  • A study was carried out to compare the daily foods which were eaten during $14{\sim}19$ century among Korea (Chosun dynasty), China (Ming, thing dynasty), and Japan (Muromachi, Edo era). Specially, in Ming, Ching dynasty, Noodles and dumpling were cooked very often and in Muromachi, Edo era, many kinds of beans were used so much, and there were many kinds of steamed rice to compare with Korea and China. Also, in Japan at these era Woodong, Morisoba, and Somyen were used as favorite foods harbitually. 1. The crops were used as staple foods in three countries such as steamed rice, gruel, noodle, dumpling, rice cake etc. commonly. 2. In Chosun, a roe deer, deer, antelope, and wild boar were more favoite dishes than cow, chicken, and dog, generally people enjoyed to eat pork and chicken. In Ming Ching, pork, chicken, goose, dove, lamb, ass, and duck were used as food materials, also wild animals such as deer, rabbit, and monkey etc. were used. In Muromach era, wild animal as racoon dog, otter, deer, antelope, bear, were used as food materials, in early Edo era (Yayoi and Momoyama), beef and pork were used as daily foods but they were eaten decreasingly in Edo era. So in Japan at those era, the dishes prepared of fishes were more than those of meats. For example, Sushi was made from that time, people all over the world are enjoying to have Sushi at present time. 3. Also in these era, many kinds of vegetables and fruits were used in three countries, and new kinds of vegetables and fruits were introduced from foreign countries, for example, red pepper, pumpkin, sweet potato, potato in Korea, corn, sweet potato, red pepper in China, and water melon, pumpkin, corn, red pepper, marmellow, sweet potato, sugar beet in Japan.

산업체 근로자들의 식행동과 기호도에 관한 연구 (A Study on the Eating Behaviors and the Preferences of Industrial Workers in Korea)

  • This study was carried out to investigate the eating behaviors and the preferences of industrial workers in Korea. This survey was conducted from May 20 to June 20, 1998 by constructed questionnaires and the subjects were 364 males and 588 females. The results obtained were summarized as follows: 1) The subjects who didn't have breakfast regularly were 41.7% because they didn't have enough time to eat. The main type of breakfast were cooked rice. 2) The subjects who used the company cafeteria were 60.5% and men used the company cafeteria more than women. The most favorite side dishes by the subjects were roasted foods and next side dishes were seasoned foods. There were not significantly different the kinds of favorite side dishes between men and women. The main reason that the subjects preferred to a specific side dish was 'delicious'. 3) Foods and dishes that the subjects could approached frequently and easily made the eating habits changed. The most favorite meal types of the subjects were Korean foods because those were good taste for the subjects. The favorite snacks by men were ramyon and those by women were rolled rice(Gimbab). 4) The pan-fried foods(Jun) were the most favorite food in the cloudy day and the salads were the most favorite food in the sunny day. The most favorite taste of the subjects were light and clear tastes and next favorite taste of the subjects was salty tastes. This study shows that the eating habit of industrial workers could be changed by easily and frequently approached food and weather. In addition, the lacks of time was main reason that the subjects couldn't have regular breakfast. Therefore, it needs to develop the desirable programs and diet menus to consider the situation of the industrial workers and weather.

  • This study aimed to investigate the perception, consumption, and acceptability of convenience mealsin low-income female elderly attending a lunch program at a community well fare center. Using in-depth interviews, qualitative data were collected 11 elderly females ($62.5{\pm}11.2y$) living in Seoul. Participants tried to eat various foods in small-portionsat home, although they ate out what they were offered. Elderly females preferred lunch box-type meals containing a bowl of rice served with toppings, gruel, or Bibimbop due to the growing unavailability of cooking or preparing a meal. Side-dish type convenience mealswere also preferred among elderly females since boiled rice can be easily prepared according to individual preferences. In addition, participants preferred healthy foods. Convenience meal planning and production, appropriate kinds of foods, cooking methods, menus, and packaging should be selected based on the elderly's functional atrophy in chewing, swallowing, digestion, and metabolic diseases. Furthermore, food preferences and comfort foods among the elderlyneed to be identified and characterized. Therefore, more information, including bite size, cutting size, and food texture, should be provided to understand and develop convenience meals for the elderly.

