  • The purpose of this study was to compare the nutrition intakes and factors related to dietary behaviors according to age in female. The subjects included 579 females aged 15 - 59 years. This survey was conducted using a selfadministered questionnaire to obtain data about eating behaviors, living habits, eating disorders by EAT-26 (Eating Attitude Test-26), and nutrition knowledge. In younger women aged 15 - 20 years, the living habits related to health such as smoking, drinking and exercising were undesirable. In addition, the younger women group had significantly higher levels of skipping meals and frequency of eating snacks compared to the older women group and their eating times were not regular. And they showed a lower score of health eating index by mini dietary assessment (MDA). Although, all age groups consumed energy, Ca, Fe, and thiamin below the Korean RDA; especially, in adolescent, Ca intakes ($67.1\%$ RDA) were extremely low. In addition, mean score of EAT-26 was significantly higher in young women aged 15 - 29 years than older women. Also, they had rather lower levels of accuracy and perception for nutrition knowledge compared to older age group. These results suggested that Korean adolescent had undesirable nutritional intakes and attitude, and nutrition knowledge, indicating inadequate eating behaviors. These poor dietary behaviors can affect the health status. Therefore, the nutrition counseling and education to help people to have correct nutrition knowledge and to form better eating habits needs to be established.

  • To determine a suitable dietary protein/lipid (CP/CL) ratio in the early juvenile stages of hybrid porgy ($F_1$), female red sea bream (RSB) ${\times}$ male black sea bream, five diets with various CP/CL ratios-60/7, 55/12, 51/17, 46/23, and 41/28-were prepared and provided to juveniles in triplicate. At the smaller juvenile stage, $F_1$, weighing 0.32 g, a significantly higher specific growth rate (SGR) and feed efficiency (FE) were seen with 60/7 and 55/12 diets. However, in RSB weighing 0.26 g, SGR and FE were higher with the 60/7 diet than the other diets at $21^{\circ}C$. At the larger juvenile stage, $F_1$, weighing 3.7 g, there was no significant difference in SGR or FE among the diets, but RSB weighing 4.0 g fed 60/7, 55/12, and 51/17 diets had higher SGR and FE than 46/23 and 41/28 diets at $24^{\circ}C$. Moreover, survival and apparent nutrient retention of $F_1$ at both stages were significantly higher than those in RSB. These results indicate that both $F_1$ and RSB weighing ca. 0.3 g require a higher dietary CP/CL than those weighing ca. 4 g. Additionally, $F_1$ in both trials showed the suitability of a lower dietary CP/CL than RSB, indicating that mass production of $F_1$ juveniles will be more economical than RSB.

  • This study was performed to investigate the effect of protein intake on kidney development and function in growing rats. Fourty-two male Spraque-Dawley rats of weighing $97.5\pm1.9g$ were divided into 3 groups and given 5%, 15% or 50% casein diets for 6 weeks. Body weight gain was higher in the 50% group. The kidney weight was selectively affected more by the level of dietary protein compared to the other organs. DNA and RNA content were significantly higher in the 15% and 50% groups than in the 5% group but the differences disappeared when DNA and RNA were expressed per g of kidney weight. Protein and protein/g kidney content were increased with increasing level of protein in diet. GFR/animal and GFR/100gB. W. were significantly higher in the 50% group compared to the 5% and 15% groups. There was no differences in PAH clearence and RBF. Osmolality was not affected by dietary protein level. BUN and urinary nitrogen excretion were increased with the increasing dietary protein level. Although urinary Ca excretion was not significantly difference among 3 groups, the rats in the 5% group showed 30% less Ca excretion compared to the other groups. Above results suggest that dietary protein level has a great effect on the kidney weight and GFR in growing rats. Especially the hyperfiltration inhanced by high protein diet may accelerate the kidney senescence.

