This study was undertaken to investigate the nutrient intake, dietary behavior, perception of body image and iron deficiency of high school adolescent girls. The subjects were 463 high school girls in Inchon. This cross-sectional survey was conducted by questionnaires and data were analysed by SAS program. Nutrient intakes collected from 3 day-retails were analyzed by the Computer Aided Nutritional Analysis Program. The following anthropometric measurements were made on all participants height, weight, body fat (%), skinfold thirkness, subscapular skinfold thickness, mid-upper arm circumference and waist-hip circumference. Blood samples were obtained and analyzed for iron nutritional status. The mean obesity index of rural students were highest among students. However, over 18% of the urban and rural students belonged to the low-weight group. Proportions of skipping meals were most high in urban vocational students and the main reason was lack of time for meal. Most nutrient intakes of the students were below the RDA, in particular calcium, iron, vitamin A and vitamin B$_2$. Most of the students were concerned with body image and weight control. Also they were not satisfied with their body image. The mean fell hemoglobin and transferrin saturation of rural students were lowest among students. The total binding capacity of urban vocational student\ulcorner were Invest among students. Prevalence of iron deficiency was most high in urban general students when judged by Hb, MCV and serum ferritin. In conclusion, this study indicates that nutrient intake in the female high school students was considerably lower than RDA. They should also be notified that severe weight control is very harmful for health. And they had lower self -satisfaction for their body image and undesirable flood habits. Therefore, prefer nutrition education is required to maintain desirable flood habits and improve their iron status in female high school students.
This study was aimed at comparing the dietary pattern of middle school girls according to family type. As for subjects, sixty girls of M middle school of Taejon city were chosen as a total. They were devided into two groups consisted of thirty subjects respectively ; those who live in single mother's family(SMF) and both parent's family(BPF). In this study, intakes of food and nutrient and dietary behaviors of each group were investigated through two-day dietary records and questionnaire. The results obtained in this study were as follows : 1) Mean daily intake of all nuitrients except calcium were more than RDAs in two groups. However, intake of calcium and rtio of Ca / P were lower than RDAs in two groups. And proportion of less than 2/3 of RDAs of calcium were higher than other nutrients. Intake of iron was more than RDAs, but nutritional status of iron might be poorer considering the food sorce of iron taken by subjects. According to family type, girls of SMF seemed to have more serious to have more serious problem in these nutrients than those of BPF. 2) The average distribution ratios of breakfast, lunch, dinner and snack to total calorie intake was 25.2, 31.3, 24.6 and 18.9 in SMF, and 19.7, 33.1, 24.3 and 22.9 in BPF. Thus it proved that lunch contributed more energy intake than any other meal, and that snack was an important means to supply nutrients for girls of two groups. And energy intake through breakfast of SMF was more than BPF. 3) The major dietary problems of two groups were unbalanced diet, missing meal, and overeating. The degree of sharing meal with family was lower in girls of SMF than those of BPF. The degrees of skipping (p<0.05), or irregularity, or preparing meal by girls(P<0.05) in the case of dinner were tended to be more frequent in SMF than BPF. And number of food taken per day was less various in SMF of 15.2 kinds than BPF of 17.1 kinds(P<0.001). As a conclusion, subjects should take more calcium or iron contained food which is well absorved, and eat diverse foods to improve their nutritional status. And it is also necessary that calorie intake through snack should be diminished, and dinner should be eaten regularly and shared with family if possible. In view of family type, girls of SMF proved to have poorer food habit than those of BPF. Thus, these results shows that dietary pattern of girls is different atcording to family type. Therefore, we should carry out nutritional education for girls considering the difference of dietary pattern by family type. In addition, nutritional education for girls of SMF should be regarded more importantly than those of BPF because girls of SMF might have more chance to manage their meal by themselves and also have more dietary problems.
To assess the nutrient intake and diet quality of Korean adults living in rural area, dietary survey with one day 24 -hour recall method was given to 2037 subjects over 30 years of age living in Yeoncho-gun, Kyungki province of Korea, together with health survey. The mean daily energy intake was 1583 kcal, with 65.4% of energy intake being supplied by carbohydrate, 15.9% by protein and 18.7% by fat. Eighty percents of total food intake were supplied by vegetable food and the rest in the form of animal food . As well as insufficiencies in calcium and iron intake, the bioabailability of calcium and iron is considered to have been low because most of those intakes came form plant origins. For most nutrients except phosporous, proportions of subjects with intake levels less than 75% of RDA was over 40% and highest in the elderly. Those proportion of low intake among female were higher than those among male. The mean adequacy ration(MAR) , an index of overall dietary quality was 0.62 for females and 0.68 for males and decreased with increase of age. The indexes of nutritional quality (INQ) were over 1 for most nutrients except 0.06 of vitamin A, 0.73 of calcium and 0.85 of vitamin C, Nutrient intake levels less than 75% of RDA may be appropriate as a criteria for insufficiency of nutrient intake. Based on these results, it is evident that some of adults in rural areas did not consume enough nutrients, especially vitamin A, calcium and vitamin B$_2$, and that the dietary intake of female and the elderly was not adequate .
