Comparison of Nutritional Composition and Antioxidative Activity for Kabocha Squash and Pumpkin (단호박과 늙은 호박의 영양성분 및 항산화활성 비교)

  • Nutritional compositions and antioxidative activity of Kabocha squash (Cucurvita maxima Duch) as health food were compared with those of pumpkin (Cucurvita moschata Duch). Kabocha squash had higher soluble solids and twofold harder flesh than pumpkin. Crude protein, crude lipid and total amino acid contents of Kabocha squash were higher than those of pumpkin. Major free sugar in Kabocha squash was sucrose, and its content were 2.1 times higher than that of pumpkin. Major organic acids of Kabocha squash and pumpkin were succinic and malic acid, respectively. Kabocha squash had higher amounts of vitamins $A,\;B_1,\;B_2,\;C$ and C than pumpkin, while both showed similar mineral contents except for iron. Contents of Total pectin and hydrochloric acid soluble pectin of Kabocha squash were 17.00 and 7.37 g/100 g AIS, respectively. In pumpkin, total pectin content was 25.14 g/100 g AIS, and water soluble pectin content was higher than those of other pectin fractions. Contents of carotenoid in Kabocha squash and pumpkin were 285.91 and 24,62 mg% d.b., respectively. Kabocha squash had higher electron-donating radical-scavenging activity, SOD-like activity and nitrite-scavenging effect than pumpkin.

Change of Physicochemical Characteristics and Functional Components in the Raw Materials of Saengsik, Uncooked Food by Drying Methods (건조방법에 따른 생식 원료의 이화학적 특성 및 기능성 성분의 변화)

  • Changes in physicochemical characteristics and functional components content of saengsik, uncooked food, were investigated to find efficient drying methods, one of important manufacturing process of saengsik. No changes in proximate compositions of all samples were observed during hot-air drying at 50, 55, and $60^{\circ}C$ and freeze-drying. Colors of carrot, Lentinus edodes, and sea mustard did not change, while a value of cabbage, L, a, and b values of Agaricus bisporos, and a value of laver changed slightly by hot-air drying at all temperatures and freeze-drying. Dietary fiber content increased by hot-air drying but not by freeze-drying. Reductions in vitamin C and ${\beta}-carotene$ contents of carrot, cabbage, sea mustard, and laver were higher by hot-air drying than by freeze-drying. Contents of total phenolics and lectin of L. edodes and A. bisporos were not affected by hot-air drying and freeze-drying. Contents of pectin, alginic acid, and porphyran in sea mustard and laver increased by hot-air drying.

Antioxidative Activity and Chemical Characteristics from Different Organs of Small Black Soybean (Yak-Kong) Grown in the Area of Jungsun (정선산 쥐눈이콩의 부위별 이화학적 특성 및 항산화 효과)

  • Nutritional composition, contents of phenolic compounds, and antioxidative activities of small black soybean were investigated. Proximate composition of the soybean was crude fat, crude protein, carbohydrate, and crude ash at 15.9, 34.7, 38.5, and 3.7%, respectively. Potassium was the predominant mineral, followed by phosphorus, calcium, and magnesium. Glucose and galactose were the major sugars. Twelve different kinds of fatty acids were identified in whole soybean, dehulled soybean, and soybean hull. The 75% methanol and ethyl acetate extract fractions from the soybean hull contained total phenolic compounds at 4.64 and 13.53 g/100 g, respectively. The methanol extract of soybean hull showed strongest antioxidative activity among samples tested. Ethyl acetate fraction of the soybean hull exhibited DPPH radical scavenging activity at level similar to those of ${\alpha}-tocopherol$ and BHT. Phenolic compounds were the major biological components in the soybean hull. These results suggest that small black soybean can be used as a new material for functional food.

