The effect of different dietary structural carbohydrate (SC) to nonstructural carbohydrate (NSC) ratios on fiber degradation, digestion, flow, apparent digestibility and rumen fluid characteristics was studied with a design using 18 wethers fitted with permanent rumen and duodenum cannulae. All sheep were divided into six groups randomly, receiving six diets with varying SC to NSC ratios. All diets contained the same proportion of wheat straw and concentrate. The dietary SC to NSC ratios were adjusted by adding cornstarch to the concentrate supplements. The duodenal and fecal flows of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF), hemicellulose (HC) and cellulose (CEL) were estimated using chromium-mordanted wheat straw as a flow marker. The degradation parameters of wheat straw DM, NDF, ADF, HC and CEL were determined by incubating the ground wheat straw in nylon bags in the rumen for different periods of time. There was no effect (p>0.05) of the different dietary SC to NSC ratios on rumen pH or $NH_3$-N, but acetate, propionate and butyrate concentrations were significantly affected (p<0.05 or p<0.01) by dietary SC to NSC ratios in the rumen fluid. When the dietary SC to NSC ratio was 2.86, the highest rumen degradability of wheat straw DM, NDF, ADF and CEL was found, but the highest apparent rumen digestibilities of DM, NDF, ADF, HC and CEL occurred at a 2.64 SC to NSC ratio. However, because of compensatory digestion in the hindgut, the apparent digestibilities of DM, NDF, ADF, HC and CEL were highest when the dietary SC to NSC ratio was 2.40. In conclusion, there is a optimal range of dietary SC to NSC ratios (between 2.86 and 2.40) that is beneficial to maximize wheat straw fiber degradation and apparent digestibility.
To study the effect of dietary $\omega 6/\omega 3$ fatty acid ratios on the preneoplastic lesions and lipid peroxidation in rat hepatocellular chemical carcinogenesis, placental glutathione S-transferase(GST-P) positive foci area and numbers, glucose 6-phosphatase(G6Pase) activity, thiobarbituric acid reactive substances (TBARS) were measured. Male Sprague-Dawley rats were fed 5 different diets-low $\omega 6/\omega 3$ ratio with fish oil (Low-F), low $\omega 6/\omega 3$ ratio with perilia oil(Low-P), moderate ratio with perilia oil(Moderate), blend of 10 different commercial fats and oils(High-BL) and high $\omega 6/\omega 3$ ratio(High)-for 8 weeks. Hepatocarcinogenesis was induced by modified Ito model. The area of GST-P positive loci was the lowest in Moderate group and in ascending order of Low-F < Low-P < High-BL < High. But statistically, only Moderate and High groups were significantly different. The number of GST-P positive foci showed the same trend as foci area. The activities of G6Pase, membrane stability marker, were increased as $\omega 6/\omega 3$ ratio decreased. Lipid peroxidation values (TBARS) were the lowest in Low-F group and it is significantly different from Moderate, High-BL and High groups. When dietary $\omega 6/\omega 3$ ratio was moderate(4.06), hepatocarcinogenesis was suppressed compared with high or low $\omega 6/\omega 3$ ratios. Blend fat, commonly consumed among Koreans, did not show any suppressive effect on carcinogenesis because of high ratio(6.7). These results suggest that dietary $\omega 6/\omega 3$ ratio influences hepatocellular chemical carcinogenesis. It is recommended that appropriate $\omega 6/\omega 3$ ratio should be around 4.0. and we recommend to use more $\omega 3$ fatty acid in food preparation to reduce the risk of hepatocarcinogenesis.
