계분 발효사료가 육계의 성장과 영양소 이용율에 미치는 영향 (Effects of Dietary Levels of Fermented Poultry Manure on the Growth and Nutrient Availability of Broiler Chicks)

  • Dietary levels of fermented poultry manure(FPM) 0%, 5%, 10% and 20% were included in experimental diets. It is to examine the effects of diets containing different levels of FPM on the performance of broiler chicks, including the nutrient availabilities, compared with that of the commercial diet. In order to evaluate the nutritive value of FPM, feeding and metabolism trials were conducted with a total of 160 broiler chicks for a period of 4 weeks. Contents of CP, crude fat, crude ash, crude fiber and NFE of FPM were 19.43, 2.43, 15.44, 16.57 and 38.31 %, respectively. Although there were no statistical difference in the body weight gain among treatments, weight gain achieved by the group fed diets of 5% substitution of FPM was slightly better than others. The amount of feed intake was significantly higher for FPM included groups than for control group, especially in the group fed diets of 10% substitution of FPM. The feed efficiency tended to be better for the control group than the FPM groups. The feed efficiency tended to get worse as the levels of FPM increased. The digestibility of DM, CP and NFE tended to be similar among treatments, especially it was lower for the group fed diets of 20% substitution of FPM compared with that of another groups. In conclusion, up to 10% substitution of FPM to the diet can be utilized effectively as a broiler feed ingredient, without adversely affecting growth performance.

항생제, 생균제 및 효모제 첨가가 육계의 성장과 육질에 미치는 영향 (Effects of Supplemention of Antibiotic, Probiotic and Yeast Culture of Performance and Meat Quality in Broiler Chicks)

  • The present study was conducted to investigate the effects of dietary supplementions of 0.1% probiotic and 0.1% yeast culture on the growth performance and meat quality of broiler chicks. A total of 160 Arbor Acre broiler chicks were randomly allotted to 16 pens ; four pens per treatment and 10 birds per pen. Feeding trial lasted for 6 weeks. The results obtained are summerized as follows : The body weight gain and feed intake was slightly higher in group of broiler chick supplemented antibiotic than those of other treatment groups, but were not significantly different among treatments. The feed conversion were slightly lower in groups of broiler chick supplemented antibiotic and probiotic than those of other treatment groups, but were not significantly different among treatments. The pH of thigh musle was slightly higher in group of broiler chick supplemented probiotic than those of other treatment groups. Crude protein, crude fat and crude ash of thigh muscle were lower in groups of broiler chick supplemented probiltic and yeast culture than those of other treatment groups, but were not significantly different among treatments. The saturated fatty acid content of the thigh muscle was tende to be higher in group of broiler chick supplemented yeast culture, but the unsaturated fatty acid content was tende to be lower in group of broiler chick supplemented yeast culture than those of other treatment groups.

뽕잎분말 첨가 비율에 따른 인절미의 품질특성 (Quality Characteristics of Injeulmi Made with Different Ratios of Mulberry Leaf Powder)

  • This study investigated the quality characteristics of Pongnip Injeulmi samples according to different mulberry leaf powder(MLP) contents. The moisture levels of the samples ranged from 47.43 to 49.16%, with the 0% MLP sample presenting the highest moisture level. The amounts of crude protein, crude fat, and crude ash in samples were in ranges of 3.82${\sim}$5.01%, 0.05${\sim}$0.2%, and 0.65${\sim}$1.62%, respectively, and the values increased with increasing MLP content. Color L and b values decreased, while the a-value increased, with increasing MLP content. The 0% sample showed the highest gelatinization temperature of 63.4$^{\circ}$C, and the viscosity decreased with increasing MLP content. Texture and hardness also decreased with increasing MLP content, however, over 3 days storage, they increased in all samples. Finally, in the sensory tests, the 6% MLP sample received the highest scores for color, flavor, sweetness, texture and overall acceptability.

