가정간편식의 시장 동향 분석 (Trends in markets for home meal replacamnets)

  • Home meal replacements (HMR) are kinds of convenient foods as cooked or semi-cooked foods, which are produced outside of home, to eat directly or after simple cooking in substitution for traditional home meals. Recently the market size for HMR is expanding rapidly around the world due to the changes of global consumer trends, growth of single-person household, increase in economic participation of women, aging population, and so on. The Europe takes over 52.4% of the global market share for HMR in global HMR market, and North America, Asia-Pacific, and Africa-Middle East are following. The most popular HMR products in US and Europe are frozen foods, whereas the market share of chilled products in Asia including Japan, South Korea, and Vietnam are much higher than that in US and Europe. Currently, the trends in HMR is focus on the expansion of the list of products that replace for meals with simple cooking, but it is expected that nutrition-enforced HMR product for aged persons or patients who live alone are requested for the further growth of the HMR market.

창원.김해 지역 초등학생의 쌀음식에 대한 지식, 가치관 및 섭취실태 조사 (A Study on Elementary Schoolchildren's Knowledge, One's Value and Consumption Pattern for Rice Foods in Changwon and Gimhae City)

  • The informations concerning knowledge, value and consumption pattern for rice foods of elementary schoolchildren (630 boys and 550 girls in 5th or 6th grade) were investigated in Changwon and Gimhae of Gyeongnam province. They were asked based on knowledge, one’s value and intake frequence of rice foods by questionnaries. Menus for 3 days including 2 weekdays and 1 weekend day were taken from 136 students (77 boys and 59 girls) in two Elementary Schools in Changwon and Gimhae to know intake reality of rice product. The purpose of this survey was to find the way of encouraging rice intake and preference which now seemed to be low because of simplified, westernized eating habits, and to provide basic information needed for inheriting and improving our traditional cooked rice centered eating culture. The results are summarized as follows. The knowledge of rice was positively correlated to the one’s value (r=0.365, p<0.001) and the preference (r=0.132, p<0.001), the one’s value was positively correlated to preference (r=0.409, p<0.001). The score of knowledge for rice was 12.8 points out of 20, the girls get points(13.12) significantly higher than the boys (12.53) (p<0.01). One's value about rice foods was 37.35 points out of 50 what is relatively high. They have eaten cooked rice type food for 2.24 times per day. Both boys and girls in Changwon and Gimhae area were having cooked rice type food significantly more during weekdays compared to weekends (p<0.001) by 3 days food record. According the results, we can see the possibility that schoolchildren can be encouraged to eat more rice foods by nutritional education to go with the development of various programs.

Nutritional evaluation of new alternative types of dog foods including raw and cooked homemade-style diets

  • Background: New alternative types of pet foods such as raw and cooked homemadestyle diets containing human food ingredients have been introduced due to a trend of pet humanization and diversification of consumer needs. Objectives: To evaluate nutritional adequacy of new alternative types of dog foods containing human food ingredients as maintenance diets for dogs. Methods: Eleven homemade-style foods for adult dogs were purchased from online channel in Korea and analyzed to evaluate nutritional adequacy for adult dogs. Nutrients analyzed included crude protein, amino acids, crude fat, fatty acids, and minerals. Results: Crude protein and amino acids in all products satisfied Association of American Feed Control Officials (AAFCO) requirements. Crude fat in one of 11 products did not meet AAFCO requirements. The most deficient minerals were selenium (10 of 11, 90.9%), copper (five of 11, 45.5%), zinc (five of 11, 45.5%), potassium (three of 11, 27.3%), calcium (three of 11, 27.3%), iron (two of 11, 18.2%), and magnesium (one of 11, 9.1%). Six products were not in the range of the recommended Ca:P ratio in AAFCO dog food maintenance nutrient profiles. Conclusions: This study performed nutritional evaluation of raw and cooked homemadestyle foods as maintenance diets for adult dogs. Some nutritional inadequacies were observed including some minerals, Ca:P ratio, and omega-6:omega-3 fatty acid ratio, although three products (26.2%) satisfied the AAFCO standard except selenium. Overall, the data suggest a need for accurate nutritional adequacy statement for consumers based on proper methods to validate the formula.

