Effects of Gelatin Hydrolysates Addition on Technological Properties and Lipid Oxidation of Cooked Sausage

  • This study investigated the impacts of gelatin hydrolysate addition on the technological properties and lipid oxidation stability of cooked sausage. Gelatin hydrolysate was prepared from pork and duck skin gelatin, through stepwise hydrolysis using collagenase and pepsin. The cooked sausages were formulated without gelatin (control) or with 1% pork skin gelatin, 1% duck skin gelatin, 1% pork skin gelatin hydrolysate, and 1% duck skin gelatin hydrolysate. The pH, color characteristics, protein solubility, cooking loss, and textural properties of cooked sausages were evaluated, and the 2-thiobarbituric acid reactive substances (TBARS) value was measured weekly to determine lipid oxidation stability during 4 wk of refrigerated storage. Enzymatic hydrolysis of gelatin decreased protein content and CIE L* but increased redness and yellowness (p<0.05). When 1% gelatin or gelatin hydrolysate was incorporated in cooked sausage, however, little to no impacts on pH value, moisture content, protein content, color characteristics, protein solubility, and cooking loss were found (p>0.05). The addition of 1% duck skin gelatin hydrolysate increased the cohesiveness and chewiness of cooked sausages. The inclusion of 1% duck skin gelatin accelerated lipid oxidation of cooked sausages during refrigerated storage (p<0.05), whereas duck skin gelatin hydrolysate caused a lower TBARS value in cooked sausage compared to duck skin gelatin. The results show comparable effects of gelatin and gelatin hydrolysate addition on the technological properties of cooked sausages; however, the oxidative stability of raw materials for gelatin extraction should be evaluated clearly in further studies.

Physicochemical properties of sausage manufactured with carp (Carassius carassius) muscle and pork

  • The purpose of this study was to compare the physicochemical properties of sausage manufactured with carp (Carassius carassius) muscle and pork. Sausages were prepared using either 100% pork sausage (P10), a mixture of 50% pork and 50% carp muscle (P5C5), or 100% carp muscle (C10). The quality of the sausage emulsion was determined by analyzing approximate composition, pH, instrumental color, cooking yield, water holding capacity (WHC), viscosity, and texture profile analysis (TPA). Moisture content of cooked C10 was significantly higher than that of P10 or P5C5 (p < 0.05); however, protein content of cooked P10 was significantly higher than that of C10 (p < 0.05). The pH of uncooked and cooked C10 was significantly higher than that of P10 and P5C5 (p < 0.05). The cooking yield, WHC, and texture profile analysis of C10 were higher than those of P10 and P5C5 (p < 0.05). In addition, the viscosity of uncooked C10 was higher than that of P10 and P5C5. These results suggest that carp muscle can enhance sausage quality with respect to pH, WHC, cooking yield, viscosity, and TPA.

Effect of natural pre-converted nitrite sources on color development in raw and cooked pork sausage

  • Objective: The effect of pre-converted nitrites from natural sources (spinach, lettuce, celery, and red beet) on color development in raw and cooked pork sausage was investigated in this study. Methods: The pork sausage was manufactured with six treatments: NC (negative control, nitrite free), PC (positive control, 150 ppm sodium nitrite), FS (3.0% fermented spinach extracts), FL (3.0% fermented lettuce extracts), FC (3.0% fermented celery extracts), and FR (3.0% fermented red beet extracts). Results: The pH value of the pre-converted nitrites groups was lower than those treated with 150 ppm sodium nitrite (p<0.05). The color values of raw and cooked pork sausage added with pre-converted nitrite showed slightly lower and/or similar lightness, lower redness, and higher yellowness values than PC. Color development (redness values) of cooked samples added with FS was higher than those of the NC and other treatments (FL, FC, and FR). Additionally, treatments with FS and FL were most effective for reducing thiobarbituric acid reactive substances and volatile basic nitrogen than the NC. Conclusion: Effects of natural nitrites from fermented vegetables on shelf stability of raw and cooked pork sausages were investigated. Fermented spinach extract was much more useful for maintaining the color development, but also inhibiting lipid and protein oxidation of cooked pork sausage. Therefore, pre-converted nitrite from spinach as a natural nitrite could be used as another natural nitrite source for making processed meat products.

