The Effect of the Dietary Carbohydrate on Lipid and Ca Metabolism, and the Immune Function in Aged Rats ($\cdot$저 탄수화물 식이로 사육된 흰 쥐의 노화과정중 나타나는 지방과 Ca 대사 및 면역능력에 미치는 영향연구)

  • This study was carried out to investigate the effect of dietray carbohydrate level on the lipid and Ca metabolism, and on immune response in the process of aging. Sprag\ulcornerue - Dawley male rats of 12 months of age were fed either high carbohydrate or low carbohydrate diet for 9 months. With increasing age from 12 months to 21 months, there was no significant increase in body weight, however, the epididymal fat pat weight and total serum lipid tend to become higher, and the inorganic/organic matterratio in bone tends to become lower. This suggests that body fat accumulation increase and bone mass decrease with age. Rats fed low carbohydrate diet showed the higher epididymal fat pat weight, and the lower Ca content in femur and scapular compared to high carbohydrate diet fed rats. The immune response was also lower in low carbohydrate diet group judged by the lower thymus and spleen index and by the lower response to PHA and ConA stimulation. The results of this study suggests that the dietary level of carbohydrate and fat may play an important role in the process of aging. It could be recommended to practice high carbohydrate -low fat diet for the elderly to reduce the risk of degenerative diseases.

The Effects of Dietary Lipids and Ovariectomy on Bone Mass in Rats (식이지방과 종류와 난소절제가 흰쥐가 골질량에 미치는 양향)

  • This study examined the effect of dietary lipids and ovariectomy(OVX) on bone mass in rats. The experimental animals were divided into sham operation(S) or OVX(O) groups and then each group was divided into soybean oil(SS, OS), beef tallow(SB, OB), and fish oil(SF, OF) diet group. Experimental diets were fed for 16 weeks. Weight gain tended to be higher in OVX groups than in sham groups. Weigth gain was the highest in beef tallow group (SB) and the lowest in fish oil group(SF). There were no difference in weight, length, breaking force, strength and circumference of femur mong groups. However, volume of femur tended to be higher in OVX groups than in sham groups. Ash content of femur was significantly lower in OVX than sham groups but there were no difference between SB and OB group. Ca content in the soybean oil and beef tallow group were not influenced by OVX but Ca content in fish oil group was significantly higher in OF than SF group. The SB group showed the hyighest Ca content and the SF group showed the lowest Ca content. P content of femur was significantly lower in OVX groups than in sham groups but there were no difference between SB and OB group. The SS group showed the highest P content and the OS and OF group showed lower P content compare to other groups. From this result, it suggested that beef tallow positively influenced maintenance of bone mass by means of accumulation of body fat in ovariectomy.

Effects of Bovine Ash and Calcium Phosphate on Calcium Metabolism in Postmenopausal Osteoporosis Model Rats (골다공증 실혐모델 흰쥐의 칼슘대사에 대한 소뼈회분과 인산칼슘의 섭취 효과)

  • The model rats with postmenopausal osteoporosis were comparatively observed with regard to the effects of bovine ash and calcium phosphate on calcium metabolism. The modelling design involved the five week-old week-old female SD-strain rats ovariectomized and fed a low-Ca diet(20% casein, 0.06% Ca and 0.38% P) for three weeks. The rats were divided into five groups, one of which was fed the low-Ca diet(basal), and the rest of which were divided into five groups, one of which was fed the low-Ca diet(basal), and the rest of which were fed four kinds of Ca-supplemental diets(20% protein, 1.06% Ca and 0.8% P) for three weeks. The Ca-suplements diets contained two kinds of Ca sources, bovine bone ash(BBA) or calcium phosphate, tribasic [Ca3(PO4)2] and two kinds of protein sources, casein or isolated soy protein(ISP). The model rats of postmenopausal osteoporosis fed basal diet showed a significant decrease in Ca utilization in reference to serum Ca concentration, breaking force of bone, Ca and P contents of bone, and Ca absorption and retention. However, the supply of Ca for three weeks demonstrated the improved utilization of Ca. One step further, BBA was more effective than calcium phosphate in improving Ca utilization in ISP-fed groups. On the other hand, no significant difference was seen in casein-fed groups. It is to conclude that BBA could be more effective in accelerating Ca utilization under vulnerable dietary or physiological conditions such as vegetable protein intake and osteoprosis.

