Quality Characteristics of Paeksulgi with Added Barley Powder (보리 가루 첨가 설기떡의 품질 특성)

  • The principal objective of this study was to assess the sensory quality, degree of gelatinization, color, texture and moisture content of Paeksulgis to which barley was added. The results were as follows: The moisture contents were approximately $35{\sim}39%$. In terms of the Hunter's color values of Paeksulgis of the control, the lightness (L) was 87.63, redness (a) was -1.07, and yellowness (b) was 5.06. The L-value of the control group was high, at 87.63; the L-values of the A1, A2, and A3 groups were 85.97, 83.74, and 83.56, respectively. As the quantity of barley increased, the L-value of the Paeksulgis decreased. The gelatinization of Paeksulgis to which barley was added decreased most profoundly in the A3 group. In terms of sensory quality, Paeksulgis with 10% added barley evidenced the most favorable sensory qualities. In terms of the mechanical characteristics of Paeksulgis, cohesiveness was the highest in the control group, while springiness, gumminess, and brittleness were the lowest. Springiness, and brittleness were decreased reduced with increases in the amount of added barley powder. Brittleness was increased by increases in the amount of added barley powder.

  • Different amounts of the Opuntia ficus-indica var. saboten fruit were soaked in different alcohol concentrations of a Korean rice wine distillate for 4 months. Changes in pH, brix degree, contents of reducing sugar and polyphenol compound, alcohol concentration, turbidity, and color were analyzed during the soaking period. Quality of the final product was determined through the analysis of the volatile flavor compounds and sensory evaluation. During the soaking periods, pH, alcohol concentration, and contents of polyphenol compound decreased, whereas the content of reducing sugar increased. These changes were affected more by the content of the fruit than the alcohol concentration of the soaking media. Turbidity of the wine increased with higher fruit contents, while the increase of alcohol concentration resulted in the turbidity decrease. As the soaking period increased, lightness and yellowness increased but redness decreased. Acetaldehyde, acetyl acetone, ethyl alcohol, guaiacol, thymol, and acetic acid phenyl ester were detected in all liquors. Significant differences in all sensory attributes test were shown by six experimental groups (p<0.05), and the best overall acceptability was obtained from the liquor made of 67% fruits and 30% alcohol concentration.

Effects of Rain-shelter Types on Growth and Fruit Quality of Red Pepper (Capsicum annuum L. var. 'Keummaru') Cultivation in Paddy (고추 논재배 시 비가림형태가 생육 및 과실 품질에 미치는 영향)

  • This study was carried out to investigate the effects of rain-shelter types on growth, and fruit quality of red pepper (Capsicum annuum, 'Kemmaru') cultured in paddy. Applied rain-shelter types were outfield (control), simple rain-shelter plastic house with 2 rows (2R), simple rain-shelter plastic house with 4 rows (4R), and perfect plastic house (House). The plant height was the highest in Houses treatment. There was no difference in leaf length and width among the rain-shelter treatments. The fresh and dry weight of red pepper was high in order of House > 4R > 2R > Control. The ASTA value is irregular tendency among the treatments. Hunter's color value 'a' and 'b' was not different from among the treatments. Phytophthora blight, powdery mildew, bacterial spot were not occurred in all of treatments, and Anthracnose was only occurred in control. Mite, Microcephalothrips abdominalis, and Bemisia tabaci were not occurred in all of treatments, and aphid, Helicoverpa assulta, and virus were occurred all of treatments as same degree. Our results will provide rain-shelter cultivation of red pepper can be increase dry yield and decrease disease and insects.

Food Component Characteristics of Cold Air Dried Anchovies (냉풍건조 멸치의 식품성분 특성)

  • This study was conducted to evaluate the quality of the cold air dried anchovies (CA), and compared with those of sun-dried anchovies (SA) and hot air dried anchovies (HA). Peroxide value increased, while ratio of percentage of (20:5+22:6) to that of 16:0 decreased during boiling and drying. The extents of change were CA>SA>HA in the order. In the case of CA, lightness was higher, but redness, yellowness and degree of browning was lower than in SA and HA. From the results of lipid properties, color test and sensory evaluation on color and rancidity odor, lipid deterioration was the lowest in CA of all boiled dried anchovy. Favorite properties such as a hot-water soluble nitrogen content and sensory evaluation on color and appearance of CA was superior to that of SA and HA. The nutritional properties (total amino acid contents, mineral contents and fatty acid compositions) of CA was similar to that of SA, but was superior to that of HA. Consequently, CA was recognized as a boiled dried anchovy with the most quality.

  • The purpose of this study was to investigate the influence of the additive chitosan on the storage characteristics and quality attributes of sponge cake. In addition to a control sample with no chitosan, sponge cake was prepared with the addition of various concentrations of chitosan (1,000, 2,000 and 3,000 ppm), and stored for 5 days at three temperatures ($5^{\circ}C$, $15^{\circ}C$ and $25^{\circ}C$). The control sample demonstrated considerable hardness compared to other samples containing chitosan regardless of storage temperature and period. The degree of retrogradation of the samples containing chitosan was higher than that of the control samples, with values under 30% regardless of the concentration of chitosan or storage condition. The total color variance(E) of the control sample and the samples with chitosan did not show a significant difference. The overall acceptability of the samples containing 1,000 ppm chitosan was similar to the control sample.

