Analysis of Dietary Informations in Newspapers and Magazine for Children (2002) (어린이신문 및 잡지에 게재된 식생활 관련 정보 현황조사(2002년))

  • Children regard newspapers and magazines as the important source of information. Because informations about diet in the newspaper and magazines are regarded as good, it is necessary to find out whether informations provided to children are correct. Thus, this study shows the present situation of informations on diet by monitoring 3 newspapers (Kids. Chosun, Kids. Donga, Kids. Hankook) and 2 magazines (Earinee - Dongsan, Sae-But) for children. This study focused on the quantitative and the qualitative analysis for articles and advertisements. For the quantity, rate and number were calculated. For the quality, the accuracy was analyzed. Result of this study were as follow; Analyzed the number of articles and advertisements on diet, there are 2 times more number of advertisements (339 cases) than that of articles (180 cases) in the newspaper. There are slightly more number of advertisements (24 cases) than that of articles (18 cases) in the magazine. Most of advertisements are about processed foods and children' favorite foods. Especially, the advertisement of processed foods are ranked first by the quantity with 245 cases (75%) in the newspaper. In the magazine, 10 cases (42%) are about processed foods. About source of advertisements on diet informations in the newspaper, there are 300 cases (86.7%) without evidence based data and 34 cases (9.8%) of interview with entertainers, from the total 346 cases. In the magazine, there are high rate of cases without evidence based data and interview with entertainers. For the evaluation of the information about diet in the newspaper, there are 148 cases (19.7%) with no clear guidance and position, some cases with advertisements for specific products and etc. Discordance between subjects and contents, and emphasis of specified field or some parts are found from the total 750 cases. About the accuracy of contents, from the total 180 cases in the newspaper, 99 cases (55%) are inappropriate and 19 cases (10.6%) are appropriate. In magazines from the total 18 cases, 7 cases (38.9%) are inappropriate and 11 cases (61.1 %) are appropriate. With these results, we can conclude that informations about diet in newspapers and magazine for children needs improvement. Therefore, for newspapers and magazines contents should be reported scienifically by inspecting contents and by taking professional advice, in order to spread the accurate information about diet. Effects of Different Sources of Dietary Chromium on Growth, Blood Profiles and Carcass Traits in Growing-finishing Pigs

  • This study was carried out to evaluate the effects of dietary supplementation of different sources of chromium on growth performance, blood profile and carcass trait in growing-finishing pigs. A total of 200 growing pigs (Landrace${\times}$Yorkshire)${\times}$Duroc, average initial weight 8.5 kg) were allotted to 5 treatments with 4 replicates per treatment and 10 pigs per replicate. Five treatments were designated as follows according to the source of chromium. i) Control (No chromium): corn-soybean meal based basal diet, ii) $CrCl_{3}$: control diet+200 ppb Cr as $CrCl_{3}$, iii) CrPic: control diet+200 ppb Cr as Cr picolinate, iv) CrMet-1: control diet+100 ppb Cr as Cr methionine, and v) CrMet-2: control diet+200 ppb Cr as Cr methionine. After the feeding trial, three pigs per replicate (12 pigs per treatment) were slaughtered for the evaluation of carcass traits. Average daily gain (ADG), average daily feed intake (ADFI), and feed: gain ratio (F/G) were not different (p>0.05) among dietary Cr sources. However, whole-period ADG of pigs fed CrPic, CrMet-1 and CrMet-2 diets was higher (p<0.05) than for the control diet. Nutrient digestibility was not different (p>0.05) among dietary Cr sources, but the nutrient digestibility of pigs fed CrPic, CrMet-1 and CrMet-2 diets was higher (p<0.05) than for the control diet. BUN level decreased with more magnitude (p<0.05) in pigs fed Cr during the 20 to 50 kg period. Although both serum cholesterol and triglyceride were different (p<0.05) among treatments, there was no consistent response that could be related to the dietary Cr sources regardless of growth phase. However, the overall data suggested that serum cholesterol level increased as BW of pigs increased. Blood total protein (TP) increased (p<0.05) in pigs fed Cr only during the 90-110 kg phase, and blood creatinine (Creat) level was higher in $CrCl_{3}$ and CrPic treatments than in the control only during the 90-110 kg phase. Backfat thickness was thinner (p<0.05) in pigs fed CrMet-2 than in the control treatment. Therefore, lean percentage was higher (p<0.05) in CrMet-2 than in control pigs. However, dressing percentage and Longissimus muscle area (LMA) were not different (p>0.05) among treatments. In conclusion, dietary supplementation of 200 ppb Cr, via either CrPic or CrMet, improved pig growth performance and nutrient digestibility. Moreover, dietary CrMet supplementation for the growing-finishing pig is evidently remarkable for improving both lean percentage of the carcass and backfat thickness.

