This study evaluated the composition two popular species of edible bamboo shoots in Korea (Phyllostachyspubescens and Sinoarundinarianigra) and the effect of their abundant dietary fiber on intestinal microorganisms in healthy young women. The ranges of total moisture, crude protein, crude lipid, crude ash, and dietary fiber content were 87.190.8, 2.943.5, 0.150.39, 0.411.05, and 4.206.15% (wet weight basis), respectively. Moisture and crude ash content increased after heat treatment; however, crude protein, crude lipid, and dietary fiber content were reduced after heating. The major minerals found in bamboo shoots were potassium, phosphorous, sulfur, magnesium, and calcium. In addition, glucose and fructose were abundant free sugars, while asparagine and tyrosine were the most abundant free amino acids. Approximately 70% of the total free fatty acids found in bamboo shoots were linoleic acid and linolenic acid. The ascorbic acid content was 6.60~17.56 mg/100 g (wet weight basis), and one phenolic compound, p-hydroxy benzoic acid, was 0.10.2% (wet weight basis) and detected by HPLC analysis. The intake of bamboo shoots for seven days significantly increased viable cell counts of Lactobacillus spp. and reduced viable cell counts of Bacteriodes spp. in feces (p<0.05). In our data, bamboo shoots may be useful in the food industry as high dietary fiber ingredients.

An experiment was carried out to determine effect of cultivar, drying agent concentration and preservative on the moisture content, temperature and quality changes of fall harvested oat(Avena sativa L.) hay during field curing and storage. The main plots consisted of the cultivar such as 'Foothill' and 'Swan', the subplots consisted of drying agent concentration such as 7Skg/ha(C1), lOSkglha(C2) and control(C0) and the sub-subplots consisted of preservative such as buffered acid(BA), lactic bacteria inoculant(LB) and control(C0). Moisture contents of 'Foothill' and 'Swan' oat cultivar at harvest were 635.5 and 385.4%DW(Dry weight), respectively, but the final moisture contents of the oat cultivars were 117 and 86%DW. The moisture content of cut oat was not affeded by drying agent concentration. Core temperature of baled 'Swan' oat hay was a little higher than that of 'Foothill' and no consistent preservative effect was found. Total nitrogen content of 'Swan' oat hay was 3.08% and that of 'Foothill' oat hay was 3.45%(P<0.05). Drying agent treatment increased total nitrogen content of 'Swan'(P <0.05), but preservative had no effect. Crude fiber content of oat cultivar was increased as the curing progressed(P<0.05) and the difference of crude fiber content of oat cultivar was maintained through the whole curing period. Effect of drying agent concentration on crude fiber content was not found after preservation. Crude fiber content of 'Swan' oat hay was higher than that of 'Foothill' by 1.O% in ADF and 3.1 % in NDF(P<0.05). No preservative effect was found in crude fiber content. According to RFV of oat cultivar at harvest, forage quality of 'Foothill' and 'Swan' was Prime and Grade 1, respectively, but that of both cultivm was above Grade 2 at the final curing day. RFV of the stored 'Foothill' and 'Swan' oat hay was 122 and 114(P<0.05), respectively, and the quality of oat hay was classified as Grade 1 and 2, respectively, according to the forage quality standard assigned by AFGC.
This study was conducted to examine the effects of dietary crude fiber levels on the growth and intestinal carbohydrases of goslings. Thirty-two, 2 week old female White Roman goslings were divided into four groups of 4 goslings with 2 replicates. Diets were isocaloric and isonitrogenous, containing 40, 80, 120 or 160 g/kg crude fiber. At the end of the 4 weeks of the experimental period, all goslings were sacrificed and the carbohydrases activities were measured. Feed intake was significantly higher in the 120 and 160 g/kg crude fiber groups over that in the 40 and 80 g/kg groups (p<0.05). The average daily gosling weight gain significantly increased with increasing crude fiber levels from 40 to 120 g/kg. However, both the daily gain and feed conversion of the 160 g/kg crude fiber diet group decreased significantly. Amylase, maltase and ${\alpha}-glucosidase$ activities in the duodenum significantly decreased as the dietary crude fiber level increased. The maltase and ${\alpha}-glucosidase$ activities in the jejunum-ileum showed a similar trend with those in the duodenum. By increasing the levels of crude fiber, cellulase activity in the caecum content significantly increased. There was, however, an adverse effect on the amylase activity.

