Basil의 첨가량을 달리한 Tomato Sauce의 품질 특성 (Quality Characteristics of Tomato Sauce Prepared by Addition of Fresh Basil)

  • The purpose of this study was to investigate the effects of basil on the quality characteristics of tomato sauce, which is used widely in Western cuisine. The highest pH of 4.29 was observed in the tomato sauce with 4% fresh basil added, while the tomato sauce with 0% fresh basil exhibited the lowest pH of 4.20. The pH of the tomato sauce gradually increased with the addition of fresh basil. The analysis of color differences in the tomato sauce indicated that redness(avalue) decreased with the addition of basil;, whereas consistency and spreadability increased with the increasing amounts of the fresh basil. The sensory evaluation was performed with scoring tests for color, flavor, taste, after taste, viscosity, and overall acceptability by 15 professional panelsists. The tomato sauce with 2% basil showed the best score in the sensory evaluation, except for vicosity. From the above results, the data suggest that an addition of 2% fresh basil to tomato sauce is recommended for commercial use.

주정을 이용한 멸치액젓의 탈염공정 및 품질특성 (Desalting Processing and Quality Characteristics of Salt-Fermented Anchovy Sauce Using a Spirit)

  • 본 연구에서는 시판 멸치액젓에 주정을 일정한 비율로 첨가하여 소금의 용해도를 낮춤으로서 소금을 석출시키는 탈염방법을 활용하여 저염 멸치액젓의 제조공정을 확립하고자 하였다. 또한 시판 멸치액젓과 주정을 활용하여 탈염처리 한 저염 멸치액젓의 품질 특성을 비교하기 위해 일반성분, 총질소, 아미노태 질소, 대장균 및 아미노산 함량을 비교분석 하였다. 시판 멸치액젓에 대해 주정의 첨가량이 증가할수록 멸치액젓의 염도는 낮아지는 경향을 보였다. 즉, 멸치액젓 100 mL에 대해 주정을 각각 100% 및 300%(v/v)를 첨가한 경우에 멸치액젓의 염도는 14.3% 및 10.3%를 나타내었다. 이와 같은 현상은 염도 23%인 식염수 용액의 실험에서도 같은 경향을 보였다. 탈염처리 한 멸치 액젓의 총질소 함량은 1.20%이었고, 아미노태 질소 함량은 784.03 mg/100 g으로, 시판 멸치액젓보다 높은 함량을 나타내었다. 시판 멸치액젓과 탈염처리 한 저염 멸치액젓의 주요 총아미노산은 glutamic acid, alanine, lysine 및 leucine이었고, 필수아미노산의 함량은 탈염처리 한 멸치액젓에서 높게 나타났다. 또한, 시판 멸치액젓과 탈염처리 한 저염 멸치액젓의 주요 유리아미노산은 공통적으로 glutamic acid, leucine, alanine, valine, lysine 및 isoleucine 이었다. 이상의 결과에서 주정을 이용하여 소금을 원하는 농도만큼 특별한 장비없이 효과적으로 제거할 수 있는 멸치액젓의 탈염공정을 확립할 수 있었다. 또한 주정을 사용하여 멸치액젓을 탈염하는 방법은 총질소, 아미노태 질소 함량 및 아미노산 함량에 긍정적인 영향을 주어 맛을 향상시켜 줄 수 있을 것으로 기대되며, 본 연구의 결과로 저염 멸치액젓 상품화 연구의 기초자료로 활용 및 인류 보건향상에 크게 기여할 것으로 전망된다.