  • This study investigated the extractability, solubility, Mg$^{2+}$-, Ca$^{2+}$- and EDTA-ATPase activity of actomyosin prepared from leg and breast muscle of dog meat. The actomyosin extractability of breast muscle(2,100.6 mg/l00 g) was higher than that of leg muscle(500.8 mg/l00 g). The Mg$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.05 M KCI and did not differ between leg and breast muscle. The Ca$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.10 M KCI and leg muscle had a higher level of Ca$^{2+}$-ATPase activity than breast muscle did. The EDTA-ATPase activity was lower in low ionic strength and showed higher in high ionic strength, and increased sharply with increasing ionic strength up to 0.3 M KCI. The solubility of actomyosin did not differ between leg and breast muscle, and the solubility started and ended at KCI concentrations of 0.35 M and 0.4 M, respectively.

  • To investigate the effect of food habits on the bone state of the senior citizens, two groups were tested: one(111 senior citizens) was healthy ordinary senior citizens over 65 years old and the other(51 senior citizens) was patients distinguished as having osteoporosis. The present dietary intake was estimated by a 24-hr recall method, and individual history. For the data analysis, percentages and frequencies were calculated and χ²-test was undertaken to test the relation among values. The following results were obtained: patient group with osteoporosis was less in height and weight than the group of ordinary senior citizens(160.33cm, 59.99kg). It was much less than the average Korean senior citizens(158cm, 54.9kg). Food appetite in the group of patient was worse than that of ordinary senior citizens group. According to their dietary history(58.8%), the food intake pattern was most of vegetables(62.0%). Eventhough they haven't been intaken milk after recognizing of their osteoporosis(74.5%). Most of them didn't improve their food habits to help Ca metabolism. Also they have depress of their life(50%). All subjects certainly took insufficient energy, Ca, protein from their diets. Moreover the major source of Ca were vegetables, seaweeds and legumes.

  • The aim of the present study was to investigate the influences of Curcuma aromatica or inositol monophosphate supplementation on body weight of sows at different stages, feed intake, backfat thickness of sows at different stages, body weight of piglets at different stages, and immunoglobulin G (IgG) concentration in sow blood and milk. Eighteen crossbred (Landrace × Yorkshire) sows (249.9 ± 3.2 kg) and their litters were used in a 28-day feeding trial to observe the effects of Curcuma aromatica or inositol monophosphate as dietary supplements on performance and IgG concentration of blood and milk in lactating sows and piglets. The dietary treatments comprised a control corn-soybean-based basal diet (CON); control diet + Curcuma aromatica at 0.5% (CA), and control diet + inositol monophosphate at 0.10% (IMP). Sow body weight at different stages, average daily feed intake, and sow backfat thickness at different stages were not affected in all three treatment groups. The body weight of piglets at weaning and average daily gain of piglets born to sows from the IMP group showed significant improvement compared to piglets of sows from the CA treatment group. Treatment had no effect on the IgG levels in blood and milk. In conclusion, supplementation of 0.5% CA or 0.10% IMP in sows has no effect on growth performance and IgG in sows and piglets compared with the control diet.