  • In this experiment, the curd was made from soybean and cow's milk in the ratio of 7 to 3, and coagulated with Glucono-delta-lacton(GDL) and $CaSO_4&.$2H_{2}O& in the 1:1 ratio. During the procedure, the mulberry leaf powder was added. The amount of the added powder varied from 0.1 % to 0.5 %. This experiment aimed to show the change of yield, general components, minerals, amino acid, changes of pH, sensory properties of these products. As mulberry leaf powder addition increased, crude protein, crude fat, crude ash content, minerals and amino acids increased. Whereas moisture content decreased, and in particular,$Ca^{++}$, $K^+$ and $Na^+$ increased. On the other hand, in the sensory properties, the levels of satisfaction about the color, appearance, flavor, texture and savory were lower in mulberry leaf powder added than under control.

생약재를 이용한 음료의 개발 및 기능성 평가 (Development of Drink from Composition with Medicinal Plants and Evaluation of Its Physiological Function)

  • The purpose of this study was to investigate the possibility of medicinal plants application as an edible functional food resource. We carried out to develop a traditional functional beverage by using hot-water extraction of 4 medicinal plants (Polygonatun sibiricum, Ophiopogonis radix, Lycii fructus, Schizandriae frutcus) and we examined the effects of drink on physiological response during exercise and recovery phase. The subjects were male baseball players, and exercise protocol was performed with 45 minutes treadmill running and 85% VO$_2$ max intensity. Brix, pH and titratable acidity of developed drink were 9.5%, 3.3 and 0.22%. The approximate nutritional composition of beverage was carbohydrate, 5.98%, total dietary fiber, 0.42%, crude protein, 0.70%, crude fat, 0.20% and crude ash, 0.20%. Developed. traditional functional beverage contained K (4.00 mg%), Na (3.68mg%), Ca (2.54mg%), Mg (1.60mg%) and Fe (0.29mg%). Developed beverage drinking group showed a lowest heart rate during exercise and recovery phase than the other two group (water group and ion beverage group). In the change of blood lactate concentration, developed beverage intake group showed a significant lowest values during exercise and recovery phase. And blood hematocrit values and osmolarity were lowest in the developed beverage intake group. In these results, exercise performance capacity was expected to improve most highly with the developed drink from composition with medicinal plants. Also developed beverage was effective in recovery of exercise-induced fatigue. Thus developed drink with medicinal plants can be used as a functional material improving decrease fatigue effects in beverage industry.

로스팅 시간에 따른 녹두의 생리활성 변화 (Bioactivitiy Changes in Mung Beans according to the Roasting Time)

  • This study was investigated the optimal time that enhanced the functional activities of mung beans for use of functional food resources. Mung beans were roasted according three levels of roasting time levels (10, 20 and 30 minutes) at $110^{\circ}C$ and then the physicochemical compositions were determined. The reducing sugar content was decreased with the increased roasting time. Moisture was decreased with increased roasting time, whereas, crude fat, crude ash, crude protein and carbohydrate were increased with prolonged roasting time. The highest contents of total phenol and flavonoid were shown at a roasting condition $110^{\circ}C$ for 30 minutes. The highest inhibitory activities of DPPH radical, ABTS radical and xanthine oxidase was the best at the condition of $110^{\circ}C$ for 30 min. From these results optimal roasting time of mung beans were 30 minutes for use of functional food resources.

기원고(杞圓膏)의 약선식료학적 특징 및 영양성분 함량 (Characteristics in Oriental Medicated Diet Therapy Area and Nutritional Composition of Giwongo)

  • The research studied the nutritional composition and health effects of the Giwongo with its efficacy in providing nourishment to blood, liver and kidney as well as being an aid to the mental stability. The Giwongo is made by boiling the same amounts of Lycium fructus and Longanae arillus. Giwongo was analyzed to measure proximate nutritional composition, mineral contents, free sugar content and polyphenol compound content. The DPPH scavenging activity and its antioxidative effectiveness were also analyzed. Giwongo was composed of 16.7% water, 4.9% crude protein, 3.7% crude fat, 3.8%, crude ash 70.9% carbohydrate with the content per 100 g of 336.5 kcal. The Giwongo mineral contents were potassium, sodium and calcium in sequence according to contents. Per 100 g Giwongo were found 9.62 g glucose, 4.67 g fructose and 18.00 g sugar. The Giwongo had 60.67% DPPH electron donating ability and $32.19^{\circ}Brix$. The Giwongo made of Lycium fructus and Longanae arillus had effectiveness of tonify the liver and kidney, nourish blood, and psychologic stability. As such Giwongo may help prevent the symptoms of unbalanced health due to excessive stress and unhealthy diet.

