Quality Characteristics of Dried Squid (Todarodes Pacificus) by Cold Air Drying Process (냉풍건조공정을 이용한 마른오징어의 품질특성)

  • In an attempt to find ways of improving the quality and sanitary state of dried squid, this study compared artificial drying methods i.e. hot air drying and cold air drying with natural drying method. The drying rates of squid were in the order of hot air, cold air and natural drying. However, cold-air drying was slower than natural drying at $7^{\circ}C$. The drying rates increased with increasing drying temperature. When drying temperature was close to the dew point on a dehumidifier surface, which was the case with cold air drying at $7^{\circ}C$, the driving force for dehumidification was lower than under other drying conditions, which resulted in a lower drying rate. There were little color differences between the drying methods and temperature. Squid dried by cold air-drying had better mechanical texture and sensory qualities than with other drying methods. In addition, the cold air drying method maintained superior quality in terms of the contents of amino acids, taurine, EPA, DHA, other fatty acids and a low TBA value than the other drying methods.

  • Moisture transfer characteristics of high emotional garments are important to evaluate wear comfort. Wicking and drying measurement methods are also critical for perspiration absorption and quick dry fabric made of high functional fibers. In this study, the wicking and drying properties of high emotional fabrics made from hybrid composite yarns using CoolMax, Tencel, Bamboo staple fibers and PP. PET CoolMax filaments were also measured and analyzed according to various measuring methods. The wicking property of hybrid composite yarn fabrics by Bireck method was mostly influenced by the structure of hybrid yarns than the absorption rate of constituent fibers; however, both the hygroscopicity of fibers and the composite yarn structure affected the wicking property of the fabrics in the drop method. Concerning drying properties, the KSK 0815B method measuring distilled moisture weight was more relevant to explain the drying characteristics of hybrid yarn fabrics than the KSK 0815A method measuring the time to drying. This study revealed that the drying properties of hybrid yarn fabrics were influenced by the hygroscopicity of constituent fibers, wicking properties of constituent yarns and structure of composite yarns.

A Study on the Reliability of the Drying Rate Test about Military Clothes (피복류 건조속도 시험방법의 재현성 확보 방안 연구)

  • Purpose: Current testing method for drying rate used in military textiles has different results according to the public testing institute. So the purpose of this study was to suggest the alternative method which secure the reliability of the drying rate test. Methods: We measured the drying rate by various test methods for military clothes 14 species including quick drying function and compared the test results. Also, the collected data through the test was analyzed using one-way ANOVA. The p-value of results was compared by various testing institutions. Results: The results of this study are as follow; A deviation occurred among the testing institutions in original test method(KS K 0815). Whereas it is verified that there is no deviation among the institutions in 5% significance level by another test method(ISO 17617). Also it would increase work efficiency by reducing the testing time required to test by using ISO 17617. Conclusion: Based on the results, we can suggest the reliable test method of the drying rate.

Development of Kiln Drying Schedule of Hydrid Aspen (Populus alba × glandulosa) by Oven Drying Method (급속건조법(急速乾燥法)에 의한 은수원사시재(材)의 인공건조(人工乾燥)스케쥴 개발(開發))

  • A study was conducted to determine the kiln drying schedule for hydrid aspen, This kiln drying schedule was found by oven drying method and developed by pilot testing of 2.0cm, 2.5cm, 3.0cm-thick green lumber. The results of this study were as follows: 1. Kiln drying schedule developed by oven-drying method was $T_{12}-E_5$ for 2.5cm-thick green lumber. 2. Drying times for 2.0cm-thick green lumber(127.0 percent moisture content) to 7.3 percent moisture content, for 2.5cm-thick green lumber(95.0 percent moisture content) to 9.7 percent moisture content, and for 3.0cm-thick green lumber(118.5 percent moisture content) to 10.0 percent moisture content were 45 hours, 45 hours, and 54 hours, respectively. 3. Drying rate from 90 to 10 percent moisture content of 2.5cm-thick lumber was about 0.7 times faster than that of 2.0cm-thick lumber and about 1.1 times faster than that of 3.0em-thick lumber. 4. End checks for 2.0cm-, 2.5cm-, and 3.0cm-thick green lumber occurred 95, 74 and 100 percent moisture content, respectively and reached maximum amount in 53, 41, and 60 percent moisture content, respectively. 5. No surface check and no honeycomb occurred. 6. Cupping and collapse slightly occurred and the quality of dry lumber was first.

Development of Drying Systems for Accurate Measurement of Particulate Matter by means of Optical Particle Measuring Instruments (광산란 계측기의 미세먼지 측정 정확도 향상을 위한 수분제거 전처리 기술 개발)

  • IIn this study, we have developed drying systems for reducing the error by humidity on measuring particulate matter (PM) in the ambient air with optical particle measuring instruments. Two types of drying systems were designed: drying systems using heating and dilution methods. In addition, 3 types of drying systems using a heating method were designed: Type A (1 hole), B (3 holes) and C (7 holes). After making them, the laboratory and field tests were carried out to evaluate the developed drying systems. As a result, it was shown that the PM concentrations obtained by PM monitoring devices with drying systems agree well with that of the reference devices. Therefore, it could be concluded that the drying systems can be applied to PM monitoring devices for real-time monitoring of the ambient aerosols.

