품종 및 수확시기에 따른 당근의 Retinol Equivalent 측정 (Determination of Retinol Equivalent of Carrots according to Varieties and Harvest Time)

  • An investigation was made of the effect of carrot variety and harvest time (DAP) on the composition of carotenoids and the Retinol Equivalent value by column chromatography, and of the relation of the total carotenoid content to the Retinol Equivalent by regression analysis. The results are summarized as follows : 1. There were very significant differences of total carotenoid, ${\alpha}-carotene,\;and\;{\beta}-carotene$ contents among carrot varieties and between two harvest times(90 DAP, 99 DAP). Especially, each component of carotenoids in carrots harvested at 99 DAP attained higher concentrations than 90 DAP. 2. Retinol Equivalent value showed the tendency to increase as the numbers of DAP incr The Shindaehyung-Ochon and Hongshim-Ochon varieties had the highest RE. value. 3. In the composition of carotenoids and Retinol Equivalent value, the Shamgae-Ochon variety had the nearest value to the mean of all variety. Therefore, it is most reasonable to use the Shamgae-Ochon variety for the analysis of vitamin A value in carrots. 4. The regression of the totel carotenoid (x) to the Retinol Equivalent (y) was y = 0.074 + 0.12x $(r^2$ = 0.91). So, if total carotenoid content is determined, R.E. value can be predicted by this regression equations, saving time and labor.

감자 및 당근의 개선된 농약 동시다성분 분석법 적용 연구 (Application of the Pesticide Multiresidue Analysis Method for Potatoes and Carrots)

  • 농약의 동시다성분 분석법은 다종 다수의 불특정 농약을 대상으로 하며 다양한 농산물 등 식품매질에 적용되므로 개별 매질에 대한 해당 분석법의 적용 연구가 필수적이다. 본 연구에서 적용한 농약 동시다성분 분석법은 최근 Park 등(11)이 개발한 방법으로 acetone 및 acetonitrile(9 : 1) 용매로 추출하고 dichloromethane partition 과정을 거친 후 florisil cartridge를 사용하여 hexane/dichloromethane/acetonitrile(50 : 45 : 5) 혼합용매로 용출하는 과정을 포함한다. 최종용액은 hexane으로 정용한 후, GC/ECD 및 GC/NPD로 분석하였다. 해당 분석법의 감자 및 당근에 대한 적용성을 알아보기 위하여 chlorpyrifos, procymidone 및 endosulfan 등의 194개 GC 분석대상 농약을 각각의 시료 등에 임의로 첨가하여 실험한 결과 bromacil, cyproconazole 등 농약 19 성분은 물에서, 그리고 bitertanol, dimethoate 등 41개 농약은 시료 매질의 방해성분으로 인하여 회수 검출되지 않는 것으로 확인되었다. 이외, 감자 및 당근에서 모두 회수율 70%이상인 농약은 138 성분이었으며 추가로 감자에서만 회수율 10% 이상인 농약은 5 성분 그리고 당근에서 회수율 70% 이상인 농약은 17 성분으로 확인되었다.

Reduction of Microflora in the Manufacture of Saengshik by Hygienic Processing

  • This study was conducted to determine the effect of hygienic processing (HP) on the reduction of microorganisms during manufacturing of saengshik with two vegetables (carrots and cabbage) and two grains (barely and glutinous rice) compared to general processing (GP). For GP, distilled water was used for washing raw materials and equipment. For HP, aqueous ozone (3 ppm) in combination with 1% citric acid and 70% alcohol were used for washing raw materials and the equipment, respectively. In carrots, after cutting, total aerobic bacteria (TAB), yeast and mold (YM) and coliforms were significantly increased to 5.19, 8.04 and 2.08 ($log_{10}$ CFU/g), respectively (p<0.05). Washing effectively reduced the increased microorganisms from cross contamination during cutting, but cross contamination increased with subsequent GP drying and milling procedures to 8.56, 8.27 and 3.71 ($log_{10}$ CFU/g) for TAB, YM and coliforms, respectively (p<0.05). On the other hand, HP washing of carrots with 3 ppm ozone in combination with 1% citric acid showed higher antimicrobial effect than GP washing, significantly decreasing the number of microorganisms (p<0.05). Further cross contamination did not occur through drying and milling due to cleaning the equipments with 70% alcohol prior to processing. After milling, the number of TAB, YM and coliforms were significantly decreased to 3.89, 4.47 and not detectable level ($log_{10}$ CFU/g), respectively (p<0.05). Similar results were observed in cabbage and grains. During storage for two months at different temperatures (22 or $4^{\circ}C$), there were no changes in numbers of spoilage microorganisms in the packaged saengsik after either processing. This suggests the importance of HP for the reduction of microorganisms during saengsik production, and demonstrates the effectiveness of disinfection at each processing stage in minimizing contamination levels to enhance microbial safety of saengshik products.

