  • The aims of this study were to assess the quality of breakfast intake and to examine the relation of breakfast intake to the quality of daily diet in Korean school-aged children. The one day 24-hour recall data from the 2001 National Health and Nutrition Survey were analyzed. The sample of this study consisted of 1,600 children aged 7 to 18 years attending elementary, middle, or high schools. By calorie level of breakfast intake, the children were grouped into Breakfast Skippers (0 kcal; n = 268, 17%), Low Calorie Breakfast Eaters (0 kcal < and < 10% of Estimated Energy Requirement (EER); n = 190, 12%), Moderate Calorie Breakfast Eaters (10% ${\leq}$ and < 25% of EER; n = 861, 54%), or Sufficient Calorie Breakfast Eaters (${\geq}$ 25% of EER; n = 281, 17%). General characteristics including weight status and nutritional quality of breakfast and daily diet were compared among the four groups. The average daily calorie intake of Breakfast Skippers, Low, Moderate, and Sufficient Breakfast Eaters were 1,771 kcal, 1,719 kcal, 1,902 kcal, and 2,349 kcal, respectively; they were 86.3%, 85.9%, 98.0%, and 124.9% of EER, respectively. The percentages of students consuming daily diet with protein, vitamin A, $B_1$, $B_2$, niacin, vitamin C, calcium, phosphorus, or iron less than Estimated Average Requirement decreased in the breakfast groups with the higher calorie level of breakfast intake. The Dietary Variety Score of daily diet significantly increased by increasing the calorie level of breakfast intake. The results indicated the quality of daily diet was positively related to the level of calorie intake from breakfast.

  • Effects of varied dietary energy densities on immune response and performance of Muzzafarnagari lambs were ascertained in a 180-d study. Animals (n = 24), in three groups, were fed diets providing 100% (100E), 80% (80E) or 70% (70E) of their metabolizable energy requirement. Mean nutrient digestibilities varied significantly among treatments. Nitrogen intake was lower (p<0.01) in the 70E. Nitrogen retention, was reduced (p<0.001) in 80E and 70E vs 100E. The average daily gain (p<0.001) was $47.01{\pm}4.23$, $13.54{\pm}1.72$ and $-16.67{\pm}8.24$ g for 100E, 80E and 70E, respectively. Hemoglobin concentration, haematocrit, total and differential leukocyte counts were lower (p<0.001) for 80E and 70E than for 100E with a similar trend (p<0.05) for serum glucose and total protein. Serum cortisol was reduced (p<0.001) with decreased energy availability. Antibody titre to Brucella abortus S19 showed an initial reduction in 80E and 70E vs 100E. Delayed-type hypersensitivity response was lower (p<0.001) in 80E and 70E vs 100E, accompanying a lower (p<0.001) nitric oxide production by the peripheral lymphocytes. It is concluded that the reduced dietary energy density significantly affects the growth performance and immune response of lambs.

  • This experiment was conducted to determine the effects of a low-protein diet supplemented with DL-methionine plus L-cystine (Met + Cys) on the growth performance and fat accumulation of female broiler chicks during the growing period (3-6 wks old). A low-protein diet (17% CP; 3,200 ME kcal/kg) was supplemented with Met + Cys (1.1 : 1.0) at levels 0.75, 0.94, 1.25, 1.31 or 1.50% of diet, respectively. Another diet with 21% CP and 3,200 ME kcal/kg served as the control group. All essential amino acids were adjusted to meet the National Research Council (1984) requirement for chicks. Feed and water were given ad libitum. Body weight of the chicks fed the low-CP diets supplemented with Met + Cys were heavier than those of the control birds. Feed conversion ratio and feed intakes were not significantly different between and among the treatment groups. Similary, abdominal fat content was not significantly different among the various treatments except that of the chicks fed the low CP diet with 1.25% Met + Cys which was higher than that of the control group. Fatty acid synthetase (FAS), acetyl-CoA carboxylase (ACC) activities and carcass protein content were not influenced by dietary treatments. Carcass fat content was lowest in chicks fed low CP diet with 0.75% Met + Cys and highest in the group that received 1.50% Met + Cys supplementation. Liver triglyceride increased as Met + Cys supplementation level increased. Various lipid fraction concentrations (cholesterol ester, free cholesterol, and phospholipid) in the serum went up as Met + Cys increased up to 1.25% after which it levelled off. Results of this experiment suggest that it is possible to reduce dietary protein level from 21% to 17% for growing broiler chicks by the supplementation of Met + Cys when other EAA were sufficient.

