Moisture Sorption Isotherm Characteristics of Chaga Mushroom Powder as Influenced by Particle Size

  • Adsorption isotherms for chaga mushroom powder as influenced by particle size were investigated using a gravimetric technique. Samples were equilibrated in desiccators containing sulfuric acid solutions of known water activity (0.11-0.93), then placed in temperature-controlled chambers for approximately ten days. Equilibrium moisture content (EMC) of chaga mushroom powder increased with water activity in all samples. EMC was slightly greater in the samples comprised of smaller particle size, however there was no marked difference in appearance between the three samples. The chaga mushroom powder exhibited Type II behavior. When the BET model was used to determine mean monolayer values, 0.077, 0.077, and 0.070 $H_2O/dry$ solid was observed for <250, 250-425, and $425-850\;{\mu}m$ sized samples, respectively, however mean monolayer values were 0.121, 0.111, and 0.101 $H_2O/dry$ solid, respectively, when the GAB model was used. The experimental EMC values were related to the computed values from Henderson's model. The coefficient of determination and standard error for the linear regression were 0.997 and 0.003, respectively.

Quality of Dry Noodle Prepared with Wheat Flour and Immature Rubus coreanus (Bogbunja) Powder Composites (미숙복분자 분말을 첨가한 건면의 품질특성)

  • Dry noodles were prepared with wheat flour and immature Rubes coreanus (Bogbunja) powder, and the effects of added immature bogbunja powders on dough rheology and noodle quality were examined. Particle size distribution of immature bogbunja powder ranged from 0.04 to $500\;{\um}m$, which was different from that of wheat flour. The initial pasting temperature, peak and final viscosities as well as setback increased in amylograph with the increase of immature bogbunja powder. The water absorption and dough development time increased, but the dough stability decreased in farinograph with the increase of immature bogbunja powder. Decrease of L and b values and increase of a value were shown with the increase of immature bogbunja powder in wheat flour-immature bogbunja powder composite as well as dry noodles. The cooked weight and volume of noodles decreased, but the cooking loss increased with the addition of immature bogbunja powder. Most of texture parameters (hardness, cohesiveness, chewiness, gumminess and tension) of cooked noodles decreased with the addition of immature bogbunja powder. From the result of sensory evaluation, dry noodles containing 1 and 2% immature bogbunja powder were rated as higher quality dry noodles than the others.

Quality Characteristics of Sponge Cake added with Mesangi(Capsosiphon Fulvescens) Powder (매생이 분말을 첨가한 스폰지 케이크의 품질특성)

  • This study was carried out to investigate the quality characteristics of sponge cake with mesangi(Capsosiphon fulvescens) powder added to give a control 0(control), 2, 4, 6 and 8% by weight per wheat flour. The crude protein was 33.37% for mesangi on a dry basis. Batter specific gravity, viscosity and baking loss increased with increasing mesangi powder content, whereas the specific loaf volume tended to decrease. Values of L and B decreased with increasing mesangi powder content while a value was minimized for the 4% mesangi powder. Hardness, cohesiveness, springiness, gumminess, and brittleness of sponge cakes with added mesangi powder content. The sensory tests indicated that aircell uniformity, firmness, sweetness and overall preference were not affected by the addition of 2 and 4% mesangi powder compared to control. Therefore, the addition of 4% mesangi powder to sponge cake was suggested as bing suitable to improve the quality.

Development of Calcium Enriched Healthy Snack using Dried Shrimp (건조새우를 이용한 칼슘강화 건강다과 개발)

  • In this study, we developed a healthy snack using dried shrimp powder which is rich in calcium to help prevent bone disease. Different types of yanggaeng were prepared with varying ratios of dried shrimp powder; 1%, 3%, 5%, and 7%. Moisture content, color value, texture properties, and mineral concentration were measured. The L, a, and b chromaticity values showed significant differences in the 5% addition group (p<0.001). The texture properties, hardness, and adhesion decreased significantly as the amount of shrimp powder increased (p<0.001), while chewiness and elasticity significantly increased as the amount increased (p<0.001). Calcium and potassium increased significantly as the amount of shrimp powder increased (p<0.001).