The Effects of the Intention Promotion Program on the Diet of Workers with Hyperlipemia based on the Theory of planned Behavior (식이이행 의도증진을 위한 중재가 고지혈증 근로자의 식이이행 의도 및 식이이행도에 미치는 영향)

  • Hyperlipemia is the most leading risk factor of cardiovascular disease which is the main cause of death in Korea. However, there is a tendency to neglect the prevention and treatment since it has no specific symptoms. It has been reported that the level of serum-lipid can be lowered by the improvement of eating habits. Therefore, it is highly likely that the development of programs on the improvement of eating habits through behavioral theory is required to the community nursing practice. The theory of planned behavior, which assumes that human behaviors are determined by one's intention to carry out the behavior, can be characterized by the point that behaviors are not only individual factors but also social behaviors relating to subjective norms. It is widely recognized that this theory has a high predictability on health behavior due to it's simplicity clearness, and measurability as well as high quality of being general. Thus, the theory of planned behavior could be useful in developing a model of a health promotion program to the change of behaviors of the risk group of cardiovascular disease. Consequently, based on the theory of planned behavior, the purpose of this study is to develop an intention promotion program of the diet, and then to testify the effects. The sample of this study consisted of 26 industrial workers who had proved hyperlipemia from a medical examination in 1996 (experimental group 13, control group 13). The intention promotion program, which includes education, monitoring, pressure, counselling on the level of individuals, families and organizations, was conducted for 10 weeks The purpose of this program was to promoting intention of the diet through changes of the prerequisite factors of intention such as behavioral belief, outcome evaluation, normative belief and control belief. When it came to data analysis, the ${\chi}^2$-test and Fisher's Exact test were used to compare the general characteristics between the experimental and the control group, an independent t-test for the other variables. ANOVA was used to the test hypothesis, and the Pearson correlation test for variable's correlation. The results of this study can be summarized as follows ; 1) There was a significant increase in the intention(F=18.51, p=.00) of diet in the experimental group. 2) Diets(F=32.51, p=.001) in the experimental group were better carried out than in the control group. 5) There was a moderate correlation between the intention of diet and performance (r=.587. p=.003). From the results, it can be concluded that the intention promotion program is very effective, leading to the change of health promotion behavior. Above all, it is really valuable that the intention promotion program in this study regards health promotion behavior as a social behavior and that intervention was done on the level of family and organization. Consequently, when performing a health promotion program, social approach elevating the intention should go hand in hand in order to make the program effective.

Evauation of the Nutritive Quality of Proteins by Using Slope-Ratio Assay (경사비율 방법에 의한 단백질의 영양가 평가)

  • Young rats were fed diets containing three different proteins : lactalbumin, soy and peanut protein, each fed at levels from zero to over 35% of the diet over a 2-week time period. Response was measured at the amount of body weight gain in relation to total nitrogen consumption as a measure of dose. The slopes of the regression of the proteins in the linear range were compared to that of the standard lactalbumin. The relative growth index of soy and peanut protein was calculated to be 78.4 and 55.7, respectively. Thus, it is concluded that the slop-ratio assay is a very useful method for the evaluation of the nutritional quality of proteins under well-designed experimental conditions.

