Analysis of Nutritional Components and Sensory Attributes of Grilled and Fast-Chilled Mackerels (직화구이와 급랭가공법을 이용한 고등어 제품의 성분 분석 및 관능적 특성 검토)

  • Nutritional compositions, volatile compounds, and sensory attributes of grilled and fast-chilled mackerel (Scomber japonicus) were analyzed in order to examine its practical utilization as a food resource compared to commercial frozen mackerel. In the proximate analysis, lipid contents were $27.3{\pm}2.7%$ in grilled and fast-chilled mackerel. Palmitic acid was the most predominant fatty acid (20.68% and 18.88%), and the percentages of polyunsaturated fatty acid were higher than 40% in both. No benzopyrene was found in the grilled mackerel, and even grilling was employed at $260^{\circ}C$. For chemical stabilities, para-anisidine value (8.56 vs. 9.26) and acid value (2.96 vs. 3.35) in grilled mackerel were improved compared to those of commercial mackerel. Moreover, color index of grilled mackerel, a physiological property, showed greater lightness than commercial mackerel. Lastly, analysis of volatile compounds by gas chromatographic analysis and sensory tests by trained panels demonstrated higher potential for grilled mackerel as a highly marketable product compared to commercial mackerel. Taken altogether, the above results provide important preliminary results for utilization of grilled and fast-chilled mackerel as a quality food.

Distribution of Patagonian toothfish(Dissostichus eleginoides) by bottom longliner in the southeastern Atlantic Ocean (남동대서양 파타고니아이빨고기(Dissostichus eleginoides)의 분포)

  • Patagonian toothfish(Dissostichus eleginoides) was investigated in the southeastern Atlantic Ocean during the period of 19 March to 7 July 2007 by commercial bottom longliners. The number of 116 hauls were carried out individually in this study area by two bottom longliners during 111 days. The total catches were 89,559kg(9.91kg/100hooks) and 66,758kg(7.38kg/100hooks), respectively. Most Patagonian toothfishes were caught on the $46-48^{\circ}S$, $6-11^{\circ}E$ of southeastern Atlantic Ocean. Patagonian toothfish comprised 67.01-92.49%(by weight) of the catches in the southeastern Atlantic Ocean. No Antarctic toothfish (Dissostichus mawsoni) was caught during the surveys. Patagonian toothfish was found throughout the experimental area, but the density was considerably greater in the layer of 1,300-1,900m, where 49.88% of the fishes were caught. Smaller fishes were generally distributed to the shallow waters and larger fish were more frequently caught with the depth. Mean size of Patagonian toothfish increased with depth of capture. Accordingly economically profitable fishing activities for the Patagonian toothfish fishery requires an understanding of the size distribution of the Patagonian toothfish by depth.

Spatial Heterogeneity and Long-term Changes in Bivalve Anadara broughtoni Population: Influence of River Run-off and Fishery

  • A comparison was made of population of the economically important cockle Anadara (=Scapharca) broughtoni (Bivalvia, Arcidae) inhabiting different areas of the Razdolnaya River estuary at the head of Amurskii Bay (Peter the Great Gulf, East Sea). Also, changes in cockle population density and structure, as well as in cockle growth rates during the last 20 years were studied. In all years of investigation, the morphometrical parameters and growth rates of cockles were smaller at the sites located close to the River mouth than farther down-estuary. The differences can be attributed to higher concentration of suspended particulate matter, decreased salinity and water temperature, as well as a longer exposure to these unfavorable environmental factors at sites located close to the River mouth, compared to farther sites. For two decades, cockle population density had decreased by almost 30 times at some sites in the River estuary. The main reason for this population decline is commercial over-fishing of the cockle. Besides, for the last 20 years, linear parameters of the cockles in the population decreased approximately by 30% and weight parameters, almost two times. Cockle growth rates also decreased for this period. Evidently, these facts are due to the damaging effect of dredging.

Biomass Estimation with a Hydroacoustic Survey and the Shrimp Beam Trawl Fishery in Gwangyanh Bay in Summer (하계 광양만 주변 해역의 새우조망 어획조사 및 수산자원 음향조사)

  • This study conducted a survey using a sampling inspection method and acoustic technique for continuous monitoring of useful organisms and non-commercial fish species distributed in the water of Gwangyang Bay, and evaluated the marine resources. In June, 2018, 38 species were caught in the shrimp beam trawl, comprising 3,594 marine organisms with a total weight was 65,415.3g. The acoustic survey showed that the nautical area scattering coefficient (NASC; $m^2/n.mile^2$) for the waters of Gwangyang Bay was highest in Transect 15 ($1,655.5m^2/n.mile^2$) and lowest in Transect 1 ($1.3m^2/n.mile^2$). The biomass was estimated to be 2,634.9 tons in the acoustic survey. This indicates that the acoustic survey method detected more fish shoals than the sampling inspection method.

