Development of a Cognitive Behavioral Therapy Program for Adolescents with Eating Disorders (섭식장애 청소년을 위한 인지행동치료 프로그램 개발)

  • Purpose: This study was undertaken for developing a cognitive behavioral therapy (CBT) program for adolescents with eating disorders. Methods: The specific process for the development of this program involved establishing a program goal, analyzing existing CBT programs, and constructing a CBT program. Results: The program consisted of 12 sessions, which is shorter than typical programs conducted for people with eating disorders, in order to reduce the dropout rate. Each session was 40~60 minutes long, and included the use of the psychoeducation, Dysfunctional Thought Record, and activity planning. The participants attended 5 sessions individually and 7 with their family members. Conclusion: This study presented a 12-session CBT program for adolescents with eating disorders. These results will provide valuable data for developing effective programs to improve the quality of life of these adolescents.

EATING AND RUMINATION BEHAVIOUR IN SHEEP FED A HAY DIET WITH AN ORAL SUPPLEMENT OF UREA

  • The effect of orally supplemented urea on eating and rumination behaviour of sheep fed a low-quality hay was investigated in this study. Daily time spent eating was not influenced by ruminal addition of urea, thus the eating rate (g DM/min) also did not change with urea supplementation. The rumination appearance (the lag time after eating) tended to be shorted with urea supplement than without supplement, but not significantly (p>0.05). Daily time spent ruminating was in the range of 600-630 min/d, and rumination index (ruminating time/100 g DM ingested) was 85 min. on the average for all the treatments, but there were no significant differences among the values in each treatment. Daily number of rumination periods tended to be smaller with urea supplement than with no urea, but not significantly (p>0.05), and cyclic rate was almost constant in all the treatments. From these results, it may be concluded that an administration of urea in sheep receiving hay diet could have little effect on eating and rumination behaviour, when it was given at two times a day.

A Cross-Sectional Survey for the Improvement of Self-Feeding: Focusing on Assistive Eating Devices (자립적 식사 향상을 위한 조사연구: 식사보조도구를 중심으로)

  • Purpose: This study aims to understand the current use of and demand for assistive eating devices. These device improve the self-feeding abilities in older adults. Methods: This study used a cross-sectional study design. Descriptive statistics were performed using SPSS 22.0 for Windows. The survey participant of 282 older people(47.7%), 42 family caregivers(7.4%), and 266 staff members(44.9%). Results: Whereas most of the older adults living in their home(87.3%) did not experience difficulty while eating, older adults residing in facilities(26.4%) expressed difficulty with the process of putting food into a spoon. The difference between the two groups was statistically significant(p<.001). Wile the older adults living in home considered assistive eating devices(34.5%) as the most important requirement for self-feeding, older adults in facilities considered receiving help(39.3%) as their biggest requirement(p<.009). Older adults, family caregivers, and nursing home staff were not familiar with assistive eating devices and were not aware of their necessity. Conclusion: The study could help increase awareness about assistive eating devices and the importance of self-feeding in research and nursing educational settings. Improvement in self-feeding ability may future enhance the daily quality of life of older adults.

  • Development of crops with high quality as well as various beneficial functions is necessary to satisfy consumers being interested in their health and to enhance a competitiveness in the international market of agricultural products. What we have achieved so far from our research on crop quality was not sufficient since we often neglected sensory feature of crop products such as eating quality but in many cases, we put more emphases on nutrient contents, physico-chemical properties, and out-appearing features of the products. Therefore developments of sensory elements and technique for evaluation with a priority given to eating quality of each of an individual crop are important and very urgent to be solved in Korea. An endeavor to develop bioactive crops is necessary and resonable but aspects of both productivity and economy with a special emphasis on the original purposes such as production of energy and nutrient for human life must be considered. The development of more concrete ideas for crop functionality is essential before any research goes further.

Comparing the Nutrient Intake, Quality of Diet, Eating Habit Scores and Dietary Behaviors of University Students in Iksan, according to Their Type of Residence (익산지역 대학생의 주거형태에 따른 영양소 섭취량과 식사의 질, 식습관 및 식태도 비교)

  • The aim of this study was to compare the dietary patterns and behaviors of university students according to their type of residence. The subjects consisted of two thousand two hundred fifty students from Wonkwang University. They were divided into three groups : those who live in their family homes (393 men, 392 women) ; those who live in university dormitories (371 men, 401 women) : and those who live in houses with cooking facilities (345 men, 348 women). This cross-sectional survey was conducted using a self-administered questionnaire. The nutrient intake data collected from a three-day recall were analyzed using the Computer Aided Nutritional Analysis Program and the diet quality was estimated using the Nutrient Adequacy Ratio, Mean Adequacy Ratio and Index of Nutritional Quality. The results showed that the mean daily intakes of calcium were lower than the Korean Recommended Daily Allowance (RDA) in all groups. There was a significant difference in the nutrient intake, dietary quality and dietary behaviors of the three groups. The nutrients intake and dietary quality of the men were poorer than those of the women in all three groups. The subjects living in dormitories and houses with cooking facilities seemed to have lower levels of nutrient intake and dietary quality. However, the concern about nutrition and interest in health information was higher among those living in dormitories and houses with cooking facilities than among those living in their family homes. Male students living in houses with cooking facilities had more dietary problems than students living in their family homes or in dormitories possibly because they might have had a lower ability in meal management. These results suggest that the type of residence affects the nutrient intake levels, and dietary quality of university students in Iksan. Nutritional education is essential if university students are to practice optimal nutritional habits, including the eating of well-balanced diets and selecting of foods of high quality. Therefore, nutritional education for university students is needed so as to improve their health and a nutritional education program should be developed to meet the various needs of these students.

