대학급식소의 운영형태에 따른 위생, 환경과 서비스에 대한 만족도 비교 (Comparison of Students' Satisfaction with Sanitary, Environment, and Service of College Food Service by Operating System)

  • The purpose of this study was to provide basic data to improve college food service satisfaction with sanitary, environment and service by comparing 2 contract-managed and 2 self-operated college food services in Daejeon and Chungnam area. According to the results, sanitation and environment satisfaction degrees of contract-managed college food services were higher than those of self-operated food services. The satisfaction degrees with service were also higher in contract-managed food services than self-operated food services except the category of quick food delivery. In all categories comprising the food service satisfaction, the satisfaction degrees were lower in female students than in male students. There were more negative self-perceived clinical symptoms in female students than male students. The higher the negative self-perceived clinical symptoms scores were, the lower the satisfaction degrees with food service were, which suggests that かe health state of students was one of the factors that influenced college food service satisfaction. There was no difference between contract-managed and self-operated food services in terms of satisfaction with overall food taste and overall satisfaction degree. The average satisfaction degree for the contractmanaged food services in terms of price relative to food quality was lower than that for self-operated food services. According to stepwise multiple regression analysis, 'overall food taste', 'price relative to quality', 'kindness of employees', 'coping with proposed opinions' and 'quicknless of food delivery' in decreasing order, were the most relatively important attributes for overall satisfaction. There should be further studies on important management factors to improve satisfaction with sanitary, environment and service by self-operated college food service.

중.고등학교 급식비용 분석과 효율적 재무관리체계를 위한 연구 (A Study on Cost Analyses and an Efficient Financial Management in Self-Operated and Contract-Managed Secondary School Foodservices)

  • Efficient financial management is a critical factor in achieving school foodservice goals. The objective of this study was to suggest efficient financial management practices in secondary school foodservices. In pursuit of this objective, we first identified performance indexes for measuring the success of financial management. Second, we suggested financial management standards, financial data classification methods and a report system. Last, we analyzed operating ratios with the financial data of self-operated and contract-managed school food services. The data were collected through an open-ended questionnaire from 10 middle/high school foodservices in Seoul and Kyeonggi Provincial during on-sites visits and interviews with dieticians and managers. Student participation, sales goals, re-contract frequency and number and cost of disaster loss were identified as the performance indexes for financial management. Income statements were compiled by identifying and classifying financial data. Total revenues consisted of subsidies, meal sales, other revenue and interest. Expenditures consisted of purchased food, salaries and wages, utility costs, office supplies, kitchen supplies, purchased services, company overhead indirect costs, facility investment and maintenance, facility usage expenses, employee benefits and miscellaneous. Mean price of a meal was 2,326 won at self-operated foodservices when the subsidies were included as revenues and 2,360 won at contract-managed foodservices. When including the subsidies as revenues, the operating ratios of self-operated foodservice showed that the food cost percentage was 66.9%, labor cost 23.2%, operation cost 9.9% and profit 0%. The correspond figures at contract-managed foodservices were 57.6%, 21.5%, 15.3%, and 5.5%, respectively. Food costs in self-operated foodservices was significantly higher than that for contract-managed foodservices, however, facility investment and maintenance and facility usage expenses at self-operated foodservices was significantly lower than those for contract-managed foodservices. Based on this study, the methodology and classification system of financial data was found to be applicable to assess the financial structure of school foodservices.

대학급식소 운영체제에 대한 소비자와 학교당국의 태도 (Customers and Administrators' Attitudes Concerning Operation Format in University Foodservices)

  • Contract Managed foodservice has been expanded rapidly in university foodservice operations. The purposes of this study were to examine customers and administrators' preference concerning operation format, the decision making components for operation format, and administrators' attitudes concerning contract managed and self-operated foodservice. Two types of questionnaires were developed and implemented. Customer and administrator's questionnaires were distributed to 900 university students and 27 administrators respectively, and 831 customers and 24 administrators were responded with a response rate of 92.3% and 88.8% respectively. Statistical data analysis was completed using the SPSS programs for descriptive analysis, $x^2$-test, ANOVA, and T-test. The results of this study can be summarized as follows 1. In deciding foodservice operation format, the components customers considered were the ability to provide variety of meal items, aesthetic and safe food(62.6%), the ability to provide a food with competetive low price(22.1%), and the ability to provide adequate service and nutrition information. On the contrary, the components administrators considered were the ability to provide variety of meal items, aesthetic and safe food(66.7%), the ability to relieve administrators of managerial burden of the foodservice operation(12.5%), and the ability to invest facility(8.3%). 2. The average score of attitude on contracted and self-operated management activities were 3.41, 3.10 respectively. University administrators evaluated that contractors performed financial management activities more effectively. 3. University administrators with contracted or self-operated foodservice favored their own current operation format.