대구지역 관광운수 영업자의 연령별 식행동 특성 및 음식 기호도 조사 연구 (A Study on Food Behaviors and Food Preferences of the Tourism Transportation Business Managers in Daegu Areas by Age)

  • This study was carried out to survey the eating behaviors and the food preferences of the tourism transportation business managers in Daegu areas by age. The survey was performed from 17 to August 25, 2003 by questionnaires and the subjects were 365 males. As a general factor, the subjects of survey were male drivers in their thirties to sixties. Their education level was middle school(44.9%) and high school(45.8%) diploma. This study showed that the managers eat three meals per day with high percentage(75.9%) and a large number of managers(24.1%) eat two meals only. 77.8% of the subjects responded that their diet life were irregular due to the property of their job. Frequency of eating-out turned out to be much higher in managers aged 60 over(p<0.001). They considered taste of the food firstly, and the prices of the food secondly, but the nutritional value of the food was considered with a low percentage(22.7%). We found that their BMI were overweight from 23.5 to 26.01, their calorie and some nutrient intakes were below their RDA. The most insufficiently consumed nutrient(less than 75% of RDA) was vitamin B₂ followed by calcium. The food preferences of subjects showed that the managers preferred boiled rice to any other rice as a staple foods. Their favorite menu of one-course Korean style meal turned out to be the bibimbob(boiled rice mixed with assorted vegetable and meat). As for subsidiary foods, out of all various meat soups, beef soups and beef-rib soups were most preferred. The most preferred stew were soybean paste stew and kimchi stew, and the most preferred cooked vegetables were cooked spinach, seasoned cucumber. Baechu kimchi(white cabbage kimchi) were the most preferred kind of kimchi. For desserts there was a very high preference for the watermelons, apples, and pears. For beverages the most preferred were ginseng tea, fruit juices and dietary fiber drinks. From the results listed above, the nutritional education needed to be done to the tourism transportation business managers to set the proper menu considering the characteristics of the preference each age group of managers.

채소 식품의 건강 이미지가 기호와 섭취에 미치는 영향 (Influence of Healthy Image on Preference and Intake of Vegetables)

  • This study investigated the effects of image on the preference and intake frequency of 19 vegetables. A total of 359 usable surveys were collected using a convenient sampling method. The subjects included females (51.8%), university students (50.7%), home residents (66.9%) and subject's spending 20,000~40,000 won on meals/week (41.5%) and eat out 2~3 times/week (29.5%). The intake frequency of vegetables was 2~3 times per month. The healthy image of all vegetables was good overall and the average preference was 3.78 (out of 5 on the Likert). Tomatoes had the healthiest image, onions the highest preference, and Korean cabbage the highest intake frequency. For males, the vegetable with the healthiest image was sesame leaf, while the healthiest foods for females were broccoli and tomatoes. Elementary students had a healthier image of cucumber, bean sprouts, radish, sesame leaf, lettuce, radish leaf, and cabbage than university students and adults. Home residents had a healthier image of cabbage and burdock than other types of residents. Subject that st over 20,000 won per week on meals had a higher image of most vegetables. In terms of preference, males liked Korean cabbage, green pumpkin, balloon flower roots, radish leaf, and lotus root, but female liked tomatoes. In addition, elementary students, home residents, and subjects who eat out less often tended to prefer vegetables. In terms of intake, there was a high frequency of intake for all vegetables in adults. Home residents specifically had a higher intake of cucumber, carrot, bean sprouts, spinach, green pumpkin, balloon flower roots, lettuce, radish leaf, broccoli, burdock, lotus root, and tomato. Overall, the healthy image of vegetables had a positive influence on their preference and intake frequency. Therefore, to encourage the intake of vegetables, direct or indirect variables should be examined.

