Effect of Cooking Temperature and Time on Characteristics of Port Sausage (가열온도와 시간이 돈육소시지의 특성에 미치는 영향)

  • This study was carried out to investigate several kinds of characteristics of pork sausage prepared by different cooking temperature and time (60, 90, 120, 150, 180 minutes in $58^{\circ}C$ and 25, 40, 55, 70, 85 minutes in $65^{\circ}C$). In case of color, L(bright), a (red) and b(yellow) value were 64.60-65.26, 9.14-9.94 and 8.68-9.34 in $58^{\circ}C$, and 65.16-66.68, 8.78-9.62 and 7.66-8.36 in $63^{\circ}C$, respectively. Gel strength showed high when cooking time was 120, 250 and 180 minute in $58^{\circ}C$ and 40 minute in $65^{\circ}C$. Residual nitrite concentration showed higher $58^{\circ}C$ than $65^{\circ}C$ and decreased gradually as cooking time elevated in all cooking temperature. Total plate count in 58$^{\circ}C$ was higher than $65^{\circ}C$, was wholly $8.7{\times}10^2~3.5{\times}10^3$.In case of free amino acid content, Asp, Glu and Lys were high and Cys, Met and Tyr low and was not different with $58^{\circ}C$ and $65^{\circ}C$. The result of sensory evaluation was not different (p<0.05) with $58^{\circ}C\;and\;65^{\circ}C$.

Change in A Compoent Properties of Beef Tenderloin Steak by Oven Roasting (쇠고기 안심스테이크의 가열 조리중 일반성분의 변화)

  • This study was conducted to investigate the changes in physico-chemical characteristics of beef tenderloin steak by oven roasting at different internal temperatures. 1. Cooking time required for the internal temperatures of 60, 70 and $80^{\circ}$ of steaks were 15min, 23min and 28min, respectively, and standing time of cooked beef steaks were 10.5min at $60^{\circ}$, 9.4min at $70^{\circ}$ and 8.5min at $80^{\circ}$, respectively. 2. Total losses and evaporation losses were larges in cooked steaks at $60^{\circ}$ and $70^{\circ}$ than that of $80^{\circ}$ cooking. Total losses were 14.5% by cooking at $60^{\circ}$, 23.3% at $0^{\circ}$ and 26.6% at $80^{\circ}$ respectively. As internal temperature of meat was increased, moisture and fats content was decreased and protein content of meat was not changed.

Free amino acid, fatty acid composition and mineral content in dried alaska pollack and the changes of mineral content according to cooking time (북어의 아미노산, 지방산, 무기질 함량 및 조리시간별 무기질 함량 변화에 대하여)

  • This study designed not only to elucidate free amino acid, fatty acid composition and mineral content in dried alaska pollack but also to examine calcium, magnesium, poassium and sodium contents in its cooking broth according to each boiling time such as 2.5, 5, 10, 20, and 30 minutes. RESULTS : 1. Glutamic acid in dried alaska pollack was the most abundant free amino acid and was followed in order of aspartic acid, lysin, leucine and histidine. They composed of 50.95% of the total amino acid contents. 2. In dried alaska pollack the most abundant fatty acid was palmitic acid. Essential fatty acid content was 26.57% of the total fatty acid. 3. The calcium, magnesium, potassium and sodium contents in dried alaska pollack showed 10.721 mg%, 9.235mg%, 4072.5mg% and 2299.8% respectively. The amount of magnesium and potassium in cooking broth arrived at the highest level when 20 minute boiling was undertaken and the quantities of magnesium and sodium were the highest when 30 minute boiling was made.

A Study on Measuring the Labor Intensity of Menus according to Various Cooking Types (조리유형별 메뉴의 노동강도 측정에 관한 연구)

  • The purpose of this study was to measure the labor intensity of menus according to various cooking types. Through a literature review and in-depth interview, the attributes that affected the labor intensity were identified as the level of skill, amount of effort, degree of tiredness, time consumed, and machine usage. A survey was conducted in April, 2001 among cooks who Dew the entire process of cooking. There was a strong positive correlation between labor intensity and labor intensity attributes. Through regression analysis, a regression equation was obtained between labor intensity and labor intensity attributes. The labor intensity index calculated from this study showed the extent of labor intensity of menus. The result of this study could be used as basic data for foodservice manager to establish a menu planning and work schedule based on a scientific method.

