  • The purpose of this study was to assess the energy value of breakfast and its relation to total daily nutrient intake and serum lipid. Dietary intakes were evaluated through the 3-day dietary recalls(interview for 1day and self-report for 2 days) from 333 Korean urban adults aged 20-49 year. Serum lipids in fasting blood samples were measured form 98 of those 333 adults. Low energy breakfast(<15% of daily energy intake) was consumed by 22.6% of males and 18.5% of females. 59.4 of males and 43.3% of females consumed a breakfast of average energy intake(15-25% daily energy intake) ; and 18.1 of males and 38.2% of females consumed a significant contribution to a total daily nutrient intake. The daily nutrient intake except crude fiber and vitamin A, B, B, and C in males and except vitamin C in females significantly increased as the energy value of breakfast increased. The differences in energy and nutrient intakes at breakfast were not made up for by other meals. To make matters worse, the satisfactory-energy breakfast group took more energy at dinner compared with the low-energy and average-energy breakfast group took more energy at dinner compared with the low-energy and average-energy breakfast groups in females. Among serum lipid parameters, TG was negatively correlated with energy provided at breakfast, and total cholesterol and LDL-cholesterol had a negative correlation with energy and carbohydrates provided at breakfast in males. For females TG was positively correlated with the ratio of carbohydrates to energy at breakfast but negatively correlated with the ratio of fat to energy at breakfast. These results suggest that satisfactory energy intakes at breakfast have positive effects on the adequacy of daily nutrient intake and may positively affect the serum lipid status.

  • This study was conducted to examine food and nutrient intakes of weekday and weekend with 329 high school boys residing in Seoul using the 3-day food record. Frequency for breakfast skipping was the highest as compared with lunch and dinner skipping. Frequencies for breakfast and lunch skipping were significantly higher in weekend than weekday (p<0.05). The daily average food, vegetable food and animal food intakes were 1,327.6 g, 800.5 g, and 425.8 g, respectively. Total food and vegetable food intakes of weekday were significantly higher than weekend(p<0.05). The dietary variety score(DVS) was 20.5 in daily average, 23.3 in weekday and 15.1 in weekend, which showed significantly higher in weekday than weekend(p<0.05). The daily averages of energy, protein, fat and carbohydrate intake were 2244.9 kcal, 89 g, 72.6 g, and 311.2 g, respectively. Fat intake was significantly lower and carbohydrate, fiber, phosphate, iron, sodium, potassium, vitamin A, niacin, folate, and vitamin C intakes were significantly higher in weekday than weekend (p<0.05). The percentages of energy intake from carbohydrate, protein, and fat were 55.4%, 15.8%, 28.8% in daily average, 56.8%, 15.8%, 27.4% in weekday and 53.6%, 15.8%, 30.7% in weekend, respectively. The percentages of energy intake from carbohydrate in weekday and weekend were below 60%, and that from fat was above 27% in weekday and weekend. Carbohydrate intake was significantly higher and fat intake was significantly lower in weekday than weekend(p<0.05). Energy intakes of daily average, weekday and weekend were above 83% as compared with estimated energy requirement(EER). Intakes of dietary fiber, calcium, potassium, vitamin C, riboflavin and folate were below 75% as compared with adequate intake(AI) or recommended intake(RI). Mean adequacy ratios(MAR), an index of overall dietary quality were 0.78 in daily average, 0.80 in weekday and 0.75 in weekend. MAR of weekend showed significantly lower than weekday(p<0.05). This study revealed that the overall nutrient intake status was worse in weekend than weekday among high school boys.

  • The aim of this study was to assess dietary fiber intake and the relationship between dietary fiber intake and nutrient intakes of elementary school students. Food consumption of 200 elementary school students (100 boys, 100 girls) in the 6th grade in Gimhae was assessed by 2-day estimated food records. Nutrient intakes were calculated using CAN-pro and total dietary fiber (TDF) intake using the TDF tables of the common Korean foods. The mean height and weight of the boys were 147.7 cm and 42.1 kg. The mean height and weight of the girls were 149.1 cm and 41.1 kg. The mean body mass index (BMI) of the boys (19.3 $kg/m^2$) was significantly higher than that of the girls (18.4 $kg/m^2$, p < 0.05). Average daily intake of energy of the boys and girls was 1733 and 1778 kcal, respectively. Intakes of protein, P, and niacin of the boys and girls exceeded $110\%$ of current RDA. Intakes of Fe, vitamin $B_1$ and vitamin $B_2$ of the boys were similar to RDA. Intake of vitamin $B_1$ exceeded $110\%$ of current RDA and intakes of Fe and vitamin A were similar to RDA among the girls. Ca intake of the boys and girls was $74.2\%$ and $60.1\%$ of RDA, respectively. Vitamin C intake of the boys and girls were $63.6\%$ and $71.7\%$ of RDA, respectively. Intakes of fat, Ca, P, and vitamin $B_2$ of the boys were significantly higher than the girls. Intakes of Fe and vitamin A of the boys were significantly lower than the girls. Average daily intakes of TDF of the boys and girls were 11.2 g and 11.1 g, respectively. TDF intake of the children at the 6th grade of elementary school was about $70\%$ of 'age (yr) + 5 g', a recommended level for American children. Major food groups to supply dietary fiber were vegetables, grains, and seasonings among the boys and girls. Major sources of dietary fiber were Kimchi, rice, and red pepper powder which supplied $17.85\%$. $15.71\%$, and $5.18\%$ of TDF among the boys and $18.02\%$, $16.22\%$, and $6.58\%$ among the girls. Daily fiber intake showed significant positive correlations with intakes of grains, vegetables, fruits, legumes, and seasonings among the boys and girls. Daily fiber intake showed significant positive correlations with intakes of energy, carbohydrates, protein, lipids, Ca, P, vitamin A, vitamin $B_1$ vitamin $B_2$, niacin, and vitamin C among both the boys and girls. From the results of this study we could conclude that it is recommended to increase dietary fiber intake in elementary school students at upper level.