강황분말 첨가 계육 소시지의 냉장 저장 중 품질 특성 (Quality Characteristics of Chicken Sausage Prepared with Turmeric (Curcuma longa L.) during Cold Storage)

  • The purpose of this study was to evaluate the quality characteristics of chicken sausage prepared with turmeric (Curcuma longa L.) powder (T) during storage at $4^{\circ}C$ for 20 days. The pH and color values (a and b values) of sausage containing turmeric powder were significantly higher (P<0.05) than the control for both uncooked and cooked sausage. The hardness, chewiness, and gumminess of control sausage significantly changed after 15 days of storage, while the hardness and gumminess of turmeric-supplemented sausages (T) significantly increased after 5 days (until 15 days) for cooked sausages. The total phenolic content and DPPH radical scavenging activity of turmeric-supplemented sausages was significantly higher (P<0.01) than the control for both uncooked and cooked sausage during storage. On the other hand, the acid value of the control was higher than the turmeric-supplemented sausages and the peroxide value of the control was significantly higher (P<0.05) than the turmeric-supplemented sausages after 15 days of storage. Microorganism analysis revealed that total plate counts of uncooked and cooked control sausages were significantly higher (P<0.05) than turmeric-supplemented sausages at 20 days of storage. As a result, sausages prepared with turmeric powder demonstrate antioxidative activity and lipid oxidative stability during storage.

포장방법과 감마선 조사에 의한 소시지의 잔류 아질산염 감소효과 (Reduction of Residual Nitrite Level in Cooked Pork Sausage with Different Packaging and Gamma Irradiation)

  • 소시지 제조시 미생물을 제어함과 동시에 잔류 아질산염함량을 감소시키기 위하여 감마선을 이용하였다. 제조된 소시지는 함기, 진공, 그리고 $CO_2$(100%) 포장하여 감마선을 0, 5, 10 kGy로 조사한 후 4주 동안 냉장저장$(4^{\circ}C)$하면서 총균수, 대장균군수, 그리고 잔류 아질산염 함량을 조사하였다. 감마선 조사시 총균수와 대장균군의 수를 유의적으로 감소시켰으며 비조사구에서는 진공과 $CO_2$, 포장이 함기포장보다 미생물 생육제어에 효과적이었으며, 잔류 아질산염의 함량은 감마선 조사에 의해 유의적으로 감소하였다(p<0.05). 또한 $CO_2$ 포장구가 잔류 아질산염 함량 감소효과에 가장 뛰어난 결과를 얻어 감마선과 $CO_2$ 포장을 병용처리한다면 소시지 제조시 미생물 제어 및 잔류 아질산염의 함량을 효과적으로 감소시켜 소비자에게 더욱 안전한 식품을 공급하게 될 수 있으리라 사료된다.

Effect of Irradiation on pH, Color, and Sensory Quality of Cooked Pork Sausage with Added Chitosan Oligomer

  • The combined effect of water-soluble chitosan oligomer and irradiation on changes in quality of perk sausage made with (156 ppm) or without NaNO$_{2}$ was determined. The pH of nonirradiated sausage without NaNO$_{2}$ decreased significantly during 3 wks of storage, but the pH of irradiated sausage did not. Irradiation at 4.5 kGy did not increase the Hunter color a-value but 10 and 20 kGy showed significantly higher a-values in the sausage with chitosan oligomer (p < 0.05). The sausage with NaNO$_{2}$ had higher sensory scores than that without NaNO$_{2}$, and irradiated sausage had lower scores in overall acceptance. Results indicate that further research is needed to achieve consumers sensory standards for irradiating cooked meat products.

