Effects of Cordyceps militaris supplementation on the immune response and upper respiratory infection in healthy adults: a randomized, double-blind, placebo-controlled study (건강한 성인을 대상으로 면역증강 및 상기도 감염 예방에 대한 동충하초주정추출물의 유효성 평가 : 이중맹검 플라세보 대조 연구)

  • Purpose: Upper respiratory tract infections are major causes of the common cold throughout the world. Cordyceps militaris (C. militaris) is a well-known functional food for its anti-fatigue and immunomodulating activities. On the other hand, there are no reports on the protective effect against upper respiratory tract infections (URI). This study was a 12 week randomized, double-blind, and placebo-controlled trial in healthy volunteers. Methods: A total of 100 subjects 20 ~ 70 years of age with a history of at least two colds in the year were enrolled in the study. The participants were required to record any adverse events and rate any cold-related incidents in a diary during the investigation period. The efficacy end point was the symptoms and incidence of URI, and changes in cytokines, IgA and natural killer (NK) cell activity. Results: The Cordyceps militaris group over 12 weeks showed no significant impact on the incidence and symptomatology of URI compared to the placebo group. On the other hand, the experimental group showed significantly higher NK cell activity (p = 0.047) and IgA level (p = 0.035) compared to the placebo group. The NK-cell activity and IgA level were increased significantly by Cordyceps militaris over 12 weeks. Conclusion: The results suggest the possible beneficial immunomodulating effects, but the protective effects on URI could not be demonstrated under these conditions. Additional research will be needed to determine the efficacy and mechanisms of Cordyceps militaris function.

Status of Packaging Materials for Frozen Foods and Analysis of Temperature Changes inside Packaging Materials during Frozen Process (냉동식품용 포장재 현황 및 냉동 과정 중 포장재 내부 온도 변화에 관한 연구)

  • This study analyzed various packaging materials and types for frozen foods and the effects of packaging materials on temperature changes during frozen process. Pouches with different film thickness were prepared and placed in an IQF freezer, then the temperature inside pouches measured using a deep thermometer. The most common types of primary packaging for frozen foods in the market was plastic pouches with polyethylene or polyamide/polyethylene multilayer materials. The temperature change inside of packaging was delayed with film thickness increased. As the size of packaged food increased, the temperature change inside the food was slowed down. In addition, the pouches with air inside took more time to reach $-30^{\circ}C$ compared to pouches with less air during frozen process. This study provides information on packaging materials and types for frozen foods and preliminary data of temperature change by different types of packaging.

A Study on the Calcium and Sodium Intakes and Urinary Calcium Excretion of Preschool Children in Busan (부산지역 학령전 아동의 칼슘 및 나트륨의 섭취와 소변중 칼슘배설상태에 관한 연구)

  • To assess calcium and sodium and urinary excretion of preschool children in Busan and to evaluate the relationship of intakes of food and nutrient with urinary calcium excretion, calcium and sodium food frequencies of 25 common foods affecting intakes of calcium and sodium per week, nutrient intake by 24hr recall and 24hr urinary calcium and sodium excretion were measured with 97 preschool children. The mean calcium intake was 436.11mg and below RDA. The mean sodium intake was 1890.11mg. The mean urinary calcium and sodium excretion were 42.88mg and 735.25mg respectivery. The mean urinary calcium/creatinine ratio was 0.20. The urinary calcium excretion showed positive significant correlations with weight, intake frequency of pizza consumed per week and urinary sodium excretion (p<0.05, p<0.05, p<0.001). The urinary calcium excretion per milligram of creatinine showed positive significant correlations with intake frequencies of pizza and common squid consumed per week(p<0.01, p<0.05) and negative correlation with intake frequencies of pizza and common squid consumed per week(p<0.01, p<0.05) and negative correlation with age(p<0.05). No significant relations were found between urinary calcium and intakes of calcium, protein and phosphorus. Urinary sodium was found to be the most important determinant of urinary calcium excretion. Intake frequency of pizza consumed per week was found to be the most important determinant of urinary calcium excretion per milligram of creatinine. Based on the results, urinary calcium excretion was related to intake frequency of pizza consumed per week and urinary sodium excretion. Low calcium intake and increase of calcium loss in the urine potentiated by sodium intake during growth may reduce peak bone mass. So nutritional education is needed in order to increase calcium intake and decrease sodium intake, especially from food like pizza.

A research on elementary school students with atopic dermatitis in Je-Cheon (제천 지역 소재 초등학교 학생들의 아토피 피부염에 대한 설문조사 연구)

  • Objective : The aim of this study was to take a census of elementary school children who have atopic dermatitis(AD) especially the residents of Je-Cheon. Method : We conducted a questionnaire survey of the elementary school children in Je-Cheon who have atopic dermatitis. 96 patients with AD were involved in the survey. The questionnaire was made up of their family history, past history, weaning food, breast-fed or not, dietary treatment and Children's Dermatology Life Quality Index(CDLQI), etc. The student's T-test was used for statistical analysis. Results : Parents and siblings brothers and sisters past history has an effect on patients with AD. With regard to past history of patients, allergic rhinitis was the most common ailment. Formula feeding was common in the group under 6 months of age and the mean age of the start of weaning was 7.25 months. Fruit juice and weaning food of powder type were the first weaning foods in this study. Many parents introduced a grain diet, live diet, bone - soup, egg, milk, cheese and bean curd to their children under 12 months of age. A restricted diet was the most common dietary treatment method in this study. The highest scoring question for CDLQI was itching; the lowest one was related to bullying. Conclusion : We analyzed the patients' family history, past history, weaning food, dietary treatment and Children's Dermatology Life Quality Index(CDLQI), etc. Through this survey, we better understand the actual conditions of elementary school children who had AD in Je-Cheon.