  • This study was conducted to identify changes of chemical components affected by different drying method and temperature conditions in leaves and stems of peony plant. Drying methods were the dried air heated $(50^{\circ}C)$, far-red ray $(50^{\circ}C)$, room temperature and oven dry $(50^{\circ}C)$. Drying temperature were 40, 50, 60, 70 and $80^{\circ}C$ on far-red ray dryer. Among the drying methods, the contents of components were the highest in far-red drying and normal temperature drying as compared with air heated drying and oven drying. Among the drying temperature conditions, the contents of components were the highest in drying temperature at $40^{\circ}C$ and decreased in high temperature of $70^{\circ}C\;and\;80^{\circ}C$.

  • Fixed bed drying method was selected to reduce the initial drying time of squid and the effects of drying air temperature and bed height on the drying rate were investigated, with following results. 1. The drying rate in the fixed bed dryer was faster than that of natural convection type dryer heated indirectly and that of hot air dryer heated directly. 2, Shirai-equation was applicable to squid being dried. Using the equation, drying rate constant obtained was as shown in table 1.

  • Vacuum freeze drying process by which frozen water in a drying material is removed sublimation under vacuum condition, is now applied to various industrial field such as the manufacturing and packaging of pharmaceuticals in pharmaceutical industry, the drying of bio- products in bio-technology industry, the treatment of various quality food stuff in food technology, and so on. The Knowledge about the heat and mass transfer characteristics related with the vacuum freeze drying process is crucial to improve the efficiency of the process as well as the quality of dried products. In spite of increasing needs for understanding of the process, the research efforts in this fields are still insufficient. In this paper, a numerical code that can predict primary drying in a vial is developed based on the finite volume method with a moving grid system. The calculation program can handle the axis- symmetric and multi-dimensional characteristics of heat and mass transfer of the vial freeze drying process. To demonstrated the usefulness of the present analysis, a practical freeze drying of skim Milk solution in a vial is simulated and various calculation results are presented.

The Stability of Color and Antioxidant Compounds in Paprika (Capsicum annuum L.) Powder During the Drying and Storing Process

  • The objectives of this study were to examine changes in the color and antioxidant compounds of paprika powder under various conditions, as well as to establish the suitable conditions for drying and storage. Paprika was dried using the following methods: freeze-drying, vacuum drying, far infrared-ray drying, and hot-air drying. Measurements of the moisture content, color pigments, and antioxidant compounds (total carotenoids, capsanthin, ascorbic acid, and total polyphenols) were completed during 120 days of storage at 4 and $30^{\circ}C$. We found that drying methods, storage temperatures, and packaging materials affected the American Spice Trade Association (ASTA) and Hunter color values, as well as the antioxidant content of paprika powder. There was a high correlation (r=0.87, p<0.01) between the ASTA color and the $a^*/b^*$ value. The loss of red color was closely related to the reduction of moisture content (r=0.81, p<0.01) during storage. Drying paprika with a low temperature in the absence of air resulted in better retention of the carotenoids and ascorbic acid. Also, as the retention of the carotenoids and ascorbic acid increased, the stability of the red pigment increased. Freeze-drying was found to be the most suitable drying method for the stability of the antioxidant compounds and red pigment.

Quality of Single-Harvested Red Peppers by Drying Methods (일시 수확한 고추의 건조방법별 품질)

  • Fruits of 'Manita', a red pepper cultivar, and 'HL', a cultivar bred for single-harvest, cultivated by direct sowing method were harvested simultaneously. The red fruits were freeze-, sun-, indoor-, hot-air $(65^{\circ}C)$, and excessive hot-air (50% longer time) dried. For Manita. ASTA values of freeze- and indoor-dried red pepper were the highest $(153.6{\sim}168.4)$, and those of sun- and hot air-dried ones were $119.2{\sim}131.5$. Excessive hot-air drying decreased the redness by about $9{\sim}15%$ compared to normal hot-air drying. For HL, ASTA values $(150.3{\sim}171.7)$ of indoor-dried red peppers were much higher than other dried peppers. Red pigment in HL was destroyed easily during sun drying, showing values of only $49.2{\sim}69.2$. By excessive hot-air drying, the redness did not decrease, compared to normal hot-air drying. The organic acid contents of both cultivars were higher in sun- and hot-air-dried ones than freeze- and indoor-dried ones. Copsaicinoid contents of both cultivars decreased up to 22% by excessive hot-air drying compared to normal hot-air drying. Sugar contents were lower in all drying methods other than freeze drying for both cultivars.
