Analysis of halitosis components following by subjective cognition of halitosis and oral state (주관적인 구취인식도와 구강환경에 따른 구취성분과의 관계 분석)

  • Objectives : This study was performed analysis of Halitosis components following by subjective cognition of halitosis and Oral State in order to provide basic data for halitosis prevention and establish a device to efficiently eliminate halitosis and analyze the factors that affect the halitosis. Methods : 80 adults were participated who visited at the Dental Clinic in Kyoung-gi do, on the period of the March to September in 2010. The obtained results, through the oral examination, halitosis check and interview, Individually, were as followings. Results : According to the ammonia level was a high relationship between sex, CPI, Tongue plaque, DMFT index which were statistically significant (p<0.05). Total oral gas level was a relationship between VAS, tongue plaque, DMFT index(p<0.05). The Correlation coefficient between the Hydrogen sulfide level and Methyl mercaptan was estimated as r=0.534(p<0.01). As for the multiple regression analysis result, there have been selected dimethyl sulfide and Tongue plaque, Gingival index as factors affecting Bridge, Methyl mercaptan level is as factors affecting Hydrogen sulfide level. Conclusions : There was relationship between the periodontal disease and Ammonia gas component, hydrogen sulfide, dimethyl sulfide, methyl mercaptan. Which were statistically significant total oral gas level and oral variables. Such dental caries as the prevention or early treatment of periodontal disease.

Kinetics and Mechanism of the Anilinolysis of (2R,4R,5S)-(+)-2-Chloro-3,4-dimethyl -5-phenyl-1,3,2-oxazaphospholidine 2-Sulfide in Acetonitrile

  • The nucleophilic substitution reactions of (2R,4R,5S)-(+)-2-chloro-3,4-dimethyl-5-phenyl-1,3,2-oxazaphospholidine 2-sulfide (3) with substituted anilines ($XC_6H_4NH_2$) and deuterated anilines ($XC_6H_4ND_2$) are investigated kinetically in acetonitrile at $5.0^{\circ}C$. The anilinolysis rate of 3 involving a cyclic five-membered ring is considerably fast because of small negative value of the entropy of activation (${\Delta}S^\neq=-2cal\;mol^{-1}\;K^{-1}$) over considerably unfavorable enthalpy of activation (${\Delta}H^\neq=18.0\;kcal\;mol^{-1}$). Great enthalpy and small negative entropy of activation are ascribed to sterically congested transition state (TS) and bulk solvent structure breaking in the TS. A concerted $S_N2$ mechanism with a backside nucleophilic attack is proposed on the basis of the secondary inverse deuterium kinetic isotope effects, $k_H/k_D$ < 1.

  • The nucleophilic substitution reactions of (2R,4R,5S)-(+)-2-chloro-3,4-dimethyl-5-phenyl-1,3,2-oxazaphospholidine 2-sulfide with X-pyridines are investigated kinetically in acetonitrile at $5.0^{\circ}C$. The free energy relationships for substituent X variations in the nucleophiles exhibit biphasic concave upwards with a break point at X = 3-Ac. Unusual positive $\rho_X$ (= +4.73) and negative ${\beta}_X$ (= -0.75) values are obtained with the weakly basic pyridines, and rationalized by the isokinetic relationship with isokinetic temperature at $t_{ISOKINETIC}=39.3^{\circ}C$. A concerted mechanism involving a change of nucleophilic attacking direction from a frontside attack with the strongly basic pyridines to a backside attack with the weakly basic pyridines is proposed on the basis of greater magnitudes of selectivity parameters ($\rho_X$ = -6.15 and ${\beta}_X$ = 1.11) with the strongly basic pyridines compared to those ($\rho_X$ = 4.73 and ${\beta}_X$ = -0.75) with the weakly basic pyridines.

Continuous Deodorization of Malodorous Sulfur Compounds Using Immobilized Riohacillus neapolitanuts R-10 (고정화 Thiobacillus neapolitanus R-10를 이용한 유황계 악취물질의 연속제거)

  • Continuous deodorization of malodorous sulfur compounds by Thiobaillus neapolitanusts R-10 immobilized onto a polypropylene pellet was studied using a column reactor at 30$^{\circ}$C. The maximum amounts of immobilized cells was 5.3 gall polypropylene with 5$\times$7.5mm in pellet size, and the amounts of immobilized cells in the higher part of the column was as twice as in the lower part. The optimum pH and temperature for removal of dimethyl sulfide were 6.0 and 30$^{\circ}$C, respectively. When 5-20 ${mu}ell$/l of hydrogen sulfide and methylmercaptan were employed 98% of removal efficiency were achieved. In contrast, lower concentrations of dimethyl sulfide and dimethyldisulfide should be supplied to meet satisfactory deodorization efficiency. The immobilized cell column was successfully operated for the deodorization of mixture of sulfur compounds over 15 days without significant loss of initial activity achieving high efficiency.

  • Fecal malodor is an acute environmental issue to be solved for the intensive animal agriculture in Japan. Among these substances volatile sulfur such as hydrogen sulfide (HS), methanethiol, and dimethyl sulfide, and dimethyl disulfide are the ones most strictly controlled in the Japanese national regulations. In this experiment, we have screened a range of standard strains of chemoheterotrophic bacteria and of the presently isolated soil bacteria for their capacity to decompose HS. We have demonstrated that Comamonas testosteroni $JCM5832^T$ and our isolate Bacillus sp. had a potential to reduce malodor when applied to the pig feces.