  • The Purposes of this study were to assess high school students' nutrient consumption at the ordinary time and to analyze nutrient contents and nutrition consumption of lunch. The questionnaires for self-reported food consumption were distributed to 210 students enrolled in a boy's high school and a girl's high school located in Seoul area. A final response rate was 87.1%, excluding responses that had significant missing data. Data of self-reported food consumption and BMI(Body Mass Index) were analyzed with descriptive analysis and t-test using SPSS Win(ver. 12.0). To measure the serving size and the waste amount, data were collected for three meals in a three day period at each school. A weighed plate method was employed to measure plate wastes and consumption of the menus served. Nutrient analyses for the served and consumed menus were performed using CAN-PRO. The result of nutrient intake determined by self-reported food consumption demonstrated 74.2% of boys and 70.0% of the girls did not meet EAR(Estimated Average Requirement) for calcium. In addition, the data collection showed that 60.2% boys and 26.7% girls did not consume EAR for Vitamin B$_1$. Nutrient analyses of the served and consumed menus at school lunch were compared with 1/3 of the Dietary Reference Intakes(DRIs) for this age group. The served menus did not meet 1/3 of the Recommended Intake(RI) for calcium, iron, and vitamin B$_2$. In contrast, the menu provided to students exceeded almost five times(490%) more than the sodium needed for 1/3 of the Adequate Intake(AI). Considering the amount of the students' plate waste, intake of vitamin A and vitamin C were below 1/3 of the RI, and calcium, iron, and vitamin B$_2$ intake were also reduced. Students' sodium consumption still exceeded 1/3 of the AI at 340.0%.

  • This study was performed to determine the iron status of the adolescent Korean girls before and after menarche. The 101 subjects aged 11-13 years who attending in an elementary school in Mokpo were recruited. They were divided into pre-menarche (A) group or post-menarche (B) group based on their menstruation status. The latter subjects were sub-divided into one of the four groups according to the times of their menstruation B-I( $\geq$ 3 times), B-II (4-6 times), B-III (7-9 times) or B-W ( $\geq$ 10 times). In the total subjects, dietary iron intake, 11.3 mg/day, was below the Korean RDA for iron, the percentage of heme iron to total iron intake, 15%, and the bioavailability of dietary iron, 12.3%, seemed to be low. And their body iron storage, 140.8 mg, seemed to be insufficient. However, they tended to meet body's iron requirement in the cell level. Red blood cell number (RBC), hematocrit (Hct), and hemoglobin (Hb) level in the total subjects were 4.5 1012/I, 39.3%, and 13.0 g/㎗, respectively. The subjects in B group had lower (p<0.05) RBC and Hct compared to those in A group and the prevalence of iron-deficiency anemia tended to be high. Serum iron, ferritin, and soluble transferrin receptor (sTfR) and sTfR:ferritin ratio were 86.7 $\mu\textrm{g}$/d, 17.6 $\mu\textrm{g}$/l, 3.58 mg/1, and 230, respectively. Those four indices were not significantly different among the groups. The results of this study imply that, although there a tendency to affect negatively iron status, menstrual blood loss in adolescent females does not deteriorate obviously their iron status during the relatively short period up to 1 you. However, it should be better to improve their iron status after starting menarche by increasing iron intake, especially heme-iron, and enhancing factors for iron absorption.

  • The present study was conducted to evaluate the effects of dietary formulated feed additive on growth performance and carcass traits of Hanwoo steers. A formulated feed additive reported to reduce heat load in the rumen in our previous research was used (Cho et al., 2014). Total 32 herds of Hanwoo steers were assigned into two groups of control and treatment. Total mixed ration was provided as basal diet for cattle and 100 g of additive was supplemented on diet for treatment. Feeding trial was performed during 120 days before slaughter. For growth performance, 3 periods (0~90 days; 90~120 days; 0~120 days) were allotted and average daily gain, feed requirement and final body weight were determined. Loin meat between $12^{th}$ and $13^{th}$ rib was used for meat quality analysis after slaughtering. Only $1^{st}$ period showed significantly improved growth performance of treatment (P<0.05) and there were no significant difference in other periods. At $3^{rd}$ periods (overall), a trend of increased average daily gain was found at treatment (P=0.075). Carcass performance and quality did not show significant differences between treatment and control (P>0.05). In meat quality, treatment showed significant increment in all measured meat colors (P<0.05) and significantly less sharing force compared to the control (P<0.05). Although no significant difference in growth performance and carcass yield were found, remarkably improved economic status was detected in treatment group. In conclusion, it could be suggested that application of a formulated feed additive specialized in reduction of heat load in the rumen was able to increase economical balance through enhancing heat stress condition of ruminant and growth.

