The awareness of ritual foods in general rituals were surveyed and compared in the Gyeonggi and Gyungsangbuk-do areas in order to identify the characteristics of Korean rituals and establish desirable ritual foods. As materials for "Jeon" (fried pan cakes) in rituals, fish fillets, meat and vegetables were largely used in the Gyeonggi region. In the Gyeongbuk region, all three of these ingredients were the most highly used for "Jeon" also. In the case of rice cakes, "Songpyun" steamed on a layer of pine needles, "Jeolpyun" and "Sirudduk", with a red beans, were mostly used in Gyeonggi-do, while "Songpyun", "Jeolpyun" and "Ingelmi" were largely used in Gyeongsangbuk-do. As seasoned vegetables and herbs, fernbrakes, root of bell flowers, green bean sprouts and bean sprouts were largely used in Gyeonggi-do region, whereas, fernbrakes, bean sprouts, root of bell flowers and spinaches were mainly used in Gyeongbuk region. The use of fernbrakes was highest in both regions. With regard to the number of side dishes, 2∼3 kinds of seasoned herbs and 3∼4 kinds of fruits were mostly used, but with slightly higher numbers in the Gyeongsangbuk-do than the Gyeonggi-do region. With regard to liquor used for rituals, clear strained rice wine was used most in the Gyeonggi-do area, while more unrefined rice wine was used in the Gyeongbuk region. Meat was the most used ingredient in broth slices of dried meat and cod were highly used in the Gyeonggi region, but slices of dried squid were most widely used in the Gyeongbuk region. Most households in both regions tended not to use raw fish in the rituals, and as for the ingredients of Korean Kabobs, meat was the most widely used, then fish and finally vegetables were the most used ingredients. Beef soup was the most used, but more green vegetable soup was used in the Gyeongbuk than the Gyeonggi region. Sweet drink made from fermented rice (sikhe) was generally used in the rituals. It was the most widely used in the Chusok-Hangawi Ritual in the Gyeonggi region, while it was used in the New Year's Ritual in the Gyeongbuk region.
The list of monthly offering items of the Chunshin(薦新) ceremony, the service of offering the first food product of year to ancestors, shown in the Walryong(月令) in Oreaeui(五禮儀), the book written in early years of the Chosun dynasty, was studied and classified by food group. Six kinds of the cereals and grain products - barley, wheat, an early-ripening rice plant, a barnyard millet, and millet seed were offered. The meat products offered were wild geese, pheasants, swans, hares and dried-pheasants. Though not shown in e Walryong, roe deer and deer were offered from hunting trips in e winter. Eight kinds of sea-fish, six kinds of fresh-water first and six kinds of other seafood such as crab, octopus, and squid were offered. Ten kinds of vegetables: bamboo shoots, e99plants, cucumbers, etc. - were offered. Eleven kinds of tree fruits - cherries, apricots, Pears, etc., seven kinds of citrus fruits - tangerines, citrons, etc., seven kinds of nuts - chestnuts, pine-nuts, etc. and two kinds of melons - watermelons etc. - were offered. This study was performed to investigate the related dietary factors associated with hypercholesterolemia in postmenopausal Korean