Moving Distance of Laborer in the Kitchen for Systematic of the Korean Foods (한식(韓食)의 편의식화(便宜食化)를 위한 주방동선(?房動線)에 관한 연구)

  • In order to develop a convenient Korean food service system in commercial kitchen, processing procedure and recipe of 10 kinds of Korean food to be served as a convenient foods were decided. Moving distance and required energy of laborer in the commercial and model restaurants which have the area of $62.8m^2$ and $32.4m^2$, respectively, were measured by arranging these machinery. The results obtained were summarized as follows. In case of restaurant with the area of $62.8m^2$, moving distance, working hours and required energy of laborers were 1,922m, 2,986min and 4,704kcal in C-store, 2,134m, 3,173min and 5,001.7kcal in T-store, and 1,704m, 2,808min and 4,414.5kcal in model restaurant, respectively. Therefore energy requirements of the model restaurant were less 289.5kcal (4.5%) and 587.2kcal (10.1%) than those of C and T store. In case of restaurant with the area of $32.4m^2$, moving distance, working hours and required energy of laborer in S store were 1,277m, 2,926min and 4,588kcal, 1,425m, 3,108min and 4,873.8kcal in H restaurant and 1,167m, 2,798min and 4,381.4kcal in model restaurant, respectively. Therefore energy requirements of the model restaurant were less 206.6kcal (4.7%) and 492.4kcal (11.2%) than those of S store and H restaurant. When 6 kinds of convenient foods and 4 kinds of direct cooking foods were produced, moving distance, working hours and required energy of laborer in S store were 554.7m, 972min and 1,586.0kcal, 684.7m, 991min and 1,579.2kcal in H restaurant, 523.1m, 938min and 1,479.5kcal in model restaurant. Therefore energy requirements of the model restaurant were less 99.7kcal(6.7%) and 106.5kcal(7.2%) than those of S store and H restaurant. In case of the energy saving system kitchen, moving distance and required energy were saved less by 42% and by 20.4% than those of model kitchen, respectively.

Estimation of Urban Heat Island Potential Based on Land Cover Type in Busan Using Landsat-7 ETM+ and AWS Data (Landsat-7 ETM+ 영상과 AWS 자료를 이용한 부산의 토지피복에 따른 여름철 도시열섬포텐셜 산출)

  • This study examined changes in land cover for the past 25 years in Busan and subsequently evaluated heat island potential by using land surface temperature and observation temperature data. The results were as below. The urban area of Busan increased by more than 2.5 times for the past 25 years from 1975 to 2000. It was believed that an increase in the pavement area of city within such a short period of time was an unprecedented phenomenon unique to our country. It could be assumed that urban heat island would be worsened through this process. After analyzing the land temperature according to the land cover, it was shown that there were noticeable changes in the temperature of urban & built-up and mountain & forest areas. In particular, the temperature rose to $36{\sim}39^{\circ}C$ in industrial areas during the summer, whereas it went down to $22{\sim}24^{\circ}C$ in the urban areas at whose center there were mountains. It was found that heat island potential according to the level of land cover had various values depending on the conditions of land cover. Among the areas of urbanization, the industrial area's heat island potential is 6 to $8^{\circ}C$, and the residential and commercial area's is $0{\sim}5^{\circ}C$, so it has been found that there is high possibility to induce urban heat islands. Meanwhile, in the forest or agricultural area or the waterside, the heat island potential is $-6{\sim}-3^{\circ}C$. With this study result, it is possible to evaluate the effects of temperature increase according to the urban land use, and it can be used as foundational data to improve urban thermal environment and plan eco-friendly urban development.

Study on the Storage of Chestnut (밤 저장(貯藏)에 관(關)한 연구(硏究))

  • A mass production of chestnut necessiates the development of economic long-term storage method. The main objective of this study was to confirm the technical aspect of the chestnut storage method which was developed by two year project and to review the method of commercial application. The chestnut used for the experiments were separated in brine $(5.5{\sim}6.0^{\circ}\:B{\acute{a}}ume)$ into matured and unmatured lots and fumigated with $CS_2$ at a 5 $lb/27\;m^3$ level for $25{\sim}30\;hrs.$ The chestnuts were packed in wooden boxes with sawdust (50% moisture) in the ratio of 1 : 1 by volume. The boxes were stored in the cold room $(1{\pm}1^{\circ}C,\;85{\sim}95%\;RH)$ and the cellar ($0{\sim}10^{\circ}C$, controlled only by circulating night cool air). The results obtained were as follows: 1. Fully matured chestnut could be successfully preserved $8{\sim}9\;months$ at a l0% decay level in the cold room and $4{\sim}5\;months$ months in cellar. 2. Immatured chestnuts wire inferior to the matured in storage stability. At the maximum storage period, its storage life was two months shorter. 3. The heat transfer equation of piled chestnuts with sawdust can be suggested as $T_{\infty}-T_0=(T_{\infty}-T_0){\cdot}10^{-t/320}$ and j and $f_h$ values were 1 and 320 min, respectively. 4. The chestnuts in the package of storage unit had longer shelf life than naked chestnut during the retail distribution at ambient temperature.