The Relationship between Lead Intake and Calcium Status in Korean Rural Adult Men and Women on Self-Selected Diet (일부 농촌 성인 남녀의 일상식이중 납 섭취수준과 칼슘 섭취량, 혈액 수준 및 뇨중 배설량과의 관계)

  • This study was carried out to estimate the dally intake of lead and the relationship among dietary In take, serum level, and urinary excretion of calcium In 30 healthy adults living In rural area of Korea (12 males and 18 females). Analyses for the nutritional status of the subjects were performed by 3-day dietary intake record, duplicated diet collection, 24-hour urine collection, and venous blood sampling. The results were as follows The mean daily intake of energy was 2,176.3kcal and 1,613.9kcal in males and (tamales of 20∼49years, and 1,914.8kcal and 1,517.9kcal in males and females of 50∼59years, respectively The ratio of carbohydrate : fat : protein was 73.4:13.6:13.0 in males and 76.4:10.3:13.3 In females. The mean daily intake of lead was 277.2Pg in males and 192.0ug in females. The mean daily intake, serum level, and urinary excretion of calcium were 491.1mg, 8.9mg/dl, and 80.7mg in males and 426.7mg, 8.8mg /dl, and 80.3mg in females, respectively. No significant correlation was found between the daily lead intake and the dietary intake, serum level, and urinary excretion of calcium. It was concluded that the daily lead intake was lower than the acceptable daily lead intake of FAO/WHO but a little higher than that of other investigations. And the daily lead intake was not level that relate to calcium status seriously.

Effects of dietary Acremonium terricola culture supplementation on the quality, conventional characteristics, and flavor substances of Hortobagy goose meat

  • This study aimed to determine the effect of dietary supplementation with Acremonium terricola culture (ATC) on the quality, conventional characteristics, and flavor substances of Hortobágy goose meat. A total of 720 one-day-old goslings were divided into four dietary treatments, each consisting of six cages of 30 goslings. The dietary conditions consisted of the control group and three treatment groups supplemented with 3, 5, or 7 g/kg ATC. In male geese, supplementation with 3 g/kg ATC elevated the crude ash (CA) content of the thigh muscle compared to the control group, and the CA content of the pectoralis major was significantly elevated when geese were supplemented with 5 g/kg ATC (p < 0.05). In females, compared with the control group, supplementation with 7 g/kg ATC enhanced the crude protein (CP) content of the pectoralis major. Supplementation with 7 g/kg ATC also increased the crude fat (CF) content of the pectoralis major in females as well as in both sexes; moreover, this supplementation dose increased the inosinic acid content of the thigh muscle in males and in both sexes. In contrast, supplementation with 5 g/kg ATC decreased the pH of the thigh muscle at 12 h postmortem (p < 0.01). No significant changes in meat color, water loss rate, shear force, moisture content or amino acid (AA) levels were observed after ATC supplementation (p > 0.05). Levels of saturated fatty acids (SFAs) and polyunsaturated FAs (PUFAs) in the pectoralis major and levels of SFAs, monounsaturated FAs (MUFAs), and PUFAs in the thigh muscle were not affected by the supplementation. Overall, ATC supplementation had positive effects on the pH, and CA, CP, CF, inosinic acid contents as well as on the FA composition of gosling meat. The optimal level of ATC supplementation was 7 g/kg in goslings from 1 to 70 days of age.

Efficacy of Supplemental Lecithin-free Egg Yolk at Different Dietary Calcium Levels on Growth Performance and Ca Absorption of Laying Hens (계란 난황 레시틴 추출 부산물이 사료 내 Ca 함량을 조절한 산란계의 생산성과 Ca 흡수에 미치는 영향)

  • A 3-weeks feeding trial with 288 laying hens were conducted to determine the efficacy of lecithin-free egg yolk at different levels of dietary Ca on performance and Ca absorption. Laying hens were divided into 6 groups according to calcium level and testing agent; 0% calcium feed (A), 0.2% calcium feed (B), 0.4% calcium feed (C, normal feed), 0.6% calcium feed (D), 0.4% calcium feed + 0.2% egg byproduct (C+0.2), 0.4% calcium feed + 0.4% egg byproduct (C+0.4). The final body weight gain of C+0.2 and C+0.4 groups were higher by 1.5% and 7.4% respectively than group C. Tibia ash contents did not show significantly difference, but calcium contents increase (p<0.05) in C+0.2 and C+0.4 groups. Parallel undecalcified tibia joint sections were stained for calcium absorption by the von Kossa's stain. This result show that lecithin free egg byproduct supplementation to normal calcium feed improved growth performance and calcium utilization in laying hens.

