Quality Assessment of Yakju Brewed with Conventional Nuruk (전통누룩으로 빚은 발효주의 품질 평가)

  • To evaluate of quality of Yakju brewed with different types of fermenters(Nuruk) and brewed by a method described in Sallymkyungjae, blucoamylase and protease and protease activities of Nuruk were measured, and proximate composition , coloring degree, acetaldehyde , alcohol , , fusel oils , amino acid content , mineral content and sugar composition of Yakju samples were also determined. It was foung that the lower the pH, the lower the glucoamylase acitvity in Nuruk samples A to E . In A, B, D and H, protease activity washigher at ph 5.5 than at pH 5.0 . Yakju sampels 1 to 5 during fermentation , total acidity and amino acid content were high at the first step and were getting lower gradually at the second step. In Yakju samples 6 to 11 , ethanol content was high in 6b, 7b, 8a, 8b and 11b. At the second step, residual sugar content was getting higher gradually in 7 a, 11 a and 11b. The coloring degree of Yakju wasinfluenced by not only color of Nuruk but also Fe content in Yakju . Of the Yakju examined , only 9a and 9b contained acetaldehyde in trace amounts. Thanol content was the highest in 8a and 8b. Fusel oil content was high in 8a and 8b. In samples 6 to 9 , aspartic acid content was higher in treatment a than treatment a than treatment b, but tyrosine , histidine and proline contents were higher in treatment a than treatment b. The levels of frucose, melibiose, sorbitol, and arabinose in Yakju brewed from unsteamed rice were higher than in Yakju brewed from steamed rice. K content was the lowest in 9a and 9b. Na content was higher in treatment a than in treatment a than in treatment b. In only 6a, Ca/P ratio was more than one.

Growth performance and nutrient digestibility of grower and finisher pigs fed diets containing non-genetically modified soybean meal

  • This study assessed the effects of a dietary non-genetically modified organism (non-GMO) source on growth performance and nutrient digestibility of grower-finisher pigs. The dietary treatments were 1) rice-soybean meal-based control diet and 2) rice and non-GMO soybean meal-based diet. In the experiment 1, 60 growing pigs (initial body weight [BW] = 23.76 ± 3.42 kg) were randomly assigned to 1 of 2 dietary treatments with 6 pigs·pen-1 (5 replications) for 6 weeks. In experiment 2, 48 finishing pigs (initial BW = 64.31 ± 6.17 kg) were randomly assigned to 1 of 2 treatment groups with 4 pigs·pen-1 (6 replications) for 6 weeks. Measurements were the average daily gain (ADG), average daily feed intake (ADFI), gain-to-feed ratio (G : F), and nutrient digestibility. The growth performance was measured at the beginning and end of each period. The apparent total tract digestibility (ATTD) was determined by chromium oxide as an indigestible marker during the last 7 days of each experiment. During the grower period, pigs fed the diet containing the non-GMO soybean meal had a higher (p < 0.05) ADFI than those fed the control diet; however, there were no differences between the dietary treatments in the ADG, G : F, and ATTD. Moreover, the dietary treatments did not affect the ATTD and growth performance of the finishing pigs. In conclusion, the inclusion of non-GMO soybean meal in the diet had no negative effects on the growth rate and nutrient digestibility, indicating that non-GMO soybean meal can be used in diet formulations with other feed ingredients and be a substitute for conventional soybean meal.

Optimum sterilization selection method for increasing yield of Pleurotus ostreatus on the bag­cultivation (느타리버섯 봉지 재배 시 수량증가를 위한 최적살균방법)

  • This study was carried out to find optimum condition through sterilization methods for cultivation of Neutaribeosut (Oyster mushroom). 1. Yield of additive culture of pine sawdust, cotton and rice hulls at bag­cultivation of Neutaribeosut. was similiar to additive culture of pine sawdust, cotton and pulpe as conventional methods. 2. Yield of Neutaribeosut at low temp. sterilization method as 50 to 6$0^{\circ}C$ and 7days treatment was higher about 18 to 19% than that of high temp. as 121$^{\circ}C$ and 90 minutes treatment. 3. In case of farmer­cost, low than high temperature sterilization method appeared lowly about 12%. So this method will be of advantage to farmers in both yield and farmer­cost.

The Effects of the Growth and Yield of Paddy Rice in the Upland Cultivation (수도 밭재배에 관한 연구)

  • Two paddy rices and two upland rices were cultivated both in the paddy-field and in the upland in order to find out the effects of the different cultural environments on the growth and yield of the four varieties. Three plots (standard fertilizer without irrigation, standard fertilizer with irrigation and nitrogen-increased fertilizer with irrigation) were set in the upland and one plot (standard fertilizer with conventional water control) was set in the paddy-field. The weight of brown rice of paddy rices was higher in the paddy-field than in the upland, while that of upland rices was higher in the upland. The heading-date of paddy rices was later about a week in the upland than in the paddy-field. The maturity ratio and the weight of 1, 000 grains of upland were higher and heavier than those of paddy rices in both cultural conditions. The results show that it is very desirable for the culture of paddy rices to be cultivated under the upland condition, on the view point of its yield and quality compared with those of upland rices.

