모델 시스템에서 동결속도에 따른 얼음 결정체의 크기 및 동결건조속도의 변화 (Influence of Freezing Process on the Change of Ice Crystal Size and Freeze-Drying Rate in a Model System)

  • The objective of this study was to investigate the effects of freezing rate on ice crystal size and freeze-drying rate. Our experiments were carried out with self-manufactured freeze-dryer. Gelatin gels (2% w / w, 80$\times$20mm) were frozen unidirectionally (Neumann's model) from the bottom at -45, -30, -20, and -15$^{\circ}C$ and followed with freeze-drying. Under the upper conditions we measured freezing rate and the change of temperature and pressure during freeze drying. Freeze-dried gelatins were cut horizontally into 5 mm thickness from the bottom and measured their pore sizes. Also freeze-drying rate(primary drying) is estimated by measuring the temperature of sample and pressure of vacuum chamber. During freeze-drying, profiles of pressure and temperature were shown constant tendency regardless of freezing temperature and we could expect the end-point of freeze drying by considering pressure and temperature together. In temperature profiles, the point which temperature increased significantly was observed during freeze-drying. There is no relationship between freeze temperature and drying rate of primary drying in our model system. As freezing temperature increased, ice crystal size(X*) which correspond to 63.2% of cumulative frequency was increased and at the same freezing temperature ice crystal size(X*) was decreased with distance from the bottom of the sample. Freezing conditions have a strong influence on the quality of the final freeze-dried products in freeze-drying system.

웨스턴 레드시더 큰 정각재(正角材)의 고주파 진공 건조 특성 (Drying Characteristics of Large Western Redcedar Timber During Radio Frequency/Vacuum Drying)

  • Western redcedar timber, 26 by 26cm in cross section and by 200cm long, was dried in a laboratory radio-frequency/vacuum kiln under 65torr of ambient pressure and a fixed frequency of 6.78MHz for the potential rapidly dry large timber. All process data were collected and saved in a computer through a data acquisition system. The temperature in the middle of timber was higher than temperature at the quarter point of timber length and thickness. Temperature gradients developed in the longitudinal and transverse direction of timber. The pressure in the middle of timber was higher than pressure at the quarter point of timber length. The pressure in the middle of timber was lower in the early stage of drying, and higher in the latter stage of drying than pressure at the quarter point of timber thickness. Power density was very highest during heating period and then gradually decreased. The drying curve was approximately linear and the total drying time was 27 hours from an initial moisture content(MC) of 48.6 percent to a final Me of 19.2 percent with only a few mild internal checks in the middle location of timber.

순환 공기 유량의 변화를 고려한 열펌프 건조기의 성능 해석 (Analysis on the Drying Performance with the Flow Rate of Circulation Air in a Heat Pump Dryer)

  • The simulation of a heat pump dryer has been carried out to figure out the effect of air flow rate on the drying performance represented by MER, SMER, and so on. The simulation includes the analyses of one-stage heat pump cycle and simple drying process using the drying efficiency. The heat pump cycle with Refrigerant 134a has been considered. In the dryer, some of drying air from the drying chamber flows through the heat pump system, the rest of air bypasses the heat pump system. The two air flows joins before the drying chamber inlet. The performance parameters considered in the present study are MER, SMER, the temperature and humidity of drying air. Those parameters are compared for different total air flow rate or bypass air flow rate.

한옥건축물의 건조방법에 따른 외진 노출 기둥의 함수율 및 균열 양상에 관한 연구 (A Study on the Moisture Content and Cracking Behavior of out side Exposed columns According to Drying Methods of Hnaok Buildings)

  • Recently, various tourist products using hanok have increased rapidly. In the meantime, there is a steady demand for Hanok architecture. However, there are many negative perceptions about wood deformation and biodeterioration. Wood deformation and biodeterioration are related to moisture content. And the cracks occur in the process of removing water from the wood. Therefore, this study investigates the moisture content and cracks of dried hanok made of wood according to the drying method of wood. Drying methods include natural seasoning and artificial seasoning. There was a difference in moisture removal depending on drying period and method of natural seasoning. Drying time should be about 3 years for natural seasoning, so the moisture content of the wood is stable. In addition, the moisture absorption rate was low even in a humid environment where the voids were removed. However, natural seasoning is time consuming. Artificial seasoning, on the other hand, can quickly remove moisture from the wood and reduce porosity, but it is costly. Cracks that occur during the drying of wood may become problematic in appearance and stability due to wider spacing over time. As a result, the difference in the moisture content of the timber depending on the drying method and drying period of the wood was maintained even after the formation. These gaps appeared to be differences in moisture absorption in a wet environment.

