This study was carried out to compare bone density risk factors affecting women's BMD, and to examine the relationship age, lifestyle and dietary habits for bone health by physical measurement and questionnaires. The subjects of this study were 194 women living in the Seoul area. When the subjects were divided into normal and risk groups, BMD, height, weight, BMI, total body water, soft lean mass, fat free mass, protein, mineral, body-fat of normal group were much higher than those of the risk group. The breakfast eating rate of the normal group was much higher than that of the risk group, walking time was significantly longer and exercise was more (p < 0.05). The normal group had more frequent intakes of tunas, squid, radishes, the green parts of radish, cucumbers, carrots and Iucchinis, tomatoes, and grapes than the risk group (p < 0.01 or p < 0.05). In conclusion, breakfast eating, exercise, intakes of some foods such as anchovies, radishes, carrots, zucchinis and tomatoes were significantly important factor to prevent bone density risk.

Pre-storage ultra-violet (UV) light treatment on fresh produce is known to inactivate the contaminated microorganisms, activate the defense system, and delay ripening extending the shelf life. As UV light emitting diode (LED) becomes available at a relatively low price, continuous or intermittent UV treatment during chilled storage is possible in a container or package. This study attempted an in situ UV LED treatment on fresh produce stored under a refrigerated container in order to see its potential in the fresh produce storage and further optimize its application conditions. The effect of in-container UV LED irradiation on the quality preservation of shredded carrots was investigated in the air and modified atmosphere (MA) conditions. Two sets of experiment with Escherichia coli inoculation and with natural microbial flora in the air (two 30 minute on-off cycles of 1 $diode/dm^2$ per day at a location above 2 cm) showed a clear and significant effect of the UV LED irradiation on the suppression of microbial growth: 280 nm was the most effective by maintaining a lower microbial count by at least 0.5 log (CFU/g) throughout the 6 day storage period. The carotenoids content of shredded carrots subjected to UV LED treatment at 365 and 405 nm in the air was higher than that of the control shredded carrots. In MA condition of $O_2$ of 1.2~4.3% and $CO_2$ of 8.4~10.6% being indifferent with LED wavelengths, 280 nm UV LED irradiation was also effective in inhibiting the microbial growth. While there was no observed difference in the carotenoids content between untreated and UV LED-treated shredded carrots in MA, UV LED irradiation at 365 and 405 nm was slightly better in DPPH radical scavenging activity. The use of UV LED in storage container or package seems to give the benefits of preserving the microbial and nutritional qualities of minimally processed fruits and vegetables.

The effects of aqueous chlorine dioxide ($ClO_2$) or fumaric acid treatment on the reduction of microbial populations in hot pepper, ginger, and carrot, were investigated. Hot pepper, ginger, and carrot were treated with 5, 10, or 50 ppm of $ClO_2$, or 0.1, 0.3, or 0.5%(v/v) fumaric acid solution for 5 min. Aqueous $ClO_2$ or fumaric acid treatment significantly decreased the populations of both total aerobic bacteria, and yeasts and molds. In particular, 50 ppm $ClO_2$ treatment of hot pepper reduced total aerobic bacteria and yeast and mold levels, by 1.52 and 1.81 log CFU/g, respectively, whereas 0.5% (v/v) fumaric acid treatment eliminated all aerobic bacteria and all yeasts and molds. In addition, 50 ppm $ClO_2$ treatment of ginger reduced the populations of total aerobic bacteria, and yeasts and molds, by 0.53 and 0.92 log CFU/g, respectively, and 0.5% (v/v) fumaric acid treatment also decreased total aerobic bacteria, and yeast and mold levels, by 1.44 and 1.28 log CFU/g, respectively. With carrots, 50 ppm $ClO_2$ treatment decreased total aerobic bacteria, and yeasts and molds, by 1.76 and 2.22 log CFU/g, whereas 0.5% (v/v) fumaric acid treatment reduced the levels of these microorganisms by 1.94 and 1.73 log CFU/g, respectively. These results indicate that aqueous $ClO_2$ or fumaric acid treatment is useful for reducing microbial populations in hot peppers, ginger, and carrots.