This study was carried out to investigate distribution of obesity, body composition, weight control and dietary behaviors, and to analyze the relationship between Body Mass Index (BMI) and physical characteristics, body composition and dietary behaviors by anthropmetric measurement and questionnaires. The 199 study subjects were divided into 3 age groups; 30's (78), 40's (77) and 50's (44) and 4 groups by BMI ; under weight (4.5%), normal (51.3%), over weight (26.1%) and obese (18.1%). Amount of skeletal muscle, body water, mineral and body fat were significantly increased with BMI. There were especially significant increase skeletal muscle 5.3 kg ($19.1\;{\rightarrow}\;23.5\;kg$), body water 5.3 kg ($26.3\;{\rightarrow}\;31.6\;kg$) and fat 15.2 kg ($11.2\;{\rightarrow}\;26.4\;kg$) from under weight to obesity group, respectively (p < 0.01). There were significantly decreased in the ratio of body water (10.3%), protein (2.7%) and body mineral (1.1%) from under weight to obesity, but significant increase 14.1% in body fat (p < 0.001). About 44.4% of under weight group and 40.1% of normal group and 50% of over and obesity group had dissatisfaction on their body images. Most of the women were concerned about their body images and experienced weight control. Dietary behavior scores of obesity group were significant lower than the other four groups (p < 0.001). There were significant positive correlation between BMI and body water (r = 0.62), protein (r = 0.52), skeletal muscle (r = 0.63), body fat (r = 0.91) and WH ratio (r = 0.91), respectively (p < 0.001). The correlation between BMI and body fat and WH ratio were much higher than the correlation between weight and fat and WH ratio.
In order to study the interrelationships of calcium (0.45 vs. 0.90%), phosphorus (0.40 vs. 0.70%) and protein (17, 20, 23%), $2{\times}2{\times}3$ factorial design was employed. A total of 480 broilers (Hisex-Hibro) aged 3 days were fed the experimental diets for a period of 28 days. Body weight gain, daily feed intake and feed efficiency were investigated for the simple effects, first order interaction and second order interaction of the dietary factors. These effects were also applied to bone ash retention, percent Ca in bone & ash, percent P in bone & ash, and protein utilizability. Results were as follows. 1) For body weight gain, simple effects of dietary levels of Ca, P, CP were found to be significant (p<0.05). Body weight gain at 0.90% Ca level was improved as the dietary CP levels increased. For the feed intake, single effects of dietary levels of both P and CP were found (p<0.05). Feed efficiency was improved as the dietary CP and P levels increased. Ca $\times$ P interaction was found to be significant for body weight gain, feed intake and feed efficiency (p<0.05), however, Ca $\times$ P $\times$ CP interaction effect was not found. 2) Protein utilizability decreased as the dietary CP level increased (p<0.01). 3) 0.90% Ca in diet showed less bone ash retention than 0.45% Ca level. And, increasing the dietary P level resulted in increased bone ash retention. Increasing the dietary P level resulted in increased bone Ca retention (p<0.01) and increased bone P retention (p<0.05). Dietary CP levels had significant (p<0.01) effect on bone Ca retention except for 23% CP level. Increasing the dietary Ca level resulted in wider Ca:P ratio of bone, but increasing the dietary P level resulted in narrower Ca:P ratio of bone. 4. Ca $\times$ P interaction effects were found to be significant (p<0.01) for bone ash, bone Ca & P, ash P content, and bone Ca:P ratio. Ca $\times$ P $\times$ CP interaction effects were found for bone ash (p<0.01), bone Ca (p<0.05) and bone P content (p<0.01).

This study evaluated the quality characteristics and antioxidant activities of Spergularia marina L. Griseb powder from halophyte plants added to noodles at ratios of 0%, 0.5%, 1.0%, 1.5%, and 2.0% in order to examine its applicability as a substitute for salt. For quality characteristics of noodles with Spergularia marina L. Griseb powder, pH increased (p<0.05) and salinity decreased (p<0.01) with higher added Spergularia marina L. Griseb powder content. Water absorption ratio decreased (p<0.01) while turbidity decreased (p<0.001) with greater addition of Spergularia marina L. Griseb powder. However, volume expansion ratio increased with greater addition of Spergularia marina L. Griseb powder, but there was no significant difference. For chromaticity, L value and a value decreased (p<0.001) while b value increased (p<0.001) with greater addition of Spergularia marina L. Griseb powder. For texture, hardness (p<0.001), gumminess (p<0.001), and cohesiveness (p<0.01) increased with greater amount of added Spergularia marina L. Griseb powder; however, there were no significant differences in adhesiveness, springiness, and chewiness according to the amount of added Spergularia marina L. Griseb powder. In the sensory evaluation, for color, the score was 5.55 points when 1.5% Spergularia marina L. Griseb powder was added, which was the best preference (p<0.001); for flavor, preference was best (5.64 points) when 2.0% Spergularia marina L. Griseb powder was added; for taste, preference was best (5.36 points) (p<0.001) when 2.0% Spergularia marina L. Griseb powder was added; for overall preference (overall quality) the score was 5.55 points when 1.0% Spergularia marina L. Griseb powder was added, which was the best preference (p<0.001). For antioxidant activities, antioxidant activities including total phenol content, total flavonoid content, and DPPH free radical scavenging activity increased (p<0.001) with the amount of added Spergularia marina L. Griseb powder. As a result of the above research, preference was the highest and quality was excellent overall when 1.0% Spergularia marina L. Griseb powder was added. Thus, addition of 1.0% Spergularia marina L. Griseb instead of salt would be desirable.