Effect of Customized Fertilizer Application and Soil Properties on Amino Acids Composition in Rice Grain

  • Our government has performed to support the nation-wide application of customized fertilizer based on soil-testing results and crop nutrient balance in order to promote the environment-friendly agriculture and to respond the global environment guide-line since 2010. This study was performed at the selected local paddy fields (Hwaseong-si, Uiseong-gun and Miryang-si) with different soil chemical properties in 2012. The contents of amino acids measured showed an increasing trend with fertilization, and glutamic acid was the most abundant amino acid followed by aspartic acid, leucine and alanine. However, valine, isoleusine, tyrosine and lysine were not significantly affected by fertilization. The significant differences in grain N, expressed as a crude protein, and amino acids dose was observed between experimental sites (p<0.001), treatments (p<0.01 to 0.001) and interaction of both factors (p<0.01 to 0.001). In our experiment the following order of carbon skeleton backbones to produce amino acids was observed irrespective of experiment sites and fertilization: ${\alpha}$-ketoglutarate > oxalate > pyruvate > 3-phosphoglycerate > phosphoenolpyruvate. In conclusion, customized fertilizer had no difference in amino acids compared to the conventional-NPK practice which was higher than in no fertilization, and also the normal paddy represented slightly higher amino acids compared to the reclaimed. Further study based on the present results is required to investigate what is main factor to amino acids between genetic and environmental factors.

Chemical Properties of Paddy Soils and Factors Affecting Their Change in Jeonnam Province

  • The long-term changes in the soil properties are closely related to the policy direction and the national program for the soil management. In this study, chemical properties of paddy soils in Jeonnam province were investigated at four-year interval since 1999 and the factors affecting change of chemical properties were analyzed in relation to the soil management policies. Chemical fertilizers supplied to Jeonnam province reduced by 57% in 2013 as compared with 1999, and the ratio of Jeonnam province to the national fertilizer supply gradually decreased to 14.1% in 2013 from 17.6% in 1999 due to national policies to reduce use of chemical fertilizers in the 2000s. In the chemical analysis of paddy soils in Jeonnam province, pH value tended to increase gradually within the optimal range. Available phosphate and exchangeable potassium content were always higher than the optimal range and showed no significant difference since 1999. Organic matter, exchangeable calcium and available silicate content were found to be lower than average content in the whole country as well optimal range for rice cultivation in 1999, but were higher than average content in the whole country and optimal range in 2011 because of faster rate of increase in Jeonnam province than the other region since the mid-2000s. The cause of increase in organic matter, exchangeable calcium and available silicate contents is considered to be the increased use of green manure crops and by-products fertilizer as an alternatives for conventional application of chemical fertilizers and soil amendment such as silicate fertilizer for agronomic control of the disease and insect pest in rice cultivation of environmentally-friendly agriculture.

A Study on Contents of Beta-Carotene in Local Agricultural Products (지역 농특산물의 베타카로틴 함량 조사)

  • Beta-carotene is the most prominent member of the group of carotenoids, natural colorants that occur in the human diet. Beta-carotene is also an effective source of vitamin A in both conventional foods and vitamin supplements, and it's generally safe. In this study, we explored the beta-carotene contents in agricultural products widely and specifically grown in Korea. The beta-carotene contents were ranging from 223 to $27,908{\mu}g/100g$ in leaves, and 0 to $7,588{\mu}g/100g$ in vegetables. In leaves and vegetables, the amount of beta-carotene was the highest in green tea powder ($27,908{\mu}g/100g$), followed by pepper ($7,588{\mu}g/100g$). In fruits, the beta-carotene content was found to range from $0{\mu}g/1,011g$ to maximum of $293.66{\mu}g/100g$(plumcot). However, there beta-carotene was not detected in strawberry. In the case of cereals and specialty crops, the beta-carotene contents were $326{\mu}g/100g$ for non-glutinous rice, $313{\mu}g/100g$ for glutinous rice, $57{\mu}g/100g$ for amaranth and $15{\mu}g/100g$ for pine nut, respectively. However, the beta-carotene content was not detected in other samples. This study revealed the presence of beta-carotene content in agricultural products specifically grown in Korea for nutritional information and food composition database.