Physicochemical Studies on the Hard and Soft Wheats Flours (경질(硬質) 및 연질(軟質) 밀가루의 이화학적(理化學的) 성질(性質) 연구(硏究))

  • The physicochemical properties of wheat flours were investigated for hard wheat (Bara and Kameriya varieties), semi-hard wheat (Snisen variety) and soft wheat (Ume variety). There were no sigificant differences in the proximate chemical compositions of the tested wheat fluors; however, the protein contents of them were 12.18 to 8.40 % for the hard wheat flours and 6.81 % for soft wheat flour, and gluten contents were 11.77 to 8.38 % for the hard type flours and 5.53 % for soft flour. The soft wheat flour had higher whiteness, whereas the hard wheat flours showed higher starch damage values and higher flour-water absorption than the soft wheat flour. In farinograph data, the hard wheat flours had better development time, stability and valorimeter value of doughs. There were significant differences in the extensigraph data among the tested flours, i,e, resistance to extention and the area with planimeter of doughs increased with the time and their extensibility decreased. The Bara and Kameriya wheat flours had lower maximum visicosity of amylograph than Suisen and Ume wheat flours.

Decontamination of Poultry Feeds by Gamma Irradiation (감마선 조사에 의한 가금용 사료의 살균)

  • The effects of gamma irradiation on microbiological and chemical qualities of four kinds of poultry feeds were investigated. The viable counts of total bacteria in the samples were $10^5\;to\;10^6/g$. They were reduced by 2 to 3 log cycles after 3 to 5 kGy irradiation, and were completely eliminated with irradiation of 7 kGy. Coliforms and enteric pathogens were contaminated in high levels in all samples, ranging from $1.2{\times}10^4\;to\;1.7{\times}10^5/g\;and\;4.0{\times}10\;to\;2.6{\times}10^3/g$, respectively, They were sterilized by 3 to 5 kGy irradiation. Fungi, ranging from $10^{2}\;to\;10^4/g$, mainly osmophiles were identified as Aspergillus and Penicillium. They were eliminated to a undetectable level by 5 to 10 kGy irradiation. Six kinds of species, including Aspergillus flavus, were potential mycotoxin producers. Chemical components, such as proximate compositions, and mineral contents were not affected by the gamma irradiation. However, TBA values and amino acid content seemed to be affected by gamma irradiation.

Separation of EPA and DHA from Fish Oil by Solubility Differences of Fatty Acid Salts in Ethanol (에탄올에 대한 지방산염의 용해도 차를 이용한 EPA와 DHA의 농축방법)

  • Fatty acid fraction rich in ${\omega}-3$ polyunsaturated fatty acids (${\omega}-3$, PUFA), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) could be obtained by saponification of fish oil in ethanol containing alkali hydroxide followed by cooling and filtration of the resultant solution. Fatty acid compositions of fish oil and the concentrates suggest that the ratio of number of double bonds to carbon number in a fatty acid molecule is a more important factor than the degree of unsaturation or the chain length in determining the solubility of fatty acid salts in ethanol. Water content in ethano1 affected significantly the efficiency of the separation with respect to yield and content of EPA and DHA in the concentrates; the lower the water content, the higher the efficiency. It was, however, influenced little by cooling procedure and temperature which the saponified solution experienced during the crystallization. Under an optimal condition, the contents of EPA and DHA in the concentrate increased by 2.4 and 2.5 times, respectively, as compared with those in sardine oil.

  • The amino acid compositions of polished barley grain were investigated for 16 varieties by using amino acid autoanalyzer and simple correlation analysis between them and between protein and amino acid per protein was done. 1) Limiting amino acid is lysine, leucine and phenylalanine are high but threonine and tyrosine are low. Total essential amino acids is high. 2) Protein is significantly correlated negatively with lysine arginine, total basic amino acids (at p=0.01) and threonine, alanine, aspartic acid (at p=0.05) and positively with phenylalanine (at p=0.01) proline and cystine (at p=0.05). 3) Lysine is positively and significantly correlated with arginine and aspartic acid indicating that aspartic acid is probable precursor of lysine and that high yielding varieties or fertilization for high yielding decrease aspartic acid pool resulting low lysine. 4) Lysine content is positively correlated with dye binding capacity (at p=0.01). 5) Tryptophan is positively (at p=0.01) and significantly correlated with histidine, total basic amino acids and arginine. 6) In essential amino acids lysine, tryptophan, threonine and valine simultaneously increase or decrease while aromatic amino acids, sulfur contained amino acids, isoleucine and leucine do so together.

