한국산 생밤의 효율적인 적정훈증소독방법을 구명하기 위하여 실시한 시험결과 Phostoxin에 의한 훈증소독은 처리기간에 관계없이 생밤을 급히 부패시키거나 각피를 변색시키는 등 약해를 나타내는 반면에 생밤의 밤바구미와 밤나방의 유충을 완전히 사멸시키지 못했다. 그러나 Methyl bromide를 $m^3$당 40g 투약하여 $21^{\circ}C$에서 4시간 훈증하면 약해는 나타나지 알았지만 생밤가해 해충의 방제에는 효과가 낮았고 Methyl bromide를 $m^3$당 50g 투약하여 $21^{\circ}C$에서 24시간 훈증하면 생밤을 가해하는 해충의 유충은 어느 것이나 모두 효과적으로 제어할 수 있었지만 과육의 표면을 암색 또는 진한 갈색으로 변색시키는 등 심한 약해를 일으켰다. 그렇지만 4시간 훈증한 것은 생밤의 밤바구미와 밤나방의 유충을 완전히 사멸시켰을 뿐만 아니라 아무런 약해도 발생하지 않았다.
본 연구는 효율적인 박피 밤 생산을 위한 마찰식 박피기의 최적조건과 품종별 밤 과실의 내피박피성을 구명하고자 실시하였다. 마찰식 박피기의 최적조건은 박피시간 50분, 드럼 회전속도 27 rpm이었으며, 내피박피율도 89.3%로 가장 우수하였다. 최적의 박피조건(27 rpm/50분) 하에서 '축파' 등 8품종에 대한 내피박피율을 조사한 결과, '축파'가 89.3%로 가장 우수하였으며, '단택(72.2%)', '석추(70.9%)' 등의 순인 것으로 나타났다. I등급 밤의 비율은 '축파'가 77.2%로 가장 월등하였으며, '석추(46.7%)', '단택(45.0%)' 등의 순으로 높았다. 상품화 비율도 '축파'가 90.5%로 가장 우수하였으며, '단택(74.8%)', '석추(74.3%)' 등의 순으로 나타났다. 박피 시 과육 파손 및 흠집 발생 비율은 '미풍'이 37.2%로 가장 많은 반면, '축파'는 5.9%로 가장 적어 '축파' 품종이 마찰식 박피기를 활용한 고부가가치 가공 밤 생산을 위한 적합한 품종임을 알 수 있었다.
밤(Castanea crenata, 은기)의 수확 후 품질유지에 있어서 지연 감마선 조사와 CA 저장의 영향을 확인하기 위하여, 밤을 수확하여 $0^{\circ}C$에서 3개월간 보관한 후 0.25kGy의 감마선을 조사하고 $0^{\circ}C$의 CA (3%O$_2$+5% $CO_2$) 및 air조건에서 6개월간 저장한 다음 이화학적 품질특성들을 측정하였다. 밤의 발아(근)는 지연 감마선 조사에 의해 완전 억제되었으며 부패는 CA저장과 병행시 더욱 적게 발생되었다. 중량감소는 CA저장 밤이 air 저장 밤보다 작었고 지연 감마선 조사에 의해 약간 억제되었다. 과육표면의 L값과 b값은 지연 감마선 조사의 영향이 없이 CA저장 밤이 air 저장 밤보다 높게 유지되었다. 비타민 C, 전당 및 환원당 함량은 지연 감마선 조사 직후 감소되었으나 저장 후에는 조사의 영향을 받지 않았고, 비타민 C와 환원당의 경우 CA저장 밤에서 낮은 함량을 유지하였다. 유기산 함량은 CA저장 밤이 air 저장 밤보다 높았으며, CA저장 밤에서는 감마선을 조사한 밤에서 높게 나타났다. 따라서 수확 후 지연 감마선 조사와 CA저장은 발아(근)와 부패의 발생 억제, 그리고 중량, 과육표면 득도 및 유기산함량의 감소 억제에 효과가 있는 것으로 확인되었다.