Effects of Dry- and Wet-ageing on Flavor Compounds and Eating Quality of Low Fat Hanwoo Beef Muscles

  • The present study aimed at investigating the effects of dry- and wet-aging methods on flavor compounds and sensory properties of low fat Hanwoo beef muscles. All the beef samples were obtained from 2-grade carcasses of Hanwoo cows. The beef samples used in the dry- and wet-aging methods were prepared in the forms of quarter beef (bone-in) and cuts (boneless), respectively. The dry-aging was carried out at $2^{\circ}C-4^{\circ}C$ and humidity of 65%-85%, while the wet-aging was done at $1^{\circ}C$ for 0, 20, 40, and 60 d. At each aging time, three muscles: longissmus thoracis (LT), glutaeusmedus (GM) and semimembranosus (SM) were taken from the corresponding quarters and cuts, and used for the flavor compounds and sensory analyses. Results showed that both aging methods significantly increased the concentrations of flavor compounds and total amount of all classes of the flavor compounds as the aging time increased (p<0.05). In the dry-aging method, the GM and SM muscles presented significantly higher total amounts of pyrazines and sulfur-containing compounds compared to the LT muscle (p<0.05). Both the aging methods improved the eating quality attributes, indicating by increased scores of sensorial attributes with increased aging time for all the muscles studied (p<0.05). However, compared to the wet-aging, the dry-aging method resulted in significantly higher scores of tenderness and flavor for the GM and SM muscles after 40 to 60 d. Thus, postmortem aging, especially the dry-aging method could be used to improve eating quality attributes (tenderness and flavor) of low fat beef muscles such as GM and SM.

Do types of snacks, sleep hours, and eating places affect nutritional intakes and its adequacy in adolescents?

  • BACKGROUND/OBJECTIVES: High-quality meal intake, including snacks, is necessary for optimal development during adolescence. The purpose of this study was to evaluate the nutritional intake of adolescents and the quality of their diet according to snack type, eating location, and sleep hours. SUBJECTS/METHODS: A survey of middle school students living in Seoul and Gyeonggi province was conducted using questionnaires and the 24-h recall method to collect data on the 1-day dietary intake of the students from March to May, 2018. The data were analyzed using SPSS 23.0 and the CAN program. RESULTS: The average nutritional intake status among the respondents showed that the energy intake was lower than the recommended, showing 1,914.8 kcal for middle school boys and 1,752.7 kcal for girls. In terms of the nutritional intake status by gender, only the consumption of protein and niacin were significantly higher in boys than girls (P < 0.05). According to the sleep amounts, vitamin C intake was significantly higher in the sleep-deprived group than in the sleep-moderate or sleep-recommended group (P < 0.05), but the intake did not meet the recommendation in any group. The lower density nutrients found in the index of nutritional quality according to eating places were vitamin C, calcium, iron, and folic acid. School meals showed a higher nutritional density in protein, vitamin B1, and niacin compared to convenience store meals (P < 0.05). CONCLUSIONS: This study suggested that sleep amount, and eating place affected the dietary quality of adolescents.

Use of Social Commerce Restaurant Products by College Students According to Demographic Characteristics and Eating Out Behavior (인구통계학적 특성 및 외식행동에 따른 대학생의 소셜커머스 외식상품 이용 현황)

  • The purpose of this study was to examine the use of social commerce restaurant products by college students according to demographic characteristics and eating out behavior. The questionnaire for the survey was distributed to 450 college students, who have experiences of purchasing a restaurant product on social commerce, with 286 responses used for analysis. From the result, college students frequently use smart phones and SNS for making such purchases. While the awareness of social commerce was high, they sometimes visited the websites and purchased products. The awareness and purchase experience of Coupang and Ticket Monster turned out to be the highest. The most frequently purchased product was restaurant discount coupons, followed by fashion/accessories, movie or concert tickets, food products, and beauty shop discount coupons. The discount rate was mostly 30 to 40% on average. The most significantly considered matter in purchasing products and services was product quality, followed by discount rate and consumer review. The respondents ate out at least 3 to 5 times a week, spent $100,000{\leq}200,000$ won, and were generally satisfied with the restaurant products from social commerce sites. The main satisfaction reason was price, whereas the dissatisfaction reason was false and puffy advertising. Service quality improvement and variety of category were the most necessary factors for improvement. Among the demographic characteristics, there was a difference in purchase expenditure of social commerce restaurant products, as well as purpose, companion, time used and word-of-mouth experience according to gender. According to grade, there was a difference in purchase expenditure, companion, area of use and impulsive purchase. Among the eating out behavior, there was a difference in purpose, companion and word-of-mouth experience according to the eating out frequency. Meanwhile, there was a difference in purchase expenditure, companion, time used, word-of-mouth experience and tool according to the eating out cost.

Housewives' Awareness of the Quality Attributes for Korean Native Chickens (토종닭 품질 특성에 대한 주부의 인식 조사)

  • A consumer survey was conducted for the subject of a total of 503 housewives in Korea, with the questionnaires on the quality attributes for Korean native chicken. The responding results collected were used for the importance-performance analysis of the quality attributes involved in production, processing, distribution, and consumption of Korean native chicken. The quality attributes with both relatively high importance and performance ("keep up the good work") were chicken origin, shelf life, freshness, and safety issues, while those with high importance but low performance ("concentrate here") were chicken breed certification and refrigerated/ frozen state. Respondents were also interested in lean meat and protein content of the chicken meat. In the aspect of eating quality attributes, chewiness was the most important one. The survey shows tenderer, chewier, and more flavorful chicken meat will be preferred and a new chicken breed with those eating quality attributes needs to be developed.
