흰쥐에서 태아 및 유아기에 섭취한 지방량과 단백질 급원의 변화가 성장후에 Cholesterol 및 지방대사에 미치는 영향 (The Effect of Dietary Fat Levels and Protein Source in Early Life on the Cholesterol and Lipid Metabolism in Adult Rats)

  • This study was designed to observe the effects of both control and atherogenic diets on the cholesterol and triglyceride (TG) in serum and liver of adult rats fed diets supplying two levels of dietary fat and two different sources of dietary protein in early life. For the first experimental period, the rats were assigned into the four diet groups: High fat, casein (HC); High fat, gluten (HG); Low fat, casein (LC): Low fat, gluten (LG). Each group was subdivided into control and atherogenic groups for the second experimental period. Cholesterol and TG were determined in serum and liver after 7 hr fasting. The body weight gain was greater in the rats of the casein groups than those of the gluten groups tut not influenced by the level of the dietary fat. The difference in body weight from the quality of dietary protein in the first period was not disappeared even after the second period. After the first period, higher serum cholesterol was observed in the rats fed either casein or high fat diets. With the second experimental diet, rats fed atherogenic diet showed higher serum cholesterol concentration but lower serum TG levels compared to those fed control diet, regardless the diets fed in the first period. Serum cholesterol level of the rats of both groups which had been fed high fat diets in early life was increased compared to those of the low fat diet groups. This effect was more pronounced with the atherogenic diet groups than control groups. However, no differences were found in serum cholesterol levels resulted from the different types of dietary protein fed in the first period. Serum TG concentration was not influenced by the quality of protein and level of fat in the diet but seemed to be mere affected by the amount of carbohyrates in the diet. Liver cholesterol per unit weight was greater in the gluten diet groups than in the casein groups but total cholesterol was higher in casein fed rats. There were no differences in liver TG among the groups.

식이단백질조성이 흰쥐의 성장과 지방대사에 미치는 영향 (Effects of Dietary Protein on Growth and Lipid Metabolism in Growing Rats)

  • The effect of dietary protein on growth and lipid levels of plasma and liver was studied in weanling male rats fed diets differing protein sources and amino acid balance. Rats were devided into 9 experimental diets which were grouped into 3 categories ; 1) Simple protein category includes gluten-, soy protein isolate-, and casein-containing diet groups, 2) Supplemented category includes casein supplemented with methionine, soy protein isolate supplemented with methionine, and gluten supplemented with lysine and methionine, 3) Mixed protein category includes diet groups containing gluten (2/3), casein (1/3), soy protein isolate (2/3) and casein (1/3), and casein (1/3), soy protein isolate (1/3) and gluten (1/3). The experimental diets composed of 15% protein, 65.8% carbohydrate, 10% fat and 1% cholesterol. The body wt. gain and P.E.R. were greater in rats of supplemented and mixed protein groups than simple protein groups. No statistical differences were found in plasma cholesterol among gluten, soy protein isolate and casein groups. Consumption of diets supplemented with limiting amino acid to gluten or soy protein isolate reduced the plasma cholesterol level by 23.2% and 34.2% respectively. However there was no difference between casein and the supplemented casein groups. The mixed protein groups shows relatively high plasma cholesterol concentration and low liver cholesterol levels. On the other hand gluten group showed low plasma cholesterol and high liver cholesterol levels, which means body cholesterol pool may not have been changed by the dietary protein. Feeding soy protein meal and the supplemented soy protein isolate resulted in lower plasma cholesterol, plasma triglycerides, liver cholesterol and liver triglycerides levels. This hypolipidemic effect is considered to see unique to soy protein isolate. Rats in gluten and the supplemented gluten groups showed lower plasma protein levels and a tendency of fatty liver.