Species composition and seasonal variation of the aquatic organism caught by commercial fishing of the pot and gill net in the coastal waters off Taean, Korea (태안 연안에서 통발어선과 자망어선의 상업적 조업에 어획된 수산생물의 종조성 및 계절 변동)

  • Species composition and seasonal variation of aquatic organism in the coastal waters off Taean, Korea were investigated using catches by commercial fishing of the pot and gill net from April 2010 to January 2011. A total of 58 species, 10,602 individuals and 547,569g of aquatic organism were collected during the study. Aquatic organism were composed of 22 species of Pisces, 20 species of Crustacea, 8 species of Gastropoda, 3 species of Echinodea, 2 species of Cephalopoda and Bivalvia, and 1 species of Holothuroidea. 41 species in 9 orders and 22 families were collected by the pot, and 28 species in 15 orders and 22 families were collected by the gill net. Volutharpa ampullacea was the most dominant in the pot, while Okamejei kenojei was the most dominant in the gill net. These two species accounted for 73.9% in the number of individuals, and 64.4% in biomass. The number of species was high in spring in the pot, and autumn in the gill net. The number of individuals and biomass were highest in winter and summer respectively in the pot, and summer in the gill net. The number of species of the consignment quantity caught by commercial fishery of the pot and gill net in Mohang was 12 and 14 respectively. Cluster analysis based on species composition of the 18 most common species showed that the species were separated into 3 different group. Group A was composed of species which were abundant in spring, group B was composed of species which were abundant in summer and autumn, and group C was composed of year-round residents.

  • Anchovy, EngrauEis japonica scoop nets are used in the coastal of Southern and Cheju of Korea. Especially in the Cheju, the fishing gear of scoop nets consists of upper boom, lower boom, pressing stick and bag net. They are operated by fishing boats of 6 to 10 ton class and 8 persons on board. The booms are controlled by side drum, and the net and pressing stick are hauled by only human power in operating. Therefore this fishery needs to large labor and heavy human power and has much risk. Three kinds of hydraulic winding device which controls two booms was designed and manufactured to reduce heavy labor force of scoop nets, and trial in the sea was carried out to test their performances using the commercial fishing boats of 6 ton class. The proper capacity of hydraulic pump and motor were determined by model test of boom 1/5 scale. The results obtained are as follows, 1. Tension of boom which is being drawn was the strongest and 187.5kgf when the boom's end is in the depth of 4m under the water. 2. The hydraulic motor of the fittest kind of winder has the least leakage per time than the other kinds. 3. In the best type of several winder devices, when the pressure difference was fixed $130kg/^2$ for the safe fishery, the winding velocity of boom line was 2m/sec, is faster 0.48/sec than traditional fishing method and this winder can catch the anchovy of 1.6 tonnage. 4. As a result, the crew were decreased from 8 to 6 and the problem of heavy human power and risk on fishing operation were solved by using the this winder.

Landscape Design of Gamcheon Wholesale Fish Market (감천항 수산물 도매시장 조경설계)

  • The landscape disign of Gamcheon wholesale fish Market was designed around a turnkey base to promote the economy of Busan Metropolitan City, to establish a fishery marketing center and to modernize existing facilities. The objectives of the project were to promote the mood of an old market, while preserving its functions and efficiency as a market, to design outdoor spaces with natural resources and amenities in balance, and to create attractive tourist spots in connection with the wide area development plan. The project was oriented, fast, to enhance the functions of the market. For this purpose, a multi-dimensional space layout was designed in consideration of functions as a wholesale market. The safety of pedestrians was secured by separating lathes for vehicles and for pedestrians. Tree planting with various functions such as sheltering, wind breaking and guiding was planned. Secondly, nature-friendly and human-friendly landscaping design was attempted. For this, the beautiful natural resources of Amnam Park were utilized, and green spaces such as green bridges linking buildings in the wholesale market, and rooftop gardens were to be arranged. In addition, environment-friendly facilities such as roads paved with natural materials(i.e. gravel, shells) and program parking lots were to be planned. Thirdly, landscape design was considered to create attractive tourist spots. For example, a fish farm was created as a theme street for pedestrians and various water-friendly spaces such as pedestrian ramps, observatories and seaside streets were to be secured. The main contents are as follows. First, a green bridge to Ahnnam Park was introduced for a tour source and flower garden, an event plan and viewing deck open to the sea were planned on the bridge's axis. Secondly, for the effective land use plan concerning open space and convenience to visitors, a promenade was planned, which is connected with the theme plaza and small plazas by environmental sculptures in front of the market hall and at the gate. As well, an observatory and a roof garden help create three dimensional multi leveled space, with a good view of the natural landscape of the sea, sky and park Thirdly, landscape materials, such as trees and those for facilities, strengthened for protection against the seawind and salt damage were selected. The commercial market area was intended to be transformed a traditional functional area of efficiency and economy into an attractive marine leisure area where both tourists and neighbors can make use of it.