The objective of this study was to determine the effect of moisture content on the physical and chemical characteristics of Italian ryegrass cube. Cube quality according to moisture contents (15, 20, 25, and 30%) was determined. Cubes made with 15 to 20% moisture showed a little cracks. But, the amount of powder generate from these cubes were lower by 10 to 16% compared to other cubes made with 25 to 30% moisture contents. The highest hardness at 159 kg/f was obtained when the cube was made with 15% moisture content and the lowest was 70 kg/f when the cube was made with 30% moisture content. The electrical loading and surface temperature were increased when moisture content was decreased. The chemical compositions of cube were differ from those of raw materials. Crude protein (CP) and ether extract (EE) contents were increased after cubing works. However, crude fiber (CF), acid detergent fiber (ADF), and neutral detergent fiber (NDF) contents were decreased after cubing. The crude ash content was not significantly (p > 0.05) different between raw material and cube. Higher moisture content resulted in higher crude protein content. However, crude fiber and crude ash content were not significantly (p > 0.05) different between each other. The contents of ADF and NDF were the lowest in cubes made with 30% moisture content. Our results suggest that the proper moisture content of Italian ryegrass cubing is recommended to be 15 to 20% and that cubing works should help increase forage quality.

This experiment was conducted to compare the productivity of five silage corn varieties. Corn varieties were Pioneer 3144(P 3144), 3160(P 3160), 3282(P 3282), 3352(P 3352) and Suweon 19(S 19) and were seeded on May 2 and harvested on August 15. Ratios of stalk, leaf and ear, chemical composition and yields of nutrients were investigated in respective corn part. Experimental design was accepted by Latin square arrangement with five replicates and each plot had twenty two plants. The results obtained were as follows: 1. Crude portein, crude ash and nitrogen free extract(NFE) contents of whole plant ranged from 6.32 to 7.18%, 5.16 to 7.43% and 52.62 to 57.90%, respectively, and there were no significant(P>.Ol) differences between varieties. Crude protein and NFE content were the highest in ear between corn parts. 2. Crude fiber conent of whole plant ranged from 18.98 % to 24.01 %, and was the highest in suweon 19 and the lowest in P 3352(P<.01). Crude fiber content was the highest in stem and the lowest in ear, However, crude fat content(2.03-3.66 %) vice versa. 3. Yields of organic matter, crude protein, crude fat, NFE and TDN per 10a were the greatest(P< .01) in P 3282, however crude fiber yield was the highest(P<.Ol) in P 3352. 4. Ratios of different part to total dry matter yield ranged from 12.7 %(P 3352) to 17.8 %(P 3160) for leaf, 44.5(P 3352) to 66.9 %(P 3160) for stem and husks, and 16.9 %(P 3282) to 42.8 %(P 3352) for ear, and there were significant differences between corn varieties(P<.Ol). Consequently, P 3352 has the greatest nutrient yields, particularly by ear, and P 3282 has a great nutrient yield by stem. This result suggested that could be appear a better character of silage corn by hybridization of this two corn varieties.
The purposed of this study was to investigate the efficient recycling of food waste according to the restaurants type. To the investigated of characteristic of food wastes in different types of restaurants we were collected the sample of 60 as Korean 35 Chinese 10 Japanese 5 Western 5 Flour 5 in Swoon. The average water content of food waste was 79.9% and Korean restaurant was 80.3% which was hig-her than that of any other serving type. On the examination of a organic matter content of food waste according to the season crude fiber was higher in may and July crude protein content was higher in January and march than that other seasons. The average pH of food waste was 4,74 C/N ratio was 15.8 and the average cation content was K 0.57% Ca 0.39% Mg 0.22% NaCl 3.36% respectively The aver-age concentration of Fe, Zn, Pb, Cu, Cr, Cd Ni were 154.37 mg/kg 24.79 mg/kg 0.27 mg/kg 5.63 mg/kg 5.49 mg/kg, 0.31mg/kg 1.07mg/kg respectively.