영유아 보육시설의 급식 운영 실태 조사 - 충남 아산 지역 중심으로 - (A Survey on the Foodservice Management System of the Child Care Centers in Chungnam Asan Area)

  • We investigated the foodservice management practices in various operation types of childcare centers in Asan, Chungnam Province, with the intention of improving the quality of foodservice and providing the basic information for establishing more effective and efficient foodservice model system. Self-completed questionnaires were collected from the directors of 174 child care centers. The statistical analysis was completed using SPSS Ver. 12.0 program. The followings are about the results of this study. Approximately 94.8% of the directors were women with the average age of 40.3. All of the investigated facilities executed foodservice; the facilities of 96.2% had been self-operated, 1.9% was contract-managed and the remaining 1.9% served delivered meal from outside. Only 20.0% of the investigated centers employed a dietitian. In most of the centers, meals were prepared in a conventional manner and approximately 85.3% of the centers are serving only snacks twice a day as a supplementary due to financial difficulties. Menu planner of the facilities, which have no dietitian was the director (35.8%) or the cook (25.7%). In most centers, the directors purchased the food materials (67.5%). Material inspection was done by the director (54.9%) or the cook (40.5%). However, home care centers did not inspect the food material. These results indicate that food service management guidelines need to be established by the facility type with the government control and financial support. Especially, dietitian employment and the efficient foodservice model system establishment are questions that confront us.

균형성과표(BSC)개념을 적응한 학교급식 운영성과 측정지표 개발 (Development of Performance Indicators Based on Balanced Score Card for School Food Service Facilities)

  • This study raised the necessity of developing performance indicators for measuring the management efficiency and effectiveness of school food service, and as a means of helping its implementation, a balanced score card (BSC) approach developed by Norton and Kaplan was adopted. This study established BSC in seven phases through literature: Phase 1 Defining a school food service and the scope of working activities, Phase 2 Establishing the vision of a school food service, Phase 3 Setting strategic goals, Phase 4 Identifying critical success factors (CSFs), Phase 5 Developing Key Performance Indicators (KPIs), Phase 6 Extracting cause and effect relationship, and Phase 7 Completing a preliminary BSC. The preliminary BSC was fumed into a survey, which was administered to food service related people working at the Office of Education and School Food Service including 16 offices,209 dietitians, 48 school administrators both from self-operated and contract-managed, and 9 experts in areas related to school food service. They were asked questions about strategies from 4 different perspectives,12 CSFs, 39 KPls, and the cause and effect relationships among them. As a result, among the CSFs based on 4 different perspectives, all factors other than ' zero sum on profit/loss ' from the financial perspective turned out to be valid. In terms of KPIs, manufacturing cost percentages, casualty loss count/reduction rates, school foodervice participation rates, and sales goal achievement rates were found to be valid from the financial perspective, while student satisfaction index, faculty satisfaction index, leftover ratio, nutrition educational performance count, index of evaluating nutrition education, customer claim count/reduction rate, handling customer claim count/reduction rate, and parent satisfaction index were found to be valid from the customers' perspective. Besides, nutritional requirement sufficient ratio, nutritional management score, food poisoning outbreak count, employee safety accident count, sanitary inspection assessment index, meals per labor hour (productivity index), computerization ratio, operational management index, and purchase management assessment index were also found to be valid from the perspective of internal business processes. From the perspective of innovation and learning, employee turnover ratio/rate of absenteeism, annual education and training count, employee satisfaction index, human resource management assessment index, annual menu-related customer feedback, food service information index for employees and parents/schools were also found to be valid. The significance of this study is to present indices for measuring overall performance of school lunch food service operations without putting any limitation on types of school food service management, and to help correctly assess the contribution of the current types of school food service management to schools and students. 식품영양학과 학생들의 현장실습 만족도 및 평가도에 관한 연구 (A Study on Satisfaction and Evaluation of Students현 Spot-Practice in Department of Food and Nutrition)