분리 대두단백질 섭취와 염분 제한이 Streptozotocin으로 유도된 당뇨 횐쥐의 혈청 지질 수준 및 신장기능에 미치는 영향 (The Effects of Isolated Soyprotein and Salt Restriction on Serum Lipid and Kidney Function of Streptozotocin-Induced Diabetic Rats)

  • This study was performed to investigate the effects of isolated soyprotein and salt (NaCl) restriction on the serum lipid and the kidney functions of streptozotocin-induced diabetic rats. Sprague-Dawley males of normal and streptozotocin-induced diabetic rats were raised for 6 weeds divided into 4 groups each according to protein sources and salt levels. The sources of protein were isolated soyprotein and casein. Salt levels tested were 0.1% (normal) and 0.01% (low). The results are summarized as fellows: kidney weight, blood glucose, hemoglobinAlc, GFR and urinary protein of diabetic groups were higher than those of normal groups. Isolated soyprotein lowered total lipids, triglycerides, and total cholesterol in serum and plasma angiotensin II concentration as well as alleviated kidney enlargement and GFR in diabetic rats. Salt restriction didn\\`t affect serum lipid level but decreased GFR and increased angiotensin If concentration. In conclusion, isolated soyprotein decreased serum lipids, plasma angiotensin II concentration, sidney enlargement and GFR, while salt restriction increased plasma angiotensin II concentration. The results suggest that isolated soyprotein and salt restriction seem to cause different effects on plasma angiotensin II concentration and that isolated soyprotein might be of value in the prevention of diabetic artherosclerosis and diabetic hypertension.

Effects of body weight and fiber sources on fiber digestibility and short chain fatty acid concentration in growing pigs

  • Objective: The study was conducted to determine the effects of body weight (BW) and fiber sources on nutrient digestibility, fiber fermentation and short chain fatty acids (SCFA) concentration in different intestinal segments of growing pigs fed high-fiber diets. Methods: Nine barrows with initial BW of 25.17±0.73 kg and 9 barrows with initial BW of 63.47±2.18 kg were allotted to a duplicate 9×2 Youden Square design with 3 dietary treatments and 2 periods. The dietary treatments were formulated with 3 different high-fiber ingredients: corn bran, sugar beet pulp, and soybean hulls, respectively. Each diet was fed to 3 barrows with different stage of BW in each period. Results: There were no differences in the apparent ileal digestibility (AID) of most nutrients between pigs at different BW stages. Pigs at 60 kg had greater (p<0.05) apparent total tract digestibility (ATTD) of total dietary fiber (TDF), soluble dietary fiber (SDF) and insoluble dietary fiber (IDF), and had greater (p<0.05) hindgut disappearance of IDF and cellulose than pigs at 25 kg. The acetate, propionate and total SCFA concentrations in ileal digesta and feces of pigs at 60 kg were greater (p<0.05) than those of pigs at 25 kg. In addition, fiber sources affected (p<0.05) the AID of gross energy (GE), organic matter (OM), ether extract (EE), crude protein, SDF and hemicellulose, the hindgut disappearance and ATTD of dietary fiber components, the lactate and propionate concentrations in ileal digesta and the butyrate, valerate and total SCFA concentrations in feces. There were interactions (p<0.05) between BW and fiber sources on the AID of GE, OM, EE, SDF, hemicellulose, the ATTD of EE, TDF, and IDF, and the hindgut disappearance of SDF and hemicellulose. Conclusion: Increasing BW mainly improved the digestibility of dietary fiber fractions, and the dietary fiber sources influenced the digestibility of almost all the dietary nutrients in growing pigs.

식이조사방법중 자기 기록식 24시간 회상 반복 조사의 변이원에 관한 연구 (Sources of Variability of Multiple Self-reported 24-hour Recalls in Dietary Survey)

  • This study was designed to study sources of variability(subjects, day by day, season, day of week, sequence, number of repeated days, compliance etc.) in multiple 24-hour dietary recall method. Dietary intakes of college women in Seoul were obtained using 24-hour dietary recalls, consecutive 7 days, 4 times for 1 year. The result of this study shows that 1) the reproducibility of multiple 24-hour recalls is low(intraclass correlation coefficient<0.3), 2) the intraindividual variations of all nutrients are more than 80%, 3) the major components of variation are interindividual vriability and intraindividual variability(within person variability and methodologic error). There were small but statistically significant season and compliance effects. 4) the ratio within-person varation to between-person variation for absolute and transformed nutrient intakes except some nutrients such as vitamin A, vitamin C, energy from protein and fat etc, was less than 1.7 the minimum numbers of days needed in 24-hour dietary recalls to estimate usual intake for this group were 1 to 21 days. And the numbers of days needed to get the usual intake of an individual varied among individuals and within individuals for different nutrients, ranged from 1 days for log carbohydrate(% energy) to 470 days for Na. 6) There were greater than 0.7 correlation coefficients between the average nutrient intakes of 12 days and intakes of 28 days. Therefore, it was desirable to take the 24-hour recall more than 12 times, repeating 3 days every season.

