Objective: The objective of this study was to evaluate the effects of supplementing quercetin extracted from Sophora japonica flower (QS) to the diet of broiler chicks on their growth performance, apparent nutrient digestibility, cecal microbiota, serum lipid profiles, relative organ weight, and breast muscle quality. Methods: A total of 1,088 1-day-old broiler chicks (mixed sex) were randomly assigned to four groups based on the initial body weight (43.00±0.29 g). The experimental period was 35 days (starter, days 0 to 7; grower, days 7 to 21; finisher, days 21 to 35). There were 17 replicate cages per treatment and 16 birds per cage. Dietary treatments consisted of birds receiving basal diet without quercetin as the control group and treatment groups consisted of birds fed basal diet supplemented with 0.2, 0.4, or 0.6 g/kg QS. Results: With the increase of the QS dosage, body weight gain during days 0 to 7 (p = 0.021), 7 to 21 (p = 0.010), and 1 to 35 (p = 0.045), feed intake during days 0 to 7 (p = 0.037) and 1 to 35 (p = 0.025), apparent dry matter digestibility (p = 0.008), apparent energy retention (p = 0.004), cecal lactic acid bacteria counts (p = 0.023), the relative weight of breast muscle (p = 0.014), pH value from breast muscle (p<0.001), and the water holding capacity of breast muscle (p = 0.012) increased linearly, whereas the drip loss from breast muscle (p = 0.001) decreased linearly. Conclusion: The addition of QS in the diet of broiler chicks had positive effects on the breast muscle yield and breast muscle quality, and improved the dry matter digestibility and energy retention by increasing cecal beneficial bacteria counts, thus improving growth performance.
To find out the optimum mixture ratio of ammonium and nitrate on rice plant, 4 rice varieties were examined during 14days after transplanting in hydroponics with the different ratio of ammonium to nitrate(100 : 0, 75: 25,50: 50, 25: 75 and 0: 100). The highest N uptake from solution and the maximum plant dry weight were $60\~70\%$ ammonium and $30\~40\%$ nitrate mixture treatment both in Japonica and Tongil type rice plants. And with the same varieties N-uptake and N use-efficiency were compared between 10.0 mM and 1.0 mM nitrogen using $70\%$ ammonium and $30\%$ nitrate for 24 days after transplanting. Rice plants absorbed more nitrogen$(131\~145\%)$ in 10.0mM than 1.0mM treatment but accumulated N in rice plants were almost the same in both treatment. Among the tested rice cultivars, dry matter production and total accumulative nitrogen in rice plants were much high in Tongil type than japonica type rice cultivars. N-recovery ratios of rice plants from uptake N were $90.8-99.0\%$ in low concentration N solution(1.0 mM), but $69.4-81.7\%$ were observed in high concentration N solution(10.0 mM). It means that suppling low concentration N steadily will be better to prevent loss of N without reducing of growth in rice plants.
In order to observe an effect of the components of rice straw on the utilization of nutrient in chicks, the rice straw of 100g were digested in 800$m\ell$ of distilled water or 0.25N NaClO$_2$ at 135 C and in the pressure of 3.2kg/$\textrm{cm}^2$ by autoclave during 30, 60 and 120 minutes (water or NaClO$_2$-30, 60 and 120- RS). The contents of neutral detergent fiber(NDF), acid detergent fiber (ADF) and lignin were analysed in the washed and dried rice straw meal. Hatched single comb white Leghorn male chicks were fed with a commercial chick mash for the first 10 days and five kinds of experimetal diets for the next 8 days which contained 17.0% of wheat bran (basal), cellulose(cotton meal), nontreated RS, water-30-RS and NaClO$_2$ 30-RS, respectively. The water-30, 60 and 120-RS baa leased 9.7, 12.1 and 13.3% of dry matter, respectively, while NaClO$_2$-30-RS had similar contents of dry matter loss with those of water-30-RS, and NaClO$_2$-60 and 120-RS had tossed 1.5 times of dry matter comparing with those of water-60 and 120-RS, respectively. And the dry matter loss of the water-RS or NaClO$_2$-RS was mainly originated front the extractable cell contents and hemicellulose of the non-treated RS. Birds fed water-30-RS diets had higher body weight gain and lower feed conversion than those of birds fed non-treated and NaClO$_2$-30-RS diets during 8 days of experimental feeding. Also nitrogen balance and retention rate of birds fed water -30-RS was higher comparing with those of birds non-treated and NaClO$_2$-30-RS. And digestibility of crude fat had been shown a highering trend in birds water-30-RS. The rate of metabolizable energy (MEn) to gross energy (GE) of birds fed non-treated RS, water-30-RS and NaClO$_2$30-RS diets were 71.9, 72.9 and 70.4%, respectively, and energy intake per metaboic body size (kg 0.75) were reached to 307.3, 296.2 and 291.4 kcal per day, respectively. And daily protein retention per kg 0.75 were 1.647, 1.969 and 1.560g, respectively. Then 30.56kcal of MEn required for 1 g of protein retention in birds fed water-30-RS, which was lower thu 36.90 and 37.56 kcal of birds fed non-treated and NaClO$_2$-30- RS, respectively. The results seems to indicate that non-treated rice straw had a substance or characters which affect the energy unilization or protein retention of diets and which will be eliminated by boiling in water.

