A Study on the Effect on Sauce Selection and Preference of Demi-glace Sauce by Material - Focused on the Restaurants in Gwang-ju and South Jeolla Province - (데미글라스 소스의 재료별 선호도와 소스 선택에 미치는 영향에 관한 연구 - 광주.전남 레스토랑을 중심으로 -)

  • The sauce is very important to western dishes and also to value and relish of dishes because taste, appearance and the degree of water content are determined by sauce. Also, the taste derived from major sauce like a demi-glace and the basic sauce that affects cooking quality are highly recognized, but preference analyses of source and researches on each ingredients have not been performed up to now. Until today, sauces act as lubricants which add relish to dishes and aid digestion, so the importance of source is more emphasized to raise the taste, appearance, water content and specially healthy function of main ingredients. In this research, some problems of sauce itself and possibilities of improvement was grasped and then some remedies were suggested through the preference, variety and quantity analyses of demi-glace sauce practically used in hotels and restaurants around Gwang-Ju City and South Jeolla(Chon-Nam) Province. Finally, the volume of demi-glace sauce with various ingredients was suggested for various kinds of application. Through the actual proof analysis, preference of each sauce made from various kinds of ingredients was investigated. The result shows that the sauce made from beef bone is highly preferred, followed by pork bone and lamb bone. The least preferred is chicken bone.

A Study on Quality Evaluation of Ojeok-san Extract Powders Distributed in Korea (오적산 보험 엑스산제의 품질평가 연구)

  • Objectives : This study was performed to analyze the quality of Ojeok-san extract powders distributed in Korea. Methods : HPLC analyses of Ojeok-san decoction produced in laboratory and 8 kinds of Ojeok-san extract powders were done. Also, quantity analyses of paeoniflorin in Paeonia lactiflora, Glycyrrhizin in Glycyrrhiza uralensis, alkaloid in Ephedra sinica, Hesperidin in Citrus unshiu Markovich, and cinnamic acid in Cinnamomum cassia Blume were performed to investigate the accurate content of 6 kinds of Ojeok-san extract powders. Results : In the pattern analysis, the peaks were compared. The content of components in herbal extract powders was 14.7 to 15.8% of that of decoction in average. The range was measured from 8.5 to 25.7%. The pattern comparison showed significant differences among the pharmaceutical companies' products. As for the quantity analysis, one of herbal extract powder contained insufficient amount of Paeonia lactiflora components and one of herbal extract powder was in short of Ephedra sinica components. All of the others contained more than standard component(over 90%). Conclusions : Because herbal extract powders are also medicine, standardized manufacturing methods and consistent quality management are necessary. Therefore exaction and operation of national standards and various researches to improve the quality management of herbal extract powders is urgent.

Quality Characteristics of Sponge Cakes Made with Different Quantities of Broccoli Powder (브로콜리 분말이 첨가된 스폰지 케이크의 품질 특성)

  • The substitution effects of broccoli powder for flour in the preparation of sponge cake were determined by physicochemical and sensory analysis. The specific gravity and viscosity of the cake batter and cooking loss of the cake increased with an increasing amount of broccoli powder, whereas specific loaf volume and moisture content of the cake decreased. Lightness, redness, and yellowness of crust and crumb decreased with increasing broccoli powder content. A texture analyses revealed that the hardness, chewiness, gumminess, adhesiveness, and fracturability of the cake tended to increase in proportion to the amount of broccoli powder in the formula. In the sensory evaluation, cake prepared with 5% broccoli powder was similar to the control in moistness, softness, chewiness, and springiness. These results suggest that adding 5% broccoli powder is the best substitution ratio for sponge cake.

The Development of Motivation Scale in the Visual Artistic Giftedness of the Elementary School Children (학동기 시각예술영재성 동기요인 검사도구 개발)

  • The Purpose of this study was to develop the instruments which can measure motivation as a component of Visual Artistic Giftedness with in elementary school period. This study prescribed the variable factors of measurement after abstract and classify the characteristics of Visual Artistic Giftedness through literature studies. And it produced instruments those are finally composed of 27 items through the preliminary test. They were evaluated in terms of content validity, construct validity, and reliability by implementing them to 679 elementary school children from the first to sixth grades Statistical analyses were carried out to verify the validities and reliability. Content validity was found to be satisfactory by expert’s evaluation on the test items. Construct validity was also found to be satisfactory through factor analyses which showed the four factors which the identification instruments were intended to measure such as, interest/ attitude/ taste, endurance/ concentration, curiosity/ imagination/ sensitiveness, aesthetic Concurrent validity was also found to be satisfactory with high coeffients of Barron-Welsh which were calculated as .76 in motivation, In conclusion, the instruments about motivation of Visual Artistic Giftedness during elementary school period developed by this study are highly reliable on its reliability and validity.

Usability Evaluation for Life-logging Application (라이프로깅 애플리케이션 사용성 평가)

  • As user-centered design and content development emerge, the research and the establishment of items on usability evaluation are becoming more important. However, research on usability evaluation for digital systems in specific areas of mobile applications is still incomplete. Due to the recent development of wearable devices and smartphones, development and usage of quantified-self and life-logging applications has been rapidly increasing. This study aims to establish evaluation items and the main factors for the usability assessment of the applications that support life-logging services. In order to establish evaluation factors for life-logging application usability, we first gathered existing usability assessment items and selected the initial items through the Focus Group Interview(FGI). Second, we conducted user assessment surveys on the selected initial questionnaires and performed reliability and exploratory factor analyses based on the survey results. Third, through the statistical analyses results, we established 28 usability assessment items and four factors: recognition; functionality; aesthetics; and satisfaction. Finally, we discussed the expectations and limitations of the established usability assessment. The results from this paper could be used as a guideline for the usability assessment of life-logging applications and thus will contribute to effective content development.