In this study, the thermal properties of peeled chestnuts were measured, and the mathematical prediction model of freezing time was also developed for various interior positions from center to rind (surface). The measured thermal properties were showed that heat conductivity is $0.43W/m^{\circ}C$, specific heat is $2.7206J/m^3^{\circ}C$, latent heat is $216.9{\times}10^6J/m^3$ and freezing point is $-2.8^{\circ}C$. The entire process about reaching to the freezing time of peeled chestnuts was analyzed with its each regular depth position using the finite difference method (FDM) based on computer simulation. In case of regular freezing temperature, it was showed an that surface (rind) position is more rapidly reached into the freezing point rather than the center position, and also reaching time to the freezing point is more fast at the lower freezing temperature. Comparison results between simulation and experiments showed linear relationship. In regularly varying condition for freezing temperature, this method would give an information to predict a freezing time of the interior points for peeled chestnuts and more similar agricultural products.
Purpose: Gongju is a famous area for chestnuts, which contain various nutrients and phytochemicals. This study aimed to develop gochujang items using Gongju chestnuts and analyze nutritional properties for the best item by sensory evaluation in order to increase marketability of chestnut processed foods. Methods: Gochujang was prepared, and nutrient contents of gochujang were analyzed according to the methods of the food fair by Korea Food Research Institute. Three kinds of gochujang, including general (control)-, dried chestnut powder-, and chestnut syrup- were prepared. Sensory evaluation was performed on three kinds of gochujang by 45 adults, including males and females (20's~60's years of age). Results: Chestnut syrup-gochujang was evaluated as significantly higher than general- or dried chestnut powder-gochujang by sensory evaluation. Thus, nutrition facts were produced for chestnut syrup gochujang. Nutrient contents per 100 g of chestnut syrup gochujang and traditional gochujang in the literature were similar in terms of total carbohydrates and fat, whereas protein content was higher and sodium content was lower in chestnut syrup gochujang than in traditional gochujang in the literature. Conclusions: The results imply that chestnut syrup gochujang has nutritional benefits such as higher content of protein and lower content of sodium than traditional gochujang in the literature, in addition with its good taste. Therefore, chestnut syrup gochujang may have high usage potential. There is a need to improve the quality and storage of chestnut syrup gochujang through future study.
Peeled chestnuts were stored at different temperatures($-10^{\circ}C$ and $-20^{\circ}C$) and after blanching at $90^{\circ}C$ for different lengths of time(0, 10, and 20 min) for 6 months. After the storage period, the texture, color, DSC and sensory characteristics were analyzed. Hardness, fracturability and chewiness increased with storage time, whereas springiness and cohesiveness decreased. Additionally, the L* decreased and a* and b* increased with storage time. Analysis of the DSC revealed that the peak of the retro gradation was approximately $46{\sim}60^{\circ}C$ and enthalpy for the peak increased with storage time. Additionally, the increment of enthalpy for samples stored at $-20^{\circ}C$ and blanched was lower than that of samples stored at $-10^{\circ}C$ and non-blanched samples. The sensory evaluation scores were also higher for samples stored at $-20^{\circ}C$ and blanched samples than for those stored at $10^{\circ}C$ and non-blanched samples.
The chestnut is a well-known and important forest product in Korea. The annual production of chestnut is about 100, 000tons and its cultivating area is 80, 000ha. However, the peeling process of outer and inner skins of chestnut is very difficult due to hardness and adhesiveness of chestnut skin. The peeling process of chestnut was operated by manual work and the performance of chestnut peeling machine is very low. The purpose of this study is to develope the prototype of new chestnut peeling system. The hardness of chestnuts was tested with six different drying conditions and its range was from 949$g/mm^2$ to 2, 149$g/mm^2$. The hardness of chestnuts was decresed gradually during the drying process. The chestnut peeling Process includes sorting, storage, drying, outer skin cutting, flame peeling, continuous frictional skin peeling, and inner skin cutting operation. The developed chestnut peeling system consists of outer skin cutter, flame peeler, continuous frictional skin peeler and inner skin cutter. The system can peel domestic chestnuts at 150$kg/hr$ with peeling rate of 78%.