Effect of Different Brine Injection Levels on the Drying Characteristics and Physicochemical Properties of Beef Jerky

  • Meat jerky is a type of meat snack with a long shelf life, light weight, and unique sensory properties. However, meat jerky requires a long manufacturing time, resulting in high energy consumption. In this study, beef jerky was prepared by injecting different concentrations of brine at different hot-air drying times (0-800 min). When the brine injection levels were increased to 30%, the drying characteristics of beef jerky, such as drying time and effective moisture diffusivity, were significantly improved owing to the relatively high water content and the formation of porous structures. The physicochemical properties (e.g. meat color, porosity, shear force, and volatile basic nitrogen) of the beef jerky injected with 30% brine were improved owing to the shortened drying time. Scanning electron microscopy images showed that the beef jerky structure became porous and irregular during the brine injection process. Our novel processing technique for manufacturing beef jerky leads to improved quality characteristics and shortened drying times.

통계적 모델과 반응표면분석을 이용한 복분자의 건조조건 최적화 및 건조거동 (Drying kinetics and optimization for thin-layer drying processes of raspberries (Rubus coreanus Miq.) using statistical models and response surface methodology)

  • ANOVA 분석을 통해 건조온도와 건조시간이 열풍건조와 냉풍건조의 중요변수임을 알 수 있었으며 복분자의 반건조를 위해서는 열풍건조의 경우 $65.8^{\circ}C$, 4.3시간이 적당하였고 냉풍건조의 경우 비슷한 정도의 건조수분함량까지 28.2시간이 걸렸다. 그러나 건조온도가 높아지면 vitamin C와 ellagic acid의 함량이 줄어드는 등 품질적 열화가 심하게 나타났다. 또한 생리활성물질들은 냉풍건조에서 전반적으로 더 잘 보존 되었으며 총폴리페놀의 함량에서는 더욱 그러하였다. 따라서 냉풍건조방법은 고품질의 반건조 복분자 제조에 적합한 건조방법이며 최적 건조조건은 $21.3^{\circ}C$, 28.2시간으로 나타났다.

강우재현 모형실험과 SWCC Cell 실험에 의한 화강암질 풍화토의 함수특성곡선 (Soil Water Characteristic Curve of the Weathered Granite Soil through Simulated Rainfall System and SWCC Cell Test)

  • 강우재현장치를 제작하고, 강우 및 사면조건에 따라 강우재현 모형실험과 함수특성곡선실험(SWCC Cell Test)을 실시하여 불포화 특성에 관해 연구하였다. 그 결과를 이용하여 강우에 따른 침투거동 특성과 함수특성곡선 모델들의 불포화된 화강암질 풍화토에 대한 적용을 검토하였다. 강우재현 모형실험의 습윤과정(강우재현)과 건조과정(방치)에서 계측된 체적함수비와 모관흡인력을 비교한 결과 체적함수비는 $2{\sim}5%$, 모관흡인력은 $3{\sim}10\;kPa$ 정도 값의 차이를 보여 이력현상을 확인 할 수 있었다. 또한, 모관흡인력의 값이 체적함수비의 값에 비해 상대적으로 큰 차이를 보여 모관흡인력에 이력거동이 더 큼을 확인할 수 있었다. 강우재현 모형실험과 함수특성곡선실험에서 얻은 결과로부터 구한 함수특성곡선을 비교하면, 습윤과정과 건조과정에서 두 방법 모두 근접한 함수특성곡선을 얻을 수 있었으나, 두 방법 모두 습윤과정과 건조과정에서의 결과는 차이가 있었다. 이로써 불포화토의 특성을 고려한 보다 합리적인 설계나 안정검토에 함수특성곡선을 적용시킬 때에는 습윤과정에서는 습윤과정 함수특성곡선을 건조과정에서는 건조과정 함수특성곡선을 적용하는 것이 합당할 것으로 여겨진다.

