Comparative analysis of food intake according to the family type of elderly women in Seoul area (서울 일부지역 여자 노인들의 가구유형에 따른 영양소 섭취실태 및 식사의 질 평가)

  • Purpose: As the rate of senior citizens living alone increases in the current aging society, there is much concern regarding the health and nutritional intake of solitary senior citizens. Therefore, this study compared the nutritional intake of senior citizens according to their family type. Methods: In July and August of 2011, two senior citizen welfare centers in Seoul were visited to survey 267 elderly women. Excluding 54 subjects for which the data were incomplete, information from 213 subjects was analyzed. The subjects were divided into three family types, living alone (LA, n = 74), living with spouse (LS, n = 78), and living with children (LC, n = 61). Results: The mean age of the LA group was the highest, while the mean age of the LS group was the lowest (p < 0.001), and WHR of the LC group was the highest (p = 0.049). Income was the highest in the LS group (p < 0.001). Frequency of eating out was the lowest in the LA group (p = 0.031). By Duncan's multiple analysis, the amounts of energy intake, vegetable protein, fat, calcium, phosphorus, potassium, selenium, Vit D, Vit E, $Vit\;B_2$, niacin, $Vit\;B_6$, $Vit\;B_{12}$, and cholesterol were significantly higher in the LS group compared with the LA or LC group (p < 0.05). The intakes of calcium, Vit D, $Vit\;B_{12}$, and cholesterol were still significantly different among the three groups, even after adjustment for age and monthly income. The LA group ate less fruit and fish than the LS or LC group (p < 0.05). The LA group showed the lowest dietary diversity and the LS group showed the highest diversity (p = 0.014), however, the significance of dietary diversity score among the three groups disappeared after adjustment for age and monthly income. Conclusion: Elderly women living with spouse were receiving better nutrition than elderly women living alone or living with children. Therefore, solitary elderly women who do not live with their spouse or children should be offered greater opportunities to receive a balanced meal at a congregational kitchen or welfare center. To ensure their healthy diet, it is essential to provide continuous nutrition education with these groups in mind.

Change on the Food and Nutrient Intake Patterns of Men over Thirty Years Old in Jeon-ju Area(1991-1997) (전주지역 30세 이상 남성의 식품과 영양소 섭취 형태 변화 (1991-1997))

  • The objective of this study was to estimate changes on the flood and nutrient intake patterns of men over thirty years old in Jeon-Ju area. The first survey was conducted from December in 1991 to January in 1992, tile second one from January to February in 1994 and the third one from July to August in 1997. The nutrition survey using 24-hour recall method was executed to 303 subjects : 89, 82, 132 in 1991, 1994 and 1997, respectively. Results of the study are as follows : Kimchi, rice, garlic and onions were the most frequently eaten food items. Total daily intakes of foods were 85 : 15, 81 : 19 and 81 : 19 in 1991, 1994 and 1997, respectively. The average numbers of foods per person were 15.7, 20.1 and 21.9 daily in 1991, 1994 and 1997, respectively and tends to increase significantly(p<0.05). The minimum numbers of foods per person were 4, 7 and 9 and the maximum numbers of foods per person were 27, 35 and 39 in 1991, 1994 and 1997, respectively. KDDS(Korean\`s Dietary Diversity Score) is determined by how many among the five food groups (cereals, vegetables, meats, milks, oils groups)were consumed per day. Most subjects earned the KDDS "3" ; 61, 46 and 42% in 1991, 1994 and 1997, respectively. Average daily energy intakes wee 1,62㎉(72% of RDA), 2,063㎉(89% of RDA) and 1,818㎉ (79% of RDA) in 1991, 1994 and 1997, respectively. Energy intake rates of cereals : total energy intake were 65, 59, and 60% in 1991, 1994 and 1997, respectively, which were decreasing. Protein intakes were 58g(72% of RDA), 79g(107% of RDA) and 71g(97% of RDA), respectively and animal protein comprised 46, 53, and 59%, respectively ; which were increased. Fat intakes were 12g, 20g and 20g, respectively and animal protein comprised 38, 46, and 48% ; which were increased. Malnourished (under 75% of RDA) rates were respectively 64, 34, and 47% in terms of energy ; 64, 31 and 33% in protein ; 67, 51, and 61% in calcium ; 53, 26, and 18% in iron ; 85, 74 and 84% in Vitamin A. Super-nourished(above 125% of RDA) rates were respectively 1, 13, and 3% in energy ; 1, 29, and 21% in protein ; 5, 18, and 7% in calcium ; 16, 31, and 7% in iron ; 16, 31, and 7% in Vitamin A, 42, 76, and 62% in Vitamin C. The percentages of calories from protein : fat : carbohydrate were 14 : 12 : 74, 15 : 16 : 69 and 16 : 17 : 67 in 1991, 1994 and 1997, respectively. KDDS(number of five food groups per day), Meal Balance(number of five food groups per meal), DVS(average numbers of foods per person), amount of foods correlated positively with all the nutrient intakes(p<0.05). KDDS was positively correlated with energy, protein, fat, calcium, thiamin, riboflavin and niacin(p<0.05)in(p<0.05)

