닭고기의 지방산패도에 미치는 이눌로프리바이오틱스 급여효과 (Effect of dietary inuloprebuotics on thiobarbituric acid reactive substances of chicken meat)

  • The author previously reported that the addition of inuloprebiotics to broiler diets produces growth performance that is superior to antibiotic supplementation. The present study furthered this work by evaluating the quality with thiobarbituric acid reactive substances (TBARS) of the meat from chickens fed inuloprebiotics produced using Korean Jerusalem artichoke. Male Ross 308 broilers (n=240) were randomly allotted to a 35 day regimen of dietary control (no supplementation), dietary antibiotics supplementation (8 mg avilamycin/kg diet), or dietary inuloprebiotic supplementation (450 mg inuloprebiotics/kg diet). The pH, water holding capacity, L*value (lightness), and b*value (yellowness) of the chicken meat weres ignificantly higher in the inuloprebiotic group. The TBARS value of chicken meat stored at low temperature tended to increase according to the length of storage, and was significantly lower in the inuloprebiotics group. The sensory scores of the cooked chicken meat were significantly higher in the inuloprebiotics group. The results indicate that the addition of inuloprebiotics as anantimicrobial agent to broiler diets can greatly improve the quality and self-life with reducing TBARS of chicken meat.

Effect of Post-hatch Nutrient Intubation on Performance, Intestinal Growth, Meat Yield and Immune Response in Broiler Chickens

  • The response of broiler chicks to intubation of nutrients (starch, casein, soybean oil or their combinations) into the crop immediately after hatch was evaluated for performance, intestinal development, meat yield and immune competence up to 35 d of age. A control group with no access to feed and two test groups fed either inert material (sawdust) or starter diet for the initial 24 h after hatch were compared with nutrient intubated groups (n = 7). A total of 300 broiler chicks were equally distributed to 10 dietary groups with 6 replicates of 5 chicks each. After 24 h of hatch, all groups were fed ad libitum the starter (0-21 d) and finisher diets (22-35 d). Results indicated that post-hatch intubation of starch into the crop significantly (p${\leq}$0.05) improved body weight (at 14 and 35 d of age), readyto-cook meat yields, weights of breast muscle and small intestine segments, cell-mediated immune response, ND titers and weight of bursa compared to chicks starved or fed sawdust during the initial 24 h after hatch. However, chicks with access to feed immediately after hatch or intubation of starch, soybean oil, starch+casein, starch+soybean oil or starch+casein+soybean oil exhibited similar positive effects. Intubation of casein either alone or in combination with soybean oil was superior to the starved or sawdust fed groups, but inferior to other groups for all the parameters studied. It was concluded from the study that intubation of starch individually or in combination with casein and/or soybean oil effectively circumvented the negative effects of post-hatch starvation for 24 h. Among the nutrients intubated, carbohydrate (starch) was better utilized by the chicks than protein (casein) or fat during the initial post-hatch period.

A Mixture of Thyme, Quillaja, and Anise at Different Nutrient Density on Growth Performance, Nutrient Digestibility, Meat Quality, Organ Weight, Cecal Bacteria, Excreta Moisture, and Bone Contents in Broiler Chicks

  • The experiment was carried out on 648 Ross 308 broilers ($40.4{\pm}0.2$ g; 1 d) chickens. It lasted for 28 days to evaluate the effects of phytogenic feed additive (PFA) on growth performance, nutrient digestibility, cecum microbiota, bone minerals contents, meat quality and internal organ weights. The chickens were haphazardly divided into any 1 of 6 dietary treatments (6 replicate pens/treatment; 18 broilers/pen). The experimental diets were: CON, control; T1, CON + 150 ppm PFA; T2, CP 0.5% reduced from basal diet; T3, T2 + 150 ppm PFA; T4, Ca 0.07% reduced + available P (aP) 0.065% reduced from basal diet; T5, T4 + 150 ppm PFA. Overall, broilers fed with T3 diet tended to have higher (P=0.08) body weight gain (BWG), and lower (P=0.05) feed conversion ratio (FCR) than T2 diet. The apparent total tract digestibility (ATTD) of P was lower (P=0.03) in T2 as compared to CON and it was higher (P=0.02) in T3 as compared to T2. There were no differences in meat quality, relative organ weight, and cecum microbiota (P>0.05). The supplementation of PFA showed trends in improvement in ash content in the bone of birds fed T1, T2 and T4 diets compared with CON. Likewise, the supplementation of PFA tended to increase (P=0.07) Ca content in the bone of birds fed T1 diet compared to CON. In conclusion, dietary supplementation with 150 ppm PFA could improve BWG in birds fed protein reduced diet, improve apparent total tract digestibility (ATTD) of P, and the bone Ca contents in broilers.