원주지역내 농촌생활권 주부들의 건강관련 식생활태도 및 식행동에 관한 조사 (Dietary attitudes and eating behaviors of housewives in Wonju-Gun rural area)

  • The purpose of this study was to find out the dietary attitudes and behaviors, intake frequencies of food groups, health-related opinions and practices, and sociodemographic characteristics of housewives in Wonju-Gun rural area. Interviewers asked 413 housewives about obove informations and then recorded. The results were as followes : Using the factor analysis processing, 17 questions about dietary attitudes and behaviors were categorized into 5 groups such as fidelity of diet, the healthful dietary attitudes, the eating practices concerning about items and amount, eating speed and the extent of coincidence in food preference within a family. The role of the housewives was a major factor affecting the dietary attitudes and behaviors. Those who work as housewives and farmers concurrently had good dietary practices concerning about items and amount, but they were interested about health-directed dietary attitudes at a significantly lower level. Food frequencies of 9 groups, animal protein food, fruits and vegetables, milk and milk products, small fishes such as anchovy, soybean curd and beans, seaweeds, vegetable oil, frying food, soybean paste were significantly associated with subjects' age, role, and education and income level. Whether or not intake of soybean paste was considered. protein food intake was altered, and the difference between two situations increased much more as age was higher. We noticed that intake of soybean paste improved the status of protein nutrition. Our subjects ate calcium sources and dishes using vegetable oil insufficiently. Those who had much interests for good health, revealed to be an active practitioner in the aspects of healthful dietary attitudes, but fidelity of diet, eating practices concerning about items and amount showed significant association with balanced life style.

Recent strategies for improving the quality of meat products

  • Processed meat products play a vital role in our daily dietary intake due to their rich protein content and the inherent convenience they offer. However, they often contain synthetic additives and ingredients that may pose health risks when taken excessively. This review explores strategies to improve meat product quality, focusing on three key approaches: substituting synthetic additives, reducing the ingredients potentially harmful when overconsumed like salt and animal fat, and boosting nutritional value. To replace synthetic additives, natural sources like celery and beet powders, as well as atmospheric cold plasma treatment, have been considered. However, for phosphates, the use of organic alternatives is limited due to the low phosphate content in natural substances. Thus, dietary fiber has been used to replicate phosphate functions by enhancing water retention and emulsion stability in meat products. Reducing the excessive salt and animal fat has garnered attention. Plant polysaccharides interact with water, fat, and proteins, improving gel formation and water retention, and enabling the development of low-salt and low-fat products. Replacing saturated fats with vegetable oils is also an option, but it requires techniques like Pickering emulsion or encapsulation to maintain product quality. These strategies aim to reduce or replace synthetic additives and ingredients that can potentially harm health. Dietary fiber offers numerous health benefits, including gut health improvement, calorie reduction, and blood glucose and lipid level regulation. Natural plant extracts not only enhance oxidative stability but also reduce potential carcinogens as antioxidants. Controlling protein and lipid bioavailability is also considered, especially for specific consumer groups like infants, the elderly, and individuals engaged in physical training with dietary management. Future research should explore the full potential of dietary fiber, encompassing synthetic additive substitution, salt and animal fat reduction, and nutritional enhancement. Additionally, optimal sources and dosages of polysaccharides should be determined, considering their distinct properties in interactions with water, proteins, and fats. This holistic approach holds promise for improving meat product quality with minimal processing.