소금 첨가량에 따른 바질 데미글라스 소스의 관능평가 분석 (Sensory Characteristics of Demi-glace Sauce Prepared by Fresh Basil with Various Levels of Salt Compositions)

  • This study was carried out to examine the sensory characteristics of Demi-glace sauce prepared by fresh basil with different amount of salt added. The evaluation of the sensory quality of Demi-glace sauce prepared by fresh basil was conducted by unexperienced and trained panel with regard to color, odor, taste, appearance, texture, viscosity, and overall acceptability while varying the quantity of salt added, the time of preparation, and the conditions of sauce offered in which each panel was supposed to evaluate both sauce itself and sauce with meat. It was found that Demi-glace sauce prepared by fresh basil with 0.3% salt added was gained the highest score from both panels in most properties and the second was the one with 0.1% salt added. In the sensory properties correlation analysis according to the time of preparation and the conditions of sauce offered, there was no significant correlation in most sensory properties for the unexperienced panel, except some significantly positive correlation between taste and overall acceptability of the sauce. Whereas there was a positive correlation in the majority of sensory properties for the trained panel regardless of the time of preparation and the conditions of sauce offered. The sauce with 0.3% salt added ranked as the best recipe by both panels among four different ratios of salt adding regardless of the time of preparation and the conditions of sauce offered. Triangle test showed that the sauce B with 0.1% salt added before the preparation was more highly appreciated in terms of taste than the sauce A with 0.1% salt added in the final step of preparation. In conclusion, it could be suggested that Demi-glace sauce prepared by fresh basil with 0.3% salt added is the best recipe for commercial products. Also, there seems to be the need of further sensory evaluation studies on the Demi-glace sauce according to the time of addition during the process of preparation.

참치 자숙액 가수분해물을 이용한 건강 기능성 조미 소스의 제조 (Preparation of Functional Seasoning Sauce Using Enzymatic Hydrolysates from Skipjack Tuna Cooking Drip)

  • 참치가공 부산물의 효율적 이용을 위하여 건강 기능성이 고려된 참치 자숙액 조미 소스의 제조를 시도하였고, 그 특성에 대하여도 살펴보았다. 참치 조미 소스는 단백질이 11.8%로 시판 조미 소스의 약 2배에 해당하였고, pH, brix 및 염도는 각각 $577,348^{\circ}$ 및 11.9%이었다. 관능검사 결과, 참치 조미 소스는 시판 조미 소스에 비하여 맛, 냄새 및 색조에 있어 차이가 없었다. ACE 저해능은 참치 조미 소스가 시판 조미 소스(9.9 mg/mL)에 비하여 37% 정도 높았고, 항산화능은 20 mM ascorbic acid에 비하여는 약하였으나 인지는 되었다. 참치 조미 소스는 총 유리아미노산 함량이 1,905.2 mg/100 mL로 시판 조미 소스(712.7 mg/100 mL)에 비하여 약 2.7배 높았으며, 주요 유리아미노산은 taurine, glutamic acid, histidine 및 anserine이었다. 참치 조미 소스는 total taste value가 58.65로 시판 조미 소스의 34.30에 비하여 맛의 강도가 훨씬 강하리라 추정되었고, 맛에 크게 기여하는 주요 아미노산으로는 glutamic acid 및 histidine 등이었다. 총 아미노산 함량은 참치 조미 소스가 10,965 mg/100 mL로 시판 조미 소스의 4,818 mg/100 mL에 비하여 높았고, 참치 조미 소스의 주요 구성 아미노산으로는 glutamic acid, proline, histidine 및 glycine 등이었다. 참치 조미 소스의 섭취에 의한 무기질 강화 효과는 기대하기 어려우리라 판단되었다.

한식 간장의 이화학 및 관능적 특성 - 대기업 시판 제품과 경기지역 소규모 농가 생산 제품의 비교 - (Physico-Chemical and Sensory Properties of Commercial Korean Traditional Soy Sauce of Mass-Produced vs. Small Scale Farm Produced in the Gyeonggi Area)

