학교급식소와 외식업소 관리자의 위생교육 실태 및 위생지식 차이 분석 (A Study on Differences of Sanitation Education and Sanitation Knowledge Between Dietitians in School Foodservice And Managers in Commercial Foodservice)

  • The purpose of this study was to compare the status of sanitation education and sanitation knowledge in school foodservice with commercial foodservice. The survey sample was institutional foodservice directors (n = 88) in A office of education and commercial foodservice directors (n = 81) in B foodservice industry. The questionnaire requested information about demographic information, situation of sanitation education, contents of sanitation education practice, importance of sanitation education, and sanitation knowledge. Data were analyzed using frequencies, means, chi-square test, and t-test. Over half (52.1%) of the respondents were institutional foodservice directors, 47.9% of the respondents were commercial foodservice directors. The majority of institutional foodservice directors were 25-29 years of age (38.6%), over 10 years of working experience (63.6%) and commercial foodservice directors were 25-29 years of age (53.1%), 5-10 years of working experience (35.0%). 66.3% of the respondents were educated food safety once a month, but 8.6% of commercial foodservices were never educated. The majority of the respondents used printing materials (73.3%) or lecture (74.8%). The importance level of institutional foodservice directors about sanitation education was significantly higher than commercial foodservice directors. The average score of institutional foodservice directors' sanitation knowledge was 87.05/100.00. The commercial foodservice directors' sanitation knowledge 67.74 was significantly lower than institutional foodservice directors (p < 0.05). Therefore, there should be a systematic education program designed for commercial foodservice directors.

외식.급식경영 전공 학생들의 근로 가치관 비교 (Comparison of Work Values of Undergraduate-level Foodservice Major Students)

  • 본 연구의 목적은 향후 푸드 서비스 산업의 전문 인력이 될 외식 급식 경영 전공 대학생들이 전공에 따른 직업 선택에 있어 중요하게 여기는 근로 가치관에 차이가 있는지 비교해 보고, 전공 관련 진로 및 푸드서비스 산업내 희망 직업 분야에 따른 차이도 함께 살펴보았다. 조사 결과, '지위 향상'(4.21)이 두 그룹 모두에서 가장 중요한 근로 가치관으로 나타났다. 외식경영 전공의 경우 '이타심'(3.74)이 가장 덜 중요한 근로 가치관으로 조사되었으며, 급식 경영 전공의 경우 '직무다양성에 따른 동기 부여'(3.79)에 가장 낮은 점수를 주었다. 두 그룹 모두 학년에 따라 근로 가치관의 중요성이 달라지는 것으로 나타났는데, 외식경영 전공은 '직무 안정성', 급식 경영 전공은 '경제적 보상 및 권한' 항목에서 저학년보다는 고학년이 더 중요하게 여기는 것으로 조사되었다 (p<0.05). 또한 희망하는 전공 관련 직무에 있어서 외식경영 전공의 경우 외식 종사원, 외식 창업, 외식 컨설턴트 사이의 근로 가치관의 중요성 인식에는 유의적 차이가 없었으나, 급식 경영 전공에서는 '직무 다양성에 따른 동기 부여' 항목에서 영양사를 원하는 학생(3.92)과 식품회사 종사원을 원하는 학생(3.67) 사이에 유의적 차이가 있었다(p<0.01). 향후 직업을 얻고 싶은 관심 푸드 서비스 분야에 따른 근로 가치관 비교에 있어서는 외식경영 전공의 경우 파인다이닝 분야를 원하는 학생이 패스트푸드 서비스 분야를 원하는 학생보다 '만족 및 성취도' (p< 0.05)와 '이타심'(p<0.01)의 중요성을 유의적으로 높게 생각하는 것으로 조사되었다. 급식경영 전공의 경우 '만족 및 성취도'(p<0.05), '경제적 보상 및 권한'(p<0.001), '직무 다양성에 따른 동기 부여'(p<0.001) 항목에서 희망 푸드서비스 분야별로 근로 가치관에 대한 유의적인 차이를 보였다. 본 연구 결과는 외식 급식전공 학생들의 교육에 있어서 외식 급식업 직무를 수행하는데 필요한 기술 이외에도 바람직한 근로 가치관을 형성할 수 있도록 지도하는데 도움을 줄 수 있을 것으로 사료되며, 업계에는 미래의 종사원들의 근로 가치관을 정확히 파악하고 그들이 얻고자 하는 근로 가치를 성취할 수 있도록 조직 정책 및 문화를 형성하는데 필요한 기초자료로 사용될 수 있을 것으로 기대된다.