배합사료의 단백질 및 지질 함량이 어린 돌기해삼 Stichopus japonicus의 성장 및 체조성에 미치는 영향 (Effects of Dietary Protein and Lipid Levels on Growth and Body Composition of Juvenile Sea Cucumber Stichopus japonicus)

  • 본 연구는 어린 돌기해삼 Stichopus japonicus 사료의 적정 단백질과 지질 함량을 조사하기 위해 단백질(10%, 20%, 30% 및 40%)과 지질(3%, 7% 및 11%)이 달리 함유된 12 종류의 실험사료를 제조하였다. 평균 체중 1.1 g의 치삼을 각 수조마다 50마리씩 3반복으로 수용하여 8주간 수행하였다. 사육실험 종료 후, 생존율은 86% 이상으로 실험구간에 유의한 차이가 없었다(P>0.05). 증중율과 일간성장율은 동일한 지질함량에서 단백질 30%에 지질 3% 함유 사료 공급구가 다른 실험구에 비해 유의하게 높은 값을 나타내었다(P<0.05). 치삼의 수분, 지질 및 회분 함량은 사료의 단백질과 지질함량에 따른 차이를 보이지 않았으나, 단백질함량은 실험구간에 유의한 차이를 보였으며(P<0.05), 단백질 30%에 지질 3% 함유 사료 공급구에서 가장 높게 나타났고, 단백질 20%에 지질 11% 공급구에서 가장 낮았다. 지방산 조성은 사료의 지방산에 영향을 받아 지질함량이 증가함에 따라 18:2n-6은 증가하였고 n-3HUFA는 감소하는 경향을 보였다. 이상의 결과로부터, 해삼의 최대 성장에 필요한 단백질함량은 30%이고, 지질함량은 3%로 판단된다.

Effects of Fat Sources and Energy to Protein Ratio on Growth Performance and Carcass Composition of Chicks

  • Three hundred and twenty-four 1 day old chicks were used to determine the effects of fat source and energy to protein ratio on growth performance , carcass composition and the efficiency on nutrient utilization. Chicks were assigned. in a completely randomized design, to 3*3 factorial arrangement of treatments. Chicks received one of three fat sources (n0 fat, tallow, corn oil) and one of three energy to protein ratios(16, 14 and 12kcal ME/g CP). All diets were formulated to be isocaloric(3.2Mcal ME/kg diets) using published ME values for the diet ingredients. Addition of tat to the diet increased ADG, average daily feed intake, and gain to feed, Chicks fed diets containing fat had increased percentage body DM and ether extract(EE), but percentage CP was not different, Chicks fed diets containing fat had increased efficiency of protein and energy deposition. Addition of fat ad either fallow or corn oil yielded similar results. Reducing the energy to protein ratio of the diet did not affect ADG or gain to feed, but tended to decrease average daily feed intake(p=0.80), as well as resulting in linear(p<0.05) reductions in body percentage DM., EE and also total EE. Increasing the energy to protein ratio did not affect percentage or total body Cp. Adding fat to poultry diets improved growth performance and the efficiency of growth chicks. Decreasing the energy to protein ratio did not affect growth performance, but reduced EE in the body of Chicks.

  • Several authors reported that vegetable proteins cause to decrease serum cholesterol and reported the effect of limiting amino acid balance in dietary protein on the blood component. This study was designed to observe growth rate and blood component in 1% cholesterol-fed male rats intake pure isolated soy proteins and methionine for 4 weeks. The diets were supplemented with either 20% casein or isolated soy protein as dietary protein sources and methionine as limiting amino acid of isolated soy protein and casein protein. The results were as follows; 1) The body weight gain was the greatest in casein groups. 2) Serum total cholesterol concentration was significantly increased by casein groups and slightly decreased by isolated soy protein groups. 3) Serum HDL-cholesterol concentration was significantly increased by isolated soy protein groups than control group. 4) Serum total lipid and triglyceride concentrations were significantly decreased by isolated soy protein groups than control group. 5) Serum glucose concentration was significantly increased by isolated soy protein plus 0.8% methionine than control group. 6) Serum total protein and albumin concentrations were significantly increased by all experimental diets groups than control group. Especially, casein groups were the most increased in all experimental diets groups.
