Effect of Pre-treatment and Storage Conditions on the Quality Characteristics of Ginger Paste

  • This study was performed to investigate the effects of pre-treatment and storage temperature and periods on the quality characteristics of ginger paste. The pH of the ginger paste remained constant during room temperature storage but increased with prolonged refrigerated storage periods. During five months of frozen storage, regardless of pre-treatment, the pH of most of the samples decreased slightly and then remained constant. In the color value of ginger paste stored at room temperature, the samples with and without chemical additives changed in color more prominently than fermented or pasteurized samples. Intriguingly, the color value for samples containing chemical additives changed more dramatically when stored under refrigerated conditions. However, the L, a, and b values of samples stored under frozen storage conditions did not change even after ten months. Most of the samples contained glucose and fructose, except for the fermented samples. The free sugar content of samples slowly decreased with increasing storage periods, while the organic acid content generally decreased also, regardless of sample type. Depending on pre-treatment and storage temperature, the gingerol content of the samples was either retained or decreased with prolonged storage time.

Voltage Control of Stand-Alone Inverter for Power Quality Improvement Under Unbalanced and Non-linear Load (불평형 및 비선형부하 시 전력품질 향상을 위한 독립형 인버터의 전압제어 기법)

  • This paper proposed the voltage control of stand-alone inverter for power quality improvement under unbalanced and non-linear load. The 3-phase DC-AC inverter controls CVCF(Constant Voltage Constant Frequency) and selective harmonic eliminate method in stand-alone mode by PR controller, and the stand-lone inverter supplies stable sinusoidal voltage to balanced, unbalanced and non-linear loads. The total harmonic distortion(THD) of line-to-line load voltage($V_{LL}$) is 1.2% in the balanced load. THD of $V_{LL}$ is reduced from 5.2% to 1.4% and 6.7% to 3.5%, respectively unbalanced and non-linear load. The stand-alone inverter can be supplies sinusoidal balanced voltage to unbalanced load because the voltage unbalanced factor(VUF) of $V_{LL}$ is reduced from 5.2% to 1.4% in the unbalanced load. Feasibility of control method for a stand-alone inverter will be verified through 30kW stand-alone inverter system.

Effect of CuO and CdO Additions on the Microwave Dielectric Properties of $BiNbO_4$ Ceramics using Mobile Communication (이동 통신용 $BiNbO_4$ 세라믹스의 CuO 및 CdO 첨가량에 따른 고주파 유전 특성)

  • The effect of CuO and CdO addition on the microwave dielectric properties of $BiNbO_4$, ceramics were investigated. As the content of CdO increased, sintered density and quality factor decreased. With increasing sintering temperature, both the dielectric constant and quality factor increased. In the case of specimen sintered at $960^{\circ}C$ with addition of 0.03 wt% of CuO and CdO, respectively. the microwave dielectric properties obtained were dielectric constant of 41.2, quality factor ($Q{\times}f_0$) of 6,500 (at 5.6GHz), temperature coefficient of resonant frequency of $3ppm^{\circ}C$.

Influences of Protein Characteristics on Processing and Texture of Noodles from Korean and US Wheats

  • Protein characteristics of Korean wheat were evaluated to determine the effects of protein content and quality on processing and textural properties of white salted noodles compared to US wheat flours with various wheat classes and commercial flours for making noodles. Protein quality parameters, which were independent of protein content and included SDS sedimentation volume with constant protein weight, mixograph mixing time and proportion of 50% 1-propanol insoluble protein, of Korean wheat flours with 2.2+12 subunits in high molecular weight glutenin subunit compositions were comparable to those of commercial flours for making noodles. Parameters related to noodle making, including optimum water absorption, thickness and color of noodle dough sheet, correlated with protein content and related parameters, including SDS sedimentation volume with constant flour weight, mixograph water absorption and gluten yield. No significant relationship was found in protein parameters independent of protein content. Hardness of cooked noodles from Korean wheats was lower than that of US wheat flours compared to similar protein content of commercial noodle flours. Adhesiveness, springiness and cohesiveness of cooked noodles from Korean wheats were similar to US wheat flours. Hardness of cooked noodles correlated with protein content and related parameters.

  • Samples of banana were dried in a two-stage heat pump dryer capable of producing stepwise control of the inlet drying air temperature while keeping absolute humidity constant. Two stepwise air temperature profiles were tested. The incremental temperature step change in temperature of the drying air about the mean air temperature of 30 $^{\circ}C$ was 5 $^{\circ}C$. The total drying time for each temperature-time profile was about 300 minutes. The drying kinetics and color change of the products dried under these stepwise variation of the inlet air temperature were measured and compared with constant air temperature drying. The stepwise air temperature variation was found to yield better quality product in terms of color of the dried product. Further, it was found that by employing a step-down temperature profile, it was possible to reduce the drying time to reach the desired moisture content.

  • A digital micro-mirror device (DMD) has the potential to modulate an incident wave with high speed, and the application for holographic display has been studied by many researchers. However, the quality of reconstructed image isn't good in comparison with that from a gray-scale amplitude-only hologram since it is a binary amplitude-only spatial light modulator (SLM). In this paper, we suggest a method generating a set of binary holograms to improve the quality of the reconstructed image. Here, we are concerned with the case for which the object plane is positioned at the Fourier domain of the plane of the SLM. In this case, any point in the Fourier plane is related to all points in the hologram. So there is a chance to generate a set of binary holograms illuminated by incident wave with constant optical power. Moreover, we find an interesting fact that the quality of reconstructed image is improved when the spatial frequency bandwidth of the binary hologram is limited. Therefore, we propose an iterative segmentation algorithm generating a set of binary holograms that are designed to be illuminated by the wave with constant optical power. The feasibility of our method is experimentally confirmed with a DMD.