조릿대 잎 추출물이 탄수화물 급원 식품의 당 내성에 미치는 영향 (Effects of Sasa Borealis Leaf Extract on the Glucose Tolerance of Major Foods for Carbohydrate)

  • Sasa borealis leaf has been known to have anti-diabetic properties. In this study, we tried to evaluate the effects of Sasa borealis leaf extract (SBE) on the inhibition of $\alpha$-glucosidase activity and postprandial glycemic response following ingestion of four carbohydrate-rich foods; cooked rice, ramen (instant noodle), noodle, and bread. Fourteen healthy female adults consumed 50 g of glucose (control) or one of the four foods containing 50 g of available carbohydrate with or without 2,000 mg of SBE. The activity of $\alpha$-glucosidase was inhibited dose-dependently by SBE. With SBE, blood glucose concentration at 15 min and the positive area under the curve (AUC) of postprandial glycemic response at 15 min and 30 min after consuming each of the four foods were reduced significantly. As the result, total positive AUC during 120 min was decreased in case of taking cooked rice or bread. Glycemic index and glycemic load of the four foods were declined from 13% to 23% with SBE. The results of this study suggest that SBE may be effective for postprandial glucose control by inhibiting $\alpha$-glucosidase activity.

강남콩 고물과 대두 고물의 미세구조와 조직감에 대한 연구 (Microstructure and Textural Properties of Cell Mass from Cooked Kidney bean and Soybean)

  • 강남콩과 대두를 삶아 분리한 고물의 미세구조를 광학 현미경 및 SEM으로 조사하고 그 화학조성과 조직감 특성을 비교하였다. 강남콩 고물의 경우 각각의 세포가 잘 분리되었으나 대두 고물은 여러개의 세포가 결학된 덩어리가 많이 포함되어 있었다. SEM 사진에 의하면 강남콩 고물을 구성하는 세포는 구형이었으나 대두 고물의 구성세포는 긴 자루 형태를 가지고 있었다. 펙틴질을 비교적 많이 함유하는 대두 고물의 경우 높은 접착성과 응집성을 나타내었다.

식품 눈대중량 퍼지데이타의 처리방안에 관한 연구 (A Method for Fuzzy-Data Processing of Cooked-rice Portion Size Estimation)

  • To develop a optimized method for educing the errors associated with the estimation of portion size of foods, fuzzy-dta processing of portion size was performed. Cooked-rice was chosen as a food item. The experiment was conducted in two parts. First, to study the conceptions of respondents to bowl size(large, medium, small), 11 bowls of different size and shape were used and measured the actual weights of cooked-rice. Second, to study the conceptions of respondents to volume(1, 1/2, 1/3, 1/4), 16 different volumes of cooked-rice in bowls of same size and shape were used. Respondents for this study were 31 graduate students. After collecting the data of respondents to size and volume, fuzzy sets of size and volume were produced. The critical values were calculated by defuzzification(mean of maximum method, center of area method). The differences of the weights of cooked-rice in various bowl size and volume between the critical values and the calculated values by average portion size using in conventional methods were compared. The results hows large inter-subject variation in conception to bowl size, especially in large size. However, conception of respondents to volume is relatively accurate. Conception to bowl size seems to be influenced by bowl shape. Considering that the new fuzzy set was calculated by cartesian product(bowl size and volume), bowl shape should be considered in estimation of bowl size to make more accurate fuzzy set for cooked-rice portion size. The limitations of this study were discussed. If more accurate data for size and volume of many other food items are collected by the increased number of respondents, reducing the errors associated with the estimation of portion size of foods and rapid processing will be possible by constructing computer processing systems.