women. The study sample comprised 455 postmenopausal women aged40 $\leq$ < 65. The hypercholesterolemic (serum cholesterol $\geq$240mg/dl group (N = 82) showed significantly higher BMI and waist circumference compared to the normal group (N = 373). However, both group did not show any significant difference in energy intake but hypercholesterolemic group demonstrated significantly lower intakes of fat and vitamin A with higher intake of vitamin C. Significant dietary factors associated with the higher risk of hypercholesterolemia included consumption frequencies of light color vegetable more than 3.79times/day (OR = 4.62 ; $95\%$ CI : 2.96 - 7.22), dried squid more than 0.08time/day (OR = 1.63 ; $95\%$ CI : 1.13 - 2.35), and beer more than 0.03time/day (OR = 1.57 ; $95\%$ CI : 1.01-2.43). Whereas consumption frequency of yellow and green leafy vegetables more than 1 time per day was associated with the significantly lower risk of hypercholesterolemia (OR = 0.06 ; 95 CI : 0.038 - 0.101). 식생활과 밀접한 관련이 있는 식품인 멸치, 새우, 북어 등 건포류 총 10종에 대한 중금속 오염 실태를 파악하여 식품 위생학적 안전성을 조사하고자 수은, 납, 카드뮴, 비소 등을 대상으로 그 함량을 분석하였다. 건포류 총 189건의 시료에 대하여 유도결합플라즈마분광광도계(ICP) 및 수은분석기 등을 이용하여 분석한 결과를 요약하면 다음과 같다(Mean${\pm}$SD (range), mg/kg). 건포류 평균 중금속 함량은 수은 $0.058{\pm}0.069$ (0.002~0.502) mg/kg, 납 $0.178{\pm}0.598$ (ND~5.130) mg/kg, 카드뮴 $0.306{\pm}0.610$ (ND~6.802) mg/kg, 비소 $5.282{\pm}6.158$ (ND~71.760) mg/kg으로 납에서 기준초과로 검출된 두건을 제외하고는 자연함량수준으로 오염의가능성은 없다고 생각된다. 멸치 크기에 따른 중금속 함량은 납을 제외한 수은, 카드뮴, 비소에서 유의적 차이가 인정되었다(p<0.05). 새우와 명태의 형태에 따른 중금속 함량을 비교한 결과는 각 그룹간의 뚜렷한 유의적 차이가 없는 것으로 나타났다(p<0.05). 오징어와 새우의 수입국산간 중금속 함량비교는 오징어의 경우 카드뮴과 비소에서만 유의적 차이가 인정되었고 새우는 수입국산간의 유의적 차이가 인정되지 않았다(p<0.05). 또한 우리나라 국민이 건포류를 통해 섭취하는 수은, 납, 카드뮴 등의 중금속 주간섭취량은 FAO/WHO에서 중금속 안전성 평가를 위해 정한 잠정주간섭취허용량인 PTWI의 1.17~11.52% 수준으로 안전한 것으로 판단된다.
알루미늄 등 중금속 오염이 점점 심화되고 있는 서해안 일부지역에서 포획되고 있는 46종의 어패류 중 알루미늄 함량의 평균은 88.38$\pm$189.03ppm으로 그 범위는 0.97-827.70ppm이었는데 24종의 생선 중 알루미늄 함량은 그 범위가 0.97ppm에서 45.12ppm으로 건실치에 가장 많았고 도미에 가장 적게 함유되어 있었다. 15종의 연체류가 함유하고 있는 알루미늄 함량은 3.40ppm에서 827.70ppm으로 그 차이가 매우 컸는데 복족류인 소라에 3.40ppm으로 가장 적게 함유되어 있었고 이매패류인 대합에 826ppm, 해락에 812.55ppm으로 가장 많이 함유되어 있었다. 7종의 젓갈의 알루미늄 함량은 2.50-295.15ppm으로 그 차이가 컸는데 황새기젓과 한치젓에는 그 함유량이 낮았지만 조개젓과 곤쟁이젓에는 많은 양의 알루미늄이 함유되어 있었다 생선과 연체류 및 젓갈중에 함유되어 있는 알루미늄 함량간의 유의차를 검증한 결과 연체류의 알루미늄 함량이 생선과 젓갈에 비해 유의적으로 높았다(p<0.01), 이는 일생동안 주거지를 크게 움직이지 않는 생육조건을 갖는 이매패류의 특성때문으로 사료된다.
육상생물에 비해 활성물질의 급원으로서 이용율이 낮은 해양생물자원인 해삼(홍삼, 청삼 및 흑삼)에서 당단백질을 추출하여 그 화학성분의 조성을 규명하고 이들의 물리화학적 특성과 식이효과를 실험하였다. 일반 성분의 함량은 종류에 따라 큰 차이가 없으며, 특히 점질다당체의 주성분인 chondrotin sulfate의 함량이 2.6~3.2%를 함유하고 있다. 동결건조해삼분말에서 추출한 당단백질의 유화성과 유화안정성은 동결건조해삼분말 보다 각각 56~77%, 33~71%로 증가하였다. 당단백질은 보수력을 측정하기에 곤란할 정도로 증류수에서의 용해도가 높았으며, 동결건조해삼분말의 보수력은 913.4%(홍삼), 673.5%(청삼) 및 870.4%(흑삼)로 나타났다. 점도는 홍삼으로부터 분리한 당단백질의 점도가 제일 높았으며 청삼과 흑삼은 유사하였다. 해삼에서 분리한 당단백질의 구성아미노산은 홍삼이 청삼 및 흑삼에 비해서 전체 단백질에 차지하는 구성아미노산의 비율이 높은 편이었으며(홍삼 96%, 청삼 91.6% 및 흑삼 88.2%), 각 당단백질의 Asx와 Glx는 모두 10%이상을 차지하였고, 특히 histidine이 2% 이하의 낮은 결과를 보였다. 동결건조분말에 비해 당단백질의 valine, phenylalanine 및 lysine의 함량은 모두 약 2배 증가하였는데 비해 glycine은 약 60~70%, Arg은 약 40% 감소하였다. 동결조건해삼분말 중 청삼과 여기서 추출한 당단백질을 몇종의 단백질 식품(casein, 분유, 콩단백추출 및 오징어)에 여러 가지 비율로 첨가시켜 소화율의 저해효과를 보았을 때 casein, 분유, 콩단백질추출물의 소화율이 3.5~6%와 4.5~11.4%의 저해효과를 보았으나 오징어 단백질에 대해서는 모두 큰 저해효과가 없었다.