Effect of Chitosan-Ascorbate and Calcium Lactate on the Fermentation and Quality Characteristics of Squid Sikhae (Chitosan-Ascorbate 및 Calcium Lactate가 오징어 식해의 숙성과 품질 특성에 미치는 영향)

  • Effects of chitosan-ascorbate(CA) and calcium lactate(CL) on fermentation and quality of squid sikhae were investigated CA and LA were added at $0.5\%$ (designated CA1 and CL1) and $1.0\%$(CA2 and CL2) concentrations, respectively and fermented for 12 days at $10^{\circ}C$. pH of CA-added sikhae was higher than that of control, while acidity of the former was lower than that of the latter. During 12 days of fermentation, CA-added sikhae showed higher protease activity than control by $2.3\~2.6$ times and CL-added sikhae by $2.8\~3.6$ times. At 12 days of fermentation, CA-added sikhae revealed higher protease activity than control by $1.2\~1.4$ times and CL-added sikhae by $1.5\~1.9$ times. CA-added sikhae also showed higher amino-nitrogen content than control by $1.4\~1.7$ times and CL-added sikhae by $1.9\~3.5$ times. In comparison of CA1 with CA2, CA2 showed all higher pH, protease and amylase activity, and amino-nitrogen content than CA1. In analysis of electrophoresis, molecular weights of major proteins in ~w squid were $116.9\~119.0$, 96.5 and 59.3kDa. However, after fermentation for 12 days, a protein band of 119.0kDa disappeared but a new protein band with below 14 kDa appeared in sikhae, especially CA-added sikhae. In sensory evaluation, the intensity of sour taste was the highest for control and the lowest for CA2. Softness of squid was the highest for control and the lowest for CA2. Overall acceptability was the best for CA2. In conclusion, these results suggest use of $1\%$ CA in sikhae preparation as addition of CA(CA2) increased the protease and amylase activity, nitrogen content of amino form, sensory acceptability as well as shelf-life of sikhae.

The Relationship of Renin Activity, Hormonal Na, Ca and Habitual Na, Ca Intake in Hypertension (정상생활을 하는 고혈압 환자에서 Renin활성도의 차이와 Na, Ca 조절호르몬 및 Na, Ca 섭취습관과의 관련성)

  • In order to investigate the relationship between plasma renin activity and metabolism of Ca and Na in blood pressure, the habitual dietary intakes of Na and Ca urinary excretion of Ca, Na and K, and plasma level of renin activity, aldosterone, and indices of Ca metabolism were measured in 27 untreated hypertensive women and 30 age-matched normal women on a free diet. Hypertensive subjects were classified into high renin hypertensive (HH), medium renin hypertensive(HM) and low renin showed no significant difference among normotensive, LH, MH and HM groups. It appeared that 25-(OH) Vit D3 level of HH group was significantly higher than LH group(p<0.05). There was significant difference in habitual intake of Ca between normotensive and LH groups. However, habitual intake of Na showed no significant difference among normotensive, LH, MH and HH group. Positive correlation of systolic and diastolic blood pressure with PTH(r=0.324, r=0.375) and urinary Ca(r=0.496, r=0.278) and a negative correlation of systolic blood pressure with habitual Ca intake(r=-0.371) existed(p<0.05). A relative magnitude of factors affecting hypertension was analyzed by multiple regression analysis. Overall results about relative influence of independent variables to dependent variable (systolic blood pressure) indicated that urinary Ca was the higher correlation in all subjects(p<0.0001), followed by age and aldosterone. PTH showed a significant correlation for relative influence on diastolic blood pressure in all subjects. The above results indicated that renin-aldosterone system and Ca regulating hormone had a mutual relationship in hypertension.

