Effects of Dried Persimmon Snacks on Alcohol Metabolism in Men

  • Persimmon has been known to help alcohol intoxication in Korea for a long time and is prepared as a processed food. The effect of dried persimmon snacks on alcohol metabolism was determined in vivo. Eight Korean men (25~27 years old) were administered 3.5 mL/kg of alcohol (22.5%, w/v) with or without a dried persimmon snack (2g/kg). The levels of alcohol in the blood and of acetaldehyde in the blood and the urine were determined by alcoholmeter and assay using alcohol dehydrogenase and HPLC, respectively. All subjects showed decreased levels of alcohol in blood, and six subjects showed a decrease of alcohol in urine after consumption of ethanol with dried persimmon snacks. Concentration of acetaldehyde in the blood an urine decreased significantly in three and five of the eight subjects, respectively. Reduction was more significant for alcohol than for alcohol than for acetaldehyde with administration of ethanol and dried persimmon snacks. This in vivo result suggests that dried persimmon snacks are effective in decreasing th concentration of alcohol after alcohol intake.

Study on the Flavour of Garlic Extract (마늘 추출물의 향기성분에 관한 연구)

  • The volatile components of garlic extracts were investigated. For experiment both crushed- and sliced-garlic were dried by air-drying and freeze-drying methods, followed by ether extraction. The extracts were analysed by GC and GC/MS. Sliced- and freeze-dried garlic extracts showed larger number of volatile components than crushed- and air-dried garlic extracts. The volatile components, allyl propyl disulifde, 2-vinyl-1,3-dithiane, 3-vinyl-〔4H〕-1,2-dithiin, 1,2-Bis (allyl)disulfane were found in sliced- and freeze-dried garlic extracts, methyl allyl trisulfide and 2,4-methyl furane in sliced- and air-dried garlic extracts, and disulfide in crushed- and air-dried garlic extracts.

Development of an Hazard Analysis Critical Control Point (HACCP) Application Model for Dried Anchovy Workplace (마른멸치 작업장의 식품안전관리인증기준(HACCP)모델 개발)

  • This study were attempted to apply the HACCP system adopted in the dried anchovy workplace to ensure the hygiene safety of dried anchovy workplace. In this study, HACCP system procedures, including HACCP team organization, determination of critical control point(CCP), establishment of critical limits, mornitering and verification etc., were established using KFDA 12 procedures. To determine whether hazards were critical elements, we evaluated the likelihood and seriousness of each hazard element. The likelihood of residual microorganism and metal piece exceeding the acceptable limit in dried anchovy products were demonstrated to be a critical hazard element. Management of the boiling(CCP-1B) and metal detection(CCP-2P) were determined to be a critical control point. The standards for acceptable residual microorganism and metal piece were set based on relevant laws and regulations, and then the limits were adapted and established for the CCP. An HACCP plan applicable to dried anchovy workplace was established.

Effects of Processing Conditions and Natural Antimicrobial Materials on Quality of Freeze-dried, Seasoned and Roasted Alaska Pollack (Theragra chalcogramma) (가공조건과 천연항균제의 처리가 황태양념구이의 품질에 미치는 영향)

  • This research investigated the effects of processing conditions and natural antimicrobial materials on quality of freeze-dried, seasoned and roasted Alaska pollack (Theragra chalcogramma). The optimum dipping time and moisture contents of freeze-dried Alaska pollack were 1 sec in $1\%$ salt solution, $48.6\%$ respectively. The freeze-dried, seasoned and roasted Alaska pollack product showed high sensory value. As sterilization time increased over 30 mins in water bath at $100^{\circ}C$ the browning degree of the freeze-dried, seasoned and roasted Alaska pollack product increased. Among various antibrowning agents, $3\%$ corn starch was better in preventing browning than sporix treatment. The freeze-dried, seasoned and roasted Alaska pollack product added with lactate Ca and catechin had the antimicrobial, and the VBN contents of the product showed low level.

Changes in the Constituents of Rehmanniae Radix during Processing (숙지황(熟地黃) 제조 방법에 따른 성분변화에 관한 연구)

  • In order to analyze the changes in the contents of Rehmanniae Radix during processing, the constituents of Rehmanniae Radix Preparata, such as catalpol, 5-HMF and the carbohydrates, were analyzed, The results were: 1. The catalpoI contents of Rehmanniae Radix Preparata remarkably decreased during the 1-4th steps in the processing, and the concentrations of 5-9th Rehmanniae Radix Preparatas were very low. 2. The contents of 5-HMF increased gradually with each additional processing. and the increasing rate in oven-dried Rehmanniae Radix Preparata was greater by about 2-folds than that of sun-dried. 3. Rehmanniae Radix contained a lot of sugars. such as rhamnose, raffinose and stachyose. In the course of the process for sun-dried or oven-dried Rehmanniae Radix Preparata., rhamnose disappeared during the 1-2nd step, but raffinose and stachyose stayed the same. 4. The level of fructose, developed at the first processing step, stayed the same during each additional processing for sun-dried Rehmanniae Radix Preparata. But, the level gradually decreased after the 6th processing step for oven-dried Rehmanniae Radix Preparata.