  • 식품영양학과 학생들의 현장실습에 대한 만족도와 평가도를 알아보고 이에 영향을 미치는 인자들을 찾아봄으로써 보다 효율적인 현장실습 프로그램 개발에 필요한 기초자료를 제시하고자 실시한 본 연구결과를 요약하면 다음과 같다. 전체 조사대상자 중 대학 2학년생이 155명(67.7%), 대학교 3학년생이 14명 (6.1%), 4학년생이 60명(26.2%)이었으며, 남학생은 14명 (6.1%), 여학생은 215명(93.9%)이었고, 실습기관은 학교급식소 89명 (38.9%), 사업체급식소 107명(46.7%), 병원급식소 33명(14.4%)이었다. 실습기간은 1주가 16명(7.0%), 2주가 192명(83.8%), 3∼4주가 21명(9.2%)으로 2주를 가장 많이 실시하고 있었다. 실습 만족도는 실습지원비(1.90$\pm$1.18)와 실습기관의 위치(2.93$\pm$1.29)항목에서 낮았으며, 실습기관의 종류(3.75$\pm$0.88)와 실습기관의 실습관리자(3.63$\pm$1.05)에 대한 만족도는 높았다. 실습 평가도는 실습에 대한사전 준비 및 계획(3.27$\pm$0.74)과 현장실습이 진로결정에 도움을 주었다(3.61$\pm$1.02)는 항목에서 낮았으며, 실습과제의 수행(4.05$\pm$0.82)과 근무의 성실성(4.02$\pm$0.75)에 대한 평가도는 높았다. 실습기관의 종류와 관리 유형에 따른 현장실습 만족도에서 병원급식소가 학교급식소나 사업체 급식소에 비해 실습기관의 분위기, 실습비, 실습생에 대한 대우 및 처우, 학과 교수의 지도 항목의 만족도가 유의하게 낮았으며(p<0.05, p<0.03, p<0.05, p<0.05), 직영업체가 위탁업 체보다 실습기 관의 종류 등 총 7개 항목에서 만족도가 높았다. 현장실습 평가도는 학교급식소가 병원급식소에 비해 '나는 실습생으로서 성실히 근무하였다'와 '실습에 필요한 내용을 사전에 준비하고 계획하였다'는 항목에서 유의하게 낮았으며(p<0.05, p<0.05), 직영과 위탁의 관리 유형에 따라서는 유의한 차이가 없었다. 현장실습 지역과 거주지가 일치한 실습생이 일치하지 않은 실습생보다 실습생에 대한 대우 및 처우 항목의 만족도(p<0.05)와 '실습장소의 정리정돈과 관리에 힘썼다' '조리원들과 친밀해지고 신뢰받게 되었다'는 항목의 평가도(p<0.05, p<0.01)가 유의하게 높았다. 현장실습 기관과 취업 희망기관이 일치한 실습생이 일치하지 않은 실습생보다 실습기관의 종류, 위치 등 총 8개 항목의 만족도가 유의하게 높았으나 실습 평가도는 두 군간에 유의한 차이가 없었다. 현장실습 기간, 실습비, 실습 만족도와 평가도간의 상관관계를 살펴보았을 때, 실습기간은 실습기관의 분위기, 실습생에 대한 대우 및 처우 항목의 만족도와 정의 상관관계(p<0.05, p<0.05)를 보인 반면, '부과된 과제를 수행하는데 최선을 다했다'는 평가도와는 부의 상관(p<0.05)을 보였다. 실습기관으로부터 받은 실습비는 실습지원비, 실습생에 대한 대우 및 처우, 학과 교수의 지도에 대한 만족도(p<0.001, p<0.05, p<0.05) 및 '나는 실습생으로서 성실히 근무했다' 등 총 5개 항목의 평 가도와 정의 상관관계를 보였다. 실습 만족도와 평가도는 대부분의 항목에서 정의 상관을 보여 실습 만족도가 높을수록 평가도도 높았다. 이상의 연구결과를 종합할 때 식품영양학과 현장실습생들은 실습지원비와 실습기관의 위치 면에서 만족도가 낮고 현장실습업무 수행상 실습에 대한 사전 준비 와 계획이 부족하다고 평가하고 있었다. 학교나 사업체 급식소, 직영업체, 실습기관이 거주지역에 있거나 취업 희망기관과 일치 할 경우 실습 만족도가 높았으며, 특히 실습기관이 거주지역에 있거나 취업 희망기관과 일치할 경우에는 현장실습업무에도 긍정적인 영향을 미치는 것으로 나타났다. 따라서 식품영양학과의 현장실습이 매우 중요한 시점에서 이와 같은 요인들을 고려하여 현장실습의 효율을 높이고 체계화시켜 나가기 위한 학교, 실습기관, 정부 차원의 노력과 정책적 지원이 요구된다.
