열처리방법에 따른 한지형 및 난지형 마늘의 영양성분 변화 (Changes in Nutritional Components of the Northern and Southern Types Garlic by Different Heat Treatments)

  • Purpose: To provide the public with nutritional information on consumption types of garlic, we evaluated the influence of heat treatment method on the nutritional contents of different species of garlic. Methods: We determined the content of general components, minerals, vitamins, and fatty acids in each species of garlic produced in Seosan and Goheung by heating with blanching or microwave roasting. Results: The results of the two-way analysis of variance test indicated that the species in particular, as well as method of heat treatment and interaction, had an influence on nutritional content. The moisture and crude fat content was higher in Southern type garlic than in Northern type garlic, while crude proteins, crude ash, and dietary fibers were more abundant in Northern type garlic than in Southern type garlic. With regard to the total mineral content, K, P, Mg, and Ca were the main components in Northern type garlic and Southern type garlic. Moreover, unsaturated fatty acids showed high levels in both Northern type garlic and Southern type garlic, with more abundant linoleic acid. Overall, Northern type garlic showed a higher content of minerals and fatty acids, while more vitamin B was present in Southern type garlic. In addition, the results indicated that the content of general components (dietary fiber excluded) was increased in both Northern type garlic and Southern type garlic upon heat treatment. Blanching resulted in increased mineral and fatty acid content in Southern type garlic and decreased content in Northern type garlic, indicative of species differences; conversely, microwave roasting contributed to an increase in the content in both Northern type garlic and Southern type garlic. Conclusion: The nutritional content of garlic is more dependent on species than the cooking method, and grilling is associated with less nutrient loss than blanching.

AMOUNT AND DISTRIBUTION OF DIETARY MINERALS IN SELECTED PHILIPPINE FORAGES

  • Eight Philoppine forages were studied to obtain the following: 1) nutrient concentrations and digestibility, 2) distribution of the various minerals in fiber fractions through mineral analyses of neutral detergent fiber(NDF) and acid detergent fiber(ADF) residues, and 3) correlation coefficients among the factors affecting forage quality and mineral concentrations. These Philippine forages were paragrass [Brachiaria mutica (Forsk.) Stapf], stargrass (Cynodon plectostachyum Pilger), napiergrass (Pennisetum purpureum Schumach.) calopo (Calopogonium muconoides Desv.), centrocema (Centrocema pubescens Benth.), gliricidia [Gliricidia sepium (Jacq.) Walp.] leucaena [Leucaena leucocephala (Lam.) de Wit.] and sesbania [Sesbania grandiflora (L.) Poir]. Species differences(p<0.01) were observed on various nutrient fractions including mineral composition and digestibility. The cell wall(NDF) fraction, prepared by boiling in neutral detergent solution, contained the following proportions of the total mineral originally present (%): calcium (Ca), 0.7; phosphorus(P), 14.3; magnesium(Mg), 1.9; potassium(K), 3.7; copper(Cu), 16.4; zinc(Zn), 2.9; molybdenum(Mo), 9.3; cobalt(Co), 16.2; manganese(Mn), 5.6, and iron(Fe), 81.3. The ligno-cellulose(ADF) fraction, prepared by boiling in acid detergent solution, contained the following proportions of the total mineral originally present(%): Ca, 0.2; P, 4.4; Mg, 0.7; K, 2.8; Cu, 32.3; Zn, 1.1; Mo, 8.9; Co, 4.7; Mn, 5.4; and Fe, 36.8. Correlation coefficients among the factors affection forage quality and mineral concentrations were also observed. Evidently, 75 and 45% of the minerals in grasses and legumes was positively correlated to CP and IVDMD, respectively. Moreover, 55, 80 and 75% of the forage minerals was negatively correlated to NDF, ADF and ADL fraction, respetively, implying that most of the minerals reside in the non-structural cell components.

  • Rice(Oryza stiva L.) is a major cereal food providing nourishment to over half of the world's populations and was considered only as a source of energy. However, The recent many researches have been made to suggest that rice may relate to prevention chronic disease and health-promoting properties such as postprandial glucose response, hypocholesterolemic effect and blood pressure-lowering effect. There has been numerous observation supporting that rice has hypocholesterolemic effect. Rice, rice bran, rice bran oil and unsaponifiable matter of rice bran oil reduced plasma cholesterol in rat, hamster as well as human. Components of rice showing hypocholesterolemic effect include dietary fiber(hemicellulose, phytic acid). protein, ${\gamma}$-oryzanol, $\beta$-sitosterol, and tocotrienols. Crapo et al has been studied that the effect of various of starchy foods on the postprandial blood glucose and insulin responses in healthy and diabetic humans. The results showed that rice had lower blood glucose and insulin responses compared to potato, bread and dextrose. The different physical forms in the same starch also produce the different postprandial glucose and insulin responses. In recent years, several studies have shown that some components of rice have potent antioxidant activity against Fe$^{2+}$ -ascorbate induced lipid peroxidation in rat liver microsomal membranes. Cell culture and animal studies have shown that some components of rice have inhibitory effect on the growth and proliferation of several types of human cancer cell. It was also reported that the methanol extract of brown rice has antimutagenic activity against various mutagens. In addition, the pepsine hydrolysate from rice protein is reported to inhibit angiotensin converting enzyme activity. GABA (${\gamma}$ - aminobutyric acid) and GABA enriched rice germ is also effective for lowering blood pressure and triglyceride levels.s.