Pre-treatment steps of fresh produce as Saengshik raw materials are followed by initial clean-up, dipping, primary washing, and cutting. Hypochlorous acid solution was applied in the dipping step to reduce natural microflora. Also, procedures were changed by cutting, dipping and then primary washing, and the efficacy of hypochlorus acid was evaluated. Potatoes, carrots, kales, and angelicas were submerged in water or 100 ppm of hypochlorous acid for 5 min. After initial clean-up, the aerobic plate counts of potatoes, carrots, kales and angelicas were 4.7, 5.3, 5.6, and 5.7 log CFU/g, respectively. When samples were submerged into water, it only reduced the population of natural microflora by 0.2 to 1.1 log CFU/g, whereas when treated with hypochlorous acid, it reduced the population by 0.5 to 2.8 log CFU/g. Reductions of natural microflora in green leafy vegetables were more highly achieved than bulbs such as potatoes and carrots. However, the numbers of natural microflora were increased after cutting step. To control the cross contamination at the cutting process, the process was changed as follows: initial clean-up, cutting, dipping in hypochlorous acid, and then primary washing. It showed effective reduction of the population by 2.3 to 3.2 log CFU/g. Hypochlorous acid solution could be useful as a sanitizer for surface washing of fresh vegetables.
Diffusion coefficients of moisture and solid, reaction rate constants of carotene destruction, and the fitness of drying models for moisture transfer were determined to study the characteristics of mass transfer during osmotic dehydration. Moisture loss and solid gain were increased with increase of temperature and concentration; temperature had higher osmotic effect than concentration. Diffusion coefficient showed similar trend with osmotic effect. Diffusion coefficients of solids were larger than those of moisture because the movement of solid was faster than that of moisture at the high temperature. Reaction rate constants were affected to the greater extent by concentration changes than by temperature changes. Arrhenius equation was applied to determine the effect of temperature on diffusion coefficients and reaction rate constants. Moisture diffusion required high activation energy in $20^{\circ}Brix$, while relatively low in $60^{\circ}Brix$. To predict the diffusion coefficients and reaction rate constants, a model was established by using the optimum functions of temperature and concentration. The model had high $R^2$ value when applied to diffusion coefficients, but low when applied to reaction rate constants. Quadratic drying model was most fittable to express moisture transfer during drying. In conclusion, moisture content of carrots could be predictable during the osmotic dehydration process, and thereby mass transfer characteristics could be determined by predicted moisture content and diffusion coefficient.
The physical characteristics changes of carrots during drying were studied to minimize the quality degradation by applying improved drying process and pretreatment method. Physico-chemical properties of the product were analyzed, and then, drying mechanisms were explained by diffusion coefficients and drying models. In hot air drying process, the drying and rehydration efficiencies were high at low relative humidity and high temperature. Browning degree and specific volume also showed similar trend to drying efficiency. Diffusion coefficient, which describes moisture transfer, was also high at low relative humidity and at high temperature. It was verified using. Arrhenius equation that drying process was influenced by temperature. It was also observed during experiment that temperature changes were more effective in drying than relative humidity changes. Quadratic model was the most fittable in explaining the process. As a result of analyzing the experimental data with respect to the drying time, the contents of carotene and moisture could be modeled as a polynomial. As the air velocity increased, drying performance and rehydration efficiency increased.
Stews were prepared by 2 processes and 4 treatments, and stored for 3 different storage periods. The two processes were beef cooked in a stew and stored in a polyethylene container at $5^{\circ}C(P1)$ and in a barrier bag at $0^{\circ}C(P2)$. The four treatments were beef cooked alone (T1), with onions (T2), with carrots (T3) and with onions and carrots (T4). Stews in P1 were stored for 0, 2 and 4 days and stews in P2 were stored for 0, 2 and 4weeks. Cooking decreased the cephalin content by 39%. the lecithin content by 21% and most of the prolipid fatty acid concentrations as well as the fatty aldehyde levels in the phospholipids of beef from stew. Process or storage did not significantly affect the level of either phospholipids. however cooking beef with carrots seemed to exhibit some protection against hydrolysis of cephalin. P1 stews had a higher TBA-value (p<0.05) than P2 stews, and the TBA-value of P1 stews increased linearly during 4 days storage. The TBA-value was not affected (p<0.05) by treatment for any of the stews and did not change significantly during 4 weeks storage in P2 stews.

Pre-thermal treatment is important to minimize quality changes during main cooking or storage. In this study, to optimize pre-thermal treatment of carrots, three types of pre-thermal treatments were applied to carrots and quality changes such as physicochemical, nutritional, or sensory properties were observed. Washed and sliced carrots were thermally treated by hot-water immersion ($100^{\circ}C$, 1~10 min), steaming ($100^{\circ}C$, 1~10 min), and stir-frying with oil (10~80 sec). Carrot tissue was maintained until 2 min hot-water immersion or steaming, and they were damaged by just 30 sec of stir-frying. Color and hardness were significantly affected by treatment time and temperature. Color was completely changed after 5 min and 7 min by hot-water and steam treatments, respectively. Hardness decreased to 44% compared with fresh carrot (4,500 g) after 1 min, 3 min, and 20 sec of hot-water, steam, and stir-frying, respectively. For nutritional changes, ascorbic acid, organic acid, and peroxide activity were reduced by all treatments compared with fresh carrot. Especially, succinic acid was dramatically reduced by hot-water treatment. Otherwise, free sugar contents were increased with greater treatment time in all samples. In this study, pre-thermal treatment of carrot was optimal at 2 min steaming treatment.

Inactivation by UV-C irradiation of Escherichia coli O157:H7 and Listeria monocytogenes inoculated onto washed carrots was examined. Carrot samples were inoculated with 6-7 log CFU/mL of E. coli O157:H7 or L. monocytogenes, treated with doses of 0, 1, 3, 5, or $10\;kJ/m^2$ UV-C, and stored at $4{\pm}1^{\circ}C$ for 8 d. The populations of E. coli O157:H7 and L. monocytogenes significantly decreased with increasing irradiation dose (p<0.05). In particular, E. coli O157:H7 and L. monocytogenes populations fell significantly by 2.35 and 2.38 log CFU/g at $10\;kJ/m^2$, respectively, compared to control values. UV-C irradiation inhibited color changes and decreased the whiteness index in carrot during storage, compared to controls. Sensory evaluation results showed that UV-C-treated carrots had better sensory characteristics than did the control. Therefore, the results suggest that UV-C irradiation could be useful to improve the microbial safety and sensory qualities of fresh-cut carrots during storage.