In order to elucidate the effects of a lacto-ovo vegetarian diet on serum lipid levels, 91 male collegians residing in the Seoul area were recruited. The vegetarians did not smoke tobacco nor drink alcohol. Their anthropometric measurements, dietary intakes, and blood lipid concentrations were compared to age-matched omnivorous controls. The subjects were divided into four groups. The four groups were: 1) NSNDV (n=25): Non Smoking Non Drinking Vegetarians, 2) NSNDO (n=10): Non Smoking Non Drinking Omnivores, 3) SDO (n=37): Smoking, Drinking Omnivores, 4) SDM (n=11): Smoking Drinking Meat-eaters. Total serum cholesterol, HDL-cholesterol and hematocrit were analyzed. The results were as follows: Weight (p<0.05) and BMI (p<0.01) were significantly higher in SDM than NSNDV. Dietary protein (p<0.01), iron (p<0.05) and dietary lipids (p<0.01) from animals in NSNDV were significantly lower than the results in the SDM. Interestingly enough, we noted no significant differences between the four groups in terms of average total dietary protein, dietary lipids and dietary iron, total serum cholesterol, or HDL-cholesterol. Dietary fiber intake was significantly higher in NSNDV than in SDM (p<0.05). Weight, BMI, and total cholesterol were significantly positively correlated with animal protein (p<0.05) and animal lipid (p<0.01) intake. These results showed that vegetarian collegians who haven't smoked tobacco nor drunk alcohol evidenced lower body weight, BMI, and dietary animal lipid intake, but higher dietary fiber intake, than the other three groups. Additionally, intake of animal protein (p<0.001) and intake of animal lipids (p<0.001) were significantly positively correlated with body weight, BMI, and total serum cholesterol in male collegians.
The purpose of this study was to compare nutrient intakes and the serum iron status of 74 Food and Nutrition major, and 45 non-major, female students at a university in Incheon. This cross-sectional survey was conducted using a self-administered questionnaire and the data were analyzed by the SPSS 10.0 program. The nutrient intake data collected from three-day dietary recalls were analyzed by the Computer Aided Nutritional Analysis Program. Anthropometric data and hematological indices of iron in the blood were measured. Average heights, weights, body fat and mid-upper arm circumference of Food and Nutrition major and non-major female students were 160.3 cm, 53.5kg, 25.8%, 23.7cm and 159.8cm, 55.5kg, 28.9%, 24.8cm, respectively. There were significant differences in body fat percentage and mid-upper arm circumference between the major and non-major students. In all subjects, daily dietary intakes of nutrients- except protein, vitarrlin B1, vitamin C and phosphorus - were lower than the Korean RDA. In particular, calcium and iron intakes of all subjects were under 60% of the Korean RDA. Values of RBC (red blood cell) count, Hb (hemoglobin), Hct (hematocrit), MCV (mean cell volume), MCH (mean cell hemoglobin), and MCHC (mean corpuscular hemoglobin concentration) of the non-major students were significantly higher compared to those of the major students. The diastolic blood pressure of the major students was negatively correlated with MCV, MCH, TS, and serum iron levels. Triceps skinfold thickness, mid-upper arm circumference and waist-to-hip ratios of the non-major students were negatively correlated with TIBC. Fat intake was positively correlated with RBC, Hb, Hct, and TIBC (total iron binding capacity) in the major students. Vitamin C intake was positively correlated with serum iron in the major students. Carbohydrate intake was positively correlated with Hb, Hct, and MCHC in the non-major students. Niacin and iron intakes were positively correlated with Hb and Hct in the non-major students. Therefore, nutrition education is necessary for female university students to improve nutritional status and to practice optimal nutrition strategies. (Korean J Nutrition 35(9) : 952~961, 2002)
This study was performed to investigate the stress level, dietary attitudes and nutrient intakes of Food and Nutrition major female students at a university located in Changwon. A total of 122 female students taking the course 'Meal Management' during 2001-2004 participated in this study. The general characteristics, stress level and dietary attitudes of the subjects were surveyed using a self-administered questionnaire. The nutrient intake data collected from 3-day food-record method were analyzed by the Computer Aided Nutritional Analysis Program. The symptoms by stress showed that 'eye strain', 'physically exhausted or get tired' and 'pains on neck or shoulders' were high in 59.4-81.8%. The mean scores of stress in 2001-2004 were 8.5-12.0 out of 30 points and the subjects in 2002 and 2004 scored significantly higher on stress level than the subjects in 2001 did (p < 0.00. The mean scores of dietary attitudes were 58.7-66.6 out of 100 points, most of the subjects are belonged to the 'fair' group in terms of dietary habits level. The stress level had a negative correlation with dietary habits (p < 0.001). About 1/3 of the subjects, the intake of calcium, vitamin $B_2$, vitamin A and iron were less than 75% of Korean RDA, whereas more than half of the subject, protein, vitamin C and phosphorus intake were more than 125% of RDA, and intake ratio of Ca and P showed an unbalance of 1 : 2. The animal protein intake was higher than the plant protein, whereas the animal vitamin A and iron intake were lower than vegetable food source. In 2001-2004, the index of nutritional quality (INQ) of vitamin $B_2$ and niacin was 0.56-0.98, and in 2003, the INQs of vitamin $B_2$ was 0.56, and that of niacin was 0.67, which was extremely low when compared to that of the other nutrients. Therefore, nutritional education is necessary if female university students are to practice optimal nutrition, including well-balanced diets of high nutritional quality.