Comparison of pH, Water Holding Capacity and Color among Meats from Korean Native Chickens

  • 재래닭고기는 broiler 닭고기와 비교하여 단백질 함량은 높고, 지방 함량은 낮을 뿐만 아니라, 독특한 풍미 및 조직 감으로 인해 고품질 식육자원으로 여겨지고 있다. 게다가 최근 고유 유전자원 확보 및 유전자원의 다양성이 요구되고 있고, 고품질 식육에 대한 소비자의 요구가 증가함에 따라 재래닭을 이용한 새로운 고급 육질형 종계의 생산이 시도되고 있다. 따라서 본 연구는 깃털색에 따라 흑색, 회갈색, 적갈색, 백색 및 황갈색으로 분류되어 있는 한국 재래닭 5계통 닭고기의 품질 특성을 측정 비교하여 고급 육질형 종계 생산을 위한 선발 및 개량 육종 계획에 필요한 정보를 제공하고자 수행되었다. 본 연구 수행을 위해 한국 재래닭 5계통의 총 595 $F_1$ 개체를 20주령에 도계하였으며, 닭고기 품질 특성으로써 가슴육과 다리육의 도계 후 15분 pH, 최종 pH, 보수력 및 육색을 측정하여 5계통 간 차이를 비교하였고, 성별에 따른 차이 또한 비교하였다. 본 연구의 결과, 가슴육과 다리육의 도계 후 15분 pH는 계통 및 성별 간에 유의적인 차이가 있는 것으로 나타났다(P<0.05). 하지만 가슴육과 다리육의 최종 pH 및 보수력 측정 결과, 다리육에서 계통 간에 최종 pH가 차이가 있었던 것을 제외하고는 계통 및 성별 간에 유의적인 차이가 없는 것으로 나타났다(P>0.05). 육색 비교에서는 가슴육 $L^*$ 값을 제외하고, 가슴육과 다리육의 육색이 계통 및 성별 간에 유의적인 차이가 있는 것으로 확인되었다(P<0.05). 측정한 품질 특성 간 상관계수 측정 결과, 최종 pH가 $L^*$ 값과 부의 상관관계를, 그리고 $a^*$ 값과 정의 상관관계를 가슴육과 다리육 모두에서 일괄되게 보임이 확인되었다(P<0.05). 하지만 다른 품질 특성 간 상관관계는 가슴육과 다리육에서 일치하지 않았다. 따라서 본 연구의 결과, 계통간 도계 후 15분 pH 및 최종 pH 차이를 고려하였을 때 고급육질형 종계 생산을 위한 후보 계통으로서 수컷에서는 백색계통이 암컷에서는 회갈색 및 백색 계통이 이용될 수 있을 것으로 사료된다. 하지만 추후 연구를 통해 재래닭고기의 도계 후 15분 pH, 최종 pH, 보수력 및 육색의 유전력 분석이 필요할 것으로 생각된다.

