모두 유사한 활성을 보였다. FRAP법에 의한 환원력을 TEAC값으로 나타낸 결과, 쌍별귀뚜라미 성충이 다른 식용곤충들에 비해 월등히 우수한 환원력을 보였다(p<0.05). Linoleic acid에 대한 산화 억제활성 $100{\mu}g/mL$의 농도에서 비교 측정한 결과, 3일 째 음성대조군 대비 쌍별귀뚜라미 성충이 60.26%의 저해율을 보여 가장 우수한 항산화력을 보였다(p<0.05). 최종적으로 본 연구에서는 식용곤충 간의 항산화 활성을 비교하기 위해 다양한 활성산소종을 대상으로 한 항산화 활성 측정 및 지질 산화 억제 활성 측정을 통해 종합적인 항산화 활성을 비교하였다. 그 결과, 쌍별귀뚜라미 성충 단백가수분해물의 DPPH 라디칼 소거 활성, FRAP법에 의한 환원력 및 linoleic acid에 대한 산화 억제 활성 실험에서 항산화 활성이 월등히 우수함을 확인하였으며, 추후 쌍별귀뚜라미 성충 유래 항산화 펩타이드 분리 및 분석에 대한 연구를 통해 새로운 기능성 식품 및 소재 개발에 기여할 수 있을 것이라 예상된다.

고압가열방식을 이용한 쌍별귀뚜라미 갈색 육수의 품질특성 (Quality Characteristics of Two-spotted Cricket (Gryllus bimaculatus) Brown Stock by High Pressure Cooking)

  • This study aimed to make stock for purpose of reducing visual image, and the stock was used with two-spotted cricket as general food material of edible insects. According to the results, color value was darkest and brownest with increased boiling time, salinity and $^{\circ}Brix$ increased significantly (p<0.001). With increased boiling time, pH and moisture content was the lowest. In the total content of free amino acids was highest in 45 min with boiling time. The quantitative descriptive analysis of two-spotted cricket stock was evaluated, which was the strongest with increased boiling time, and acceptance test was best results in TCS45. Therefore, it was possible to produce stock with excellent sensuality which was used by high-pressure method for 45 in making a two-spotted cricket stock. It was judged that making insects food can reduce visual aversion as stock. So, the possibility of food ingredient was identified so that two-spotted cricket led to the increase of domestic interests.

  • Among edible insects, black soldier fly (Hermetia illucens), yellow mealworm (Tenebrio molitor), and common housefly (Musca domestica) have been considered as an alternative protein source for pigs. Because they are easy to breed and grow in the organic wastes, and they have well-balanced nutritional value as a protein source for pigs. The black soldier fly larvae and mealworm could replace the fish meal in the diets for weaned pigs without adverse effects on growth performance and nutrient digestibility. Black soldier fly could also be included in the finishing pig's diet without any negative effects on the growth performance and pork quality of the market pigs. Insect products showed a greater standardized ileal digestibility value of amino acids than conventional animal proteins in growing pigs. Due to the limited amount of insect products used for pig feeding study, most previous pig studies have been conducted in weaned pigs. Thus, further study is needed about the optimal inclusion level of insect products in every phase diet from weaned pigs to sows. The use of insect products in swine diets has some challenges in terms of cost, supply, and safety. Lastly, intrinsic differences among insect species, processing method, and feeding phase should be taken into consideration for the use of insect products in the swine diets.

Consumer acceptance of edible insect foods: an application of the extended theory of planned behavior

  • BACKGROUND/OBJECTIVES: The purpose of this study was to measure consumer acceptance of edible insect foods (EIFs) while applying the extended theory of planned behavior (ETPB). Insects as food have attracted interest as potential possible sources of nutrition for the future. This study investigated consumers' perception toward insect food and future purchase behaviors. SUBJECTS/METHODS: A survey was conducted among citizens of Korea. About two thirds of respondents had tried an EIF previously, and the mean value for food neophobia was 3.1 on a 5-point Likert scale. Respondents were divided into 2 groups of those experienced with EIFs and those not and by level of food neophobia. An independent t-test, multiple regression and descriptive analyses were conducted on the data. RESULTS: The primary reason for not eating EIFs was that their insect form induced disgust. Comparisons of ETPB attributes by experience with EIFs showed significant differences between groups for food neophobia, subjective norm, attitude, and behavioral intention. In addition, significant differences were found for subjective norm, perceived behavioral control, attitude, and behavioral intention between 2 neophobia groups. Finally, the results of measuring the relationships between ETPB attributes and behavioral intention showed only subjective norm and attitude affected behavioral intention. CONCLUSIONS: These results suggest that enhanced subjective norms producing a publicly accepted EIFs environment would help encourage the purchase of EIFs. The results of this study can help the development of EIF products for future food markets.