외식 관련 학술적 연구에 대한 산학의 인식 분석 (The Perceptions of Educators and Industry Professionals on Foodservice Related-Research)

  • The purpose of this research is to analyze what industry professionals and educators perceive as the definition of "research" and foodservice related-research so that the research become rather systematic and useful research. The research result is as follows. First, the independent t-test analysis of the definitions of research showed that the industry professionals were recognizing it as "investigations that are directed toward the discovery of new scientific knowledge that has specific commercial objectives with respect to products or processes or operation" while the educators were regarding it as "original investigation for the advancement of scientific knowledge that does not have a specific commercial objective." Second, the finding about the application of foodservice related-research to decision-making showed that the industry professionals did not fully utilize foodservice research and did not think it is applicable in the industry. That is because academic journal language is too hard for them to understand and they want to see research findings in industry shows and exhibitions or industry magazines in common understandable language. Lastly, foodservice researchers could initiate the dialog between themselves and industry professionals to diagnose the problems of the industry better and provide practical solutions through research findings.

서울지역 단체 급식소 영양사들의 고령 인력 고용에 관한 의식 조사 (Attitudes of Non-Commercial Foodservice Dietitians toward Hiring Older Workers)

  • The purpose of this study was to identify the attitudes of non-commercial foodservice dietitians toward hiring older workers who are over fifty-five years of age. Questionnaires were sent to 600 members of Korea Dietitians Association who are working in Seoul, Korea, Data from 233 usable responses were analyzed using the SAS package program. The study showed that dietitians do not have a favorable perception of hiring older workers. Dictitians responded older workers have more serious accidents than younger workers(under age 30). In addition, they think than older workers are harder to train, find it more difficult to adapt to adapt to new ways of working, and are slower in their work. On the positive side, the response did show that dietitians realize that older workers are not absent from work as frequently than younger workers and that they are more cooperate than younger workers. The data also showed that those dietitians who had more positive experience with older workers also perceive the workers in more positive way than those dietitians that have had a negative experience with older workers(p<0.001). Finally, dietitians who are working in industrial foodservice showed more positive attitudes toward older workers than the dietitians who are working in hospital and school foodservice(p<0.01).

  • This study was based on the results of the study of 'Cheonyeon and Chunghyun Taste Alley Pilgrimage- Introducing Hidden Restaurants in Our Town', which was adopted as a project to revitalize urban regeneration as part of the Cheonyeon and Chunghyun Urban Regeneration New Deal project. This study was conducted in total of two stages, as a first step, the commercial district of Seodaemun Station was analyzed by analyzing the hashtag (#) mentioned along with the "Seodamun Station Restaurant" on Instagram from 2015 to 2020. As a result of the analysis, it was found to be an office commercial district related to "office workers", and it was found to be a commercial district with the characteristics of "small but certain happiness" where you can find hidden restaurants in front of your house. Based on the characteristics of these commercial districts, five stores utilizing the characteristics of the region were selected and cooking classes were conducted for students of Kyonggi University, who are local residents. The purpose of this study was to revitalize the aging Seoul city and contribute to the formation of positive relationships between local residents and merchants through cooking classes. In addition, the process was produced as digital media content and used as local promotional materials.

취업희망분야와 의사결정 영향요인의 관계에 관한 연구 -식품영양 및 외식$\cdot$조리 전공자를 중심으로- (Investigation of Factors Influencing Career Decision-Making of Students in Foodservice Management and Culinary Arts Programs)

  • The purposes of the study were to identify important attributes in foodservice management and culinary arts students' career decision-making and to investigate factors determining their preferred employment fields. A questionnaire that consisted of preferred employment fields, importance rating of 19 attributes related to job choices, and demographic information was developed based on a review of literature. A total of 319 students enrolled in food and nutrition, foodservice management, and culinary arts programs of eight 2-year colleges and 4-year universities in Seoul and Kyunggi Province participated in the survey. Data were analyzed using SPSS Win (version 10.0) with descriptive statistics, chi-square analysis, one-way analysis of variance, factor analysis, and discriminant analysis. Attributes of the highest importance scores included fringe benefits, wages and promotion opportunities, working environments, professional development opportunities, and organizational culturs. The students who preferred non-commercial foodservice as a career choice depended more on 'word-of-mouth from faculty' than those who preferred other fields (F=3.094, p < .05) and rated importance of 'participation in job fairs' higher than those who selected hotel food and beverage (F : 5.048, p < .01) . A factor analysis of the 19 attributes resulted in five factors: job/compensation policy, impersonal communication, company image, word-of-mouth, and personal experience. The five factors explained $67\%$ of the total variance. A discriminant analysis revealed that students who perceived 'impersonal communication' and 'word-of-mouth' more important were likely to prefer non-commercial foodservice as a career choice. The results would be used by university faculty in advising graduating students on career selection and by recruiters in developing effective and attractive recruiting programs.