Comparison of the Quality of the Chicken Breasts from Organically and Conventionally Reared Chickens

  • In this study, the quality of chicken breasts from organically reared chickens was compared with that of chicken breasts from conventionally reared chickens. Broilers were raised in an indoor pen with conventional and organic production system, respectively. The diet formulation for the organically reared chickens and the production density were in accordance with the guidelines for organic chicken products. Twenty birds from each group were slaughtered and their breasts were obtained for analysis. The organic chicken breasts had a higher cooking loss, and waterholding capacity, and a lower shear force (p<0.05) compared to the conventional chicken breasts. The organic chicken breasts also showed higher $a^{\ast}$ and $b^{\ast}$ values and myoglobin contents compared with the conventional chicken breasts (p<0.05). In the fatty-acid analysis, the organic chicken breasts resulted in higher polyunsaturated fatty acid (PUFA) and unsaturated fatty acid contents, and a higher PUFA-saturated fatty acid ratio.

Taste-Active and Nutritional Components of Thai Native Chicken Meat: A Perspective of Consumer Satisfaction

  • The taste-active and nutritional components of Thai native, broilers, black-boned, and spent hen chickens were analyzed. The amounts of tasty amino acids especially glutamic acid were the highest in Thai native chicken. The black-boned chicken had the highest arginine content, related to the least amount of consumer satisfaction. Concerning nutritional quality, choline, and taurine were deemed important for brain function. The black-boned chicken showed the highest choline and taurine contents, unlike that of the spent hens. In contrast, broilers presented the highest betaine content, which might be attributed to their lipid metabolism. L-carnitine content was abundant in black-boned and Thai native chickens. Moreover, the amounts of essential amino acids were high in Thai native chicken. In conclusion, black-boned chicken proved to be an excellent nutritional source for health-conscience consumers, whereas the Thai native chickens were flavourful and delicious.

A Review: Influences of Pre-slaughter Stress on Poultry Meat Quality

  • Pre-slaughter conditions affect poultry meat quality. Therefore, stresses before slaughter like heat stress, struggle and shackling on the shackle line, crating and transport and feed withdrawal are very important for the poultry industry in respect of quality as well as welfare of the birds. However, exposure to heat in oxidative stress can in turn lead to cytotoxicity in meat type birds. Chickens exposed to heat stress before slaughter showed the lowest ultimate pH and birds shackled for a longer time the highest. The abdominal fat content was higher in heat stressed birds. Struggling on the shackle line hastened the initial rate of the pH drop and increased the redness of breast meat. Again, with increasing struggling activity, lactate concentration in breast muscle of chicken increased. Paler meat was found in birds that were transported for a longer time than in those after a small journey or not transported. The pre-slaughter and eviscerated weights were decreased as the length of feed withdrawal period increased.

Effects of Animal Welfare-Certified Rearing Systems on the Blood Parameters and Meat Quality Characteristics of Broilers at the Farm Level in Korea

  • Compared to the conventional farms (CF) rearing of broilers, the rearing management of animal welfare-certified farms (AF) must provide low stocking density, perch, air regulation, and feeding plant-based protein. This study aimed to compare the effects of rearing management in CF and AF on blood parameters, meat quality, and bioactive compound content in Ross 308 broiler chickens at the farm level before transportation to slaughterhouses. Blood and meat samples were obtained at 28-35-dayold chickens from three CF and three AF. In blood samples, low-density lipoprotein cholesterol (p<0.05), triglyceride (p<0.001), glucose (p<0.01), total protein (p<0.001), albumin (p<0.01), and white blood cell (p<0.001) levels as well as the heterophil/ lymphocyte ratio [stress index (SI), p<0.001] were lower in broilers from AF than in CF. In meat samples, shear force (p<0.001, p<0.05), and carnosine contents (p<0.001, p<0.05) in both breast and thigh meat from AF were higher than those in meat from CF. The contents of linoleic acid (p<0.001), α-linolenic acid (p<0.001), and eicosapentaenoic acid (p<0.05) were higher in the samples from AF than those from CF. This study reveals that such differences are influenced by the different rearing factors in nutrition, housing, and management practices between CF and AF. Supplementation of plant-based protein and enough space to move due to lower stocking density accounts for the large differences between them. These results can be used as preliminary data showing that the AF system reduces the SI and enhances carnosine and polyunsaturated fatty acids levels in chicken meat at the farm level before transportation.