연구목적: 4종 구치용도재관(Full-porcelain-occlusal-surfaced PFG, Half-porcelain-occlusal-surfaced PFG, Empress 2, Ice Zirkon)과 선별된 한국음식의 fracture load와 dynamic cyclic load를 측정하여 구치용 도재관에 파절을 일으킬 가능성이 있는 한국음식을 선별하는데 있다. 연구재료 및 방법: 4종의 각 porcelain 보철물 system 당 15개의 축대칭을 이루는 crown을 제작했다. 이때 occlusal reduction은 1.5-2.0 mm로 했다(중심부 1.5 mm, 교두부 2.0 mm). 각 15개의 시편의 교합면 중앙부에 직경 5 mm의 stainless steel ball을 위치시킨 후 Instron 4465 universal testing machine(Instron, Norwood, MA USA)을 이용하여 5 mm/min의 crosshead speed로 수직 부하를 주어 파절을 일으키는 최대 부하(N)를 기록했다. 이후, 한국음식 중 삶은 게, 닭(뼈포함), 소갈비(뼈포함), 마른 오징어, 건멸치, 사탕, 호두껍질을 표본으로 설정하고 이들을 파절시키는 최대 부하(N)를 universal testing machine(Instron 4465) 에서 측정하여 기록했다. 각 항목당 15번을 측정했다. 음식물을 파절시킬 때 필요한 최대부하와 각 보철물의 파절저항을 비교하여 한국의 식습관과 도재를 이용한 보철물 파절의 상관관계를 조사하였다. fracture loads는 analysis of variance 와 Post Hoc tests를 이용해서 분석하였다($\alpha$=0.05). 차후에 위에서 얻은 결과를 바탕으로 Hydraulic Dynamic Fatigue Testing Machine(858 Bionix II, MTS systems, Eden Prairie, MN USA)를 이용하여 4종의 각 porcelain 보철물 system당 5개의 crown에 14Hz Cyclic Load를 가하여 crown에 파절을 일으키는 masticatory cycle수를 알아 보았다. Load 수치는 41.0 N(건멸치 파절강도), 169.0 N(마른오징어 파절강도), 382.9 N(닭뼈 파절강도), 2224.8 N(사탕 파절강도)로 설정하였다. 결과: 95% confidence intervals for mean fracture load는 2599.3-2809.1 N(완전도재교합면 PFG), 3689.4-3819.9 N(반도재교합면 PFG), 1501.2-1867.9 N(Ice Zirkon), 803.2-1188.5 N(Empress 2)로 나왔고 95% confidence intervals for dynamic cyclic load on fracture는 instron 상에서 도재보철물에 파절을 일으키지 않은 load인 2224.8 N(사탕 파절강도)와 382.9 N(닭뼈 파절강도)로 실험했을 때, 2224.8 N에서 4796.8-9321.2 cycles(완전도재교합면 PFG), 2224.8 N에서 881705.1-1143565.7 cycles(반도재교합면 PFG), 382.9 N에서 979993.0-1145773.4 cycles(Ice Zirkon), 382.9 N에서 564.1-954.7 cycles(Empress 2)로 나왔다. 결론: 통계학적으로 유의할 만한 차이가 그룹들 간 fracture load에서 나타났다. 한국음식물 중 소갈비(뼈포함)와 사탕(자두맛캔디)은 구치용 도재보철물을 파절시킬 가능성이 있는 음식물로 밝혀졌다. 단일수직부하에서는 파절이 생기지 않는 경우라 할지라도 dynamic cyclic load를 줄 경우 일정 주기 후에 파절이 생기는 결과를 얻을 수 있었다.