졸-겔법에 의한 mullite합성시 건조 첨가제가 건조 및 소성에 미치는 영향 (Effects of Drying Agents on the Drying and Calcination in Synthesis of Mullite by Sol-Gel Process)

  • 본 연구는 고온 구조재료 및 전자재료로 주목받고 있는 복합산화물인 mullite($3Al_2O_3${\cdot}2SiO_2$)를 금속알콕사이드에 의한 졸-겔법으로 합성함에 있어서 재활용품으로서의 aluminium foil을 aluminium 금속원으로 사용하여 알루미늄 알콕사이드를 제조하고 $Si(OC_2H_5)_4$와 혼합하여 가수분해 단계에서 건조조절화학첨가제(Drying Control Chemical Additives, DCCA)를 첨가함으로써 건조시간을 단축시키려는 시도를 하였으며 이러한 DCCA가 mullite 물성에 어떠한 영향을 주는지 검토하고자 하였다. 이때 DCCA로 N, N-dimethyl formamide (DMF), Glycerol, 1, 4-Dioxane과 Oxalic acid가 첨가되었으며 건조된 겔을 각 온도별로 소성하여 TG-DTA, FT-IR, XRD 및 SEM을 사용하여 결정의 전이과정 및 각 소성온도에서의 결정상태 등을 관찰하였다. DCCA를 첨가하여 건조시킨 결과 0.1mole의 DMF를 첨가하였을 경우 DCCA를 첨가하지 않았을 때보다 건조시간이 1/2 정도 단축되었으며 분석결과 mullite의 결정형성에 큰 영향을 미치지 않았음을 확인하였다.

Characteristics of the 3rd day of 5th instar silkworm powder: effect of preparation method

  • Silkworm powder was prepared from 3rd day of 5th instar silkworm through various drying technology including freeze drying, hot wind drying, infrared drying, and microwave drying. The shape of silkworm dried was different with the drying methods. Freeze drying and microwave drying silkworm looked its original form, but hot wind drying and infrared drying silkworm looked shriveled and crumpled. The color of silkworm powder freeze-dried changed from yellowish green to hazel with lowering freezing temperature. Heavy metals including Pb, Cd, As, and Hg were lower the food criteria. The results of 1-deoxynojirimycin analysis was shown that BaekOkJam and GoldenSilk silkworm powder was satisfied the criteria of functional food, but YeonNokJam silkworm powder was lower than the criteria. The amino acid composition of silkworm was similar regardless of the frozen temperature in freeze drying process.

미곡종합처리장의 에너지 모델 개발(II) -시뮬레이션 모델 개발 및 소요 에너지 분석- (Development of an Energy Model of Rice Processing Complex(II) -Simulation Model Development and Analysis of Energy Requirement-)

  • The rice processing complex(RPC) consisted of the rice handling, drying, storage, and milling processes. It has been established at 83 locations domestically by April 1994, and 200 of RPC will be built more throughout the country. Therefore, this study has been performed to achieve two objectives as the followings : 1) Development of mathematical models which can assess the requirement of electricity, fuel, and labor for four model systems of rice processing complex. 2) Development of a computer simulation model which produce the improved designs of RPC by the evaluation results of energy requirements of four RPC models. The results from this study are summarized as follows : 1) Mathematical models were developed on the basis of result of mass balance analysis and required power of machines for each process. 2) A computer simulation model was developed, which can produce the improved designs of RPC by the evaluation results of energy requirements. The computer simulation model language was BORLAND $C^{++}$. 3) The results of simulation showed that total energy requirements were ranged from 75.94㎾h/t to 124.30㎾h/t. 4) From the results of computer analysis of energy requirement classified by drying type, it was found that energy requirement of the drying type A{paddy rice (PR) for storage-natural air drying(15%), PR for milling-heated air drying(16%)} were less than that of the drying type B{1 step-natural air drying(PR for storage : 18%, PR for milling : 20%), 2 step-heated air drying(PR for storage : 15%, PR for milling : 16%)}. 5) The energy efficient drying method is that all the incoming rough rice to RPC should be dried by national air drying systems. If it is more than the capacity of national air drying system, the amount of surplus rough rice is recommended to be dried by the heated air drying method.