A Study on the Blood Health Status and Nutrient Intake in Elderly Women Dwelling in Longevity Region in Jeonla Province according to Family Arrangement (전라도 장수지역에 거주하는 여자노인의 동거유형에 따른 생화학적 지표 및 영양섭취상태에 관한 연구)

  • The purpose of this study was to compare the degree nutrient intake, health status and other characteristics of females aged 65 years and over in a longevity area according to family arrangement. For analysis, 585 female elderly were recruited from the Kugoksoondam area (Kurye, Goksung, Soonchang and Damyang counties), known as the longevity-belt region in Jeonla province, Korea. The subjects were categorized into three groups according to family arrangement (living alone, living with spouse only and living with family). Demographic characteristics were collected, as well as information on physical measurements, blood tests for biochemical indicators, health status and health-related life style, dietary behavior, favorite food groups, consumption frequency of food groups, nutrient intake and mini nutrition assessment. In the group living with their spouse only, the highest education, physical activity, diverse food intake, frequency of eating meats and fish, energy and nutrients intake, and score on the mininutrient status assessment (MNA) were found to be significantly favorable factors. Taken together, these results demonstrated that the group living with their spouse only had relatively superior nutrient intake and the quality of diet. In contrast, the group living alone showed the lowest self-rated economic status, diversity of food intake, and physical activity, with the highest frequency of drinking, smoking and regular exercise for almost everyday compared with the other groups. On the other hand, those living with family demonstrated the lowest intake of supplements or functional foods, and levels of hemoglobin hematocrit MCH, but the highest HBA1c and blood sugar. Therefore, the group living with family was assumed to be at risk of anemia and diabetes. These results could be useful to plan effective strategies to increase the health-life expectancy of Korean elderly people living in rural areas, according to family arrangement.

The Development and Its Application of Teaching-Learning Plan in Food and Nutrition Area by Using Reading Education (독서교육을 이용한 식생활 단원 수업의 교수-학습 지도안 개발 및 적용)

  • The purpose of this study was to improve the interest of food and nutrition area in Technology Home Economics subject as well as food safety and choice. For that, we developed new teaching-learning plan by using reading education method and applied to the 9th grade students in Buchun, Kyunggi-do. Experimental and control groups were selected based on their test score in nutrition section. Control and experimental groups were educated by general lecture or reading education method for 4 weeks and the effect of different educational methods was tested. The results of study as follow: First, teaching-learning plan by using reading education method has been developed. To apply reading education method, we developed reading record cards which could help students to understand the terminology and nutritional problems. In addition, students had time to discuss about food safety and choice after reading education which could improve the interest in Technology Home Economics subject and communication skills. Second, after applying the developed lesson plan, the results showed that reading education method improved the interest and attitude about Technology Home Economics subject and teacher, and food choice attitude. However, reading education method had no effect on the interest on reading book about food and nutrition, and These results suggested that reading education method improved the interest and recognition about Technology Home Economics subject and teacher and food choice attitude. Therefore, to establish the proper dietary behavior in junior high school students, we need to develop and apply diversity of teaching-learning plan by using reading educational method.