Effects of Deletion of Ca Supplement (limestone) on Growth and Beef Quality in Hanwoo Finishing Steers (한우 비육후기 사료에 칼슘 첨가제(석회석) 제거가 성장 및 육질특성에 미치는 영향)

  • A study was conducted to determine the effects of feeding a diet containing no Ca supplement (limestone) during the late finishing period on growth, marbling and serum 1,25-dihydroxy vitamin $D_3$ level in Korean native cattle. Twenty-four steers (20${\sim}$24 mo of age) were divided into two groups of 12 each: one group assigned to a control diet (concentrates containing 2.5% limestone) and the other to a diet containing no calcium supplement. They were allowed to have free access to diets (concentrates and orchard grass hay) and water during the entire feeding period (223 d). Serum $Ca^{2+}$, Ca and P concentrations were not influenced by diets, but serum 1,25-dihydroxy vitamin $D_3$ concentrations determined 2 or 6 mo after the beginning of feeding the experimental diets were higher (P<0.01) in steers fed the diet without Ca supplement than in those fed the control diet (78.3 vs 51.7 and 80.3 vs 51.1 pg/mL, respectively). Steers fed the diet without Ca supplement tended to have a higher intake of concentrates, but a lower intake of hay, compared to those fed the control diet. Average daily gain was higher (P<0.05) in steers fed the diet without Ca supplement than in those fed the control diet. Feeding the diet without Ca supplement remarkably (P<0.01) increased the marbling score (5.1 vs 2.2) and the muscle (M. longissimus dorsi) fat content (10.2 vs 6.7%) with a concomitant decrease in moisture content (67.6 vs 70.4%), compared to feeding the control diet. Ribeye area was increased (77.2 vs 82.8 $cm^2$) with the diet without Ca supplement, compared to the control diet (P<0.05). Meat color, pH and water-holding capacity in longissimus muscle were not different between the two groups. The Warner-Brazler Shear (WBS) force of the longissimus muscle was slightly (P=0.08) lower in steers fed the diet without Ca supplement than in steers fed the control diet (2.9 vs 3.2 kg/1.27-cm diameter core). Sensory evaluation showed that feeding the diet without Ca supplement slightly (P<0.05) improved tenderness (4.9 vs 4.5) and flavor (4.9 vs 4.6), compared to feeding the control diet, but juiciness was not affected by diets. Results showed that deletion of Ca supplement from finishing diets is beneficial, increasing growth and marbling partly through an increased energy intake and induced 1,25-dihydroxy vitamin $D_3$ synthesis that may increase intracellular $Ca^{2+}$ concentration and in turn fat synthesis.

The Development of a Quality Measurement Tool for a Contract-Managed Hospital Foodservice (병원 위탁급식 품질관리를 위한 품질평가도구 개발)

  • The purposes of this study were: a) to develop the a quality measurement tool for the contract-managed hospital foodservice, and b) to evaluate their performance with the developed quality measurement tool, and c) to verify the reliability and validity of the quality measurement tool. The developed quality measurement tool comprised two parts, which were foodservice management and medical nutrition care service. The foodservice management part was classified into six functional categories which were Menu, Procurement and Storage, Production and Distribution, Facility and Utility, Sanitation and Safety, and Management and Evaluation. The medical nutrition care service part indicated the medical nutrition care provided. Quality measurement tool had 91 standards and 324 indicators. The quality measurement tools were distributed to the hospital foodservice manager employed by the foodservice company. The 324 indicators were measured by foodservice manager on the 5-Likert-type scales, and then adapted to a 100 point scale. The SPSS Ver. 11.0 was used for statistical analysis. The categories whose scores were evaluated as being high were Procurement', General Sanitation', Personal sanitation' and Waste' and the categories whose scores were evaluated as being low were Diet Order Manual', Standard Recipe', Appropriateness (Facility and Utility)', Check (Facility and Utility)'and Information Management'. All the categories of medical nutrition service were evaluated as having seriously low scores. Therefore, it was necessary for the contract-managed hospital foodservice to improve its performance in the area of medical nutrition care service. For the verification of the developed quality measurement tool, the reliability obtained by calculating Cronbach's α was 0.8747, and the content validity was also proved by scrutiny of the modification of the Professional group's techniques. Evaluation of nutrient and food intake status, and dietary quality according to abdominal obesity based on waist circumference in Korean adults: Based on 2010-2012 Korean National Health and Nutrition Examination Survey (한국인 성인 남녀에서 허리 둘레 기준 복부비만에 따른 영양섭취상태 평가: 2010-2012 국민건강영양조사 자료를 이용하여)

