Moisture Sorption and Cooking Properties of Soybeans (콩의 흡습 및 조리성질)

  • Moisture sorption and cooking properties of two varieties of Korean soybean(Jangyup and Whangkeum) were studied. When soybean was stored under the various relative humidities (RH) of 33-86% at 16'E for 125hours, its sorption behaviors were divided into two : desorption at the RHs of 33 and 44% and adsorption at the RHs of above 55%. The sorption rate was decreased rapidly during storage. In comparisons with only storage humidities, the sample stored at higher RH held the higher sorption rate. The relationships between storage time and sorption rate were applied well to the equation, log dw/dt= b log t+ log a, where w is the moisture content(%, db), t is time(hour) and a and b are the parameters which were calculated from the experimental data. The calculated moisture contents from the equation agreed well with the measured moisture contents. On the other hand, the cooking degrees of soybean which was steamed in an autoclave at $106-121^{\circ}C$ were compared by the maximum cutting forces. The cooking time to attain the same degree of cooking decreased logarithmically as the cooking temperature increased. The z-values which were calculated from the time-temperature combinations that gave the same degree of cooking for Jangyup and Whangkeum were $13.3^{\circ}C$ and $12.8^{\circ}C$ respectively.

Kinetic Studies on Cooking of Rice of Various Polishing Degrees (도정도별 쌀의 취반에 대한 역학적 연구)

  • The mechanism of cooking rice was investigated using a japonica type rice variety, Akibare, of 50%, 70% and 90% polishing degrees. The hardness of rice cooked at various cooking temperatures ($90^{\circ}-120^{\circ}C$) was measured with a Texturometer. The cooking rate followed the equation of a first-order reaction. The reaction rate constants were in the increasing order of 50%, 70% and 90% polished rice. The temperature coefficient of the reaction rate constant at cooking temperatures of ($90^{\circ}-100^{\circ}C$) was about 2 in all rice samples. The activation energies of cooking at temperatures below $100^{\circ}C$ and above $100^{\circ}C$ were about 17,000 and 9,000 cal/mole, respectively. The polishing degrees and water soaking time of rice did not affect the activation energy of cooking; however, the lower polishing degrees and shorter soaking increased the cooking time The experimental results suggested that the cooking process of rice comprises two mechanisms: At temperatures below $100^{\circ}C$ the cooking rate is controlled by the reaction rate of rice constituents with water, and at temperatures above $100^{\circ}C$, it is controlled by the rate of diffusion of water through the cooked portion (or layer) toward the interface of uncooked core in which the reaction is occurring.

Physical and Organoleptic Characteristics of Kongjaban Prepared under Different Cooking Conditions (조리조건을 달리한 콩자반의 물리적 및 관능적 특성)

  • Kongjaban (a Korean-style seasoned black soybean) prepared under various conditions such as different soaking temperatures and time, cooking rate, and amounts of sugar and soy sauce was investigated with respect to its physical and sensory qualities. Soaking soybeans in water at $20^{\circ}C$ and $60^{\circ}C$ prior to heating decreased the hardness, degree of browning and saltiness of kongjaban, regardless of soaking temperature. As the cooking time after addition of sugar and soy sauce increased, the degree of browning, saltiness and hardness of kongjaban increased markedly. The amount of sugar and soy sauce did not make a distinct difference in its physical properties whereas its hardness increased slightly with increasing sugar amount. According to the sensory evaluation, the color, hardness and saltiness of kongjaban significantly increased with increasing cooking time. Color, hardness and sweetness increased as the amount of sugar increased whereas the amount of soy sauce did not affect the sensory characteristics except for saltiness.

  • The microwave cooking of rice was studied for the purpose of establishing optimum conditions of power level and heating time. Optimum volume of adding water was 290 ml per 173 g rice. The longer the rice was soaked, the better the cooked rice. However, we chose one hour as soaking time so that we might observe well the effects of power levels. The mode of microwave cooking consisted of 5 steps of power level; step 1: temperature ascendance, step 2: water absorption 1, step 3: water absorption 2, step 4: heat penetration, step 5: gelatinization completion. The quality of cooked rice was evaluated subjectively. Comparison of Single and Double Combination of Temperature-time in Sous Vide Treated Semitendinosus Muscle from Cattle and Goat

  • This study observed the effects of the double combination of temperatures-times (2 temperatures: 2 times combination, 2T2T) in sous vide cooking method on the physicochemical properties and collagen solubility (CS) of semitendinosus muscle from cattle and goat as a comparison to common sous vide treatment (1 temperature: 1 time combination, 1T1T). The new invention of sous vide cooking method (2T2T) cooked at the first temperature at $45^{\circ}C$ for 3 h, and the second temperature at $60^{\circ}C$, $65^{\circ}C$, and $70^{\circ}C$ for 3 h, and labeled as N45-60, N45-65, and N45-70, respectively. While, common sous vide treatment (1T1T) were cooked directly for 6 h at $60^{\circ}C$ (T60), $65^{\circ}C$ (T65), and $70^{\circ}C$ (T70). Results revealed that cooking with 2T2T treatment improved the water-holding capacity and reduced the cooking loss of both beef and goat meat. The $L^*$ values have no apparent changes between treatment in beef and goat meat, while $a^*$ values of N45-60 treated goat presented markedly higher values than other treatments but an only slight increase in beef at the same treatment (p>0.05). Again, 2T2T treatment tended to decrease mean shear force (SF) values for beef and goat meat with the lowest SF values recorded at N45-60, and the CS no or less influenced this value. Therefore, the application of innovative sous vides cooking method (2T2T) presented comparable values in the treated beef and goat meat as compared to common sous vide method (1T1T).

