Evaluation of Physico-Chemical Characteristics of Commercial Tofu Products in Korea Market (주요 시판 두부의 물리화학적 특성 평가)

  • This study was conducted to compare the quality characteristics of commercial tofu products from the market in Korea. Seventeen types of commercial tofu samples were taken and their physicochemical properties, including soluble solid contents, salinity, pH, total acidity and moisture (total solid contents), were analyzed. The hardness of tofu was negatively correlated with the moisture contents of tofu (r=-0.667**). The commercial tofu showed pH 5.80~6.24, total acidity of 0.016~0.034%, soluble solids of 1.50~3.45°Brix, salinity of 1.20~2.30%, and moisture content of 79.91~87.57%, respectively. All 17 tofu samples sold in the Korean market were prepared using crude MgCl2 and sea water as a coagulant. The quality characteristics vary depending on the constituent's of soybeans, and the ratio and amount of coagulants of tofu used. The origin of soybean seeds affected the yellowness of tofu; tofu made from imported soybean showed a higher b value than domestic soybean. These results are expected to be useful for understanding trends in the domestic tofu industry.

  • In the IMT-2000 networks, the model of micro/pico cell is suggested for transmission of multimedia service. Hence, the efficient method is required for processing of mobile calls in micro/pico cell. In the central urban area, mobile calls may be dynamically increased because of many mobile users. And microcel]/picocell size has small size, handover calls will be more increased. Therefore, many of mobile calls is occurred at a cell in the central urban area, so channel requests for these calls will be increased in the call. In this paper, we propose a scheme, FTC(Fault Tolerant Channel allocation) which is the channel management method for hard handover and new call in a mobile cell of central urban area. When available channels in the cell are consumed, the FTC investigates channel states of neighbor cells in the RNC(Radio Network Controller) or BSC (Base Station Center), and provide available channel for mobile call. The ]no scheme is analyzed and compared with existing channel management method by simulation.

Effects of Different Nitrogen Application Levels on Yield and Protein Content of Rice Varieties in Korea

  • In order to evaluate the effect of nitrogen application levels on yield and protein content of rice varieties, a field experiment was conducted at National Institute of Crop Science of Korea in 2020. Five levels(0, 3, 5, 7, and 9 kg·10a-1) of nitrogen fertilizer were treated to six Korean rice varieties. The nitrogen uptake amount, soil nitrogen content before and after rice cultivation, milled rice yield, and protein content in head rice were analyzed. As the treatment of nitrogen fertilizer increased, the nitrogen uptake amount of plants increased significantly. However, changes in nitrogen content in the soil before and after rice cultivation were different for each cultivar. The amount of nitrogen change in the soil decreased as the amount of nitrogen application increased in the three cultivars of Haepum, Gopum, and Odae, and the other three cultivars showed the opposite trend. As a result of correlation analysis of nitrogen application amount, nitrogen uptake amount, milled rice yield, and protein content of head rice, the five varieties except for Haepum showed a high correlation between these factors. The amount of nitrogen application and nitrogen uptake of plant showed a positive correlation about the milled rice yield and protein content of head rice. In particular, the protein content in head rice appeared to be more affected by nitrogen uptake amount than nitrogen application amount. As a result of this study, the yield and protein content of rice had positive correlations with the level of nitrogen fertilizer, and had a high correlation with the nitrogen absorption of plants.

Quality characteristics of commercial liquid type yogurt in Korea (국내 시판 액상요구르트의 품질특성)

  • Yogurt is produced by fermentation of milk using bacteria known as "yogurt cultures". Most of these bacteria are probiotics such as Lactobacillus delbrueckii subsp. bulgaricus, Lb. rhamnosus, Streptococcus thermophilus, and Bifidobacterium. The domestic fermented milk market is increasing, and about 30 companies are producing yogurt. The purpose of this study was to analyze the quality characteristics of domestic commercial liquid yogurt. Total 30types of commercial yogurts were sampled and their physicochemicial properties, including pH, sugar content, acidity, viscosity, and microbial characteristics of lactic acid bacteria counts, were measured. Commercial liquid type yogurt showed a pH of 4.5, sugar content of 7.4-21.2%, total acid content of 0.4-0.9%, and viscosity of 0.1-250 cP. In terms of microbial populations, lactic acid bacteria counts were 7.2-11.3 log CFU/mL and anaerobic lactic acid bacteria counts were 8.0-11.5 log CFU/mL. The quality characteristics differed depending on the constituents of the sample and the microorganisms used. These results are related to the quality characteristics of yogurts and are useful for identifying new trends in the domestic fermented milk industry.