싱글족의 식생활 라이프스타일에 따른 식품구매행동 연구 - 서울 및 수도권지역 25세 이상 54세 이하 성인을 대상으로 - (A Study of Singles' Food Consumption Behavior based on Food-related Lifestyle -On the Adults between 25 to 54 years old in the Seoul metropolitan area-)

  • The purpose of this study was to investigate the differences is food consumption behavior based on singles' food-related lifestyle. A survey was conducted with singles(age 25~54) in the Seoul metropolitan area. Out of 2,051 questionnaires distributed, 300 were analyzed(15.21% response rate). The data was analyzed using SPSS windows(ver. 17.0). Singles' food-related lifestyles were categorized into three groups. In addition, the respondents were divided into three groups by cluster analysis: convenience oriented group, wellbeing dining-out oriented group, and uninvolved group. The food consumption behavior of each group was significantly different in terms of considerations of food consumption, preference of food product types, and breakfast types. The convenience oriented group prefered to buy ready to cook food, ready to heat food and ready to eat food. Moreover, they often eat instant food. The wellbeing dining-out group is more interested in foods and their health than other groups. The uninvolved group was not concerned about food. This study suggests that the food industry the characteristics of singles' needs to be analyzed more systematically. By analyzing the characteristics of singles', the food industry can use the data to establish a marketing strategy for them.

인천지역 초등학생의 한국 전통음식에 대한 인식과 지식에 관한 연구 (A Study on the Perception and the Knowledge of the Korean Traditional Food in the Elementary Schoolchildren of Incheon)

  • The purpose of the study was to investigate the perception and the knowledge of the Korean traditional foods in elementary school students. For the investigation, 373 fifth-grade elementary school students in Incheon were surveyed by a questionnaire, and the data were analized by the SPSS 10.0 program. The result showed that 85% of the surveyed schoolchildren showed the interest in the Korean traditional foods. It also revealed that female students are more interested in the traditional food than male students and the children of the career woman are more interested than those of the housewives. As for the motive of their interest, 39.7% of the subjects answered 'through mass media'. Male students and the children of the housewives got the interest through their mother, and female students and the children of the career woman got the interest through their hobby of cooking food. Among the traditional foods, 76.4% of the children designated kimchi as the most proud traditional food. As for the reasons of reducing traditional food use, 39.9% of students responded because of 'not-tasty' and 28.7% of students replied because of 'not enough time to cook'. But 62.2% of the subjects thought the traditional foods should be more used in the future. As for the succession and development of the traditional foods, 33.8% of the subjects said it should be carried out by the family. The basic knowledge score of the traditional foods was 5.78 on a scale of 10, which showed relatively low level. The lower their basic knowledge, the less their interest in the traditional foods was. The samgyetang, ogokbap and bindaetteok were the most perceived traditional foods. The cheonggukjang, nabakgimchi and jindallaehwajeon were the foods they had seen, but the they didnot have heard or seen the others. Among the traditional foods, susugyeongdan, jindallaehwajeon and dasik were more perceived by the schoolchildren in the rural area than those in the urban area. The jindallaehwajeon and dasik were more perceived by female students than by male students. Therefore, in order to make elementary schoolchildren take the traditional foods with pride by increasing their perception and knowledge of them, the family should give them many opportunities to eat traditional foods. The school also should try to establish a cooperative relationship to the family of schoolchilderen and use more Korean traditional foods in the school's meal program. Furthermore, the society's concern and support are necessary and also the role of mass media, which have great influence on children, is important.