A single factorial experiment was conducted to test the effects of three dietary levels of energy on mRNA expression of fatty acid synthase (FAS-mRNA) and hormone-sensitive lipase (HSL-mRNA) and their association with intramuscular fat in finishing pigs. 72 crossbred (Large $White{\times}Rongchang$) barrows with an average initial body weight of 20.71 (s.e. 0.1) kg, were randomly allotted to three dietary treatments (11.75, 13.05 and 14.36 MJ DE/kg) and fed until slaughtered at 100 or 101 kg. The diets were iso-nitrogenous and iso-essential amino acids. The growth performances including the duration of finishing were changed linearly (p<0.05) or quadratically (p<0.05) with increased dietary energy levels. The effects of dietary energy content on the percentage of external fat, intramuscular backfat and the fat thickness were linear (p<0.05). The content of dietary energy increased FAS-mRNA linearly or quadratically, while HSL-mRNA decreased linearly or quadratically in backfat and Longissmus dorsi muscle. Meanwhile, significant positive correlations (p<0.05) were found between energy level and intramuscular fat, FAS-mRNA or the ratio of FAS-mRNA to HSL-mRNA, between the ratio of FAS-mRNA to HSL-mRNA and intramuscular fat. However, the correlations between HSL mRNA and dietary energy or intramuscular fat were negative (p<0.05). The results indicated that dietary energy level regulates lipid accumulation, especially intramuscular fat, possibly by modulating the mRNA of FAS and HSL together rather than individually.
This study was conducted to determine effects of different ratios (3.5, 3.0 and 2.5) of nonfibrous carbohydrate (NFC) to ruminally degradable protein (RDP) on in vitro fermentation and lactation performance of dairy cows and optimum ratio of NFC to RDP in dairy rations. In vitro trial was conducted up to 12 hr with ruminal fluidtaken from ruminally cannulated Holstein cows. The level of dietary NFC did not affect ruminal pH. The ammonia-N concentration was not significantly different among treatments until 6 hr incubation, however, it was significantly (P < 0.05) decreased as the ratio of dietary NFC to RDP increased on 9 and 12 hr incubation. For volatile fatty acids, concentrations of both acetate and propionate were significantly (P < 0.05) increased on 3 hr incubation as dietary NFC contents of treatments increased, in other incubation times, they had no significant differences among treatments. Valerate and A:P ratio were not affected by the ratio of NFC to RDP. Isoacids and total VFAs were significantly (P < 0.05) increased with increasing dietary NFC contents and their values were highest in the treatment of 3.0 ratio. Meanwhile, for in vivo trial, 18 Holstein lactating cows were allotted to treatments in three groups of 6 cows. They were employed for 24 weeks to investigate nutrient intakes, and milk yield and composition according to different ratios of dietary NFC to RDP. Intakes of dry matter and energy were significantly (P < 0.01) increased, but NDF intake was significantly (P < 0.01) decreased as the ratio of dietary NFC to RDP increased. Milk yield for the ratio of 3.5 (32.7 kg) was significantly (P < 0.05) higher than those of other treatments. Milk fat (%) was significantly (P < 0.05) higher for the treatments of 3.0 (3.79 %) and 2.5 (3.79 %) than that (3.48 %) for the ratio of 3.5, but milk fat yield was not different among treatments. Contents and yields for milk protein and solids-not fat were linearly (P < 0.01) increased as the ratio of dietary NFC to RDP increased. However, milk urea nitrogen concentration was significantly (P < 0.05) decreased with increasing dietary NFC levels. Our results showed that the increasing level of NFC in the diet of dairy cows enhanced ruminal fermentation, N utilization and milk production and suggested that maximal fermentation and lactation performance were achieved when the dietary ratio of NFC to RDP was more than 3.0 in dairy rations.