Subacute Oral Toxicity Evaluation of Freeze-Dried Powder of Locusta migratoria

  • Novel food sources have enormous potential as nutritional supplements. For instance, edible insects are considered as an alternative food source due to their higher protein content; moreover, they are economically efficient reproducers and have high in nutritional value. In this study, we investigated the toxicity of the freeze-dried powder of Locusta migratoria (fdLM), known to contain rich proteins as well as fatty acids. The objective of the present study was to evaluate the subacute toxicity of fdLM in male and female Sprague-Dawley (SD) rats. The SD rats were divided into four groups based on the dosage of fdLM administered: dosage of 0 (vehicle control), 750, 1,500, and 3,000 mg/kg/day were administered for 28 days. Toxicological assessments including observations on food consumption, body and organ weights, clinical signs, mortality, ophthalmologic tests, urinalyses, hematologic tests, clinical chemistry tests, gross findings, and histopathology tests were performed. Clinical signs, urinalyses, hematology, serum biochemistry tests, and organ weight examinations revealed no fdLM-related toxicity. The no-observed-adverse-effect level for fdLM was higher than 3,000 mg/kg/day in rats of both sexes; therefore, fdLM, in conclusion, can be considered safe as an edible alternative human and animal food source material.

Functional analysis of the antioxidant activity of immune-challenged Bombyx mori hemolymph extracts in the human epithelial Caco-2 cell line

  • Humans use insects as food and traditional medicine for many years. Hemolymph is the circulating fluid of insects and is a key component of their immune system. However, limited information is available regarding hemolymph identification, development, and differentiation, as well as the related cellular immune responses. In a previous study, hemolymph extracts prepared from Bombyx mori larvae were found to exert anti-inflammatory effects. In this study, we aimed to identify and compare the antioxidant activity of immune-challenged and unchallenged B. mori hemolymph extracts in vitro. For this purpose, human epithelial Caco-2 cells were first exposed to oxidative stress and then treated with various concentrations and incubation times of either immune-challenged or unchallenged B. mori hemolymph extracts. Next, we determined the effect of treatment on the relative expression of GPX-1, SOD-1, and SOD-2 antioxidant marker genes. We found that the expression rates of the three marker genes were markedly higher at a immune-challenged hemolymph extract concentration of 80 ppm compared to those at other concentrations, and the antioxidant effects were enhanced after treatment for 48 hr. Thus, B. mori hemolymph extracts showed antioxidant activity within the limited time and dose. Especially, the immune-challenged B. mori hemolymph extracts showed higher the antioxidant activities than unchallenged one. The activity of silkworm hemolymph extracts could facilitate the development of new types of functional foods, feed additives, and biomaterials with antioxidant properties.

토양센서를 이용한 흰점박이꽃무지 사육 환경 개선에 대한 연구 (A Study on Improvement of Protaetia brevitarsis Breeding Environment using Soil Sensor)

  • 최근 곤충산업에 대한 관심도와 필요성이 증대되고 있다. 제2의 식량으로까지 일컬어지고 있는 곤충은 다양한 분야에 그 쓰임새가 활용되어지고 있다. 이렇게 다양한 분야에서 활용되어지고 있는 곤충의 대량생산에 대한 관심도가 증가되고 있으며, 그를 위한 환경분석에 대한 연구의 필요성도 증대되고 있다. 다른 선진국의 몇몇 나라에서는 IoT를 접목시킨 자동화 사육시스템이 개발되고 있다. 하지만 수많은 종류의 곤충에 적용시키기에는 한정되어 있고, 가격이 너무 비싸 농가에 보급되어 활용되지 못하고 있다. 따라서 본 논문에서는 농가에서 실직적으로 사용될 수 있는 최적의 시스템을 만들어 보급하기 위한 연구를 진행하였다. 약용과 식용으로 많이 사용되는 흰점박이꽃무지의 유충3기인 굼벵이의 사육환경에 가장 큰 영향을 미치는 톱밥배지의 수분를 토양센서를 이용하여 자동으로 체크하고 그 결과를 LED를 통해 알려주는 알림서비스를 사육환경에 적용하여 최적의 사육환경을 만들고자 한다.