  • This study was performed to assess diet qualities by sexes and ages of adults over thirty years old in Jeon-ju area. Diet survey with one day 24-recall method was used done for 382 subjects(129 males & 253 females). Survey sample was divided into six groups by sex and age groups: male 30-49, male 50-64, male 50-64, male 65-79, female 30-49, female 50-64 and female 65-79 years. Diet quality was assessed by NAR(Nutrient Adequacy Ratio), MAR(Mean Adequacy Ratio), INQ(Index of nutrition quality), KDDS(Koreans Dietary Diversity Score), Meal Balance, DVS(Dietary Variety Score), DQI(Diet Quality Index). The 5-point DQI assessed the important dietary guidelines for Koreans. The averages of energy, protein, P, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than 70% of RDA. The averages intakes of Ca and vitamin A were very lower than RDA all groups. The averages of MAR were 0.78, 0.81, 0.83 in male 30-49, 50-64, 64-79 years, 0.73, 0.77, 0.71 and in female 30-49, 50-64, 65-79 years, respectively. The averages of MAR in female 30-49 years and female 65-79 years were significantly lower than the averages MAR of male 65-79 years. The averages of Sugars and Beverages intakes were significantly higher in male 30-49 years than others. Animal food intake ratio(% total food intake) in the male 65-79 years(16%) was significantly higher than male 30-49 years(11%). The averages of Nutrition intakes were higher in male compared to female. The subjects who consumed all of the major five food groups were 5% in male 30-49, 17.8% in male 50-64, 25.0% in male 65-79 years, 18.9% in female 30-49, 23.7% in female 50-64, 11.5% in female 65-79 years. The averages of KDDS were 3.5, 3.9, 3.9, 3.8, 3.8, 3.5, respectively. The averages of Meal Balance were 8.6, 9.1, 9.1, 8.3, 8.4, 7.8, respectively. The averages of DVS 20.1, 19.9, 19.9, 20.5, 19.0, 17.2, respectively. The averages of DQI were 1.7, 2.2, 2.1, 2.0, 2.1, 1.7, respectively. 81.8% of the subjects had KDDS scores of 2 to 4 and 87.3% of the subjects has Meal Balance scores 4 to 10. In contrast, 89.8% of the subjects had DQI scores of 0 to 3. In view of these facts there are few who observed the five dietary guidelines for Koreans. There findings suggest that dietary qualities were associated with nutrient intake the relation factors may vary by sex and age of adults over thirty years old in Jeon-ju area. Common problems were lack of Ca, vitamin A and dairy products intakes. Therefore adults over thirty years old in Jeon-ju area need the important nutrient management such as Ca, vitamin A. • This study was longitudinally conducted to evaluate the intakes of protein, Ca, Mg and P of exclusively breast-fed infants compared with the Recommended Dietary Allowances (RDA) for Korean infants. Twenty Korean lactating women and their infants during the first 3 months of lactation in Incheon area were participated. Protein, Ca and Mg, and P contents in the milk were determined using semimicro Kjeldahl (N ${\times}$ 6.38) , atomic absorption spectrophotometer and colorimeter, respectively, and also the milk consumption of the infants was measured by the test-weighing method. Protein contents of the milk were 1.96, 1.63, 1.51, 1.25 and 1.16 g/100 ml, and protein intakes of the breast-fed infants were 9.00, 9.85, 9.17, 8.97 and 7.76 g/day at 7, 15, 30, 60 and 90 days postpartum. The average protein intake per body weight of the breast-fed infants was 1.84 g/kg/day. The average intakes of Ca, Mg, P were 172.1 mg/day, 15.2 mg/day and 91.4 mg/day, respectively, and the average Ca/P ratio was 1.91. There was positive correlation between protein and Ca, protein and p, and Ca and P contents while negative correlation between Mg and P, The body weight of breast-fed infants increased normally from 3.6 $\pm$ 0.41 g at birth to three month during lactation. It is suggested that the breast-fed infants in Incheon area consume almost adequately protein, Ca and P from the milk compared with RDA for Korean infants.

  • The purpose of this study was to investigate the effects of dietary behavior on the nutritional status of university students in Korea. A dietary intake survey of 603 university students (223 males and 380 females) was conducted using a 24-hour recall method. The resulting data on dietary behavior and nutrient intakes were analyzed by the SAS program package. The main results were as follows : 1) Most of the subjects were in their twenties and no obese cases were found. 2) Dietary intake data showed that, except for vitamin C in the female students, the average daily intakes of most nutrients did lot meet the Korean Recommended Dietary Allowances (RDA). The study also showed that most of the subjects, especially the female students, were concerned about having satisfactory physical appearances. Fat provided 25% of the daily energy intake, and this level was higher than the 20% recommended by the Korean Dietary Guidelines. In the female students, the iron intake from animal foods was lower than that from plant foods. 3) Male students were not very serious about healthy eating. However, the female group, who obtained a high score in dietary behavior, consumed more vegetables and had higher intakes of energy, protein, Ca, p, vitamin A, and vitamin C than the male group, even though they did not meet the Korean RDA in most nutrients. Energy intake from fats, as a percent of total energy intake, was lower than in the group of females who obtained higher stores in dietary behavior than the other groups. To sum up, the university students surveyed in this study were found to have the typical dietary behavior of young adults, such as frequent eating out and snacking. Female students were extremely conscious of their body images this can exert an important direct influence on their dietary intakes and health status. It is very important for university students to develop healthy lifestyles and desirable dietary behaviors, to best enable them to continue to lead a healthy lift: in their later years.