A Study on the Appropriate Size of Stores and Countermeasures in Decline Commercial Area in the Original Downtown

  • Purpose: In this study, we try to figure out the appropriate size of commercial districts in the original downtown area through empirical studies targeting the Jinju Central Commercial Area in Gyeongnam and Cheonan Station in Chungnam, which are trying to regenerate a specific space that has been lost through government projects. Research design, data and methodology: The current status and characteristics of the shopping district were examined through on-site surveys of the central business district of Jinju, Gyeongnam Province, and Cheonan Station, Chungnam Province, and the size of the empty stores was determined. In addition, the standard median income was used as the survey data along with the survey of the mobile population in the commercial area. Result: The analysis result shows that 883 stores should be maintained considering the overall expenditure and gross sales profit within Cheonan Station in South Chungcheong Province. Currently, considering spending and margins in the Commercial Area, Jinju Central Commercial Area is a place where 222 stores can be sold excessively, and a proper commercial supply plan is needed. Conclusions: In this study, we conducted a demand prediction study in the commercial sector of the most basic sector to regenerate the commercial sector through major regional commercial districts.

Comparison of Agricultural Characteristics and Seed Quality for Suitable Natto Varieties

  • Natto is a soybean fermented food from Japan, which is made from steamed soybean, Bacillus natto and water. Demand of Natto has increased recently because it does not have smell compared to Cheonggukfang, which is Korean traditional fermented food. Currently, Pungsannamulkong is the most commonly used in Korea for Natto. Four candidate varieties of soybeans were investigated and compared in terms of Agronomic Traits, quality characteristics, hard seed rate, and water absorption rate in order to determine more suitable Korean soybean variety than pungsannamulkong. 'Haewon' had higher yield than other three varieties in Goesan-gun and Jinan-gun. The infected seed rate which affects soybean processing is higher in pungsannamulkong. 'Haewon' showed low 100 seed weight with 8.6 g in Goesan-gun and 9.5 g in Jinan-gun, which was the smallest of four soybean varieties. The water absorption rate was higher in 'Haewon' than in pungsannamulkong which is desirable characteristics for Natto process. The hard seed rate of pungsannamulkong was 6~7%, which is considered to be unsuitable to Natto process. The yield of Natto was significantly different for each variety. 'Haewon' showed the highest amino nitrogen content with 575.0 mg%. These results suggested that 'Haewon' can be considered as suitable candidates for yield and quality of Natto compared to pungsannamulkong.

Determination of Adaptable Sowing Dates of Waxy Corn Using Growing Degree Days in the Central Northern Area of Korea (적산온도를 활용한 중북부지역 찰옥수수 적정파종기 설정)

  • It is important to determine sowing date as it decisively affects the quality as well as quantity of waxy corn. In the central northern area of Korea, optimum sowing date of waxy corn is May and requires about 20-26 reproductive growth days from silking date to harvest. We determined adaptable sowing date of waxy corn varieties using growing degree days (GDDs), especially in the central northern area. Earlier sowing required many more emergence days owing to the low temperature. All waxy corn varieties required about 16~22 emergence days when sown in April. Otherwise, less than 15 emergence days were needed for sowing from May to August. Sowing dates to maximize ear yield of waxy corns were different depending on the eco-types of corn varieties as well as GDDs during the growth period. Early maturity type Mibaek2' showed the highest ear yield at the May $15^{th}$ sowing date. Middle maturity 'Iimichal' and late maturity 'Chalok4' showed the highest ear yield at the May $25^{th}$ and June $5^{th}$ sowing dates, respectively. GDDs of 26 days after silking was an index to determine the highest yield sowing date of 'Mibaek2'. The total GDDs from sowing to harvest and to silking were other indexes to determine the highest yield sowing date of 'Ilmichal' and 'Chalok4', respectively. Generally, it required about $2,400^{\circ}C$ GDDs from sowing date to maturity and at least 65 days of silking date from sowing to obtain about 1,200kg of ear yield of waxy corn in the central northern area of the Korean peninsula. The results of the study will be helpful for corn farmhouses to determine optimum sowing date of waxy corn in the central northern area of Korea.