A field experiment was carried out to determine the effects of mechanical and chemical drying agents at mowing on the field drying rate and hay quality of orchardgrass dominant pasture plants. The mower conditioner /chemical drying agent ($K_2CO_3$ 2% conditioning, $K_2CO_3$ 2% + conditioning and control) were treated at different harvest stages (late boot, heading and bloom stage) for hastening hay manufacture in 1996. After field dry, four square bales were made by hay baler, and the visual estimation and nutritive value of hay were evaluated after storing two months. The field drying rate of pasture plants was higher with delayed stage of harvest, and mechanical and mechanical + chemical, but chemical alone was very low. In mower conditioning, the duration of field dry was shortened by 0.5 to 1 day compared with $K_2CO_3$ and 1.5 to 2 days compared with control. The dry matter loss of hay was reduced by late harvest and mechanical, and mechanical + chemical, but the score by chemical alone was very low. The visual score (leafiness, green color, odor and softness) of hay after storage was high in mechanical and mechanical + chemical, but the score by chemical alone was very low. Nutritive value (ADF, NDF, digestibility, and relative feed value) of hay was also high with treatment of mechanical and mechanical + chemical, but the quality by chemical alone was similar compared with control. The quality of hay was very low when harvested at bloom stage. In conclusion, mower conditioning can enhance the field drying rate of orchardgrass dominant pasture plants, however the drying efficiency of chemical drying agent was very low. Harvesting at early heading to heading stage was recommened for manufacture of high quality hay.

Crimson clover, a legume crop, is a landscape crop and green manure crop that can be sowing in spring and autumn. Its red flower blooms in May, and serves various roles such as landscape composition, weeds suppressing, prevention of soil loss and nutrient on sloping land and supplying nitrogen and organic matter in soil. Thus, in order to utilize this crop in agriculture land, we evaluated the growth characteristics of crimson clover cultivated in four different soil textures, sand, sandy loam, loam, and clay loam. The nitrogen content of crimson clover was 15.8 g kg-1 and C/N rate was 20.3. Its growth was good in sandy loam and loam. Its plant height was 42.5 cm in sandy loam and 49.5 cm in loamy, respectively, which are approximately 20 cm longer than the sand and clay loam. The crimson clover in sandy loam and loam bloomed about seven days earlier than those in sand and clay loam. Regarding number of flower per hill and flower length, there were no difference between soil textures. Dry weight of crimson clover was 2.5 Mg ha-1, 2.3 Mg ha-1 each in sandy loam and loam. Therefore, it was approximately 0.8 ~ 1.1 Mg ha-1 higher than dry weight of sand and sandy loam. Plant height and dry weight of crimson clover was increased late harvest time. Nitrogen contribution were higher in loam and clay loam, when it was respectively 51.3 kg ha-1, 53.5 kg ha-1. Therefore, according to flowering properties and dry weight, the growth and development of crimson clover was finest in sandy loam and loam.
Degradation of rice straw was observed to be higher (p<0.01) in the buffaloes than in cattle. At 48 h, the dry matter (DM) loss of straw for buffaloes was 53.6 0.8% and that for cattle was 48.7 2.6%. Palm press fibre (PPF) was poorly degraded in the rumen of both animal species. A loss of about 21% DM was observed in both cattle and buffaloes after 48 h of incubation in the rumen. The pattern of bacterial and fungal colonization of straw and PPF seemed to be similar in both cattle and buffaloes. Microbial colonization was restricted by plant structures like the silica crystals in both straw and PPF. The predominant bacteria colonizing both straw and PPF fragments were the rods. Eroded zones and digestion pits were pronounced in straw fragments after 1 h of incubation. The PPF fragments appeared undegraded even after 6 h of incubation. Fungal colonization of straw was rapid and extensive in both cattle and buffaloes. The sporangia observed in straw were mainly spherical or oval in shape, but fusiform sporangia with acuminate tip were predominantly seen in PPF fragments.

A total of 240 crossbred(Landrace ${\times}$ Yorkshire ${\times}$ Duroc) pigs were housed from 70 kg live weight and slaughtered at weights of 95, 105, 115 and 125 kg. The left side loins of carcass were obtained at 24 hr postmortem to measure pork quality. There were significant differences(p<0.01) in eye muscle area of pork loins between the slaughter weights of 95 and 105 kg. However, no differences were observed in pork than 105 kg of slaughter weight. Ultimate pH values were decreased with increasing slaughter weight and cooking loss was also reduced(p<0.01) at the heavier weights. Slaughter weights did not affect the shear force and intramuscular fat. However, dry matter(DM) and crude protein(CP) contents of loin were increased, and cooking loss and sarcomere length were decreased with increasing slaughter weight. The lightness(L$^{*}$) and redness(a$^{*}$) of pork loin were increased with increasing slaughter weight. Results suggested that pork quality may be improved when pig slaughter weight is increased from 95 to 125 kg.

The influence of fermented red ginseng (FRG) and red ginseng extract (RGE) on the growth, nutrient digestibility, and meat quality of growing-fattening pigs was evaluated in the present study. In total, 120 growing-fattening crossbred pigs with a bodyweight of 21.77 kg (SE1.88) were allocated to 3 treatments with 8 repeats of 5 pigs (2 boars and 3 gilts) for a 22-week experimental period. The pigs were supplemented with a basal diet (CON group) or a basal diet containing 0.1% FRG or 0.1% RGE. Pigs fed the FRG diet had a higher (p < 0.05) average daily gain (ADG) from days 1 to 42 and during the whole period. The apparent nutrient digestibility of dry matter (DM) and nitrogen (N) was improved (p < 0.05) in the FRG treatment in week 6 and that of DM in week 10. Moreover, the drip loss of the meat from the FRG pigs was reduced (p < 0.05) on days 1, 5, 7, and 9. Taken together, this study revealed that the supplementation of 0.1% FRG in the diet improved the ADG and the apparent nutrient digestibility of DM and N and decreased the drip loss of the meat. However, the addition of RGE did not affect the growth of the growing-fattening pigs.