Characterization of pork patties containing dry radish (Raphanus sativus) leaf and roots

  • Objective: This study investigated the effects of dry radish leaf and root on the quality of pork patties during refrigeration storage. Methods: The patties were divided into the following three groups: the control containing 0% dry radish leaf root powder, RL1 containing 0.5% dry radish leaf root powder, and RL2 and RL3 containing 1% and 2% dry radish leaf root powder, respectively. Proximate composition, pH, cooking loss, microbial analysis, lipid oxidation analysis, color, texture profile analysis and sensory test were performed. Results: Moisture, crude protein, and crude ash contents in RL2 and RL3 were significantly higher than those in other groups (p<0.05), whereas crude fat contents in RL2 and RL3 were significantly lower than other groups (p<0.05). Lightness was significantly lower in RL2 and RL3 than in CON (p<0.05). Cooking loss for RL2 and RL3 were significantly lower than those for the other groups (p<0.05). The pH, thiobarbituric acid levels, and total plate counts of RL2 and RL3 were significantly lower than those of CON at days 7 and 14 (p<0.05). Hardness values of RL2 and RL3 were significantly lower than those of CON, whereas chewiness values were higher than those of CON (p<0.05). In addition, the juiciness of RL2 were significantly greater (p<0.05) than those of the other groups. Conclusion: Dried radish leaves and roots improved the proximate composition and quality characteristics of pork patties, providing a basis to produce high-quality patties with extended expiration dates. Thus, dried radish leaves and roots are effective ingredients for health or functional foods.

Mechanism of improving quality of dry-aged pork loins in scoria-containing onggi, Korean earthenware as a storage container

  • Objective: Many scientists have investigated solutions to reduce microbiological risks in dry-aged meat after the dry-aging technology was revived for high quality and value-added premium meat product in the market. This study aimed to investigate the effect of scoria powder in onggi (Korean earthenware) on the meat quality of pork loins during 21 days of dry aging and to elucidate its mechanism of action. Methods: The pork loins were randomly divided into three groups: aged in vacuum-packaging, onggi containing red clay only (OR), and onggi containing 30% red clay and 70% scoria powder (OS). Microbial analyses (total plate count and Lactobacillus spp.) and physicochemical analyses (pH, shear force, volatile basic nitrogen [VBN], water activity, 2-thiobarbituric acid reactive substances, water content, water holding capacity, cooking loss, and color analysis) of aged meat were conducted. Far-infrared ray emission, quantification of immobilized L. sakei and microstructure of onggi were investigated to understand the mechanism. Results: On day 21, the meat aged in OS exhibited lower pH, shear force, VBN, and water activity than those aged in OR, along with an increase in the number of Lactobacillus spp. OS had a smaller pore diameter than OR, implying lower gas permeability, which could promote the growth of L. sakei. Conclusion: OS improved the microbiological safety and storage stability of pork loin during dry aging by increasing number of Lactobacillus spp. possibly due to low permeability of OS.

Effects of Food Waste Mixed Organic Fertilizer Treatment on Growth and Yield of Capsicum annuum

  • The global population is increasing every year, and the amount of food waste is also increasing. Direct landfilling of food waste has been prohibited since 2005, and in accordance with the London Convention in 2013, the discharge of livestock manure, sewage sludge, and food waste into the sea is prohibited. In the case of incineration to treat the discharged food waste, the heat point is lowered due to the moisture in the food waste itself, so fuel must be added. Therefore, this study was conducted to get basic data for setting the limit of application by investigating the growth and yield of crops after treating food waste dry powder mixed fertilizer (MF) on red pepper. In the experiment, continuous cultivation was carried out for two years in 2021 (1st year) and 2022 (2nd year). The treatment groups were set as Not Treatment (NT), Chemical Fertilizer (CF), Mixed Fertilizer (MF), Mixed Fertilizer×2 (MF×2). After harvest, crop growth and yield were investigated. As a result of the 1st years of growth survey, CF, MF, MF×2 show significant difference in shoot length compared to NT. About fresh weight and dry weight, CF show significant difference compared to NT. The 2nd years of growth survey, the shoot and root length, fresh weight did not show significant difference with NT. In case of dry weight, MF is significant increased compared to NT. As a result of the yield survey of the 1st year, all treatment groups did not show a significance in yield compared to the NT. In case of 2nd year, all treatment groups show significantly increased value compared to NT. The yield of MF was highest among the treatment groups. In the future, it is thought that it is necessary to quantitatively evaluate the effect of food waste dry powder mixed fertilizer through additional experiments and continuous cultivation, and to establish an appropriate amount of use and establishment of a manual based on this.