AN ANALYTICAL STUDY ON THE PHYSICO-CHEMICAL CHARACTERISTICS OF CARIOUS DENTIN (우식상아질(齲蝕象牙質)의 물리화학적(物理化學的) 특성(特性)에 관(關)한 분석(分析) 연구(硏究))

  • Carious dentin can be classified, on the basis of their clinical characteristics, into three groups; sound, sclerotic and active carious dentin. Active carious dentin differs from sclerotic dentin by its abscence of variable bacteria within tubles and amount of chemical content. But the apatite molecules of active carious dentin are not fully studied. The purpose of this study was to observed the physico-chemical characteristics of deep carious dentin. The samples of sound, sclerotic and active carious dentin were obtained respectively from 300 freshly extracted carious teeth. Bacterial-rich zone of superficial soft dentin layer was removed with hand instruments from all samples in advance. The samples were powdered and sieved (200 mesh) before analyses. Identification and estimation of the crystallinity of the samples were carried with X-ray diffraction and infrared absorption analyses. Measurements were made on a Rigaku Denki (Rigaku, geiger flex III, Japan) X-ray diffractometer with Cu-target at 30 Kv, 30 mA and are traced on a monochromatic tracer. Infrared absorption analysis was made on FT-IR spectrophometer (Nicolet Instrument Co.) using KBr pellets containing the samples and was recorded on data process (Model IR-80. Nicolet Instrument, Co). The following conclusions were as follows; 1. The nature of the main inorganic structure of sound, sclerotic and active carious dentin proved to be hydroxyapatite. 2. It was difficult to determine the identification due to their crystallinity of sound, sclerotic and active carious dentin. But sound dentin was the highest in crystallinity among them. 3. The magnesium whitlockite was to be found in active carious dentin, but not in sound and sclerotic dentin. 4. The carbonate content was highest in sound dentin, but the lowest was in active carious dentin.

Antioxidant Activity of Solvent Extract from Onion Skin (양파껍질에서 분리된 용매 추출물의 항산화효과)

  • The antioxidant activity of the solvent fractions extracted from onion skin was examined. The antioxidant activity of methanol extract at the cencentration of 0.02% and 0.03% was stronger than that of mixed tocopherol. The antioxidant activity of the fractions of methanol extract increased in the order of butanol> ethyl acetate> ethyl ether> water fraction. The antioxidant activity of each fractions was strongly related with total phenol content and HDA. Further separation of butanol fraction by TLC yielded 6 fluorescent bands with Rf values of 0.20, 0.33, 0.49, 0.60 and 0.94. The total phenol content and HDA of fluorescent band, Rf 0.96, were remarkable higher than those of the other band and exhibited a strong UV absorption at 255 nm and 317 nm, which would be specifically produced by flavonol. Spectral analyses indicated that the major antioxidant component was quercetin aglycone (3,3',4',5,7-pentahydroxyflavone).

Introduction to European Standard Methods for Physical and Chemical Analysis of Horticultural Substrates (원예용 배지의 물리·화학성 분석을 위한 유럽의 표준방법)

  • Throughout the world, physical and chemical analyses of horticultural substrates are carried out in many different ways at the different laboratories. In Europe, standardization in properties and analytical methods of horticultural substrates has been a topic over the last decades. As a result, the CEN methods as European standard methods for the physical and chemical analyses were introduced and the final draft was reported in 1999 by CEN(Committee for European Standardization). Dry matter and moisture content are analyzed after drying samples at $103^{\circ}C$. Laboratory compacted bulk density is analyzed by determining the weight of sample compacted in the test cylinder with constant volume. Dry bulk density, particle density, total pore space, water volume, air volume and volume shrinkage are determined by saturating, draining and drying the sample using double rings and a sand suction table. pH and EC are analyzed by 1:5(sample:distilled water) extraction method on the basis of volume. Organic matter and ash content are determined after drying and combusting the samples. Now, CEN methods are being regarded almost as European standard methods. Further study needs to be carried out for universal applicability of the CEN methods to all the substrates.

  • To identify key job duties and core competencies of data librarians, this study conducted content analyses of 75 U.S. job advertisements of data librarians and statistical analyses of 105 responses from incumbent data librarians. As a result, the key job duties identified are jobs related to collaboration, workshops, trainings, conferences, data service, research consultation, and research support. Core competencies identified are communication skills, teaching, diversity, inclusion, and equality, data management, and data tool. This study is significant in that it analyzed the key duties and core competencies of the data librarians using the most up-to-date data and opinions collected from incumbent people. It can be a basis for future study such as on job satisfaction, user satisfaction, and perception surveys for data librarians.

A Study on the Archival Information Services of Economic Policy Using Text Mining Methods: Focusing on Economic Policy Directions (텍스트 마이닝을 활용한 경제정책기록서비스 연구: 경제정책방향을 중심으로)

  • The archival content listed arbitrarily makes it difficult for users to efficiently access the records of major economic policies, especially given that they use it without understanding the required period and context. Using the text mining techniques in the 30-year economic policy direction from 1991 to 2021, this paper derives economic-related keywords and changes that the government mainly dealt with. It collects and preprocesses major economic policies' background, main content, and body text and conducts text frequency, term frequency-inverse document frequency (TF-IDF), network, and time series analyses. Based on these analyses, the following words are recorded in order of frequency: "job(일자리)," "competitive(경쟁력)," and "restructuring(구조조정)." In addition, the relative ratio of "job (일자리)," "real estate(부동산)," and "corporation(기업)," by year was analyzed in terms of chronological order while presenting major keywords mentioned by each government. Based on the results, this study presents implications for developing and broadening the area of archival information services related to economic policies.