주요곡물의 에너지 함량 평가에 관한 연구 (A Study on Estimation of Metabolizable Energy Content in Cereal)

  • This study was undertaken to determined the metabolizable energy of cereal by the different method. Raw or cooked cereal foods were freeze-dried and fed to Sprague Dawley rat with 200-300g body weight to measure apparent metabolizable energy(AME) values and nitrogen-corrected AME(AMEn) values for four days after three days of preliminary period for adaptation to the diets. The AME values of Karaeddok, raw rice, cooked rice, raw brown rice, raw glutinous rice, cooked glutinous rice, raw barley and cooked barley applerared 4516.1, 3380.6, 4072.2, 3457.0, 4448.0, 2929.4 and 3780.2kcal/kg dry matter, respectively. The AMEn values of karaeddok, raw rice, cooked rice, raw brown rice, cooked brown rice, raw glutinous rice, cooked glutinous rice, raw barley and cooked barley appeared 4421.5, 3349.6, 4160.0, 3918.7, 4039.3, 3572.0, 4552.5, 3009.9 and 3873.4kcal/kg dry matter, respectively. A slight difference was observed when the AME values of the cereals measured in present study were compared with the energy values calculated by various conversion parameters such as Atwater's, Rubner's, Sochun's adn FAO's, indicating that the latter energy values by all conversion factors are acceptabel for several cereals.

어린이집 급식에 대한 식품 기호도 및 만족도 조사 연구 (A Study on Preference and Food Satisfaction of the Preschool Children Foodservice in Taegu)

  • This study was conducted to investigate mean height, weight, food preference and satisfaction of 231 children in preschool in four different regions(Susung-ku, Jung-ku, Nam-ku, Dalseo-ku) of Taegu. Mean height of the children was increased by priority of Jung-ku, Dalseo-ku, Susung-ku and Nam-ku, and mean weight was of Jung-ku, Susung-ku, Dalseo-ku and Nam-ku. In food preference, boiled rice had the highest score of cooked rices in all of the different regions, jajangmyun had the highest score of noodles in Susung-ku, Jung-ku and Dalseo-ku. Cake had the hightest score of breads in Susung-ku and had significantly difference all the kind of other lesions. Songpyun had the highest score of rice cakes in all four regions. Jangjorim had the highest score of jorim foods in all four regions, but anchovy and green pepper jorim had the lowest. Toasted lavor and steamed chicken had the highest of toasted foods and steamed foods, respectively. Salads had the highest of muchimryu cooked potherbs and salads in all regions but kimchi and jangachi had low scores. Sujungkua had the lowest scores of beverages in all regions, but chocolate had the highest scores of cookies. In food intake satisfaction according to the regions, regularity, variety, hygiene, amount, and quantity of meal had the highest in dalseo-ku. Food temperature was highest in susung-ku. There was a direct correlation between type of housing and satisfaction in diversity of foods.

푸드뱅크 기탁 조리식품의 미생물학적 위해분석 (II) (Microbiological Hazard Analysis of Cooked Foods Donated to Foodbank (II))

  • This study was conducted to estimate the safety level of non-cooking and cooking processed foods to propose the sanitary management of foods donated to foodbanks. The time and temperature were measured and the microbial levels of aerobic plate counts (APC), coliforms, E. coli, Salmonella spp., S. aureus, B. cereus, and E. coli O157:H7 were analyzed on ten food items donated to seven foodbanks. The amount of cooked foods donated to each foodbank was about 10 to 40 servings. All foodbanks hired a supervisor and had at least one refrigerator/freezer and one temperature-controlled vehicle, but only four foodbanks had the separate offices to manage the foodbank operation. The flow of donated foods was gone through the steps; production, meal service and holding at donator, collection by foodbank, transport (or holding after transport) and distribution to recipients. After production, the levels of APC of both non-cooking and cooking processed foods were complied with the standards by Ministry of Education & Human Resources Development, and were not increased till distribution. Only the level of coliforms in dried squid & cucumber salad (1.5×$10^3$ CFU/g) was not met the standards. E. coli and other pathogens were not detected in all tested samples. The microbial levels of delivery vessels and work tables were satisfactory, but the APC levels of two of four tested serving tables (6.9×$10^3$ and 5.3×$10^3$ CFU/100$cm^2$) and the coliforms level of one (1.1×$10^3$ CFU/100$cm^2$) were over the standards. The air-borne microflora level in serving room was estimated as satisfactory. It took about 3.0 to 6.5 hours from after-production to distribution and the temperatures of donated foods were exposed mostly to temperature danger zone, which had a high potential of microbial growth. These results imply that a checklist to monitor time and temperature in each step should be provided and the employees involving foodbank operation should be properly educated to ensure the safety of donated foods.