Pectinase 처리 전후의 현미의 물리적 변화 분석 (Analysis on Physical Changes of Pectinase-Treated Brown Rice (Oryza sativa))

  • 현미에는 탄수화물 뿐 아니라 비타민, 미네랄 등과 같은 영양성분이 함유되어 있다. 현미는 당뇨 등과 같은 질환관리에 매우 유용하지만, 취반 등의 어려움 등으로 대중적인 소비가 어려운 실정이다. 본 연구에서는 현미 표면에 풍부한 섬유소를 제거하기 위해 분해 효소를 이용하는 가공 방법의 가능성을 수행하였다. 일정시간 물에 담근 후 현미의 무게 변화를 측정하였을 때, 대조군 또는 collagenase 가공한 현미에 비해 pectinase 가공한 현미의 무게가 심하게 증가하는 것을 알 수 있었다. 수용액에서 현미를 침지한 후 pectinase를 처리하면 현미의 미강 부분이 거칠어지고, 미세한 구멍이 형성되는 것을 전자현미경 관찰을 통하여 확인하였다. 또한 이러한 pectinase를 이용한 현미 가공에도 불구하고 현미고유의 영양성분은 거의 완벽하게 보존되고 있음을 알 수 있었다. 한편, pectinase 가공 전후의 현미를 대상으로 수분 흡수력, 녹말 반응도의 차이를 조사하였을 때, pectinase 처리 현미에서 높은 수분흡수력, 녹말 반응도가 있음을 알 수 있었다. 이러한 결과는 기존의 현미 도정 방법에 비해 pectinase 처리에 의해 현미 가공방법은 영양성분이 보존될 뿐 아니라 식감, 미감 등에서 우수한 가공방법임을 제시할 수 있다.

The effect of seamustard on blood lipid profiles and glucose level of rats fed diet with different energy composition

  • Recently, Korean people are consuming seaweeds almost 3.5 times more now than three decades ago. It is well known that seaweeds contain lots of soluble dietary fiber in addition to micronutrients such as ${\beta}$-carotene, iodine and some bioactive components. Seaweeds are considered to be effective for preventing chronic diseases including obesity, diabetes mellitus, atherosclerosis, cancer or constipation. This study was conducted to investigate the effect of seamustard intake on body weight gain, blood glucose level and lipid profiles in rats fed diets with different energy nutrient composition. Male Sprague-Dawley rats (average initial weight 103.7g) were divided into groups for two experiments as follows; Control, M2.5 & M5 groups (Exp. I) and M5, M10, HCM5, HCM10, HFM5 & HFM10 groups (Exp. II). The rats were fed diet and water ad libitum for 4 weeks. In general, there was no significant difference in blood glucose and triglyceride concentration among groups. In Exp. I, serum LDL-cholesterol level of rats fed diet with 5% seamustard powder (M5) was significantly lower than that of control group, while HDL-cholesterol level, TC/LDL ratio and weight of adrenal gland were higher. In Exp. II, food intake, body weight gain and EER of high fat diet with 10% seamustard group (HFM10) were the lowest among groups. Except gastrocnemius muscle, all organ weights of HFM10 group were the lowest. Fecal cholesterol excretion and serum LDL-cholesterol concentration of HFM10 group were the highest, while serum HDL-cholesterol level was the lowest among groups. Interestingly, HDL-cholesterol concentration was the highest in HCM5 group among groups. From these results, it was suggested that seamustard intake might be more effective for body weight control, but not for improving blood lipid profiles in high fat diet than in high carbohydrate diet.

귤홍의 함유성분 분석과 항산화 활성 (Component Analysis and Antioxidant Activity of Citrus Peel)

  • This study examined the components and physicochemical properties of citrus peel as a natural health food source by measuring the general and antioxidative contents of citrus peel. Total contents of carbohydrates, crude protein, crude lipid, and ash were 72.1%, 6.6%, 1.3%, and 3.7% respectively. Caloric content of citrus peel was 334.5 kcal, while total dietary fiber was 32.1%. Regarding mineral contents, Ca was the most abundant mineral, followed by K, Mg, and P. Total phenol contents of the 70% ethanolic extracts of citrus peel was $66.4{\pm}8.74mg\;GAE/g$. Total flavonoid contents of the 70% ethanolic extracts were $14.4{\pm}3.28mg\;RE/g$. The antioxidative activities of citrus peel were significantly increasing in a dose dependent manner on DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging, ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) radical scavenging, FRAP(ferric reducing antioxidant power) activity and reducing power. Therefore, the general nutrients and other antioxidant bioactive materials in citrus peel proved that citrus peel possesses a high potential materials as a nutritious food.