The objective of this study was to analyze proximate composition, dietary fiber, mineral content, fatty acid composition in Cheonggak (Codium fragile) in order to encourage the consumption of Cheonggak. The proximate composition of Cheonggak was found to be 5.51% moisture, 24.09% crude ash, 15.79% crude protein, 2.47% crude lipid and 45.31% dietary fiber. The major mineral content of Cheonggak was Na 8,950 mg/100 g, Mg 1,252 mg/100 g, Ca 807 mg/100 g, K 457 mg/100 g, and trace mineral content was Fe 26 mg/100 g, Mn 8 mg/100 g, Zn 0.4 mg/100 g. Palmitic acid 36.86% and ${\alpha}$-linolenic acid 20.14% were the most contained fatty acids in Cheonggak. The ratio of saturated fatty acids to unsaturated fatty acids was 85.49% while ${\omega}-6$ fatty acids to ${\omega}-3$ fatty acids were 59.10%. Based on the proximate composition, dietary fiber, mineral content, and fatty acid composition, Cheonggak was judged to be a major source of dietary fiber and Mg and Ca, and it was deemed to be helpful in promoting health, including the prevention of hyperlipidemia. Cheonggak contained valuable nutrients similar to seaweed, which is produced and consumed the most in Korea. Thus, it is necessary to include Cheonggak in the food items.
The experiment was conducted to determine the effects of cutting interval and cutting height on the yield and nutrient composition of hedge lucerne (Desmanthus virgatus) when grown on a sandy soil in the Northeast of Thailand. The cutting intervals compared were 30, 40 and 50 days between harvests and the cutting heights 30, 40 and 50 cm above ground level. The experiment was a $3{\times}3$ factorial layout in a randomized complete block design with 4 replications-giving a total of 36 plots each $3{\times}3m^2$. Harvested plant material was weighed, dried and the ground subsamples taken for analyses of crude protein (CP), crude fiber (CF), ash, ether extract (EE) and nitrogen-free extract (NFE). At the last harvest the hedge lucerne samples were separated to determine leaf to stem ratios and then analyzed for nutrient composition in the leaf and stem. Results showed that increasing the cutting interval (i.e. advancing age of maturity) increased dry matter and nutrient yields significantly. In terms of nutrient content, it also increased the crude fiber, ash, ether extract and nitrogen free extract percent in the plant. However, crude protein percent was markedly decreased as the cutting interval increased. Increasing cutting height had no effect on dry matter yield and yields of nutrients, but in terms of nutrient content, it increased crude protein and ash content, but decreased crude fiber content. The percent EE and NFE in the plant was unaffected by cutting height. From the results presented it is clear that cutting a stand of hedge lucerne every 40 to 50 days will achieve greater dry matter and nutrient yields than cutting more frequently, at 30 days. The cutting height at harvest, whether 30, 40 or 50 cm above ground level had no effect on dry matter or nutrient yields of hedge Lucerne. Hedge lucerne therefore offers the Thai poultry farmer a useful alternative protein supplement for poultry diets rather than relying on the more expensive soybean meal. As it can be readily and successfully grown on a range of soil types and climates throughout Thailand, hedge lucerne also offers the Thai farmer a valuable additional source of income.

In both cropping systems, the contents of crude fat and nitrogen free extract (NFE) were significantly increased (P<0.01), while that of crude protein crude fiber and crude ash were decreased (P<0.01) with each harvesting time. 2. The acid detergent fiber (ADF) and crude fiber contents were decreased same patterns in growing period, however, according to maturing of corn ears the difference between ADF and crude fiber contents reduced. 3. At mature stage, crude protein yields per 10a in corn monocropping and corn-cowpea intercropping system were 127.6kg and 152.1kg, respectively. The difference of crude protein content between corn-cowpea intercropping and corn monocropping system was 19.2%. 4. TDN yields of each cropping system, at mature stage, obtained similar results and TDN yields per 10a of corn monocropping and corn-cowpea intercropping system were 1006.1kg and 990.1, respectively. 5. Conseqently, corn-cowpea intercropping system could be increased protein yield without decreasing of dry matter yield in comparison with corn monocropping system.