Prevalence of Johne's disease from slaughtered cattle in central area of Gyeongnam province, Korea (경남 중부지역 도축장 출하우의 요네병 감염실태 조사)

  • Mycobacterium avium subsp. paratuberculosis is the pathogen of paratuberculosis called Johne's disease. Johne's disease is hardly eliminated because of its long latent period and continuous dissemination, so it is found in ruminants worldwide and can cause substantial economic losses in cattle. It has been reported in many studies on the distribution of Johne's disease in some provinces of Korea that not many, but noticeable numbers of infected cows have been detected since the first detection in 1984. The aims of this study was to investigate the prevalence of Johne's disease obtained from slaughtered cattle in central area of Gyeongnam province, Korea. In this study, the ELISA serum antibody test and PCR were employed on a total of 240 blood and ileac substrate samples from slaughtered cattle in two slaughtering and wholesale centers in Gyeongsangnam-do Livestock Veterinary Research Institute Central Branch. Out of the entire 240 blood samples, three (1.3%) were positive by ELISA, while five (2.1%) were suspected cattle. But ileac substrate samples, eight (3.3%) were positive by PCR. By breeds, positive rates of ELISA and PCR in Korean native cattle were 1.3% and 3.5%, respectively, but no positive cows were found in dairy cattle. By provinces, sero-positive rates of Gyeongnam and Gyeongbuk were 1.6% and 1.3%, respectively. And PCR positive rates of Gyeongnam, Gyeongbuk and other provinces were 2.4%, 5.0% and 2.8%, respectively. These results indicate that it requires the nationwide monitoring test and measure to deal with subclinically infected slaughtering cows.

An Analysis of Urban Green Network using Nearest Features Model in Korean Metropolitan Cities (최근린사상법을 활용한 6대 광역시 녹지네트워크 경향 분석)

  • This study was carried out to investigate the current urban forest network and future plan of forest framework using nearest features program where stepping stones within 5km from the core forest were selected in the program. We found several conclusions as follows: First, we found that cities in inland area including Daegu, Dajeon and Gwangju have quite different types of forest network with comparing to the cities nearby coastline including Busan, Incheon and Ulsan. The cities in inland area have large mountain patch around each city. However they have small and lower number of island forests within their urban area. Otherwise, cities nearby coastline have more forest patches than in the cities in inland area, and Busan and Incheon especially have strong forest network using various size of forest patches. Second, Daegu and Daejeon have much smaller forest patches distributed in each urban area. So additional forest patches should be added to have highly strong forest network within urban area. Third, Ulsan and Gwangju have most stepping-stone forests close to the large mountain patches in suburban area, which are not able to connect to the forest patches in the central area of each city So additional forest patches are needed to be added in the central area of each city for reinforcing the effect of stepping stone in the central area. Though there should be an addition approach except for forest size and its isolation to construct the ecological network in an urban area, this indices can be a good method to check an environmental and ecological status in an urban area.

  • According to the simplified Gringorten's method of extreme values from data samples, daily maximum precipitation and return period at several stations in the central part of Korea were estimated. And also, it was known that the distribution of daily maximum precipitation of Sogcho, Chuncheon, Kangreung, Seoul, Inchon, Suwon, Seosan, Cheongju and Daejeon area belong to an exponential type of distribution.