Variation in Population Size of Mudfish by Agricultural Practices in Paddy Fields (논 생태계에서 영농방법에 따른 미꾸라지개체군의 변동 요인 분석)

  • BACKGROUND: This study was carried out to compare population size of mudfish (Misgurnus mizolepis) between the agricultural practices and to investigate the causes of its differences. We also provided basic information for sustainable use of mudfish population in paddy fields. METHODS AND RESULTS: Mudfish and benthic invertebrates which are diet of mudifish were investigated from 8 sites of organic and conventional rice paddy fields in South Korea. Total number of mudfish were 1,882 individuals in survey sites. Mudfish population were 2.4 times larger in organic paddy fields (1,333 individuals) than in conventional paddy fields (549 individuals). The population size of mudfish was larger in Mungyeong-si, Gyeongsangbuk-do and Anseong-si, Gyeonggi-do with relatively better environmental conditions than the other 5 sites including Suwon-si, Gyeonggi-do, Cheongyang-gun, Chungcheongnam-do, Gunsan-si, Jeollabuk-do, Gimje-si, Jeollabuk-do, Hwasun-gun, Jeollanam-do, Hamyang-gun, Gyeongsangnam-do. Benthic invertebrates collected from survey sites were 74 species, 68 genera, 46 families, 19 orders, 6 classes and 3 phyla. According to agricultural practices, benthic invertebrates were identified 66 species, 62 genera, 41 families, 17 orders, 6 classes and 3 phyla in organic paddy fields while there were 66 species, 60 genera, 42 families, 18 orders, 6 classes and 3 phyla in conventional paddy fields. Dominant invertebrates were Chironomidae sp., Branchiopoda sp., Ostracoda sp., and Copepoda sp. There were no differences in dominant species between organic and conventional paddy fields. Population size of mudfish tended to increase with the population size of Chironomidae sp., Branchiopoda sp., Ostracoda sp., and Copepoda sp. But, only population of Chironomidae sp. and Copepoda sp. statistically related to population size of mudfish. The number of individuals of mudfish (Misgurnus mizolepis) was higher at the low rate of urban area than any other surveyed region and was affected by appearance ratio of main preys such as Chironomidae sp. and Ostracoda sp. CONCLUSION(S): The population size of mudfish in rice paddy fields could be affected by environmental conditions and agricultural practices such as organic and conventional methods.

Effects of Organic TMR with Whole Barley Silage on Feed Intake, Nutrient Digestibility and Blood Characteristics in Korean Black Goats (총체 보리사일리지를 첨가한 유기 TMR 급여가 흑염소의 사료섭취량, 영양소 소화율 및 혈액성상에 미치는 영향)

  • This trial was carried out to determine effects of TMR(Total Mixed Ration) in comparison to conventional diet on feed intake, digestibility, and nitrogen retention in Korean black goats. Twelve Korean black goats were allotted to treatments in four groups of three goats and the they were housed in separate metabolism cages for 21 days. Treatments included conventional diet(A: rice straw and commercial concentrates) as a control group and three TMR groups(B: rice straw and commercial TMR; C: 30% organic whole barley silage and rice straw with organic grain; D: 60% organic whole barley silage with organic grain). The results obtained are summarized as follows. Dry matter intake, fecal excreta, digestible dry matter, metabolic intake and feed intake of BW were significantly higher(p<0.05) compared with A, B, C treatment. The digestibility for most of nutrients except NFC was significantly higher(p<0.05) for D treatment than the others. On the other hand, the digestibility of NFC was higher for B treatment than for the others, even if it was not significantly different across treatments. Nitrogen intake was lower for D treatment, but the significant differences were not found across treatments. N retention rate was higher for B treatment with significant difference. For the blood composition, HDL cholesterol and Immunoglobulin G were significantly higher(p<0.05) for C, D treatment than the others. The results showed that, in comparison with A treatment(conventional diet) and B treatment(commercial TMR), dry matter intake, nutrient digestibility and N retention rate were not lower in C treatment(30% organic whole barley silage) and HDL cholesterol was increased after experiment. Therefore, it could be concluded that TMR with organic whole barley silage might contribute to the production of a high quality and safer meat in goat production.

Effects of Organic Feed Containing Rice Bran and Soybean Hull on Milk Production of Mid-Lactation Dairy Goats (미강과 대두피가 첨가된 유기사료의 공급이 비유중기 유산양의 유생산성에 미치는 영향)

  • This study was conducted to investigate the effect of organic feed containing rice bran and soybean hull as organic by-products on milk production of mid-lactation dairy goats. Four Saanen dairy goats (initial BW $59.4{\pm}7.4$ kg, average 6 lactation months, fourth kidding) were allocated into conventional feed group (T1) and organic feed group (T2) with 2${\times}$3 crossover design for 9 weeks. Experimental diets were formulated to contain 23 MJ ME/d, 382 g CP/d DM based on NRC (1981) and AFRC (1998). Dry matter (DM) intakes of concentrate and silage were higher in T2 (1,232 and 96 g/d) than T1 (1,105 and 91 g/d) (p<0.05). However, DM intake of hay was higher in T1 (488 g) than T2 (347 g) (p<0.05). Total DM intake had no significant difference between T1 and T2. Although no significant difference was found in milk yield between treatments, T2 numerically increased (+150 g/d) compared with T1. There were no significant differences in milk composition and milk urea nitrogen (MUN) between T1 and T2. Relative to T1, T2 significantly increased the stearic acid (C18:0) and linoleic acid (C18:2) (p<0.05). Overall results of the present experiment indicated that organic feed could not adversely affect DM intake and milk production in dairy goats compared with conventional feed.