Effect of γ-Irradiation on the Volatile Organic Compounds from Leek (Allium tuberosum R.) (부추(Allium tuberosum R.)의 감마선 조사에 의한 휘발성 유기화합물의 성분 변화)

  • Volatile compounds of $\gamma-irradiation$ leeks (Aillum tuberosum R.) were isolated by simultaneous steam distillation and extraction method (SDE) and analyzed by gas chromatography/mass spectrometry (GC/MS) along with the non-irradiated sample. Leeks were irradiated at dose of 20 kGy and non-irradiated samples were considered as control sample. 56 and 54 compounds were identified in non-irradiated and irradiated samples, respectively. These components included the functional groups; alcohols, aldehydes, esters, ketones, N- and S-containing compounds. S-containing compounds such as dimethyl trisulfide, methyl-(Z)-l-proenyl trisulfide, dimethyl disulfide, 3-ethyl-l,2-dithi-5-ene and methyl allyl disulfide were the major compounds. Methyl-(Z)-l-propenyl trisulfide, diallyl trisulfide, (E)-2-hexanal and 3-ethyl-l,2-dithi-5-ene were clearly decreased by the $\gamma-irradiation$, but dimethyl disulfide, diallyl sulfide, allyl methyl sulfide and pyridine were increased by the $\gamma-irradiation$.

Flavor Compounds and Storage Stability of Essential Oil from Garlic Distillation (마늘 정유물의 향기성분 및 저장 안정성)

  • An attempt was made in this study to analyze flavor compounds and investigate storage stability of essential oil from garlic distillation. Optimum ratio of solvent between pentane and dichloromethane to get essential oil from garlic distillation was 2 to 1. The yield of essential oil was 0.35%(w/w) in ground garlic(${\phi}\;0.8mm$) and 0.07%(w/w) in whole garlic. From garlic essential oil six components : dimethyl sulfide, diallyl sulfide, methyl-1-propenyl disulfide, diallyl disulfide, allyl methyl sulfide and diallyl trisulfide were identified with GC and GC/MS, and diallyl trisulfide, diallyl disulfide and allyl mothyl sulfide were found to be major volatile components. Quality deterioration of garlic essential oil hardly occurred during storage for 60 days, at $5^{\circ}C$ and $25^{\circ}C$.

Analysis of Volatile Flavor Compounds in Cow's Milk by Purge & Trap Method (Purge & Trap 법에 의한 국내산 우유 중의 휘발성 향기성분 분석)

  • Purge & Trap method was applied to perform more simple and rapid detection for analysis of volatile flavor compounds in milk. Maximal sampling of 30 mL milk for glass flask sparger was treated by He gas purging for 2 hours. Reported major volatile compounds were detected by GC-MS after 2 hours absorption and desorbed from Purge & Trap equipped with Tenax trap. Volatile flavor compounds were analyzed by Purge & Trap and GC-MS to investigate the changes of flavor components in milk between raw and deodorized milk. Fourteen volatile compounds including acetaldehyde, ethanol, 2-propanone, dimethyl sulfide, isobutanal, 3-methyl 2-butanone, 2-butanone, 3-methyl butanal, pentanal, 3-hydroxy-2-butanone, methyl disulfide, hexanal, and 2 others were detected. Six compounds such as ethanol, dimethyl sulfide, pentanal, 3-hydroxy-2-butanone, and methyl disulfide were completely eliminated after deodorization treatment. Four compounds such as 3-methyl 2-butanone, 2-butanone, 3-methyl butanal, and an unknown compound 81 (M/sup +/) were also decreased after raw milk was deodorized. The other four compounds such as acetaldehyde, 2-propanone, hexanal, and an unknown compound (M/sup +/) were not decreased.

Development of dimethyl sulfide gas CRM and stability test (다이메틸설파이드 가스 인증표준물질 개발 및 안정성 평가)

  • A type of dimethyl sulfide gas CRM in the ppb level was developed for the analysis of trace-level odorous gas in environmental atmosphere. The concentration of dimethyl sulfide ($(CH_3)_2S$) was 10 umol/mol level in the cylinder filled with nitrogen, 1500 psi. And the variability of the concentration for 3 years was about 0.1% due to the adsorption or instability of $(CH_3)_2S$. The gas standards produced simultaneously in 4 bottles and examined by GC-FID were shown with 0.4%, reproducibility of preparation and 0.25%, standard uncertainty due to weighing and purity. The relative expended uncertainty of 1.1% (95% of confidence level, k=2) was assigned to the certified value of 10 umol/mol level of $(CH_3)_2S$ after quantitative evaluation on the purity, mixing, weighing, analysis, adsorption and stability of dimethyl sulfide gas.

  • 열건조식 음식물쓰레기 처리기에서 발생하는 VOC의 분해효율을 향상시키기 위하여 생물여과기를 이용하여 실험하였다. 현장 생물여과기에서 배출되는 휘발성 물질은 총 50여 가지 물질이 검출되었다. 주요 악취 유발물질은 isoprene, dimethyl sulfide (DMS), dimethyl disulfide (DMDS), limonene 등으로 파악되었다. 칼럼 반응기를 이용한 휘발성 물질 분해는 20일 정도의 적응기 후 제거되었으며, 제거 효율은 90% 이상으로 나타났다.