The purpose of this study was to investigate the relationship between iron deficiency without anemia and physical performance in healthy women aged 20-21 yrs. Ten subjects with normal iron stores (serum ferritin $\geq$ 12$\mu\textrm{g}$/L: iron-sufficient group) and 11 subjects with iron depletion without anemia (serum ferritin < 12 $\mu\textrm{g}$/L and serum hemoglobin > 120 g/L: iron-depleted group) were chosen from a group of 50 women and were given physical-performance tests, including determinations of maximum oxygen consumption (VO$_2$ max) and ventilatory threshold. Iron status assessment included determination of hemoglobin, hematocrit, seam ferritin, total iron-binding rapacity, serum iron and transferrin saturation values. Dietary iron intake was assessed based on seven-day food intake records written by the subjects. Physical activity level was estimated by frequency questionnaires and two-week physical activity records were compiled daily by the subjects. Blood ferritin concentration was significantly lower in the iron-depleted group than in the iron-sufficient group (p < 0.05). However, other variables showing iron status was not different between the groups. There were no significant differences in body size, body composition and physical activity levels between the groups. Daily dietary iron, total protein and animal protein intakes of the iron-sufficient group were significantly higher than those of the iron depleted group. However, no differences were found in the amount of dietary vitamin C and fiber between the groups. The values for VO$_2$max and VO$_2$max corrected with weight or fat-free mass were not different between the groups. However, the ventilatory threshold was significantly higher in the iron sufficient group than in the iron-depleted group. The lower ventilatory threshold in the iron-depleted group suggests that iron depletion without anemia could diminish aerobic physical performance in young women. In addition, a significant correlation of physical performance to serum fferritin level was shown only in the iron depleted group.
The purpose of this study was to evaluate the relationship between the diversity of food intake and nutrient intake among Korean college students participating in a nutrition education class via the internet. The subjects were 796 college students throughout South Korea (278 males, 518 females). A 3 days dietary recall survey was conducted and results were analyzed using the Computer-aided Nutritional Analysis Program. Dietary variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). Dietary quality was assessed by NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio). As the DDS, MBS and DVS increased, the NAR and MAR improved. The subjects with a DDS of above 4 or a MBS of above 10 or a DVS of above 11 met two-thirds of the Korean recommended dietary allowance for most nutrients. The DDS, MBS and DVS correlated positively and significantly with the NAR and MAR. Associations between the NAR and high levels of DVS were more positive than those between the NAR and the DDS. Based on these results, the food intake of these subjects was not adequate. Specially, the dietary intake of calcium and iron were not adequate. Therefore, dietary guidelines should be made considering nutritional characteristics so as to improve the intake from all of the major food groups and provide a variety of foods in their diets.
Dietary behavior, body mass index(BMI) and nutrient intake status of 185 boys and 205 girls in 3rd grade middle school students in Daegu area were analyzed. Boys were 168.6cm tall and weighed 61.3kg on the average and girls 158.5cm and 54.4kg, respectively. From their BMIs, 17.9% were classified as the underweight, 54.2% as the average, 14.7% as the overweight and 13.2% as the obesity. The average energy intake per day was 2222.6 kcal for boys, 1796.2 kcal for girls which were 83.3% and 86.6% of the RDA, respectively. Composition rate of carbohydrate, protein, fat in relation to energy intake was 62.4 : 16.5 : 21.1 for boys and 58.8 : 16.0 : 25.2 for girls. Protein was taken low and carbohydrate and fat were high in this study. Particularly, fat intake rate of girls was high. Calcium, iron, vitamin A, and vitamin B2 did not meet the RDA and especially calcium was taken 63.9% for boys and 54.01 % for girls. Most of the students have tendency to eat irregularly and to overeat. For the nutrients intake, calories and calcium intake were lower than the RDA regardless of gender and iron intake was not enough for girls only. In relation to BMI, obesity group students were taking lower calories and proteins than the normal students were. No consistent trend was shown for boys about nutrient intake in relation to eating speed. Students had a correct perception of their body image which was similar to that of their mothers. Nutrient average intake is under the average and the percentile under 70% of RDA was high contrary to the fact that nutrient intake like calcium and iron was exceedingly important particularly in the growth process. Therefore, nutritional education for the proper intake of nutrients was required for the students in Daegu area. Especially, education has to be focused on the balanced diet and correct food choices for the proper dietary behaviors.