Effects of Supplemental Levels of Bazhen on Growth Performances, Serum Traits, Immunity, Meat Quality and Antioxidant Activity of Taiwan Country Chickens

  • One hundred and sixty Taiwan country chickens (d-old chicks) were randomly assigned into four groups with four replicates and equal sex. Basal diets were supplemented with 0, 0.5, 1 and 2% of Bazhen powder, a traditional Chinese herbal medicine complex. The study was conducted for 14 wks. Experimental results indicated that Bazhen supplement did not influence feed intake, body weight gain and feed:gain ratio. Compared with control group, the percentage of serum HDL (high-density lipoprotein) linearly increased (p<0.03) and that of VLDL+LDL (very low-density+low-density lipoprotein) linearly decreased (p<0.03) in Bazhen supplemented groups, that 2% Bazhen was significantly different with control group (p<0.05). Chickens fed diets containing 2% Bazhen displayed reduced (p<0.05) serum GOT (glutamic-oxaloacetic transaminase) levels. The IgG, ${\gamma}$-globulin levels and PHA (phytohemagglutinin) skin challenge results in 1% Bazhan supplemented group were higher (p<0.05) than in the control group, the SRBC (sheep red blood cell) and ND (newcastle disease) titers in Bazhen supplemented groups were linear higher (p<0.05) than in the control group. The liver catalase activity and the capacity of scavenging DPPH (${\alpha}$-${\alpha}$-diphenyl-${\beta}$-picrylhydrazyl) radical were linearly increased (p<0.03) in Bazhen supplemented groups, and the 1 and 2% groups were different from the control group (p<0.05). Liver TBARS (thiobarbituric acid-reactive substances) levels in all Bazhen supplemented groups and total glutathione level in the 2% group were reduced (p<0.05) compared to the control group and displayed a linear response (p<0.05). The TBA (thiobarbituric acid) and pH value of the breast muscle after 24 h post-mortem in the Bazhen supplemented groups was linear lower (p<0.05) than in the control group. Results from this study demonstrated that Bazhen supplement in chicken had several beneficial effects, including increased SRBC and ND titers, HDL and IgG, ${\gamma}$-globulin levels, PHA skin challenge result, decreased VLDL+LDL and GOT levels, and displayed antioxidation effects in serum and carcass meat parameters.

Influence of dietary supplementation of autolyzed whole yeast and yeast cell wall products on broiler chickens

  • Objective: This study evaluated the effect of yeast products on growth performance, visceral organ weights, endogenous enzyme activities, ileal nutrient digestibility and meat yield of broiler chickens fed diets containing autolyzed whole yeast (WY) and yeast cell walls (YCW) at varying levels of inclusion. Methods: Nine dietary treatments consisting of WY or YCW included at 0.5, 1.0, 1.5, or 2.0 g/kg diet and a control diet without yeast supplementation was used in the experiment. Each of the nine treatments was replicated six times with nine birds per replicate. Birds were housed in cages, in climate-controlled rooms and fed starter, grower and finisher diets. Results: There was an improvement (p<0.05) in body weight gain and feed conversion ratio on d 10, 24, and 35 for birds fed 1.0 to 2.0 g/kg WY or YCW diet. Small intestine weight was heavier on d 10 and 24 for birds on higher levels of WY and YCW compared to the control group. On d 10 and 24, there was a significant increase (p<0.05) in tissue protein content and pancreatic enzyme activities (trypsin and chymotrypsin) of birds on 1.5 to 2.0 g/kg WY and YCW diets compared to the control group. Compared to the control group, birds on WY (2.0 g/kg diet) and YCW (at 1.5 and 2.0 g/kg diet) had better (p<0.05) protein digestibility on d 24. On d 35, there was significant improvement (p<0.05) in percentage of carcass, absolute and relative breast weight for broiler chickens fed WY and YCW mostly at 2 g/kg diet compared to birds on the control diet. Conclusion: Supplementation of diets with autolyzed WY and YCW products especially at 1.5 to 2.0 g/kg diet improved broiler chicken performance and meat yield through their positive effects on ileal protein digestibility and pancreatic enzyme activities.