  • The biggest factor in the success of breeding animals is selection of foods, which is determined by quality and quantity of habitats(Newton, 2003), in the case of This high biomass wetlands as an indicator of ecosystem function about Common Kestrel's choice of hunting area is expected to be an important clue of quality and quantity of habitats. For this study, it is divided into four types(Glasslands, Paddy fields, Dry fields, Rparian land) about Common Kestrel's hunting area in Yugu-eup, Gongju-si, Chungcheongnam-do, Recorded the behavior of Common Kestrel for three years during the breeding season from March to June(2014~2016). Result of investigation, hunting area showed a high hunting behavior in riversides and flight-hunting was frequently investigated from may to June. In addition flight-hunting's main food acquisition is mammal(the vole), while perching behavior's main food acquisition is insect according to the fact flight-hunting were mainly done in riversides, perching behavior were highly investigated than flight-hunting at glasslands and paddy fields and dry field. Hunting spot's coverage rate of plants covering the ground showed differences depending on hunting areas, but height of plants were not significant. Height of the plant according to hunting methods of flight-hunting to catch mammal(vole) was analyzed to prefer lower height than perching behavior Based on these results riversides are considered as a very important environmental factors for Common Kestrel's prey selection in breeding session.

Assessment of Radical Scavenging Activity and Phenolic Compounds of Xanthium occidentale

  • Common thistle contains water-soluble substances that are antioxidative to foods. Antioxidant activities measured by DPPH method for the ground samples were the greatest in leaves, although was less than that of commonly used antioxidants, BHT and ascorbic acid. Methanol extracts and fractions from Xanthium occidentale plants dose-dependently increased DPPH free radical scavenging activity, in vitro test. The extracts from leaves showed the strongest antioxidant activity. DPPH scavenging activity of the individual fraction was in order of n-butanol>water>ethyl acetate>n-hexane fraction. By means of HPLC analysis, leaf samples of Xanthium occidentale had the highest amount of phenolic compounds, related with antioxidant activity, and followed by stems and roots. Total content of these antioxidant phenolic com­pounds for leaves extracts were detected in water fraction (36.7 mg 100 $g^{-1}$) as the greatest amount, especially chlorogenic acid (39.4 mg 100 $g^{-1}$) was the greatest component. These results suggest that Xanthium occidentale plants had potent antioxidant activity, and their activities were differently exhibited depending on plant part and fraction.

  • Korea dairy market has greatly expanded recently by growing up the consumer's demands of high quality of milk products and their functionality due to expanding of well being lift trends. However, life cycle of dairy products is shorter than ever before and low birth rate is a common trend of Korean people. Moreover due to the national economy crisis, most of dairy companies are faced with the pressure of new milk products development and their sales. This paper deals with the development of Korea dairy industry by chronological order and deals with the future applicable new dairy foods and advanced dairy technology.

  • Minerals are individual of the components of foods and are not produced in the body but essential for best possible health. Several essential metals are vital for the appropriate performance of various enzymes, transcriptional factors and proteins that are essential in various biochemical paths. Metals like zinc (Zn), magnesium (Mg), and manganese (Mn) are cofactors of hundreds of enzymes. Zn is involved in the synthesis and secretion of insulin from the pancreatic ${\beta}-cells$. Chromium (Cr) increases the insulin receptors activity on target tissues, mainly in muscle cells. Insulin hormone is required to maintain the blood glucose amount in normal range. Continual increase of blood serum glucose level leads to marked chronic hyperglycemia or diabetes mellitus. Deficiency of insulin or its resistance, blood glucose level exceeds the upper limit of the common range of 126 mg/dl. Poor glucose control and diabetes changes the levels of essential trace elements such as Zn, Mg, Mn, Cr, iron etc. by rising urinary excretion and their related decrease in the blood. The aim of this article to discusses the important roles of essential trace elements in particular perspective of type 2 diabetes.

  • As the well-being or quality of life of a population is the common interests, a lot of people are interested in wines. They are willingness to share wine knowledges with other wine experts on the web. Therefore the study for information retrieval system and inference engines are needed to get relevant search results about wine types and suitable wines for given foods. This paper discusses an approach to the architecture of agent-based semantic web services in wine ontology.

  • Soybean and mungbean sprouts are vegetables indigenous to Korea which have been grown throughout the year from the most remote age. They had been called interchangeably as duchaeah or duah. Control method of environmental conditions for soybean or mungbean sprouts growing had been already appreciated from long time ago. A growing method once developed might have been handed over considerable period. Siroo (시루) and yongsoo (용수) had been the most common containers and the watering skill is of the utmost importance for soybean sprouts growing. As the demand of soybean sprouts in the market increased, a pit has been used for bean sprouts growing, and transformed into regular soybean sprouts factory. Now bean sprouts are international food and the demand of bean sprouts seems permanent in Korea. Accordingly the long-term policy concerned with the production of soybean sprouts should be prepared, placing emphasis on improved quality and safety.