Effects of Different Dietary Acidifier Sources of Calcium and Phosphorus on Ammonia, Methane and Odorant Emission from Growing-finishing Pigs

  • The objective of this study was to investigate the effects of different sources of Ca and P on urine and ileal digesta pH, and ammonia ($NH_{3}$), methane ($CH_{4}$), and odor emission. In experiment 1, eight pigs (commercial three-way cross; initial BW 67$\pm$3 kg) were arranged in a repeated 4$\times$4 Latin Square design. All pigs were equipped with a T-cannula in the distal ileum. Four corn-soybean meal based diets were formulated. Diet 1 was the control in which dicalcium phosphate (DCP) and limestone ($CaCO_{3}$) were used as the sources of inorganic P and Ca. In Diets 2 and 3, ${H_{3}}{PO_{4}}$, monocalcium phosphate (MCP), and $CaSO_{4}$replaced DCP and $CaCO_{3}$ as the inorganic sources of P and Ca. Diet 4 was similar to Diet 1 except that it was fortified with HCl to provide an acid load similar to that of diet 2. Urine and ileal digesta pH were determined in pigs fed each of these diets. In Exp. 1, urine pH decreased (p<0.05) in animals consuming diets containing ${H_{3}}{PO_{4}}$-$CaSO_{4}$ (5.85$\pm$0.38) and MCP-$CaSO_{4}$(5.73$\pm$0.30) compared with the DCP-$CaCO_{3}$ diet (6.89$\pm$0.24). In the pigs consuming ${H_{3}}{PO_{4}}$-$CaSO_{4}$, ileal digesta pH decreased compared with the control (5.52$\pm$0.28 vs. 6.66$\pm$0.17; p<0.05). Based on the results of Exp. 1, a total of four trials were performed in environmental chambers for determining how $NH_{3}$, $NH_{4}$, and odor were affected by the different dietary Ca and P sources (Exp. 2). In Exp. 2, pigs fed the ${H_{3}}{PO_{4}}$-$CaSO_{4}$ diet had decreased (30%) $NH_{3}$ emissions compared with the control (p<0.05). Also, a combination of MCP-$CaCO_{3}$-$CaCl_{12}$ decreased $NH_{3}$ emission by 15% (p<0.05). Emission of $CH_{4}$ was decreased only with the ${H_{3}}{PO_{4}}$-$CaSO_{4}$ diet with 14% (p<0.05). Odorant emission of phenolics and volatile fatty acids increased roughly three-fold with the DCP-$CaSO_{4}$ diet but was not affected by other test diets. In conclusion, acidogenic Ca and P sources in swine diets can decrease the urinary pH and reduce $NH_{3}$ and $CH_{4}$ emission from swine facilities.

Effect of Calcium Lactate Prepared from Black Snail on Dough Fermentation, Quality and Shelf-life of Bread (다슬기로 제조한 칼슘 락테이트가 반죽의 발효와 빵의 품질 및 저장성에 미치는 영향)

  • This study was conducted to investigate the effect of 0.5% calcium lactate(CaL) on the fermentation of dough and quality and shelf-life of bread. Calcium lactates(CaL-A and CaL-P) were prepared from ash of black snail which contained shell and tissue together(ABS) and powder of the snail(PSB). pH of dough with the CaLs were higher than that of the control md, volume of the dough, loaf volume of bread were lower than those of the control products. But the volumes were almost the same when the pH of the dough were adjusted to pH 5.5. Mean calcium contents of treated bread (39.36~49.70 mg/100 g) were higher than that of control products(13.43 mg/100 g). There was no difference in Hunter $L^{*}$, $a^{*}$, $b^{*}$ values between the control and the treated group. Hardness and gumminess of CaL-A treated bread were the highest, but springiness and cohesiveness were the lowest. All the attributes showed no difference in case of pH adjustment(pH 5.5). The smaller pore and larger air cell with rough surface were observed in the CaL treated bread by SEM analysis. Sensory scores of CaL treated bread showed relatively lower values than those of the control products, but the scores increased by pH adjustment. The shelf-life of bread with CaL-P and CaL-A at 2$0^{\circ}C$ were 4 and 3 days, respectively, while that of the control group 1 day.day.y.