Kinetics of water vapor adsorption by vacuum-dried jujube powder

  • Water vapor adsorption kinetics of vacuum-dried jujube powder were investigated in temperature and relative humidity ranges of 10 to $40^{\circ}C$ and 32 to 75%, respectively. Water vapor was initially adsorbed rapidly and then reached equilibrium condition slowly. Reaction rate constant for water vapor adsorption of vacuum-dried jujube powder increased with an increase in temperature. The temperature dependency of water activity followed the Clausius-Clapeyron equation. The net isosteric heat of sorption increased with an increase in water activity. Good straight lines were obtained with plotting of $1/(m-m_0)$ vs. 1/t. It was found that water vapor adsorption kinetics of vacuum-dried jujube powder was accurately described by a simple empirical model, and temperature dependency of the reaction rate constant followed the Arrhenius-type equation. The activation energy ranged from 50.90 to 56.00 kJ/mol depending on relative humidity. Arrhenius kinetic parameters ($E_a$ and $k_0$) for water vapor adsorption by vacuum-dried jujube powder showed an effect between the parameters with the isokinetic temperature of 302.51 K. The information on water vapor adsorption kinetics of vacuum-dried jujube powder can be used to establish the optimum condition for storage and processing of jujube.

Quality Changes of Dried Persimmons Depending on Pre-Treatment and Packaging Materials during Storage (전처리와 포장재에 따른 곶감의 저장 중 품질변화)

  • To investigate the effects of pre-treatment and packaging materials for dried persimmon during 6 month storage, the citric acid, salt, xylitol, L-cystein was pre-treated on dried persimmon, and then packed with LDPE film($0.06\;{\mu}m$) and N/LDPE($0.06\;{\mu}m$). The rate of moisture contents, browning, fungi and weight loss of dried persimmon pre-treated with citric acid, salt, xylitol, L-cystein were changed a little in N/LDPE, but were highly changed in LDPE. The commodity of dried persimmon packed with N/LDPE was also higher than that of LDPE.

Physicochemical Properties and Shelf-Life of Regular-Fat Sausages with Various Levels of Grape Tomato Powder Prepared by Different Drying Methods

  • This study was aimed to investigate the physicochemical properties, texture, and antioxidant, and antimicrobial activities of regular-fat sausages (RFSs) mixed with 0.25 and 0.5% of oven-dried and freeze-dried grape tomato powder (GTP, 150 ㎛) during storage at 4℃. RFSs were made by six treatments that included: control (CTL), REF (sausages with 0.1% ascorbic acid alone), F1GTPSs (F1) and F2GTPSs (F2) (sausages with 0.25% and 0.5% freeze-dried GTP), and O1GTPSs (O1) and O2GTPSs (O2) (sausages with 0.25% and 0.5% GTP oven-dried at 100℃). Sausages with added oven-dried grape tomato powders (OGTPs) showed decreased pH, lightness (L), total plate count (TPC), and thiobarbituric acid-reactive substances (TBARS) compared to the sausages mixed with freeze-dried GTP (FGTPSs), but also had the highest redness (a) and yellowness (b) values among the treatments. With increasing levels of GTP, the hardness and chewiness of the sausages gradually decreased and these were decreased more in the FGTPSs (F) than in the OGTPSs (O). Compared to the FGTPSs, OGTPSs had higher antioxidant and antimicrobial activities, which extend the shelf-life of meat products. Application of OGTP to RFSs resulted in higher lipid antioxidant, antimicrobial activities, improving physicochemical properties and extended the shelf-life.

Drying Experiment of Borate Waste and Characteristics of Dried Products (붕산함유폐액의 건조와 건조물의 특성)

  • An experiment was conducted to determine the reaction of boric acid with lime and the drying of its product using a reactor-dryer. no characteristics of dried products were observed. The major chemical species of dried Products was calcium borate of 2CaO.B$_2$O$_3$. From the particle size distribution of the dried products, it was found that quick lime was better than slaked lime as an additive. The Ca/B mole ratio of reaction was determined to be 3/4 considering the cohesion and agglomeration properties of dried products. The flowability of dried products up to 8 wt% of water content was acceptable for transport process and to reduce drying time.

Sterilization and storage of dried fishes by irradiation (방사선에 의한 건어물의 살균 및 저장에 관한 연구)

  • The effect of irradiation at dose of 3~10 kGy on the extension of the shelf-life of sliced dried squid and dried file and on its quality were investigated during nine months of storage at room temperature. The number of microorganisms, TBA value and TMA-N content were used as objective indices concerned to the sensory evaluation. In the number of initial microbial loading, total bacterial count of sliced dried squid and dried file fish were $2.7{\times}10^{8}\;and\;2.0{\times}10^{5}$, yeast and mold were $5.7{\times}10^{5}\;and\;6.2{\times}10^{5}$ and coliform group were $2.1{\times}10^{5}$ and above 10 per gram of the samples, respectively. The number of total bacteria was sterilized by 99% with irradiation of 3~10 kGy and irradiation of above 7 kGy was shown to be effective for the radurization of yeast, mold and coliform group. TBA value of irradiated groups were higher than storage time. The TMA-N content of nonirradiated group was markedly increased by microbial spoilage during storage, however above 8 kGy irradiated group were indicated about 10 mg% after nine months storage. In the sensory evaluation, the nonirradiated group was off favor after three months storage and was changed in color of dried fishes but 7~10 kGy irradiated group were maintained good qualit compared with those of fresh samples after nine months storage at room temperature.