  • Purpose: This study was conducted in order to investigate the nutrient and food intake status, and dietary quality in Korean adults according to abdominal obesity based on waist circumference. Methods: We analyzed data from the combined 2010~2012 KNHANES (Korean National Health and Nutrition Examination Survey). The analysis included 6,974 adults aged 40 to 64 years. In this study, according to abdominal obesity based on waist circumference (male ${\geq}$ 90 cm, female ${\geq}$ 85 cm), we classified the subjects into the obesity group (male, n = 775, female, n = 1,113) and control group (male, n = 2,038, female, n = 3,048). The nutrient and food group intake, ND (nutrient density), NAR (nutrient adequacy ratio), MAR (mean adequacy ratio), INQ (index of nutritional quality), DDS (dietary diversity score), and DVS (dietary variety score) were analyzed using data from the 24-recall method. Results: For male, no significant difference in quality index of the diet was observed between the obesity group and the normal group. In female, in diet quality (ND, NAR, and INQ), vitamin $B_2$ (ND, NAR, and INQ) calcium (NAR), phosphorous (ND, INQ) and potassium (ND) of the obesity group was significantly lower than those of the control group. DDS and DVS in the obesity group (3.57, 30.95) were significantly lower than those of the control group (3.68, 32.84) (p = 0.0043, 0.0002). DVS (DVS ${\geq}$ 39.9) showed association with lower risk of waist obesity in a logistic regression model after adjustments for multiple confounding factors including age, education, income, alcohol intake frequency, smoking, physical activity, energy intake, and body mass index (OR: 0.616, 95% CI: 0.420-0.903). Conclusion: In conclusion, females with abdominal obesity had lower micronutrient intake quality, DVS than those of the control group. In Korean females, food intake variety can adversely affect waist circumference.

Long-term Evaluation of Muscle Quality of the Olive Flounder, Paralichthys olivaceus, Fed with Extruded Pellet (배합사료로 장기간 사육된 넙치의 육질평가)

  • This study was conducted to evaluate the muscle quality of the olive flounder fed on extruded pellet (EP) diets compared with a raw fish moist pellet (MP) diet for olive flounder, Paralichthys olivaceus in a commercial scale for a year. The sensory and physical qualities and palatable compounds were compared for evaluation of muscle quality in fish. Four diets were formulated for this experiment: two experimental EP diets (EP 1 and 2), one commercial EP diet (CEP) and MP diet. Crude lipid of fish fed EP1 and EP2 was significantly higher (P<0.05) than that of fish fed CEP, but not significantly different from that of fish fed MP (P>0.05). In the palatable compounds, the free amino acids composition were much alike in that of all the diets. Proline, glycine and alanine from fish fed diet EPs were the most abundant compound among amino acid compositions. There was little difference in the free amino acid compositions of all flounder from localities and the growing conditions between wild and cultured fishes. Taurine of fish fed EP1 was dominantly high over that of fish fed EP2, CEP and MP. In all nucleotides and their related compounds, ATP and IMP from fish fed EP diets were higher (P<0.05) than those of fish fed MP. In the sensory score, overall-acceptability of fish fed EP2 were significantly higher (P<0.05) than that of fish fed EP1, CEP and MP. Hardness of physical properties from fish fed EP2 was significantly higher (P<0.05) than those of fish fed CEP (P<0.01). These results strongly suggest that diets EP could be developed to replace MP diet for the grow-out stage of olive flounder without adverse effect on growth performance.