  • The objective of this study was to investigate the problems of soft contact lens wear on the women college students. The results were as follows 1. Almost the purchase of soft contact lens was the optical shop. 2. Almost the motive of soft contact lens use was the discomfort of glasses wear. 3. Almost the good feeling of glasses wear was moderate degree. 4. On the main reason of exchange of contact lens, teens was contact lens damage and tweenths was lifespan of contact lens. 5. On the contact lens wearing time at one day, teens was over 10 hours and tweenths was from 7 hours to 10 hours. 6. On the contact care and treatment, teens was a lens washing and storage and tweenths was a lens washing and disinfectant. 7. On the main difficult of contact lens handling, teens was a lens separation in eye and disinfection of lens case and tweenths was a solution treatment and insertion of contact lens in the eye. 8. On the contact lens insertion in the eye, the most difficult item was hanging of the eyelid and fear thinking in teens and fear thinking in tweenths. 9. On the difficult in separate of contact lens wear, a most subjects were eye opening. 10. On the most inconvenient state in contact lens wearing, the subjects were eye redness, foreign body and eye pain. 11. On the advantage of contact lens wearing, teens was decrease in glasses side effects and twenties was a beauty.

Quality characteristics of Backsulgi with red rice flours (적미 첨가에 따른 백설기의 품질특성)

  • The quality characteristics of Backsulgi added with red rice flours at different ratios were investigated to apply in the food industry. The moisture, crude protein, crude lipid, ash and amylose contents of the red rice flour samples were 5.3, 9.5, 2.0, 1.1 and 4.7%, respectively. The pasting properties of the non-waxy rice flour mixtures to which red rice flour samples were added were measured by RVA. As the content of red rice flour increased, the values of peak viscosity, final viscosity, breakdown and setback were decreased, while the pasting temperature was not significantly affected. The lightness (L) value of the Backsulgi decreased, but the redness (a) value, moisture content and the degree of gelatinization increased with an increase in the red rice flour samples. The hardness increased, while cohesiveness, springiness and chewiness decreased with the increase in the red rice flour. The overall acceptance of sensory evaluation showed the highest value for 8% red rice (BRWM8). In conclusion, the addition of 8% red rice flours could improve the sensory quality of the Backsulgi as well retrogradations.

Extrusion Process of Barley Flour for Snack Processing (스낵제조를 위한 보리의 압출성형공정)

  • To expand the utility of barley the experiments on the extrusion characteristics of barley flour for snack processing were carried out and the effects of the extrusion conditions on the quality of the extrudates were investigated. The optimum moisture content of barley flour for snack processing was 20%. The moisture content and the density of the extrudates decreased with increasing extrusion temperature and decreasing die size. The die swell ranged from 0.98 to 2.18 according to various extrusion conditions and decreased with increasing temperature above $150^{\circ}C$. The lightness, redness and yellowness increased at higher temperature. The water absorption index and the water solubility index showed their maximum values at $180^{\circ}C$.The gelatinization degree of the extrudates increased with increasing temperature. The fracture fore, Young's modulus and maximum fiber stress decreased, but the deformation to fracture increased, with increasing temperature and decreasing die size. The yield force in puncture test showed lower values at higher temperature. The size and the fraction of the air cells increased with increasing temperature and decreasing die size. The optimum extrusion conditions of barley for snack processing were at the temperature of $180^{\circ}C$, with the die size of 4.5mm when processed at 160 rpm.

Quality characteristics and antioxidant activities of pan-fried Hwajeon added with curcuma as a functional ingredient (강황을 첨가한 팬 프라잉 화전의 품질 특성과 산화방지활성)

  • Curcuma powder, having a significantly higher electron donating ability than glutinous rice flour (p<0.001), was added into hwajeon at 0-5% concentrations. There was no significant difference in the moisture content of hwajeon depending on the curcuma content, which was attributed to a similar water-holding capacity of curcuma powder and glutinous rice flour when subjected to hot water. As the curcuma content increased, the redness of dough and hwajeon increased, and the lightness of hwajeon decreased to a higher degree than that of dough. With the addition of curcuma, hardness of hwajeon increased and its adhesiveness decreased, presumably due to the increased content of amylose relative to amylopectin. Sensory evaluation revealed that the strong flavor of curcuma was a negative determinant of the preference for hwajeon. Nevertheless, total reducing capacity and 2.2'-diphenyl-1-picrylhydrazyl radical scavenging activity increased in proportion to the curcuma content in hwajeon (p<0.001).

Effect of Chlorella Addition on the Quality of Processed Cheese (Chlorella첨가가 가공치즈 품질에 미치는 영향)

  • The effect of chlorella addition on the quality characteristics of processed cheese was investigated. Chlorella processed cheese was prepared in the different ratio of chlorella (0.5% (w/w) and 1.0% (w/w)). Chlorella processed cheese was stored at $10{\pm}1^{\circ}C$ and evaluated for the quality characteristics including general composition, pH, the number of microorganisms, oiling off, meltability, rheological properties, color, and sensory evaluation. Contents of moisture, protein, fat, fat in dry matter, and pH values were not different from those of control cheese. Microorganisms were not detected. The degree of oiling off showed no significant difference, but meltability decreased significantly (p<0.05). Hardness and springiness gradually increased significantly (p<0.05), while cohesiveness gradually decreased significantly (p<0.05). The L (lightness) values and the a (redness) values decreased with increasing chlorella contents, but the b (yellowness) values increased with increasing chlorella contents, so color expressed yellowish green. Compared to control cheese made by conventional way, QDA scores of color and mouthfeel of chlorella processed cheese were significantly higher (p<0.05) and the most favorite quality characteristics were shown in the processed cheese with 0.5% (w/w) chlorella (CPC1). These results suggested that health-oriented chlorella processed cheese would be made by the addition of the chlorella.