  • The core ingredient of traditional Korean style soy sauce is soy bean without any wheat or rice incorporated. National brands as well as regional micro-brewed companies constitute the soy sauce market in Korea. The present study investigated the physico-chemical and sensory properties of soy sauces produced by small-scale or mass-production. Additionally, the key physico-chemical parameters sufficiently representing the critical sensory characteristics have been identified. Ten types of soy sauce brewed by the Korean traditional method were selected for the study. Among these samples, seven types were brewed in small-scales in the Gyeonggi-do region whereas the other 3 types were mass-production products of major national brands. The total solid, reducing sugar, salinity, sugar content, amino nitrogen, CIELAB, acidity, and pH of soy sauce samples were measured for the physico-chemical analysis. A generic descriptive analysis was conducted to analyze the sensory characteristics of the samples using six trained panelists. The descriptive panel developed 21 sensory attributes. The data were statistically analyzed using ANOVA, PCA and PLSR. Overall, the micro-brewed products showed significantly higher value of salinity and acidity but lower content of reducing sugar than the mass-production products. The micro-brewed soy sauces elicited stronger fermented flavor, sourness, and bitterness whereas the national brand products elicited stronger alcoholic odor, sweetness and umami taste. Sugar content, acidity, and amino nitrogen showed strong relationships with fish sauce flavor, umami taste, and rich flavor. Salinity was closely related to the overall flavor intensity.

속양(速釀) 어장유(魚醬油) 제조(製造)에 있어서 장유(醬油)코오지와 시판(市販) 단백분해(蛋白分解) 효소(酵素)의 영향(影響) (Effects of Soy Sauce Koji and Commercial Proteolytic Enzyme on the Acceleration of Fish Sauce Production)

  • 최종 제품의 고유 풍미와 영양가에 영향을 미치지 않는 속양(速釀) 어장유(魚醬油) 제조를 위하여 Aspergillus oryzae 가 접종된 장유(醬油)코오지와 시판 단백분해 효소의 이용 가능성을 검토하였다. 전갱이(아지)를 원료로 하여 장유(醬油)코오지 또는 시판 단백분해 효소를 첨가하는 등의 조건을 달리한 16종류의 어장유(魚醬油)를 제조하였고 각각 그들의 화학성분을 조사하였다. 원료 전갱이에 장유(醬油)코오지를 첨가하고 초기에 10%식염을 가하여 48시간 유지한 후 다시 그 혼합물에 10% 식염을 더 가하여 제조한 어장유(魚醬油)가 아미노태 질소함량, 총질소에 대한 아미노태 질소 함량 비율 및 제품의 단백질 전환율 등에 있어서 기타 조건에서 제조된 모든 어장유(魚醬油)에 비하여 가장 우수하였다.

시판 및 재래식 간장의 일반성분 및 아미노산 성분 연구 (Studies on the chemical and amino acid components of commercial and homemade soy sauce)

  • This paper provides the analysis and the comparisons of three kinds of soy sauces based on the manufacturing sources. The main factors of this study are concentrated on general and amino acids components. Three samples represented as domestic market soy sauces, imported Japanese soy sauces and homemade soy sauce are analyzed and compared by Kjeldahl and AOAC method and amino acid autoanlyzer method which have the results as follows; 1. For total nitrogen and pure extract and sodium chloride known as general components, the domestic market soy sauces show the ranges of 0.85~1.51%, 11.37~17.4% and 16.03~17.43% and the imported soy sauce shows the ranges of 1.65~1.83%, 19.54~19.80%, 17.20~18.46% and the homemade soy sauce indicates 0.73%, 30.96% for each components. The results implicates that the homemade soy sauce contains less total nitrogen and pure extract while it contains more sodium chloride than the domestic market soy sauces. 2. The amount of total amino acids contained in each soy indicated the range of 3.864~6.883% for the domestic market soy sauce and the range of 7.705~7.839% for the imported soy sauce and 2.035% for the homemade soy sauce. Especially, 20~50% glutamic acids are contained in total amino acids of each soy sauces.

