Influence of Salt Concentrations on the Stabilities and Properties of Sodium Caseinate Stabilized Oil-in-Water Emulsions

  • The influence of salt concentration on the stability of sodium caseinate (CAS)-stabilized emulsions (20 wt% corn oil, 3.2 wt% CAS, 5 mM imidazole/acetate buffer, pH 7) was examined. In the absence of salt, laser diffraction measurements and optical microscopy measurements indicated there were some large oil droplets ($d>10\;{\mu}m$) in the emulsions stabilized by 0.8 to 3.2 wt% of CAS. The droplet aggregation (mostly droplet coalescence) observed in the emulsions containing ${\leq}2.8\;wt%$ CAS tended to decrease as the CAS concentration increased, however, after which concentration (at 3.2 wt% CAS) depletion flocculation occurred. The addition of $CaCl_2$ (5-20 mM) into the emulsions stabilized by 3.2 wt% CAS prevented the depletion flocculation although there was a small fraction of relatively large individual droplets in the emulsions, which was attributed to electrostatic screening effect and bridging effect of calcium ion. This study has shown that calcium ion that has been reputed to promote droplet aggregation could improve emulsion stability against droplet aggregation in CAS-stabilized emulsions.

  • Curtain stability without curtain contraction is critical for a successful operation in curtain coating, and this can be influenced by the change in particle dynamics and rheological properties of coating colors. In this study, polyvinyl alcohol (PVA) and carboxymethyl cellulose (CMC) were added to control the rheology of GCC based curtain coating colors. Surface tension was increased slightly with increasing content of cobinder. Shear-thinning of viscosity was more pronounced for the CMC containing GCC coating colors. Complex modulus decreased when small amount of PVA was used as a cobinder, but it increased in other coating colors. Extensional viscosity was increased with increasing of the cobinder content, but CMC was more effective. Results indicate that pigment interaction with PVA is different from that with CMC. Dispersibility of coating colors was improved due to steric stabilization when small amounts of PVA was used, but flocculation occurred by bridging when the amount of PVA was increased. Dispersibility of coating colors was improved when small amount of CMC was added, while flocculation was observed by depletion effect when the concentration of CMC was increased in coating colors. Addition of cobinders at proper levels gave positive effects both in rheological properties and curtain stability. On the other hand, excessive amount of cobinders caused particle flocculation and this resulted in rheological and curtain stablity problems.

Comparison of Emulsion-stabilizing Property between Sodium Caseinate and Whey Protein Concentrate: Susceptibility to Changes in Protein Concentration and pH

  • The stability of corn oil-in-water emulsions coated by milk proteins, sodium caseinate (CAS), or whey protein concentrate (WPC), was compared under the environmental stress of pH change. Emulsions were prepared at 0.1 of protein:oil because the majority of droplets were relatively small ($d_{32}=0.34$ and $0.35\;{\mu}m$, $d_{43}=0.65$ and $0.37\;{\mu}m$ for CAS- and WPC-emulsions, respectively) and there was no evidence of depletion flocculation. As the pH of the emulsions was gradually dropped from 7 to 3, there was no significant difference in the electrical charges of the emulsion droplets between the 2 types of emulsions. However, laser diffraction measurements, microscopy measurements, and creaming stability test indicated that WPC-emulsions were more stable to droplet aggregation than CAS-emulsions under the same circumstance of pH change. It implies that factors other than electrostatic repulsion should contribute to the different magnitude of response to pH change.

하수처리장 에너지 자립화를 위한 하수 에너지 잠재력 회수 기술 (Recovering the Energy Potential of Sewage as Approach to Energy Self-Sufficient Sewage Treatment)

  • Domestic sewage treatment plants (STPs) consume about 0.5 % of total electric energy produced annually, which is equivalent to 207.7 billion Korean won per year. To minimize the energy consumption and as a way of mitigating the depletion of energy sources, the sewage treatment strategy should be improved to the level of "energy positive". The core processes for the energy positive sewage treatment include A-stage for energy recovery and B-stage for energy-efficient nitrogen removal. The integrated process is known as the A/B-process. In A-stage, chemically enhanced primary treatment (CEPT) or high rate activated sludge (HRAS) processes can be utilized by modifying the primary settling in the first stage of sewage treatment. CEPT utilizes chemical coagulation and flocculation, while HRAS applies returned activated sludge for the efficient recovery of organic contents. The two processes showed organic recovery efficiencies ranging from 60 to 70 %. At a given recovery efficiency of 80 %, 17.3 % of energy potential ($1,398kJ/m^3$) is recovered through the anaerobic digestion and combustion of methane. Besides, anaerobic membrane bioreactor (AnMBR) can recover 85% of organic contents and generate $1,580kJ/m^3$ from the sewage. The recovered energy is equal to the amount of energy consumption by sewage treatment equipped with anaerobic ammonium oxidation (ANAMMOX)-based B-stage, $810{\sim}1,620kJ/m^3$. Therefore, it is possible to upgrade STPs as efficient as energy neutral. However, additional novel technologies, such as, fuel cell and co-digestion, should be applied to achieve "energy positive" sewage treatment.

유화액 시스템에서 옥테닐 호박산 베타글루칸의 계면 특성 (Interfacial Properties of Octenyl Succinyl Barley ${\beta}$-Glucan in Emulsion System)

  • The synthesis of octenyl succinyl ${\beta}$-gucan (OSA-${\beta}$-glucan) was carried out and its interfacial properties at the oil-water interface and in emulsion systems were investigated. An aqueous ethanol system as a reaction media was used to facilitate the synthesis process; 10% (w/w) ethanol found to be the best as it showed a maximum degree of substitution (DS: 0.0132). FT-IR showed a characteristic absorption spectrum at $1736cm^{-1}$, indicating the esterification of octenyl succinyl groups to ${\beta}$-glucan backbone. As for interfacial tension measurements, it was decreased with increasing concentration of OSA-${\beta}$-glucan in the aqueous phase and when NaCl was added to aqueous OSA-${\beta}$-glucan solution in the range of 0.01 M to 0.1 M and also when pH was raised (pH 3 ~ pH 9). In systems of emulsion stabilized with OSA-${\beta}$-glucan, fat globule size found to decrease with increasing concentration of OSA-${\beta}$-glucan, showing a critical value of about $0.32{\mu}m$ at 0.5 wt%. When the OSA-${\beta}$-glucan emulsions were stored, it was found that fat globule size was increased with storage time and particularly pronounced increase was observed in emulsion with 1% OSA-${\beta}$-glucan, possibly due to depletion flocculation. Results of creaming stability evaluated by light scattering technique showed that it was more stable in emulsions containing smaller fat globule size. Surface load of OSA-${\beta}$-glucan in emulsions increased with increasing concentration of OSA-${\beta}$-glucan, suggesting a multilayer adsorption.