Preparation of Laver Powder and Its Characteristics (김분말의 제조와 특성)

  • Effect of drying methods, such as natural solar drying, hot air drying$(at\;60^{\circ}C\;and\;105^{\circ}C)$, vacuum drying and freeze drying methods, on the quality of laver were investigated to develop optimum processing conditions for preparation of laver powder. Appreciable amount of laver pigments such as chlorophyll, carotenoid and phycobilin were lost during washing and drying process. Their loss was affected significantly by the method of drying. Among the methods tested, high temperature air drying was the worst in retaining laver pigment, while freeze drying was the best. Loss of vitamin C which was in the range of 75-99% was also affected by the method of drying. Isotherms for laver powder shelved sigmoidal shape and monomolecular layer moisture content of both laver powder(Porphyra dentata and Porphyra tenera) determined by the BET equation was 6.30%(dry basis). Laver powders prepared with Porphyra dentata and classified with 50-, 80- and 100- mesh sieves showed monomodal size distribution with the high frequency at 110-120, 100-110 and $80\;{\mu}m$, respectively, which indicated that size or laver powder was homogeneous.

Characteristics of Sweet Potato Powders from Eight Korean Varieties (한국산 8 품종 고구마분말의 특성)

  • Sweet potato powders made from eight Korean varieties, including purple-fleshed, orange-fleshed, and commercial dry type sweet potatoes, were investigated for physicochemical and pasting properties to develop processed food. Crude protein and lipid contents of Shinjami and Borami were higher than those of other varieties. The lightness value of raw sweet potato flesh was the highest value in Shinchunmi, and the lowest in Shinjami. Using the color difference (${\Delta}E$), color similarities compared to the white plate occurred in the following order; purple-fleshed > orange-fleshed > commercial dry type sweet potatoes. Total and damaged starch contents were significantly different (p<0.05). Total starch content of sweet potatoes was higher in commercial dry sweet potatoes (61.89-70.46%), particularly Shinchunmi (70.46%) but lower in orange-fleshed sweet potato (48.87 and 49.53%, respectively). Water binding capacity of Yeonwhangmi, swelling power and solubility of Shinyulmi were the highest values (174.70, 25.54 and 87.49%, respectively) among them (p<0.05). But oil absorptions of Shinyulmi and Shinchunmi showed lower values (97.08 and 97.54%, respectively). All sweet potato powders had an A type x-ray diffraction pattern. The initial pasting temperatures of sweet potato powders ranged from 69.50 to $75.95^{\circ}C$ and the amylolytic enzyme in sweet potato powder lowered pasting viscosity.

Development of Restructured Chicken Thigh Jerky Added with Red Pepper Seed Powder (고추씨 분말을 첨가한 닭다리살 재구성 육포 개발)

  • This study aimed to investigate the effects of red pepper seed powder on the physicochemical properties (pH, CIE color value, water holding capacity, dry yield, proximate composition, and shear force) of restructured chicken thigh jerky. The restructured chicken thigh jerky samples were prepared with the following amounts of red pepper seed powder [0% (control), 1%, 2%, and 3%]. Moisture contents of samples containing red pepper seed powder were significantly higher than those of control (P<0.05). The lightness, redness, and yellowness of samples an increased with an increase in red pepper seed powder. Water holding capacity and dry yield of samples increased with increasing concentration of red pepper seed powder. However, shear force of samples showed a downward trend with increasing red pepper seed powder level. The sensory evaluation of samples containing 3% red pepper seed powder were highest. The results indicate that red pepper seed powder could be enhance the physicochemical properties of restructured chicken thigh jerky.
