다양한 식이섬유를 첨가한 프렌치브레드의 품질 특성 (Quality Characteristics of French Bread with Various Dietary Fibers)

  • The quality characteristics of dough and French breads containing dietary fibers, which were resistant starches (RS3 and RS4 types) and commercial non-starch polysaccharides (cellulose, pectin and chitosan), were investigated. The pH of the dough containing all dietary fiber except pectin was greater than that of control and was increased with increasing addition level. There was no correlation between pH and the expansion ratio of dough. As the level of added dietary fibers became high, the bread baking loss decreased, and the order of specific bread volume was 5% cellulose < 5% pectin < control bread, with no significant difference in specific volume. When a high level of dietary fibers was added to wheat flour, a complex phase appeared due to the formation between the network structure of additives and wheat gluten, and starch granules were heavily masted by the increased development of gluten-network matrix after the first fermentation like a wide spread net. Comparing the colorimetric changes of breads with the same added ratio (10%) of dietary fibers, the cellulose and RS4 addition breads had lower levels and the pectin-added bread had the highest value in the redness, while the chitosan-added bread had the highest value in the yellowness. Breads with a high level of dietary fibers showed increased hardness, gumminess, and brittleness and decreased springiness and cohesiveness. By sensory data, breads with 5% NSP and 10% RS addition showed high overall acceptability, with higher sensory RS score, compared to NSP addition. In conclusion, it was suggested that bread with lower than 10% RS or 5% NSP addition based on the amount of wheat flour, was acceptable with no considerable change in preference/overall quality and processing in bread-making.

꾸지뽕잎 분말을 첨가한 식빵의 품질 특성 (Quality Characteristics of White Pan Bread with Cudrania tricuspidata Leaf Powder)

  • 본 연구는 기능성 성분들이 함유하고 있는 꾸지뽕잎 분말 첨가에 따른 식빵의 품질 특성을 알아보고자 진행하였다. Mixograph, pH, TPA, 부피, 비용적, 수분, 영상분석, 색도, 기호도 검사, 보존성 검사를 통하여 꾸지뽕잎 분말을 첨가한 식빵을 분석하였다. Mixograph를 측정 결과, 꾸지뽕잎 분말을 첨가한 반죽은 제빵 적성에 적합하였다. 꾸지뽕잎 pH의 경우 분말의 첨가량이 많아질수록 pH는 높아졌으며, 1차 발효 후와 식빵의 pH는 첨가량이 많을수록 낮아졌다. TPA 분석결과, 꾸지뽕잎 분말 첨가량이 높아질수록 경도, 씹힘성, 검성은 높아졌으며, 탄력성, 응집성, 탄성은 유의적인 차이가 없었고, 꾸지뽕잎 식빵의 부피와 비용적은 감소하였다. 영상분석 결과 기공의 조밀도, 껍질의 두께, 크기는 첨가량이 많아질수록 유의적인 차이를 보여주었으며, 색도는 꾸지뽕잎 분말의 첨가량에 따라 L값은 어두워졌다. 기호도 검사 결과, 외관과 조직감은 CLP3가 대조구보다 좋았으며, 맛과 전체적인 기호도는 CLP2가 대조구보다 더 좋게 평가되었다. 보존성 측정 결과, 경도는 24, 48, 72시간 동안 모두 꾸지뽕잎 분말 1~2% 첨가한 시료가 대조구와 유의적인 차이를 보이며 경도가 낮았으며, 적은 양의 꾸지뽕잎 첨가가 식빵 속질의 부드러움을 유지하는데 좋은 것으로 사료되며, 수분함량이 낮아지긴 하였으나, 대조구와 유의적인 차이가 없었다.

홍국 분말을 첨가한 식빵의 품질 특성 (Quality Characteristics of Bread added Monascus anka Powder)

  • 홍국 분말을 식빵에 일정한 비율로 첨가하여 품질 특성을 조사한 결과, 홍국 분말첨가량이 증가할수록 반죽 수율이 다소 감소하는 것으로 나타났으나, 유의적인 차이는 없었다. 식빵의 부피는 대조구보다 홍국 분말 첨가구에서 낮았으며, 첨가량이 증가할수록 다소 감소하였다. 식빵의 색깔, 향기, 맛, 질감 그리고 종합적인 기호도에 대한 관능 검사 결과, 홍국 분말 1% 첨가군에서 기호도가 높았다. 제품의 색깔은 홍국 분말의 첨가량이 증가할수록 L값은 감소되고, a와 b값은 증가되는 경향을 보였다. 물성 측정 결과 홍국 분말 첨가량이 증가할수록 신장성, 경도, 점성, 파쇄성이 높은 값을 나타내었으나, 탄력성은 감소되었고, 응집성은 첨가군간의 유의적인 차이가 나타나지 않았다. 위와 같이 홍국 분말의 첨가가 식빵의 품질 특성에 영향을 미치는 것으로 나타났으며, 제빵 재료로 이용 가능할 뿐만 아니라 항암, 항균, 혈압 강하, 콜레스테롤 억제 등이 있는 기능성 식품으로 개발 가능성이 높은 것으로 사료된다.