  • The objectives of this study were to investigate 1) the foods intake as well as nutrients intake, 2) the nutritional knowledge, and 3) the relations between the foods and nutrients intakes and nutritional knowledge in adolescent rhythmic gymnasts (RGs). The results are summarized as follows. Average daily intakes of energy, calcium, iron, vitamin A, vitamin B$_1$ vitamin B$_2$ and niacin were in 45-74% of the RDAs for Koreans. Average daily energy intake was only about 50% of energy expenditure by physical activities. Average daily intakes of each food group were generally lower, but intakes of breads and confectionaries, sugar and sweets, milks and dairy products, and instant foods were higher in the RGs compared to the nonathletic students of the same age from the National Health and Nutrition Suvey. The contribution of empty-calorie foods such as breads and confectionaries, beverage and instant foods to the major energy nutrients were high. Mean of total nutritional knowledge score of RGs was 28.4 of total score 50. In categorical score of nutritional knowledge, the RGs make a best score on food sources and they get the lowest marks for food exchange. Among the nutrients, intakes of crude fiber, animal Fe, Na, K, vitamin A, carotene, vitamin B$_1$ niacin and vitamin C and, among the food groups, intakes of mushrooms, fruits and meats had relations with one of the total or categorical nutritional knowledge scores in the RGs. In conclusion, nutritional status of adolescent RGs was poor due to their unbalanced diet composed of empty-calorie foods, and their undesirable food intake pattern was supposed to be related to the low nutritional knowledge score of them. These results indicate that the RGs should be given more nutritional knowledge to improve their nutritional status and the exercise performance.

  • As the severity of environmental pollution increases, the foodstuffs are contaminated more the ever. There are 40 kinds of heavy metals that we are able to consume through the heavy metal contaminated-foodstuffs. Arsenic, lead, cadmium, and chromium out or them have been know to be a potential cause for a alzheimers disease, kidney diseases, and cancer. However, research data on the daily intakes of such heavy metals are limited. This study was performed to evaluate the daily intakes of nutrients and the dietary heavy metals of the college women living in Choongchung-NamDo Area, where had been reported to have high contents of heavy metals for the seafoods. We also investigated the blood levels of the heavy metals. The mean age, height, weight, BMI and percent ideal body weight(PIBW) of the subjects were 20$\pm$1.0yr, 158.4$\pm$0.7cm, 55.1$\pm$1.4kg, 22.4$\pm$.04, and 103.3$\pm$2.5 %, resp-ectivly. The mean of daily energy intake was 1,717.03$\pm$55.99kacl/day(86% of RDA for women). The ratio to energy from carbohydrate, fat and protein was 60: 24: 16. Daily intakes of Vit A, Vit B$_2$, CA, and Fe were under the RDA for those nutrients. The mean adequate ratio of the subjects was 0.92 . The daily intakes of heavy metal, such as As, Pb, Co, Cr and Mn , were 1.80$\pm$0.27mg, 75.21$\pm$4.12$\mu\textrm{g}$, 21.12$\pm$12.34$\mu\textrm{g}$, 60.07$\pm$6.24$\mu\textrm{g}$ and 6.23 $\pm$0.12mg respectively. the blood levels of As, Pb, Co, Cr and Mn were 16.10$\pm$2.10$\mu\textrm{g}$/dl, 4.32$\pm$0.58$\mu\textrm{g}$/dl, 0.02$\pm$0.01$\mu\textrm{g}$/dl, 4.23$\pm$0.41$\mu\textrm{g}$/dl, and 4.40$\pm$0.21$\mu\textrm{g}$/dl, respectively. In conclusion, daily intake of heavy metals for the college women living in Choongchung-NamDo area was lower than that of WHOs re-commendation, however, the blood levels of each heavy metals were higher than those of Japanese, american, and italian, There were no correlations between the dietary intakes and blood levels of each heavy metals. • The aim of this study was to assess the nutrient intakes from infant formula and supplemental foods of 246 healthy infants fed infant formula, aged from 5 to 18 months. Subjects were devided into two groups depending on supplemental food type for weaning, Domestic supplemental foods (mainly home-made, n = 129) and Delivery supplemental foods (mainly commercially-delivered, n = 117). Four subgroups were assigned to 5-6 months, 7-8 months, 9-11 months, and 12-18 months by ages, respectively. Dietary assessment was carried out using 24-hour-recall method. Formula intakes in the delivery group tended to decrease accordingly with the ages. However, in the domestic group, formula intakes up to 8 months were similar and decreased after 9 month. Energy, protein, calcium and iron intakes from infant formula and supplemental foods were assessed. Energy intake at 12-18 months were lower than the RDA in both groups. Daily intake of protein and calcium at all ages were much higher than the RDA in both groups. Therefore, protein and calcium overnutrition were elucidated. Especially, protein intake at 5-6 months, calcium intake at all ages from infant formula was higher than the RDA in both groups. Iron intake at 5-6 months from infant formula were higher than the RDA. Consequently, as for infant formula, it was suggested that not only formula intakes but also nutrient content in formula should be reconsidered. On the other hand, nutrient intakes from supplemental foods in the domestic group tended to be higher than that of the delivery group. Especially at 9-11 months, significant differences between the two groups were observed. This may be due to high dependency on commercial powdered baby food in the domestic group. This study revealed that daily nutrient intakes of formula-fed infants are desirable but nutrient intakes from infant formula are too high. Conclusively, this study suggests that as the age of infants increases, formula intakes should be controlled and various supplemental foods besides commercially powdered baby food should be appropriately provided.