수출용 깐밤의 유통과정 중 발생하는 백탁현상을 방지하기 위하여 전해산화수를 이용하여 수출용 깐밤의 저장성을 향상시키는 연구를 있다. 수출용 깐밤을 전해수로 저장하면서 저장액의 pH및 탁도 변화를 조사 하였는데, $30^{\circ}C$에 저장했을 경우 저장 하루만에 이미 저장액의 pH가 급격히 변화하였으나, $4^{\circ}C$에 저장했을 경우는 $30^{\circ}C$에 비해 pH가 매우 완만하게 변화하였다. 특히 pH 2.5의 전해산화수는 저장 8일 후 pH가 3.4로 나타나 가장 적게 변화하였다. 탁도도 이와 비슷한 경향을 보였는데, $30^{\circ}C$에 저장했을 경우 저장 1일 후 이미 눈으로 확인할 수 있을 정도의 백탁현상이 일어났으나, $4^{\circ}C$에 저장했을 경우는 저장 14일 까지 백탁현상이 일어 나지 않았으며, 특히 pH 2.5의 전해산화수의경우 14일 후의 흡광도$(OD_{660})$가 0.01, 35일 후의 흡광도가 0.11로 나타나 백탁현상이 거의 일어나지 않았다. 전해수를 사용해 $4^{\circ}C$에서 15일간 저장한 깐밤에 대한 관능검사를 실시한 결과 대조구에 비해 유의한 차가 없었다.
Chestnuts(Castanea cretana, Eunki) were used for quality evaluations from the physiological and physicochemical points of view during storage under different temperatures and relative humidities for 8 months. Quality criteria included spouting, rotting, weight loss, and the changes in moisture, total sugar, reducing sugar, and total vitamin C of the stored sample. Sprouts(roots) were developed in about 2 months in all stored samples which had been mixed with sawdust(50% moisture) and stored under the conditions of 2∼25$^{\circ}C$ and 62∼95% RH. The sprout development was more significant in the storage temperature of Pit(9${\pm}$6$^{\circ}C$, 80${\pm}$5% RH, PT)and room(16${\pm}$7$^{\circ}C$, 85${\pm}$10% RH, RT) than low(3${\pm}$1%, 80${\pm}$5% RH, LT)and ambient(14${\pm}$11$^{\circ}C$, 67${\pm}$5% RH, AT). The rates of rotting and weight loss were appreciable in the order of PT, AT, RT and LT, and those of LT were 1∼2%. The use of wet sawdusts resulted in the increase of moisture contents in stored samples, thereby causing the rotting phenomena. Some chemical components of stored samples were found liable to the changes according to storage conditions, that is; total sugars showed a decreasing tendency along with a temporary increase during storage, and both reducing sugar and vitamin C were similarly accumulated in the samples stored at low temperature conditions. The results indicated that long-term storage of chestnuts will be possible in either cases of the application of low temperature following sprout-inhibition treatment or the use of lower temperature than 0$^{\circ}C$ to suppress its sprouting during storage.

Purpose: The present study focused on the estimation of soluble solids content (SSC) of chestnut using reflectance and transmittance spectra in range of VIS/NIR. Methods: Four species intact/peeled chestnuts were used for acquisition of spectral data. Transmittance and reflectance spectra were used to develop the best PLS model to estimate SSC of chestnut. Results: The model developed with the transmitted energy spectra of peeled chestnuts rather than intact chestnuts and with range of NIR rather than VIS performed better. The best $R^2$ and RMSEP of cross validation were represented as 0.54 and $1.85^{\circ}Brix$. The results presented that the reflectance spectra of peeled chestnuts by species showed the best performance to predict SSC of chestnut. $R^2$ and RMSEP were 0.55 and $1.67^{\circ}Brix$. Conclusions: All developed models showed RMSEP around $1.44{\sim}2.54^{\circ}Brix$, which is considered not enough to estimate SSC accurately. It was noted that $R^2$ of cross validation that we found were not high. For all that, grading of the fruits in two or three classes of SSC during postharvest handling seems possible with an inexpensive spectrophotometer. Furthermore, the development of estimation of SSC by each chestnut species could be considered in that SSC distribution is clustering in different range by species.