BACKGROUND/OBJECTIVES: This study examined the associations between food consumption frequency of Korean adults and self-perceived chewing difficulty, using the food frequency questionnaire (FFQ, 112 items) from 2013-2016 of the Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Subjects were divided into not difficult in chewing (NDC) and difficult in chewing (DC) groups, with 24.17% being classified into DC. Males and females consumed 35 and 37 items less frequently than the other sex, respectively. Due to the remarkable gender difference in food consumption, gender-stratified one-sided survey regression analysis was performed after adjusted for the effect of age, household income, and self-rated health status. RESULTS: Thirty-four items of FFQ were significantly less consumed by the DC group. Females exclusively consumed less beverages and alcohol while males showed the same for fruits and milk·dairy products. Consumption frequency of 8 items such as steamed potatoes·grilled potatoes, stir fried beef, other kimchi·fresh vegetable kimchi, orange, sour pork·pork cutlet, tteokbokki and green tea were significant only in males. In contrast, 17 items including cooked rice with other grains and legumes, boiled egg·steamed egg, Korean cabbage kimchi, banana, and tofu stew·soft tofu stew were significant only for females. Finally, items that showed significance for both were 9 items including loaf bread, ready-to-eat cereal, steamed sweet potatoes·grilled sweet potatoes, stir-fried lotus roots·stir-fried burdock, green laver salad·brown seaweed salads, apples, tomato·cherry tomatoes, squid (raw, dried shredded, boiled, stir-fried), and curd type yogurt. CONCLUSIONS: Findings in this study suggest chewing difficulty may be an important nutritional issue that has to be dealt with for healthful food consumption, with distinct interest of gender.
To know changes of the food preferences and the practice of pica during pregnancy, ninety two women in the latter half of pregnancy were interviewed in April, 1976 at ten medical centers in Seoul. They were average 27.1 years old, and mostly middle class. 83.7% of the total subjects felt the changes of food preferences due to pregnancy within the first trimester. 60.9% had vomiting as well as losing their appetite and 17.3% vomited three or more times daily which might induce difficulties of water and electrolytes balance in body. The preferences about foods, the taste of foods, and various dishes cooked during morning sickness were changed significantly and showed in lower scores of likes and higher scores of dislikes than those before pregnancy. Particularly, cooked rice and kimchi indicated the increase of more than 50% in dislikes. The preferences after the morning sickness were turned back to those before pregnancy. Desire for water through foods like soft drinks, juice, ice cream, and gamju and salty foods seemed to be spontaneous during pregnancy. A majority of the subjects had three meals and no snack had included more snacks instead of meals during losing appetite and thereafter, had more frequent meals and snacks. Superstitions about chicken, squid, and cuttlefish for pregnant women were prevalent. 11.9% tabooed chicken because of harm for fetus. On the contrary, intended higher inclusions of milk, meat and dried small sardines would be helpful to satisfy the increased recommended allowances of calcium and protein for them. The practice of pica was found in 5.4% and rice was the only real item mentioned. Pica such as amylophagia or geophagia often reported in the U.S. was not answered in this study.
This study was conducted to estimate the safety level of non-cooking and cooking processed foods to propose the sanitary management of foods donated to foodbanks. The time and temperature were measured and the microbial levels of aerobic plate counts (APC), coliforms, E. coli, Salmonella spp., S. aureus, B. cereus, and E. coli O157:H7 were analyzed on ten food items donated to seven foodbanks. The amount of cooked foods donated to each foodbank was about 10 to 40 servings. All foodbanks hired a supervisor and had at least one refrigerator/freezer and one temperature-controlled vehicle, but only four foodbanks had the separate offices to manage the foodbank operation. The flow of donated foods was gone through the steps; production, meal service and holding at donator, collection by foodbank, transport (or holding after transport) and distribution to recipients. After production, the levels of APC of both non-cooking and cooking processed foods were complied with the standards by Ministry of Education & Human Resources Development, and were not increased till distribution. Only the level of coliforms in dried squid & cucumber salad (1.5×$10^3$ CFU/g) was not met the standards. E. coli and other pathogens were not detected in all tested samples. The microbial levels of delivery vessels and work tables were satisfactory, but the APC levels of two of four tested serving tables (6.9×$10^3$ and 5.3×$10^3$ CFU/100$cm^2$) and the coliforms level of one (1.1×$10^3$ CFU/100$cm^2$) were over the standards. The air-borne microflora level in serving room was estimated as satisfactory. It took about 3.0 to 6.5 hours from after-production to distribution and the temperatures of donated foods were exposed mostly to temperature danger zone, which had a high potential of microbial growth. These results imply that a checklist to monitor time and temperature in each step should be provided and the employees involving foodbank operation should be properly educated to ensure the safety of donated foods.

제 5 장 계약 해지 및 이용 제한

② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