Soda-Anthraquinone Pulping and Alkaline Sulfite-Anthraquinone Pulping of Rice-Straw (볏짚을 이용한 소다-안트라퀴논 펄프 및 알칼리성 아황산염-안트라퀴논 펄프 제조)

  • This study was carried out to investigate the proper cooking conditions of soda-anthraquinone and alkaline sulfite-anthraquinone pulping of rice-straw, and get basic data f9r the use of rice-straw chemical pulp through the test of characteristics and physical properties of pulps made in the various cooking conditions From the experimental results , we can conclude as follows. In the soda-anthraquinone pulping of rice-straw, the optimum cooking conditions were 60 min. at $150^{\circ}C$ in the amount of caustic soda of 20% with the addition of anthraquinone(0.05%). And total yield, Kappa No. and brightness of pulp made in the condition above mentioned were 41.9%, 7.7 and 51.1 respectively. In the alkaline sulfite-anthraquinone pulping of rice-straw, the proper mixing ratio of cooking chemical(caustic soda : sodium sulfite) was 50:50. And the optimum cooking conditions were 60 min. at $150^{\circ}C$ in the amount of cooking chemical of 20% with the addition of anthraquinone(0.05%). At that time, the total yield, Kappa No, and brightness of pulp were 50.1%, 9.1 and 40.2 respectively. As a result, the alkaline sulfite-anthraquinone pulping was superior to the soda-anthraquinone pulping in the aspect of yield, but inferior in the viewpoints of Kappa No. and brightness. For the comparison of qualities of pulps made in the various cooking methods and conditions, the physical properties of four sorts of pulps were tested. As a result, soda-anthraquinone pulps were superior to alkaline sulfite-anthraquinone pulps in the various strengths excluding tear strength and brightness. On the other hand, pulps made in the condition of addition of cooking chemical of 20% were superior to pulps in the dosage of 15% in the aspects of all the strengths and brightness.

Impact of Different Cooking Methods on Food Quality - Retention of Antioxidant Compound in Black Carrot - (조리 방법에 따른 자색 당근의 품질 특성 및 항산화능의 변화 - 조리 방법에 따른 항산화 잔존량 -)

  • In this paper, quality properties and antioxidant capacity of cooked black carrot has been studied. Five different cooking methods have been applied: microwave (45 sec), boiling ($100^{\circ}C$, 14 min), steaming ($100^{\circ}C$, 20 min), sous vide ($75^{\circ}C$, 80 min), sous-vide ($95^{\circ}C$, 30 min). The color value was slightly different (p<0.05), the boiling method was the highest in L-value and Sous vide $75^{\circ}C$ method was the lowest. The steaming method indicated the highest a-value at 5.50. The b-value was significantly different between the samples (p<0.05). The microwave method was the highest at 3.49 while the sous vide $95^{\circ}C$ method was the lowest at -0.34. No significant difference was observed between the samples when only the moisture content results were considered. The highest pH was observed in samples cooked using the boiling method. The softening (%) was higher when the cooking water was in contact with samples and it was dependent on the temperatures. In addition, this study shows that not only temperature but also cooking time and cooking media are very crucial in the preparation and cooking of black carrot to prevent the loss of the antioxidant compound. In conclusion, the comparison of the quality characteristics and antioxidant properties of black carrots indicated that the most appropriate cooking method is sous-vide method.

Measurement of Nanoaerosol Size Distributions and PAHs Detection After Cooking (삼겹살과 고등어 조리시 발생하는 나노입자의 시간과 거리에 따른 크기분포와 PAH 검출)

  • Pork belly meat and mackerel are popular meals in Korea. Although a lot of people enjoy cooking these food, there have been some reports that generated organic particles during cooking could be thereas on of lung cancer of nonsmoking housewives. In addition, some experiments show that carcinogens may be included in meat and fishes which we eat usually. For this reason, particle size and concentration in formation during cooking are necessary to figure out the relationship between particles and the diseases. Thus, we identify number concentrations and size distributions of generated nano aerosol in cooking with respect to time, hood operation, and distance between cooking and measurement locations. The maximum concentrations of nano aerosol(diameter sizes are between 10 to 700nm)are decreased after the cooking from $8{\times}10^6{\sharp}/cm^3$ to zeroth order in pork belly meat cooking, and from $3.5{\times}{\times}10^6{\sharp}/cm^3$ to zeroth order in mackerel cooking respectively. When it comes to hood operation during cooking, the detected concentrations of generated aerosols are decreased as in taking flow rate of the hood increases. In cooking pork belly meat, the reduced amount of concentration is about $3{\times}10^6{\sharp}/cm^3$ compared to no hood operation, when hood in taking flow rate is $610m^3/hr$ In mackerel cooking, reduced concentration is $6{\times}10^5{\sharp}/cm^3$ in the same condition. Also, Naphthalene and Fluorene, which are known as polycyclic aromatic hydrocarbons (PAHs), are detected in the generated aerosols during cooking.

A Study on Changes in the Cooking Process of Gruel in Cook Books Written during Last 100 Years (근대 이후 죽의 조리과정 변화 연구 -팥죽, 잣죽, 타락죽을 중심으로-)