  • This study was conducted to investigate nutrient intakes and obesity-related factors of obese children by interviewing the subjects aged from 11 to 13 in Daegu. The collected data were consisted of items on general characteristics, dietary behavior, nutrition knowledge and daily nutrient intakes of subjects. The subjects were classified into obese and non-obese control groups according to their relative weights. Frequency of skipping breakfast and eating rate of obese group were significantly higher than those of control group. There was no significant difference between obese and control group in the nutrition knowledge score. Except vitamins $B_1$, $B_2$ and iron, the average daily intakes of other nutrients in obese were greater than control group. The most contributing factor to BMI turned out to be cholesterol intake. After the nutrition education targeting obese children, their nutrition knowledge scores improved, but the dietary behavior score was not significantly changed. Therefore, childhood obesity may be prevented by continuous education programs including the behavior modification of obese children. (Korean J Community Nutrition 8(4) : 477-484, 2003)

  • The daily food intake and its related factors of the elderly(aged over 60) living in Incheon were compared. Self administered questionnaires were collected from 418 elderly. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: About 70% of elderly took grains and starch foods relatively high. The daily intakes of them was significantly influenced by ages of elderly, self-perceived health status, degree of drinking, meal regularity and nutritional balance of meals. More than 80% of elderly responded to take the food group of meat, fish and eggs poorly. Among various factors, the residence type and snack intake frequency influenced the daily intake of those foods statistically. A half of elderly took the vegetables and fruits everyday more than average. The daily consumption of vegetables and fruits was significantly influenced by sex, ages, exercise, snack intake frequency and preference of spices. Most elderly consumed fewer servings of milk and dairy products. About 60% of them did not take milk and dairy products daily. The daily contribution of those foods was significantly influenced by residence and exercise. 45.5% of elderly took oils and sugars more than average everyday which was influenced significantly by residence, exercise, snack intake frequency and meal regularity. In conclusion, the important influencing factors on the daily food intakes of elderly might be related to ages, residence, family, smoking, drinking, exercise, snack intake frequency and meal regularity. Therefore, a situation-oriented and practically organized nutrition education and ingestion support programs which consider the elderlies' socioeconomic status may help to improve the daily food intake of elderly in Incheon area.

  • This study was conducted to investigate sodium and potassium balances, as well as correlations among the relating factors in adult males and females. We collected blood, urine and feces samples as well as a dietary intake survey from 50 subjects. Then, we analyzed the sodium and potassium contents in blood, urine and feces, and evaluated their state of balance. The average ages of the study targets were 24.7 years old for males and 22.8 years old for females. The daily energy intake by the males was 1733.4 kcal and by the females was 1570.3 kcal. Sodium intakes were 138.3 mEq and 127.5 mEq for males and females, respectively. Potassium intakes were 43.1 mEq and 49.3 mEq, respectively. The daily excretions of sodium through urine were 136.6 mEq by males and 97.0 mEq by females and the excretions through feces were 2.2 mEq and 2.0 mEq, respectively. The daily excretions of potassium through urine were 20.2 mEq and 16.5 mEq by males and females respectively, and the excretions through feces were 7.7 mEq and 7.5 mEq male to female. The retention rates of sodium were 11.7% and 14.1% male to female, respectively, and the apparent absorption rates were 98.5% and 97.8%. Additionally, the retention rates of potassium were 32.9% and 39.8% and the apparent absorptions were 81.9% and 81.3%, both male and female. It was noted that, overall, the sodium intake of adult males and females is still higher than the recommended daily sodium intake, while the potassium intakes and excretions were found to be lower. Based on the results of this study, nutritional guidance and education is recommended to encourage decreased sodium intake and increased potassium intake, according to recommended standards.