타우린을 첨가한 제과제빵의 베이킹 특성과 섭취가 혈중 알코올 농도에 미치는 영향 (Baking Characteristics of Taurine Supplemented Bread and Cookies and Its Effect on Blood Alcohol Concentrations)

  • This study investigated the characteristics of baking bread and cookies supplemented with taurine and the effect of taurine addition on BAC(blood alcohol concentrations) and UAC(urine alcohol concentrations). Healthy male college students were divided into two groups, the control and the taurine group. Bread was baked with the addition of 0, 2, 4 and 6% taurine and baked with the addition 0, 3 and 6% taurine. The bread containing 2% taurine showed the fastest fermentation among the 4 groups. Fermentation and oven-spring of breads baked with a taurine concentration greater than 4% of taurine disturbed. In some areas of the sensory test, the taurine supplemented bread had higher scores than the control bread. We served 6 g of taurine supplemented cookies with 1,000 $m{\ell}$ of beer to 8 students in the taurine group. After 2 hours of drinking beer, the BAC and UAC of the taurine group were found to be lower than the control group. But no difference was found in the alcohol excretion of their urine. From this study we concluded that the taurine has an effect on the detoxication of alcohol, which reduces the BAC.

야생당근 분말을 첨가한 귀리식빵의 품질특성 (Quality Characteristics of Oat Bread with Wild Carrot (Daucus carota L.) Powder)

  • This study examined the quality of bread made from a wheat flour, oat powder, and wild carrot powder mixture. The lightness and redness values decreased with increasing amount of wild carrot powder addition, while the yellowness was increased significantly. In a sample of wild carrot powder addition, the total volume was lower than the control. The texture profile analysis of oat bread, such as hardness, gumminess and cohesiveness decreased significantly with increasing amount of wild carrot powder addition. In the case of springiness, the value was not significant. The sensory evaluation of oat bread was significantly different in all analyses. Oat bread (BCB2.0) containing 2.0% (w/w) wild carrot powder showed the highest value in the four sensory evaluation items. Therefore, the 2.0% (w/w) addition of wild carrot powder addition was appropriate. An analysis of the physicochemical active component and DPPH scavenging activity of oat bread revealed a higher total flavonoid and total polyphenol content than normal bread. The DPPH scavenging activity was also 20.3% compared to the wild carrot powder. The availability of wild carrot powder in oat bread could be identified.

카레 가루를 첨가한 식빵의 품질 특성 (Quality Characteristics of Bread Prepared with the Addition of Curry Powder)

  • This study was done to provide the basic information of bread made with curry powder. The amounts of curry powder used were 0 to 3% based on the wheat flour weight. The quality of bread was investigated by evaluation of the specific loaf volume, water absorption capacity, color, sensory quality and texture. The weight of bread decreased with the increase of curry power contents, but there were no significant differences among 0.5, 1 and 2% added curry powder bread. The volume and specific loaf volume also decreased with the increase of curry power contents, but those decreases were not significant between 1% one and 2% one. The water absorption capacities were not affected by the addition of curry powder. The lightness and redness decreased with an increase of curry powder content in the bread, while yellowness increased significantly(p<0.01). The result of the sensory evaluation showed that total acceptabilities of appearance, aroma, texture and taste in the bread with 0.5% and 1% curry powder were significantly higher than the control group and the other groups. Overall quality was negatively affected by the yellowness, odor, hot and bite taste of added curry powder. The factors affecting on the overall quality of the bread with added curry powder were in order of taste quality > curry powder odor > texture quality > aroma quality > springiness > wheat flour odor.