급식소에서 제공되는 생산품의 조리 후 보관방법 설정을 위한 품질 연구(I) (Studies on Holding Methods for Quality Assurance of Cooked Foods Served at Foodservice Institutions (I))

  • In order to control the quality and safety of cooked foods, production and holding methods of foods should be carefully studied and applied to the foodservice industry. Therefore studies on microbiological, nutritional, physicochemical and sensory quality are essential in this area. The purpose of this study was to evaluate the chemical and microbial qualities of cooked foods during preparation and holding From the results, the following guidelines should be adhered to give effective quality control when holding foods after cooking in foodservice institutions, as well as to provide quality foods when selling cooked foods at commercial establishments. Sauteed and simmered foods such as sauteed chicken meat & vegetables and simmered pork in soy sauce satisfy the standard for microorganisms till 1-3 hours of room temp. holding, 6-18 hours at 60$^{\circ}C$ steam table, and 12-18 hours at 80$^{\circ}C$ heating table.

Consumer perceptions on sustainable practices implemented in foodservice organizations in Korea

  • BACKGROUND/OBJECTIVES: Sustainable practices in foodservice organizations including commercial and noncommercial ones are critical to ensure the protection of the environment for the future. With the rapid growth of the foodservice industry, wiser usage of input sources such as food, utilities, and single use packaging should be reconsidered for future generations. Therefore, this study aims to investigate the customer's perceptions on sustainable practices and to identify the relationship among sustainable practices, social contribution and purchase intention. SUBJECTS/METHODS: The study was conducted using content analyses by reviewing articles on sustainable food service practices published domestically and abroad. Thereafter, data were collected with a face-to-face survey using a questionnaire and analyzed with factor analyses and multiple regressions. RESULTS: Sustainable practices classified with factor analysis consisted of 6 dimensions of green food material procurement, sustainable food preparation, green packaging, preservation of energy, waste management, and public relations on green activity, with a total of 25 green activities in foodservice operations. Consumers were not very familiar with the green activities implemented in the foodservice unit, with the lowest awareness of "green food material procurement (2.46 out of 5 points)", and the highest awareness of "green packaging (3.74)" and "waste management (3.28). The factors influencing the perception of social contribution by foodservice organizations among 6 sustainable practice dimensions were found to be public relations on green activity (${\beta}=0.154$), waste management (${\beta}=0.204$) and sustainable food preparation (${\beta}=0.183$). Green packaging (${\beta}=0.107$) and the social contribution of the foodservice organization (${\beta}=0.761$) had strong relationships with the image of the organization. The purchase intentions of customers was affected only by the foodservice image (${\beta}=0.775$). CONCLUSIONS: The results of this study suggest that sustainable practices by foodservice organization present a good image to customers and increase the awareness of valuable contributions that benefit the customer as well as the community.

한국음식의 대량생산 표준레시피개발에 관한 연구(I) -탕반류- (Standardization of Recipes for Large Quantity Production of Korean Foods (I) -With the Focus on Soups-)

  • The objective of this study was to standardize recipes for large quantity production for Korean foods such as Yukkaejang (spicy beef and vegetable soup), Sagol-woogeojitang (bone soup with young cabbage), Kalbitang (beef short-ribs soup) and Seolleongtang (beef and bone soup). We examined the ingredients and the amounts in recipes that were used by 3 groups such as foodservice management companies, commercial restaurants and cookbooks. We analyzed cooking methods from 5 foodservice management companies, 3 commercial restaurants and 2 kinds of cookbooks. Each soup that was made by a standardized recipe was evaluated by consumer sensory panels. The total yield volume and portions for 100 persons were determined as well as ingredients, weights and methods. The standardized recipes were as followed; yield volume after cooking was 38-40kg, optimum service temperature was 78-82$^{\circ}C$, preparation time was 4-16 hours for 100 persons, and one portion was 380-400g, and we recorded the weight of foods and methods, as well as reference and garnishes. We expect that the standardized recipes for large quantity production will be necessary for use by cooks as well as by food preparation in foodservice institutions.

지역별 소규모 농가 생산 전통 고추장의 휘발성 성분에 관한 연구 (Volatile Components of Traditional Gochujang Produced from Small Farms according to Each Cultivation Region)

  • The purpose of this study is to investigate the volatile compounds of Korean traditional gochujang from various districts. The volatiles from each traditional gochujang are being extracted by simultaneous steam distillation extraction (SDE), and analyzed by gas chromatography (GC) and gas chromatography/mass spectrometry (GC/MS). Twenty compounds are identified as major volatile components which include 8 esters, 4 alcohols and 4 acids. The most traditional gochujang possesses more volatile components rather than commercial gochujang products. Most acids come from fatty acids and the alcohols derive from the oxidative degradation of linolenic acid. The most abundant volatile compounds for both traditional and commercial gochujang include 10 compounds such as 2-methyl-1-propanol, hexanal, 2-methyl-1-butanol, octanoic acid ethyl ester, as well as the various type of acids and esters. They represent most of the total GC peak areas, respectively. From the results, the characteristics of the flavors for traditional gochujang from each district are not clear but have shown various components than the commercial products.