장어 시판제품에 대한 동북아시아의 가공현황 및 일본인 소비자의 구매실태 조사 (A Study on Utilization of Japanese Consumers and the Present Condition of Northeast Asia Processed Eels)

  • This study investigated the current processing degree and ingredients of sauce on the packaging of the commercial eel products made in Northeast Asia (Korea, Japan, China and Taiwan) and surveyedthe perception of nutritional functionality and purchasing pattern of Japanese consumers for the processed eels. The results are considered as a useful aid for preparation of processed eel products. The commercial eel products, purchased at a department store, supermarket and discount market, were divided by processing method, package quantity, storage method and sauce ingredients. The processing method was indicated in many different ways in each country, such as sauce ingredients and intake method. A questionnaire survey was conducted on 105 Japanese consumers (male 43, female 62) visiting Korea. Of the respondents, 44% answered and the major reasons for purchasing processed eel products were as a side dish for meals. The results for this factor were significantly different in relation to age (p <0.05). The degree of perceptions of functional excellence about processed eel products was well known (37%), some (49%), and seldom (14%). The results for this factor were significantly different in relation to age (p <0.001). Seventy-five percent of the respondents had experienced processed eel products. The type of purchase of the respondents was highest for vinegared rice and fish (47%), followed by freezing (33%), canning (5%), and dried food (4%), in that order.

간장의 제조방법에 따른 품질 특성 비교 연구 (Quality Characteristics of Soy Sauces by Various Manufacturing Methods)

  • 본 연구는 재래간장, 양조간장 및 산분해간장 등 제조방법에 따른 색도, 유리당 및 유리아마노산 함량 등의 품질특성을 비교하였다. 실험결과, 명도를 나타내는 L값의 경우, 산분해 간장 및 양조 간장이 재래 간장보다 낮은 값을 나타내었고, 재래 간장의 경우 제조 후 시간이 지날수록 L 값이 높아졌다. 또한, 재래 간장의 단맛 함량이 개량식 간장보다 비교적 높은 경향을 보였으며, 재래 간장의 경우 제조 후 시간이 지날수록 함량이 증가하는 것을 알 수 있었다. 쓴맛의 지표가 되는 아미노산 총 함량의 경우, 제조 후 시간과는 큰 차이가 없었으며 산분해 간장이 다른 간장보다 높은 함량을 나타내었다. 감칠맛과 가호성에 중요한 역할을 한다고 알려져 있는 glutamic acid의 함량은 양조 간장이 가장 높은 함량을 나타내었고, 산분해간장, 제조 2년 후 재래 간장, 제조 당해 재래 간장의 순으로 나타났다. 개량식 간장이 재래 간장보다 glutamic acid 함량이 높았으며, 재래 간장에서는 제조 후 시간이 지날수록 glutamic acid 함량이 증가하는 경향을 보였다. GABA는 재래 간장보다 개량식 간장에 더 많이 함유되어 있었고, 재래 간장의 경우 숙성기간이 길어질수록 그 함량이 증가하였다.

대전지역 대학생들의 시판김치 소비형태 조사 (College Students' Consumption Behavior on Commercial Kimchi in Taejon)

  • The survey was conducted to investigate the consumption aspects of commercial kimchi and the future pattern of kimchi consumption. The college students(473) were randomly selected from six universities in Taejon. Ninety seven percent of students had taken the commercial kimchi. They chose kimchi manufactured by the famous company(62.4%), merchant in market(16.9%), and agricultural corporation(14.4%). In purchasing the commercial kimchi, qualty(76.0%) was considered as the most important factor and then price(13.1%), brand name(5.1%). The main reason for disliking commercial kimchi was indicated as 'different taste from home-made' by the male and 'additives added in kimchi' by the female(p<0.01). The maintenance of aging condition was believed the most essential factor to increase the consumption of commercial kimchi. Two thirds of the subjects anticipated to take home-made kimchi after marriage. Half of them replied to want to take kimchi made by traditional method, even though to buy the sauce for kimchi-making sold in market. More female students were willing to purcase the sauce for kimchi-making than the male(p<0.01).