초피(Zanthoxylum piperitum DC.) 품종과 수확시기에 따른 화학성분의 변화 (Changes in the Chemical Compositions of Chopi(Zanthoxylum piperitum DC.))

  • Chopi, Zanthaxylum piperitum DC., has been used as natural spice traditionally in the Far East countries including Korea. This study was performed with the object of providing basic data, firstly for the decision of the appropriate harvesting time for traditional use of chopi and secondly for developing a new spice satisfying the national dietary custom from chopi as raw material. Concerning the conte수 and its change of the proximate composition, the content of moisture and crude protein decreased in all sample, while the content of fiber and ash tended to increased with the lapse of harvest time. The content of mineral elements tended to increase in every sample with the lapse of harvest time, and contents of K and P were higher than that of Ca, Na and Mg. Every sample showed the highest content of 15~16 components of total amino acids at the first period and the content decreased gradually with the lapse of harvest time. On the basis of the first period, every sample showed the highest content of aspartic acid, the lowest content of methionine and the trace of cysteine. Free amino acids increased considerably with the lapse of harvest time for peels of chopi and minchopi broth, while the amount for leaves increased on the contrary.

Bioavailability of Lycopene from Tomato Products

  • Tomatoes and tomato products are the major source of lycopene in the diet. The bioavailability of lycopene is different in raw tomatoes compared to processed tomato products. This is due to the chemical and physical properties of the different lycopene isomers. All-trans-lycopene is found in raw tomatoes and is a poor bioavailable source, whereas, processed tomato products are more bioavailable because they contain more cis-isomers. Heat and mechanical processing of tomatoes induces rupture of the cell walls, thereby releasing lycopene from its food matrix. Heat processing also induces cis-trans isomerization and disrupts protein-carotenoid complexes. Many dietary components also impact lycopene bioavailability, like the amount and type of fat present with the intake and processing of tomato products, the amount and type of fiber present, and the interaction between carotenoids. Fundamentally, anything that enhances formation and incorporation of lycopene in bile acid micelles increases bioavailability, and the opposite is true in that anything that interferes with micelle formation decreases bioavailability.

Antidiabetic and Hypolipidemic Effects of Collybia confluens Mycelia Produced by Submerged Culture in Streptozotocin-Diabetic Rats

  • This investigation was undertaken to study the effects of oral administration (3 weeks) of Collybia confluens mycelial powder (CCMP) produced by a submerged culture on plasma glucose and other biochemical parameters in streptozotocin (STZ)-induced diabetic rats. Antidiabetic and hypolipidemic effects were proportionally increased with the increasing concentration of the CCMP for oral administration. The CCMP, at the dose of 400 mg/kg BW, substantially reduced the plasma glucose level by as much as 33.1 % as compared to the STZ-induced diabetic rats group. It also lowered the plasma total cholesterol, triglyceride, and low density lipoprotein (LDL) cholesterol by 22.9%, 19.9%, and 37.3%, respectively. The levels of total cholesterol and triglyceride in liver were reduced to the extent of by 13.5% and 18.8%, and the activity of alanine transaminase (ALT) and aspartate transaminase (AST) was decreased by 48.8% and 37.2%, respectively, under the influence of CCMP. The general components of CCMP were found to contain 26.18% carbohydrate, 3.67% crude ash, 4.02% crude fat, 22.55% crude protein, and 43.58% dietary fiber. The amino acid composition of the CCMP was also analyzed in detail.

Neuritogenic activity of hot water extract from Hericium erinaceus

  • Hot water soluble extract was prepared from Hericium erinaceus and its neuritogenic activity on PC12h cells was analyzed, which is a clone originating from a rat pheochromocytomon. The moisture content of freeze dried hot water extract was 12.08%. The extract was mainly composed of carbohydrate (51.24%) followed by crude protein (24.04%), crude fat (0.26%), dietary fiber (5.09), and ash (12.18%). Fatty acids, glucan and inorganic constituents were found as minor components. The neuritogenic activity of hot water extract was evaluated under microscopic observation of neurite outgrowth in PC12h cells and by measuring the neurite length of induvidual cell. The extract exhibited strong effect of neurite outgrowth in a dose-dependent manner from 0.01 mg/mL to 1 mg/mL, in which longer neurite outgrowth was observed as the treatment dose increased.