Effects of Ridging Times on Agronomic Characteristics, Yield and Feed Value of Corn Hybrid for Silage in Paddy Field Cultivation (논 토양에서 사일리지용 옥수수 재배시 배토시기가 생육특성 및 영양성분에 미치는 영향)

  • This study was carried out to investigate the growth characteristics, yield and chemical compositions of corn hybrids for silage according to ridging times in the paddy field cultivation. The experimental design was arranged in a randomized block design with five treatments and three replication. The ridging times of five treatments were untreated (C), 7 leaves (T1: 31 days), 8 leaves (T2: 37 days), 9 leaves (T3: 42 days) and 10 leaves stage (T4: 48 days after sowing) of silage corn. The ridging treatments (T1, T2, T3, T4) were higher (p<0.01) dry matter yield and TDN yield than the unridging treatment (C). However, there were no significant differences among T1, T2, T3 and T4 treatments. The Crude protein content of unridging treatment was decreased (p<0.01), while NDF content was increased (p<0.01) compared to ridging treatments. The contents of mineral and amino acid in ridging treatments were higher than unridging treatment (p<0.05, p<0.01). In particular, mineral and amino acid contents were the highest in T4 and T1, respectively (p<0.01). Based on the above results, ridging work is to be increased the yield quantity and nutritional value of silage corn. And the best result was obtained in T4 treatment of ridging treatments.

Analysis of Free Amino Acids and Flavors in Fermented Jujube Wine by HPLC and GC/MS (GC-MS 및 HPLC를 이용한 대추발효주의 유리 아미노산 및 향기성분 분석)

  • Characteristic chemical compositions of jujube wine using different preparation methods including fermentation were investigated. Fermentation for jujube wine started using whole fruit (JW1), seed-removed fruit (JW2) and whole fruit heated at $100^{\circ}C$ for 2 h and then extracted (JW3). The free amino acids and flavors were analyzed quantitatively by HPLC and GC-MS. A total of 18 amino acids were identified in all samples. The amount of total free amino acids was detected from 141-210 ppm (JW1), 147-342 ppm (JW2), and 336-362 ppm (JW3). Large amounts of proline, aspartate, glutamate, arginine and alanine were detected in jujube wine. Thirteen kinds of volatile compounds including six alcoholic compounds (ethyl alcohol, iso-butyl alcohol, n-butyl alcohol, iso-amyl alcohol, n-amyl alcohol, and phenethyl alcohol), four ester (ethyl acetate, hexyl acetate, ethyl caprylate, and phenethyl acetate) and three aldehydes (diethylacetal, furfural, and benzaldehyde) were detected. Ethyl alcohol (30.50-33.95% peak area), benzaldehyde (2.55-15.97% ratio), furfural (0.07-15.28% ratio), iso-amyl alcohol (1.04-14.73% ratio), and phenethyl acetal (0.78-9.28% ratio) were abundant in jujube wine.

Studies on Antioxidative Activity of Green Tea Extracts in Medilite-Extraction Water (Medilite 침출수에 의한 녹차 추출물의 항산화 활성연구)

  • The chemical compositions and antioxidant activity of green tea extracts in medilite-extraction water were compared to that of distilled water(DW). Antioxidant activity was fetermined by the formation of thiobarbituric acid reactive substances (TBARS) in rat liver homogenates and microsomes and the scavenging activity of free radicals by DPPH ($\alpha$, $\alpha$'-diphenyl-$\beta$-picrylhydrazyl). The order of total polyphenolic compounds and extracted yield by extracts was medilite 325 mesh-extraction water, medilite 600 mesh-extraction water and distilled water(DW). The ranges of scavenging activity of green tea extracts in DPPH method were 60.95% - 64.51%. The inhibition ratios of TBARS formation in the rat liver homogenates and microsomal fractions were significantly lower with green tea extracts by DW-extraction than with both medilite 325 mesh and 600 mesh-extraction water. The concentration of iron ion of water containing medilite 325 mesh and green tea extracts and of water containing medilite 600 mesh and green tea extracts were significantly higher compared to DW. Therefore, this result suggested that enhanced concentration of iron ion in green tea extracts by medilite-extraction water containing high iron ion content was associated with enhanced peroxidation of the rat liver microsomal fractions. These results showed that total polyphenolic compounds, the % of yield and mineral compounds of green tea extracts were increased using medilite 325 mesh and 600 mesh-extraction water.