The purpose of this study was to compare the quantitative and qualitative assessment of dietary intake between patients with metabolic syndrome (MetS) and healthy subjects and to investigate dietary factors related to MetS. Anthropometric measurements, blood analysis, and dietary intake as assessed by 24-hour recall were conducted in MetS patients (n=15) and healthy subjects (n=25). In order to assess the quantity and quality of dietary intake, daily nutrient intake, nutrient density, nutrient intake to dietary reference intake (DRI), nutrient adequacy ratio (NAR), food intake, dietary diversity score (DDS), and dietary variety score (DVS) were analyzed. The statistical differences between MetS patients and controls were analyzed using the SAS software program. Daily energy intake and food intake were not significantly different between the two groups (2,154.3 kcal vs. 1,872.9 kcal; 1,280.0 g vs. 1,261.6 g). There were also no significant differences in daily nutrient intake, nutrient intake ratio to DRI, NAR, or DVS between the MetS group and the control group. However, daily intake of eggs and milk in MetS patients was significantly lower than in the control group (9.0 g/day vs. 30.3 g/day, p<0.05; 0 g/day vs. 49.7 g/day, p<0.05). These results indicate that low intake of eggs and dairy products may be related to the development of MetS.
It has been recently reported that degenerative diseases are increasing rapidly in many other countries as well as in Korea according to expansion of life expectancy, economic development and dietary patterns. The aim of this study was to investigate changes in lipid metabolism with age, to determine which dietary factors affect the serum lipid profiles, and to compare Korean and western diets. With clinically normal participants(made 60, female 63), this study was carried out in three phases : 1) to analyze blood lipid levels with age, 2) to analyze the effects of different dietary intakes on blood lipid levels according to age, and 3) to compare the effects of different food intakes on blood lipids between eastern and western coutries. The results are follows : 1) Mean serum values of triglyceride and cholesterol reached a peak level at the age of 50-60 years, although men has higher levels than women at earlier ages. LDL cholesterol percentage increased sharply after 50 years and continued to 70 years. 2) Differences of dietary calorie intake including carbohydrate, total fat and animal fat affected serum lipid profiles, such that high intake groups generally showed higher triglyceride and cholesterol values than the lower intake groups. 3) Compared with Americans(45%), Koreans consumed carbodydrates at 65% of their calorie intake. At this carbohydrate level dietary fatty acid P/S and W-6/W-3 ratio were 1.1 and 6, this could make Koreans continue this dietary pattern composed of carbohydrate at 65% of total calorie intake, and P/S ratio of fatty acid at 1 to 2.
This study tested the development of bechamel sauce with different ratios of soy milk to milk(0:4, 1:3, 1:1, 3:1, 4:0) to examine changes in quality characteristics. Proximate composition analysis showed a decrease in salinity with increasing amounts of soy milk, while the moisture content and, density increases. The highest pH values were found for a 1:1 ratio of soy milk to milk (S2) and the lowest pH values were found for a 0:4 ratio of soy milk to milk (CON). The L-value decreased, while a and b values increased with increasing amounts of soy milk. In the stability test, segregation occurred in CON after 5 days, while the highest segregation occurred at a 4:0 ratio of soy milk to milk (S4). The sensory evaluation results showed that the color, thickness, savory flavor, and savory taste increased with increasing amounts of soy milk. In the acceptance test, a 1:3 ratio of soy milk to milk (S1) and a 1:1 ratio of soy milk to milk (S2) had the highest acceptance scores (p<0.001) for appearance, taste, texture, and overall acceptance.

제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