Effects of Dietary Energy Level and Slaughter Weight on Growth Performance and Grades and Quality Traits of the Carcass in Finishing Pigs (비육돈에서 사료의 에너지 수준과 도살체중이 성장성적과 도체의 등급 및 육질특성에 미치는 영향)

  • (Y $\times$ L) $\times$ D-crossbred gilts and barrows weighing $80.2\pm0.2$ kg were fed a "medium-energy" (ME) or "low-energy" (LE) diet (3.2 vs 3.0 M cal DE/kg) and slaughtered at 110, 125, or 138 kg, after which physicochemical and sensory quality traits of major primal cuts of resulting carcasses were analyzed, under a 2 (sex) $\times$ 2 (diet) $\times$ 3 (slaughter weight; SW) factorial arrangement of treatments. The ADG and ADFI were greater (P<0.01) in barrows than in gilts and also in 125- and 138-kg vs 110-kg SW. Moreover, ADG and gain:feed were greater in ME vs LE (P<0.01), whereas ADFI was greater in LE vs ME (P<0.01). Backfat thickness, which increased with increasing SW (P<0.01), was not affected by sex or diet. Carcass marbling score was greater (P<0.01) in gilts and LE than in barrows and ME, respectively. Carcass quality grade, which was superior in LE vs ME, was not affected by SW, whereas the yield grade decreased abruptly between 125- and 138-kg SW primarily due to the upper limit of carcass weight imposed on the A and B grades. Physicochemical characteristics including pH, drip loss, and variables pertaining to color of belly, ham, and loin were not affected significantly by any of the treatment factors, albeit statistically significant in some cases, in terms of quality criteria. In sensory evaluation, the acceptability of fresh belly was not influenced by any of the treatment factors. Marbling score of fresh ham was greater in LE vs ME (P<0.01) and tended to increase between 110- and 125-kg SW (P=0.10); in loin, the increase of this variable between the two SW was significant (P<0.01). Following cooking, LE was superior to ME in the acceptability in belly and ham, but the effect of SW was insignificant in any of the sensory quality traits evaluated in this study in any of the three major primal cuts. In conclusion, the present results suggest that SW can be increased to up to 138 kg without compromising carcass quality and that LE has some beneficial effects on quality of the whole carcass and the major primal cuts.

Comparative Analysis and Evaluation of Dietary Intakes of Koreans by Age Groups: (1) Nutrient Intakes (서울 및 근교에 거주하는 한국인의 연령별 식생활 비교 및 평가: (1) 영양소 섭취 비교)

  • It is necessary to compare the dietary characteristics among different age groups because different nutritional problems require different dietary applications. This study was performed to identify the nutritional characteristics of Korean diet among different age groups. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living in Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Energy intake was as much as 1771kcal for PC, 2139kcal for EC, 2475kcal for HS, 2276kcal for CS, 1860kcal for 30-49 years, 1715kcal for 50-69 years, 1326kcal for over 70 years. The subjects of PC, EC, HS, and CS groups got about 25% of energy from fat, but the subjects in 30-49 years, 16%, those in 50-69 years, 15%, and those over 70 years, 13%. The energy consumption from protein was about 15% in each age group. Percent of energy intake as Korean RDA was greater than 100% for PC, EC, HS, and male CS groups. The percent intake for RDA of calcium, iron, vitamin A, and vitamin B$_2$was low in most age group. Iron intake was inadequate in female of PC and CS groups, and subjects in 30-49 years and over 70 years. Mean adequacy ratio(MAR) was 0.9 in PC, and decreased with increase of age. Therefore MAR did not reach to 0.7 among subjects over 70 years. Index of nutritional quality(INQ) for calcium, iron, vitamin A, and vitamin B was below 1 in most age groups. From these results, major nutritional problems of each age group were overall inadequate intakes of calcium and iron, excess consumption of protein and fat for PC, EC, HS, and CS groups, and inadequate nutrients intake of subjects over 70 years old.