춘천지역 일부 유치원 원아의 식습관 및 생활습관에 관한 조사 (Eating behavior and life habits of kindergarten children in Chuncheon area)

  • The purpose of this study was to investigate the eating behavior and life habits of kindergarten children 5 to 7 years old in Chuncheon area. This study was conducted in December, 1996. Anthropometric indices(height, weight, skinfold thickness, mid-arm circumference) were measured and body mass index(BMI), Rohrer index, arm fat area were calculated to estimate children’s body fatness. Also the eating behavior and life habits were determined tv using questionnaire method. The results were as follows: Body fat rate of the children was almost normal according to Rohrer index and BMI. There was significant difference in birth weight between male and female. The problems of the eating behavior were frequent skipping breakfast and eating-out. The rate of the children who took snacks 2 times a day was 46.9%. Most children tended to take sweet snacks such as ice-cream, chocolates, cookies, and they tended to prefer meats and fishes to vegetables. The rate of breast feeding was 28.3% and the rate of weaning foods prepared at home was 61.1%. Many children preferred indoor activities such as watching TV, toy furniture play, building block to outdoor activities such as roller-skating, cycling, jogging in their spare time. The rate of the children who took exercise regularly was 15%. Children tended to eat kimbap, fried chicken, ramyeon more frequently in various instant foods. The intake rates of fruit juice and barly tea were relatively high and children's favorite fruits were watermelon and mandarin orange. From this results, skipping breakfast, frequent eating-out and the monotony of food preference appears to cause imbalance in nutrient intakes of the children and to have bad influence on children’s health. Accodgingiy, the comprehensive nutrition education and proper modification program should be needed for the children and their parents to correct the eating behavior and life habits. The reasonable exercise programs are needed to motivate outdoor activities of the children, and the importance of breast feeding and weaning foods should be emphasized to lactating women and pregnant women.

전남 담양군 노인의 농번기 식생활실태 조사에 의한 식단 개발과 평가 (Menu Development and Evaluation using Food Intake Status of the Elerly in busy farming season of Damyang Jeonnam)

  • Survey on the food intake status and health condition of the elerly over 65 years old living in Damyang Jeonnam was performed and meal menus for the pavillion were developed using local products. Allowance of the elderly less than 100,000 won was 45%. The local products of the area recognized by the elderly were bamboo shoot (30%) > bamboo (22.5%) > bamboo basket (12.5%) > do not know (15%) > green tea (10%) > rice(7.5%) > vegetable. In dental health, 52.5% of them had bad condition but 62.5% did not use denture at all. The most favorate foods were Korean (92.5%) and Chinese and Japanese were favored by 5%, and 2.5%, respectively. In percentage of eat-out and use of instant foods, 42.5% of them answered that eating-out chances were very rare and 62.5% answered that they do not use instant foods at all. Potassium intakes for the male and female elderly were significantly very low with values of 2579.2 mg and 2601 mg, respectively (p < 0.05). Calorie intakes for men were 1678.5 kcal, which was only 84% of RI and 1470.8 kcal for women (92%). Shortages of nutrition including calcium intake and others were very serious and the meal was not nutritionally balanced based upon the study of GMDFO. The menu for the elderly in busy farming season of the area were developed with the use of local products and the information from the study.

Association Between the Frequency of Eating Non-home-prepared Meals and Women Infertility in the United States

  • Objectives: The purpose of this study was to determine whether eating non-home-prepared meals (NHPM), including fast food, ready-to-eat foods, and frozen foods, was associated with self-reported infertility in the United States women. Methods: Data on diet and infertility from women aged 20-49 years who participated in the 2013-2014 and 2015-2016 National Health and Nutrition Examination Surveys were analyzed (n=2143). Dietary information, including the number and types of NHPM consumed, was obtained from a self-reported questionnaire, and infertility status was analyzed using the following question, "Have you ever attempted to become pregnant over a period of at least a year without becoming pregnant" Results: The frequency of NHPM consumption was positively associated with self-reported infertility after adjusting for confounding effects (odds ratio [OR], 2.82; 95% confidence interval [CI], 1.48 to 5.38 of >1 vs. 0 NHPM/d). The odds of infertility were 2-3 times higher in women who consumed fast food than in those who did not consume fast food (OR, 2.73; 95% CI, 1.15 to 6.48 of >1 vs. 0 times/d). Conclusions: The frequency and types of NHPM may be a factor contributing to infertility. Although our findings require confirmation, they suggest that eating out may be deleterious to women fecundity.