Structural and Microwave Dielectric Properties of the $Sr_5Nb_4O_{15}$ Ceramics with Sintering Temperature (소결온도에 따른 $Sr_5Nb_4O_{15}$ 세라믹스의 구조 및 마이크로파 유전특성)

  • In this study, the structural and microwave dielectric properties of the $Sr_5Nb_4O_{15}$ cation-deficient perovskite ceramics with sintering temperature were investigated. All sample of the $Sr_5Nb_4O_{15}$ ceramics were prepared by the conventional mixed oxide method and sintered at $1350^{\circ}C{\sim}1500^{\circ}C$. The bulk density, dielectric constant and quality factor of the $Sr_5Nb_4O_{15}$ ceramics were increased with increasing sintering temperature. In the case of the $Sr_5Nb_4O_{15}$ ceramics sintered at $1500^{\circ}C$ for 5h, the dielectric constant, quality factor and temperature coefficient of the resonant frequency (TCRF) were 22.35, 16,577GHz, +13.40ppm/$^{\circ}C$, respectively.

Effects of Chilled Drinking Water on Performance of Laying Hens during Constant High Ambient Temperature

  • The present study was conducted to evaluate the effect of chilled drinking water on the productivity of laying hens under constant high ambient temperature. A total of seventy-two, 123-day-old Hy-line brown layers was divided into two equal groups. The first group (UDWG) was given unchilled water ($23.0{\pm}2.5^{\circ}C$) as a control, and the second group (CDWG) was given chilled water ($16.0{\pm}0.5^{\circ}C$). The laying hens were kept at $30^{\circ}C$ constant temperature with 50% relative humidity and were exposed to 17 h of light per day. Feed intake, egg production, egg quality (egg weight, shell weight, shell thickness, egg color, yolk color, and Haugh unit), and blood samples were collected and analyzed. The results showed that the feed intake of CDWG laying hens was significantly higher (11.64%) than the UDWG counterparts (p<0.01). Egg production of CDWG was also significantly higher (11.27%) than the UDWG counterparts (p<0.001). Furthermore, we observed that the CDWG laying hens had significantly higher (11.72%) levels (p<0.10) of blood calcium, with a corresponding value of 21.92 mg/dl compared to the UDWG hens (19.62 mg/dl). The higher calcium concentration in the CDWG animals may contribute to increased egg production. The CDWG laying hens also contained higher (12.53%) phosphorus concentrations in blood compared to the UDWG (4.22 mg/dl vs. 3.75 mg/dl), although not statistically different (p>0.10). Egg weight and egg quality were not affected by chilled drinking water. In conclusion, providing chilled drinking for laying hens under high ambient temperature improved feed intake and egg production.

Sintering and Microwave Dielectric Properties of Zn2-2xSi1+xO4 Ceramics (Zn2-2xSi1+xO4 세라믹스의 소결 및 마이크로파 유전 특성)

  • Sintering and microwave dielectric properties of $Zn_{2-2x}Si_{1+x}O_4$ (x=0~0.10) ceramics were investigated. The secondary phase of ZnO was observed in the specimen for x=0 whereas $SiO_2$ was detected in that for x=0.05. The composition of $Zn_2SiO_4$ might be close to x=0.02, i.e., $Zn_{1.96}Si_{1.02}O_4$; the ratio of Zn/Si is 1.922. The insufficient grain growth was observed in the specimen of x=0. For the specimens of $x{\geq}0.05$, the grain growth sufficiently occurred through the liquid phase sintering. The value of quality factor of all specimens was dependent on the x value, i.e., the ratio of Zn/Si, whereas that of dielectric constant was independent. Relative density, dielectric constant, and quality factor ($Q{\times}f$) of the specimen for x=0.05, i.e., $Zn_{1.9}Si_{1.05}O_4$, sintered at $1,400^{\circ}C$ were 96.5%, 6.43, and 115,166 GHz, respectively.

Microwave Dielectric Properties of the $BaO-(Nd,Bi)_2 O_3-TiO_2$$_2$ Ceramic for Mobile Communication Component (이동 통신 부품에 이용되는 $BaO-(Nd,Bi)_2 O_3-TiO_2$계 마이크로파 유전체의 유전 특성)

  • The microwave dielectric properties of X BaO-0.15($Nd_{0.87}Bi_{0.13})_2O_3-(0.85-X)TiO_2 (X=0.14~0.17) and 0.16BaO-0.15(Bi_xNd_{1-x})_2O_3-0.69TiO_2$ (X=0.12~0.15) ceramics sintered at 1320~$1380^{\circ}C$ were investigated. The microwave dielectric properties of X BaO-0.15(Nd_{0.87}Bi_{0.13})_2O_3-(0.85-X)TiO_2$ (X=0.14~0.17) can be controlled effectively by adjusting X content : with increasing X from 0.14 to 0.17 both dielectric constant and temperature coefficient of resonant frequency decreased from 94.6 to 86 and from 22 ppm/^${\circ}C to -7 ppm/^{\circ}C$, respectively, while quality factor increased from 1300 to 1920 (at 4GHz). The microwave dielectric properties of 0.16BaO-0.15(Bi_x/Nd_{1-x2}O_3 -0.69TiO_2$ (X=0.12~0.15) can be controlled effectively by adjusting X content : with increasing X from 0.12 to 0.15 both quality factor and temperature coefficient of resonant frequency decreased from 1920 to 1430 and from 9 ppm/^${\circ}C to -10 ppm/^{\circ}C$, respectively, while dielectric constant increased from 87.5 to 92.6.