  • The purpose of this study was to investigate changes in the cooking process of $Pat-juk$(red beans porridge), $Jat-juk$(pine-nut porridge) and $Tarak-juk$(milk porridge) in cooking books published after Korean modern era, approximately from late 19th century to the present. We analyzed 11 historical cook books were analyzed. It is found that the amount of red beans used for $Pat-juk$ was the same or more than that of rice but never less than rice. Only one cook book suggested sugar as seasoning for final taste, but all the other cook books mentioned salt for final taste. $Hangukeumat$(1987) suggested the method for obtaining optimum color for $Pat-juk$. After smashing and passing through the cooked red beans, collecting the red bean water to boil first and then adding the passed through red beans to boil together, in which rice will be added the last to be boiled. For $Jat-juk$, the ratio of the amount of pine-nut and rice were varied among cook books that the amount of pine-nut can be more, same or less than rice. $Jat-juk$ can have salty or sweet, so sugar, honey or salt were used for final seasoning. Pine-nut and rice were cooked together or cooked successively depending on cook books. The changes in cooking procedures of $Tarak-juk$ were the portion of milk used and the method of preparing rice before making the porridge. Firstly, the portion of milk increased over time. $Tarak-juk$ can be also tasting both sweet or salty, so sugar or salt was used for final seasoning. Secondly, two method of preparing rice were found; one is that rice was ground after soaking in water and the other is that rice was ground and toasted before putting into the porridge. When the ground rice was toasted, the milk was added with water at the same time because the cooking time of the porridge with toasted rice was shortened so that the milk could be added earlier than the other method without the risk of sticking on the bottom of the pot. In further studies, the cooking procedures used in the previous period of the late 19th century should be examined. Also after restoring all the cooking methods suggested in cook books, the comparison of the sensorial and nutritional value needs to be carried out for applying or reinventing new recipe for food industry.

Utrastructural Analysis of the Delignification Behaviour in P-Cresol-Water Solvent Pulping (크레졸-물 용매펄프화의 탈리그닌에 관한 초미세구조적 분석)

  • To investigate the delignification behaviour in solvolysis pulping process, Populus alba ${\times}$ glandulosa H. and Pinus Kuraiensis S. et Z. were cooked with p-cresol and vater solvent(2:8, 5:5, 8:2 v/v) at $175^{\circ}C$ for 9 cooking time levels(20, 40, 60, 80, 100, 120, 140, 160, 180, min). Pulp yield, residual lignin content, de lignification rate, decarborhydration rate were determined. Delignification behaviours were analyzed by TEM. 1. The p-cresol-water solvent cooking of P. alba ${\times}$ glandulosa showed good delignification at the solvent system which the mixture ratio of p-cresol and water were 2:8(v/v), while the cooking of P. koraiensis with the p-cresol and water mixture ratio of 5:5 was no good. 2. P. alba ${\times}$ glandulosa showed three step-delignification phenomena at the solvent system which the mixture ratio of p-cresol and water were 2:8(v/v) anti 5:5(v/v). But P. koraiensis showed a first order delignification reaction at the same mixture ratio of p-cresol and water solvent system. 3. In TEM micrograph obtained for the solvent system which the mixture ratio of p-cresol and water was 5:5(v/v), the partial delignification of the cell corner of P. alba ${\times}$ glandulosa and P. koraiensis were observed at 60min. of cooking time. Complete delignification at the cell corner of P. alba ${\times}$ glandulosa was observed at 160min. and that of P. koraiensis was observed of 180min. of cooking time. 4. In optical microscopic observation, fiber separation of P. alba ${\times}$ glandulosa occured at 120min. and that of P. koraiensis began at 140min. of cooking time. 5. At the solvent system which the mixture ratio of p-cresol and water was 5:5(v/v), middle layer on secondary wall($S_2$) and cell corner of P. alba ${\times}$ glandulosa were more selectively delignified than primary wall(P) and outer layer on secondary wall($S_1$). However P. koraiensis did not showed any difference in delignification between cell wall layers and cell corner.

Effects of Cooking Methods with Different Heat Intensities on Antioxidant Activity and Physicochemical Properties of Garlic (열처리 조리방법이 마늘의 항산화 활성과 이화학적 특성에 미치는 영향)

  • Garlic was subjected to eight different cooking methods (raw, boiling, steaming, microwave cooking, deep-frying, oven-roasting, pan-frying, and pan-roasting) utilized for typical Korean cuisine. Garlic was analyzed for antioxidant activities and physicochemical properties to elucidate effects of cooking. Garlic cooked at higher temperatures showed significantly lower lightness and higher yellowness (P<0.001). In particular, deep-frying and pan-frying resulted in lowest lightness and soluble solid content, indicating that non-enzymatic browning reactions were more facilitated. Compared with raw garlic, all cooked garlic tended to have lower thiosulfinates, presumably due to decomposition into polysulfides and/or leaching into cooking water and oil. Microwave cooking retained organic acids, total reducing capacity, and flavonoids, which can be attributed to low microwave intensity and shorter cooking time under which heat-labile bioactive components might have undergone less decomposition. Cooking significantly increased metal-chelating activity (P<0.001). In addition, oven-roasting and pan-roasting enhanced total reducing capacity and flavonoid content, indicating that thermal treatments increased the extractability of bioactive components from garlic. However, boiling, deep-frying, and pan-frying, in which garlic is in contact directly with a hot cooking medium, reduced antioxidant activities. Deep-frying resulted in largest reduction in DPPH radical scavenging activity of garlic, which correlated well with reduction of total reducing capacity and flavonoid content. The results show that the antioxidant activity of garlic could be affected by cooking method, particularly heat intensity and/or direct contact of the cooking medium.