Effect of Aging Time and Cooking Temperature on Physicochemical and Sensory Characteristics of Pork Neck (숙성기간과 조리온도가 돼지 목심육의 이화학적.관능적 특성에 미치는 영향)

  • The effects of aging time (1, 8 and 15 days) and endpoints cooking temperature (70, 75 and $80^{\circ}C$) on the physicochemical and sensory characteristics of pork neck were evaluated. Pork neck was obtained from the carcass (live weight, 105~110 kg ; grade B) chilled for 24 hours after slaughter. As a aging period became longer, the pH, L value and drip loss became higher while its a value and shear force value (SFV) of raw meat became lower. As a aging period became longer, the cooking loss, hardness, chewiness, SFV became lower, and its tenderness, juiciness and taste became better. However, no difference was observed in the aroma, and the one aged for 8 days in the cooked meat showed the best palatability. Increasing endpoint cooking temperature from 70 to $80^{\circ}C$ increased hardness, SFV and taste, and decreased chewiness, sensory tenderness and juiceness (p<0.05). However, it had no effect on the cohesiveness. Also, the one for which the endpoint cooking temperature became $75^{\circ}C$ in the cooked meat showed the best springiness, aroma and palatability.

The Effect of Cooking and Art Activities on Cognitive Function and Depression of Dementia Patients (요리 미술 활동이 치매 노인의 인지기능 및 우울에 미치는 효과)

  • Objectives: The purpose of this study was to examine the effect of cooking and art activities on cognitive function and depression of dementia patients. Methods: The study was carried out on 34 dementia patients (experimental group: 17 persons, control group: 17 persons) at 65 years old or more who correspond to a total MMSE-M, MMSE-K point between 15 and 23 points instituted in a specialized nursing facility in Busan from November 30, 2007 to February 20, 2008. The study used a nonequivalent pretest-posttest design. In previous survey, the study measured points of general characteristics, cognitive function and melancholy. To the experimental group, cooking art activities were carried out for 90 minutes every time and once every week for 12 weeks. Results: Analysis on data was performed using SPSS/WIN 14.0. In addition $x^2$-test, Fisher's exact test and t-test were used for testing of homogeneity and ANOVA was performed for testing of hypothesis. The results of this study are as follows. 1. Hypothesis 1 that 'The experimental group with cooking art activities will show a higher point of cognitive function than the control group without cooking art activities' was supported (F=65.497, p<0.001). 2. Hypothesis 2 that 'The experimental group with cooking art activities will show a lower point of melancholy than the control group without cooking art activities' was supported. (F=27.463, p<0.001) Conclusions: From the above results, cooking art activities showed a significant difference in the increase in cognitive function and reduction in melancholy of dementia patients.

Effect of Temperature on Cooking Rate of Soybean (콩의 취반속도에 미치는 온도의 영향)

  • The temperature dependence of the cooking rate of soybean cotyledon was investigated by cooking samples at $106^{\circ}C-121^{\circ}C$ and by measuring the maximum cutting force. The cooking of soybean followed a first-order reaction and the reaction rate constant was approximately doubled by increase of cooking temperature by 4 or $5^{\circ}C$. The z-value for softening of the soybean, which was calculated from the time-temperature combinations that gave the same degree of cooking, was $13.3^{\circ}C$.

  • Effects of frying conditions on cooking properties of ramyon (deep-fried instant noodle) were investigated. The moisture content, which was decreased as the frying temperature $(140-160^{\circ}C)$ and time (30-70 sec) increased, was negatively correlated with lipid content. The weight gain was higher than volume gain at a given frying condition Weight or volume gain rate constant for ramyons fried at $140^{\circ}\;and\;150^{\circ}C$ increased with increase of frying time, but that for ramyon fried at $140^{\circ}\;and\;150^{\circ}C$ increased with increase of frying time, but that for ramyon fried at $160^{\circ}C$ showed opposite trend. The initial cooking rate decreased as the frying time was increased in all cases and as the frying temperature was elevated at a given frying time.

A Study on the Household Work Time's Change and Its Structure in Urban Home Makers (도시 가정주부의 가사노동시간변화와 구조에 관한 연구)

  • The aim of the present study is to research into the household work time change and its structure in urban home makers by the choosen eleven studies and KBS's Data 1981, 1983, 1985, 1987. This study were proceeded under some limitations, it is choosen eleven studies that is different region: large city, medium and small town, and the household work's categories of original auther were changed. And KBS's Data was composed of general formation without personal character of home maker: FLC, number of childeren, family type, education, region. Although this study have a certain meaning of implementation, research into the household work time change and its's structure. The major findings of this study can be autlined as follows: (1) Total household work time did'nt so much changed through the choosen eleven studies compared with the last twenty years ago. In the change of each province household work time, time connected with meals and dwelling did not showed consistancy of change. But cloth laundering and mending time of 80's were declined compared with 70's. Family care time of 80's was increased, home management and buying time was declined untill '85, but again increasing trend '87. In choosen eleven studies, the household work time structure of urban home makers can be outlined: time connected with Meals>Family care>Cloth laundering and mending>Dwelling>Home management and Buying. (2) KBS's time-series data were analized as follows: a) Total household work time of '87 was declining gradually in weekday (34 minutes), sat. (41 minutes), sun (1 house and 2 minutes) compared with '81. b) The change of each province household work time: the time of cooking and sewing home management were declining gradually in its Mean time and its ratio of acters. The acter ratio of household worker in '81, '83, '85 was composed Cooking > Cleaning > Laundering > Home management > Buying > Child care > Sewing. In '87 was composed Cooking > Cleaning > Laundering > Buying > Home management > Child care > Sewing. c) The structure of household work time revealed some differences in each year and a day of the week.