  • This study was conducted to evaluate the nutrient intakes and the physical activities of mentally retarded persons (MRPs) accommodated in welfare institutions. A total of 194 cases of MRPs (130 males and 64 females) were surveyed through interviews of the 35 caregivers of the institutions during the period from March 2 to 12, 2005. The mean age of the 2nd degree is the highest, and the duration of institution stay of the 2nd degree is the longest. There were no significant differences in height, weight, but there were still significant differences in BMI by the degree of handicap. The MRPs with the 1st degree handicap consumed less nutrients than the MRPs with 2nd or 3rd degree handicaps, except for vitamins C and E. The mean activity factor was $1.737{\pm}0.422$ meaning 'active'. Among the comparative groups, the activity factor of the 2nd handicap degree MRPs was the highest. Note that the percentage of protein is the lowest in the case of the 1st degree handicap. The intake of the folic acid, in particular, was less than the Estimated Average Requirement (EAR) in case of all the MRPs while that of vitamin C, riboflavin and calcium was less than the EAR in case of $65{\sim}80%$ of the MRPs. MRPs with higher activity factors showed higher intakes of most nutrients except vitamin C. MRPs with higher marks in the 'balanced dietary habit' field showed more nutrient intakes. More consumption of vegetables and fruits by the MRPs was recommended. Also, more efficient dietary guidance was recommended for the MRPs.

  • Two percent of monocalcuim phosphate (MCP) was added to control diet consisted of fish meal (18%), soybean meal (36%) and wheat flour (37%) in order to examine the effects on phosphorus (P) discharge and growth of carp (Cyprinus carpio). Growth trial, during which digestibility measurements were made over 7 days, was conducted for 4 weeks using a recirculated rearing system with a settling column for feces collection. Fishes (initial body weight of about 200 g) were fed five times a day upto satiation with tank controlled at $24-26^{\circ}C$. Fishes fed the diet containing 2% MCP (MCP-2) showed about two-fold improvement on both growth rate and feed utilization, compared to those of fishes fed the control diet; weight gain (129 g vs 62 g), feed conversion ratio (1.20 vs 2.46), protein efficiency ratio (2.09 vs 1.07) and daily growth index (3.70 vs 1.93). However, feed intakes were maintained at the same level (150 g/fish) between the two treatments. Dry matter digestibilities of two diets were relatively low, which were 58 and 60% for respective control and MCP-2 diets due to low digestibility of total carbohydrates. However, the digestibilities of both dietary protein (85%) and lipid (90%) of diets were relatively high. While all the P fed were observed to be discharged from fish fed control diet, the discharge from fish fed the MCP-2 diet was decreased up to less than the half (34.9 g/kg wt. gain) of the control. These present results revealed that the supplementation of dietary P requirement by MCP can not only promote growth performances but also reduce the level of P loading to water which is the primary water pollution indicator.

  • Sixteen adult Barbari bucks were divided into 4 homogeneous groups, each group was offered wheat straw (WS) at levels 75, 100, 125 and 150 per cent of ad libitum intake in a factorial randomized complete block design. All goats were uniformly fed a supplement ($13.5g\;DM/kg\;W^{0.75}$) to fulfill their requirement for protein at maintenance level. The experimental feeding of goats at different levels for 21 days was followed by a digestion trial of 6 days and determination of rate of passage of digesta for 144 h duration, respectively. Intake ($g/kg\;W^{0.75}$) of dry matter (DM), organic matter (OM), digestible DM and digestible OM increased with increase in amount of WS offered. The levels of WS refusals for obtaining upper limit of intake was found to be above 30% of DMO. Concentration of ADF and lignin was significantly lower and CP was higher (p>0.05) in food ingested relative to food offered or refused in response to increasing allowance of WS. Dietary means of particulate rate of passage from rumen, transit time and total mean retention time ranged from 0.032 to 0.036/h, 19.10 to 21.72/h and 58.61 to 61.53/h respectively and did not show significant differences (p>0.05) irrespective of dietary level of WS. The results suggest that DMI and quality of ingested WS would improve with higher rates of offer and refusals (${\geq}30%$ of DMO) without any pronounced effect on passage kinetics of digesta, because of the greater opportunity afforded to goats for selective feeding.

  • Nutritional status of macro minerals (Ca, Mg and P) in goats grazed on the native pasture was investigated for 2 years in Luzon Island, Republic of the Philippines. Three regions in Luzon Island (Los Banos; Southern area, Munoz, Nueva Ecija; Central area and Baguio; Northern area) were objected to collect the samples of forages and blood of goats on the pasture. The average values in Ca, Mg and P contents of all the forage samples were 0.29-1.32, 0.13-0.56 and 0.15-0.45% of dry matter, respectively, and these figures almost exceeded the required dietary levels for sheep. There was no obvious changes in mineral content of forages between the seasons of rainy and dry, or among regions. In blood Ca level, more than a half of goats (57.9%) without supplement showed the level below the lower limit, and the low level was not improved even when they fed with some supplemental concentrates. The plasma levels of Mg and P were satisfactory, referring to the lower limit of normal level in goats. It is, therefore, necessary to decide the requirement and to establish a most suitable technique for supplying Ca to grazing goats in Luzon Island.