Survey on the sorbic acid concentrations in cooked meat produced from meat processing plants

  • Sorbic acid is one of preservatives that is mostly used in general food. This study was carried out to measure the amount of the sorbic acid in cooked meat produced from meat processing plants in Gyeongbuk province. One hundred and fifty-three samples of cooked meat(42 spices added meats, 56 grinding cooked meats, 2 bacons, 5 jerked meats, 18 sausages, 30 hams) were collected from meat processing plants and analyzed for the concentration of preservative sorbic acid and its salts by using of high performance liquid chromatography(HPLC). Sorbic acid was not detected in spices added meats, grinding cooked meats, bacons, and jerked meats except on ham and sausage. But the concentration range of sorbic acid in sausage was 0.00~1.31g/kg, average 0.44g/kg, and in ham was 0.00~1.31g/kg, average 0.329/kg. There was no sample that sorbate concentration exceeded the legal permitted level 2.0g/kg in cooked meat.

가열에 위한 식육 및 식육제품 중 니트로사민이 생성량 변화 (Change of N-nitrosamine Contents in Meat and Meat Products by Cooking Condition)

  • This study is performed to identify the contents of nitrosamine in meat (beef, pork) and meat product (ham, bacon, sausage) by gas chromatograph-thermal energy analyzer. The author also determained the formation of nitrosamine in these products when they were cooked in frying pan at 21$0^{\circ}C$ for 4 minutes and microwave for 45 and 75 seconds. N-ni-trosodimethylamine (NDMA) analysis was impossible in the most products because of their impurieties. On the other hand, N-nitrosopyrrolidine (NPYR) of 0~9.4 ug/kg in meat and 0~15.6 ug/kg in meat products were detected, respectively. When meat and meat products were cooked, generally contents of NDMA and NPYR have a tendency to be increased a little. Meat and product being cooked in microwave rather than frying pan, contents of NDMA and NPYR were detected more. Especially, in sausage contained much flsh, contents of NDMA was detected more.

Packaging Effect on Microbial and Physicochemical Changes in Irradiated Cooked Pork Sausage during Frozen Storage at $-21^{\circ}C$

  • The packaging effect on physicochemical changes in irradiated sausage stored at -2$0^{\circ}C$ was studied. Emulsion-type cooked pork sausage was made with (156 ppm) or without NaNO$_2$ (0 ppm), and packaged in three different conditions such as aerobic, vacuum and $CO_2$ (100%). The samples irradiated at 0, 5 and 10 kGy absorbed dose, and the total number of microorganisms, lipid oxidation, color and texture were analyzed during frozen storage at-2$0^{\circ}C$. Irradiation of the sausage at 10 kGy completely controlled microbial growth during storage. An NaNO$_2$ addition to the sausage significantly reduced lipid oxidation, and the TBARS value of the sausage with aerobic packaging was higher than that with the vacuum and $CO_2$ packaging. The NaNO$_2$ addition increased Hunter color a-value dramatically, but no packaging effect was found (p > 0.05). Irradiation influenced shear values resulting in lower shear values in 10 kGy-irradiated sausages with aerobic packaging, and $CO_2$ packaged sausage showed comparatively lower shear value than other packaging methods. From the results, vacuum or $CO_2$ (100%) packaging were better than aerobic packaging for frozen stored pork sausage, especially far microbial quality and lipid oxidation.

메밀분말을 첨가한 닭고기 소시지의 품질 특성 (Quality Characteristics of Emulsion-type Chicken Sausages added Different Level of Buckwheat Powder)

  • 본 연구는 메밀가루의 첨가 수준에 따른 닭고기 소시지의 이화학적 품질 특성에 미치는 영향을 관찰하기 위하여 시행하였다. 닭 가슴살 소시지에 첨가되는 메밀가루의 양이 증가할수록 보수력이 향상되는 것으로 관찰되었다. 메밀가루 첨가 수준이 증가할수록 수분함량 증가 및 가열감량 감소가 관찰되었으며, 유화 안정성은 메밀가루의 첨가량 증가함에 따라 수분손실량의 유의적으로 감소하였다. 메밀소시지의 경도와 점도는 메밀가루의 첨가량이 증가함에 따라 증가하는 경향을 보였다. 점도는 유화물의 안정성에 영향을 준 것으로 사료된다. 메밀가루의 소시지에 대한 첨가는 색이나 pH에는 영향을 주지 않지만, 가열감량, 유화 안정성, 수분함량, 경도, 점도의 품질을 향상시키므로 천연물질 유래 첨가물로 활용이 가능할 것으로 사료된다.