화피 추출물이 첨가된 개성주악의 품질특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activity of Gaeseong-Juak prepared with Prunus yedoensis Matsumura Extract)

  • This study investigated the quality and antioxidative properties of a Korean fried rice cake, Gaeseong-Juak (doughnut of waxy rice) added with Prunus yedoensis Matsumura (PYM) extract, vitamin C and BHT. Gaeseong-Juak was prepared by adding PYM extract at 0, 0.5, 1, and 2% of waxy rice powder. The moisture contents of Gaeseong-juak added with PYM extract varied between 17.50% and 21.70%. Among the samples, the lowest moisture content was 2% Gaeseong-juak added with PYM extract. The contents of the samples obtained from crude protein, crude fat, crude ash were 4.47~4.73, 11.15~12.50, and 0.73~0.82%, respectively. The as the content of PYM extract increased, L-values significantly decreased while a-value and b-value significantly increased (p<0.001). The texture profile analysis of the Gaeseong-Juak was not significantly different at the samples. In the sensory test, the sample containing 0.5% PYM extract obtained good scores. The antioxidative effect of the Gaeseong-Juak significantly increased as the addition level increased, compared to the original Gaeseong-Juak (p<0.001). From these results, we suggest that PYM is a good ingredient for increasing the consumer acceptability and the functionality of Gaeseong-Juak.

포도분말을 첨가한 머핀의 품질특성 (Quality Characteristics of Muffin with Added Grape Powder)

  • This study investigated grape powder substituted for wheat flour in muffin recipes with the amounts of 0, 5, 10, 15, and 20%. Grape powder consisted of 6.76% of moisture content, 4.63% of crude protein, 4.82% of crude fat and 4.16% of crude ash. DPPH radical scavenging activity is 68.79%, total phenol content is 205.79. Specific loaf volume have decreased as the grape powder content increased. Baking loss have increased as the grape powder content increased. Moisture and brix have increased as the grape powder content increased. pH have increased as the grape powder content decreased. Chromaticity measurement result showed that the 'L' and 'b' value of muffins decreased as grape powder content increased, whereas 'a' value increased. The texture measurement result showed that the hardness, gumminess and chewiness of muffins increased as the grape powder content increased, whereas springiness decreased. Cohesiveness did not show any considerable differences between muffins. Overall preference scores showed high overall acceptability for the muffins made with 10% grape powder.

  • How to appropriately apply the theories of oriental diet therapy in terms of direction and development are pressing concerns. To address these concerns, this study was performed to provide basic ideas to further the understanding oriental medicinal cuisine(Yack-Sun) and aid its application. Presently, basic data on the nutritional composition and oriental diet therapy area approach of Reajerksodo-tang was acquired to predict the usefulness of Reajerksodo-tang as an edema-related diuretic to promotes urination, drains heat and leaches out dampness. Reajerksodo-tang energy was 67.3 kcal per 100 g, crude protein was 77.2 g, crude fat was 5.7 g, crude ash was 0.6 g and carbohydrate was 16.5 g per 100 g. This basic data could help guide the application of oriental medicinal resources into other foods and serve as a stepping-stone for use of Reajerksodo-tang in the burgeoning field of function foods. Lastly, the scientific effects of oriental medicinal foods developed according to oriental medicinal theory. It is believed to be essential for government policy development concerning validation of medicinal effects and assessment, with the aim of fostering systematic development and providing guidance to food development in the interest of national health.