쌀빵의 제빵 적성에 대한 HPMC와 복합 효소 첨가 수준 영향 (The Effects of the Different Percentages of HPMC and Enzymes on Making Rice Bread)

  • This study investigated the bread-making properties of rice bread supplemented with HPMC (hydroxypropyl methylcellulose) 1~3% and gluzyme (glucose oxidase), fungamyl (fungal ${\alpha}$-amylase) and pentopan (xylanase+hemicellulases) (0.0015~0.0090%). The viscoelastic properties of the dough with HPMC 1~3% were analyzed. When the rice flour was supplemented with HPMC 1~3%, the viscoelastic properties of the dough tended to increase as the amount of added HPMC was increased. The physicochemical characteristics of the rice bread with HPMC, gluzyme, fungamyl, and pentopan were analyzed. Supplementing the rice flour with HPMC, gluzyme, fungamyl, and pentopan had a significant effect on the volume (p<0.01) and specific volume (p<0.001) of the rice bread. Supplementing the rice flour with 3% HPMC and 0.0045% or 0.0090% pentopan had a significant effect on increasing the volume (p<0.01) and specific volume (p<0.001) of the rice bread. Supplementing the rice flour with 3% HPMC, 0.0023% gluzyme and 0.0015% fungamyl had a significant effect on increasing the volume (p<0.01) and specific volume (p<0.001) of the rice bread. These results suggest that supplementing the rice flour with HPMC, gluzyme, fungamyl and pentopan is effective for the production of rice bread.

기능성 쌀가루 혼합분의 제빵 적성 (Studies on Bread-Making Quality of Bread Mixed with Wheat Flour and Several Functional Rice Flour)

  • This study investigated the feasibility of the bread making process with the mixture of the functional rice flour. The bread was manufactured with 20, 30 or 40% functional rice flour with increasing and wheat flour. Gelatinization characteristics of the rice starch was examined by differential scanning calorimetry(DSC). Coated with soluble dietary fiber rice showed the highest gelatinization enthalphy among functional rices and other functional rices were similar to normal rice. in the viscosity point of view. generally the viscosity related to the addition ratio. The most viscose case was 30% Sangwhang rice but in fermented with monascus ruber rice case, viscosity was low even with 40% case because of the transformation of the starch granules. In sensory evaluation, the highest sensory scores for the uniformity of pore size and flavor were obtained when sangwhang rice flour content was 20%. The textual study was mainly focused on the hardness, cohesiveness, adhesiveness, springiness, chewiness. Textural characteristics of functional rice bread crumb bakedwith 20% coated with soluble dietary fiber rice, 20% sangwhang was low in hardness, chewiness and gumminess. Therefore, Sangwhang rice flour 20%, Monascous ruber 20% and Coated soluble dietary fiber rice 20% were considered to be the most suitable addition ratio for the rice breads.

유색미(수원 415호)가루의 제빵성 검토 (Studies on Bread-Making Quality of Colored Rice(Suwon 415) Flours)

  • 유색미 수원 415호 쌀가루에 gluten 대체재료로써 10% gluten 및 3% hydroxypropyl methyl cellulose를 첨가하여 제조한 쌀빵의 가공적성을 검토한 결과, 유색미 수원 415호로 성형성이 아주 좋은 쌀빵의 제조가 가능하였다. 유색미 쌀빵의 물성 중 경도와 씹힘성은 3% hydroxypropyl methyl cellulose를 첨가하여 제조한 것이 10% gluten을 첨가하여 제조한 것 보다 낮아 부드러웠으며, 탄력성은 이와 반대의 경향을 나타내었다. 또한 저장에 따른 쌀빵의 노화도는 3% hydroxypropyl methyl cellulose 첨가하여 제조하는 경우 강력분으로 제조한 빵과 비슷한 수준이었다. 관능검사 결과에 의하면, 3% hydroxypropyl methylcellulose를 첨가하여 제조한 쌀빵은 밀가루 빵에 비해서 질감이 부드럽기는 하지만 기공의 균일성은 나쁘게 나타났다. 그러나 빵의 탄력성은 밀가루 빵에 비해서 유의적인 차이가 없었다.

잔트커런츠 발효액과 Sourdough 식빵의 품질 특성 (Quality Characteristics of Sourdough Bread with Fermented Zante currants Juice)

  • The objective of this study was to investigate quality characteristics of sourdough bread with fermented Zante currants juice. The sweetness of fermented Zante currants starter increased while its pH value decreased as time passed. The pH values were negatively correlated to the added amount of starter with the lowest pH being recorded at 70% addition. Similarly, bread's moisture was inversely correlated to the added amount of starter with the highest moisture content being recorded at 10% addition. For bread's height, excluding the control, 70% addition turned out to be the highest, and the height decreased as the added amount increased. The oven-spring was similar between the control and 70% addition. For the volume, except the control, 70% addition turned out to be the largest. The larger the specific volume was, the higher the volume of bread got. The brightness, redness, and yellowness were decreased as the added amount was increased. For the texture, the control had the highest elasticity and cohesiveness, and they increased as the added amount of starter increased. The hardness had a negative correlation with the added amount, and 70% addition yielded the same result as the control. The adhesiveness appeared only in 10% addition.