무지개 당근의 carotenoid와 당 함량 분석 (Analysis of carotenoids and soluble sugars in the Rainbow carrots)

  • Coloring agents in food materials plays important roles in the development of attractive products as well as in the functionality of food such as antioxidant or vitamin supplementation. Carrot has been used as an orange coloring agent in the decoration of food but also a major source of vitamin A complex. Though orange has been considered a typical color of carrot, the Rainbow carrot has been developed recently, which exhibit the various colors such as red, pale yellow, purple, orange or their mixtures. After categorization onto 8 groups by their colors, vitamin A complex (${\beta}$-carotene, lycopene and lutein) and soluble sugars (glucose, fructose, and sucrose) have been analyzed in carrots. The ${\beta}$-carotene was abundant in the groups of orange (Group-O) or groups with the orange color (group-OP, and group-YOP). The content of lycopene content was exclusively high in the red color carrot (group-R). The highest lutein contents were observed from the yellow-purple (group-YP) group. Meanwhile, little amounts of lycopene and ${\beta}$-carotene were observed in yellow-purple (group-YP) nor yellow (group-Y) on yellow (group-Y). Among the reducing sugars in 'rainbow carrots', the amount of sucrose was two times higher than those of fructose and glucose. However, the content of glucose, fructose and sucrose as well as the total reducing sugars did not differ between color groups suggesting little variations on their tastes.

Effect of Carrot Intake in the Prevention of Gastric Cancer: A Meta-Analysis

  • Purpose: Gastric cancer is the third leading cause of cancer-related mortality, with the incidence and mortality being higher in men than in women. Various studies have shown that eating carrots may play a major role in the prevention of gastric cancer. We conducted a meta-analysis to determine the relationship between carrot consumption and gastric cancer. Materials and Methods: We searched multiple databases including PubMed, Cochrane Library, Scopus, ScienceDirect, and Persian databases like Scientific Information Database (SID) and IranMedx. The following search terms were used: stomach or gastric, neoplasm or cancer, carcinoma or tumor, and carrot. Statistical analyses were performed using Comprehensive Meta Analysis/2.0 software. Results: We retrieved 81 articles by searching the databases. After considering the inclusion and exclusion criteria, 5 articles were included in this study. The odds ratio (OR) obtained by fixed effects model showed that a 26% reduction in the risk of gastric cancer has been associated with the consumption of carrots) OR=0.74; 95% confidence interval=0.68~0.81; P<0.0001). According to funnel graph, the results showed that the possibility of a publication bias does not exist in this study. Conclusions: The findings of this study showed an inverse relationship between the consumption of carrots and the risk of gastric cancer.

근채류(감자, 고구마, 당근)의 탈피조작 (Peeling Operations of Root Vegetables: Potato, Sweet Potato and Carrot)

  • 탈피 방법에 따른 감자류와 당근의 탈피효율과 제품의 품질을 연구하였다. 재료의 구형도와 중량이 탈피효율에 미치는 영향을 조사하였으며, 탈피 후에 표피 조직감의 변화를 Rheometer로 측정하고 세포조직의 변화를 비교하였다. 연마형 회전식 기계적 탈피의 조건은 감자는 300rpm에서 90초, 고구마는 300rpm에서 70초, 당근은 300rpm에서 60초 이었다. 탈피 손실율은 재료의 구형도와 중량에 의해 영향을 받았다. 알카리 탈피의 최적조건은 10% NaOH 끓는 용액에서 감자는 90초, 고구마는 300초 이였으며 당근은 6% NaOH 끓는 용액에서 60초 이었다. 탈피에 의한 표피 조직감의 변화는 Rheometer의 절단력 실험에 의해 명확히 나타났고. 이것은 광학현미경을 이용하여 관찰된 표피 조직 변화현상으로 설명될 수 있었다. 알카리 탈피에서 일어나는 표피 조직의 변화현상은 표면 세포내의 전분입자의 호화와 밀접한 관계가 있음을 알 수 있었다.

최소가공 당근의 유통기한 연장 연구 (A study on the Shelf-life Extension of Minimally Processed Carrot)

  • 베타리치 당근을 HCA 농도별 침지시간별로 각각 세척한 후 PE bag에 포장하여 $8^{\circ}C$에서 12일간 저장하여 미생물분석, 경도, 표면색, 백화지수 및 관능적 품질변화를 조사하였다. 총균수는 침지시간을 3분으로 한 처리구 T-II는 $4.37{\pm}0.19\;\log\;CFU/g$, T-III는 $4.27{\pm}0.13\;\log\;CFU/g$로 저장초기의 대조구에서 보다 적게 나타났다. 대장균군의 경우 저장일수 8일차의 처리구 T-II와 T-III는 대조구보다 적게 검출되었으며, 모든 처리구에서 E. coli는 검출되지 않았다. 3분 침지한 처리구가 1분 침지한 처리구보다 저장 12일 차에서 경도의 감소폭이 적었으며, T-I T-II, T-III로 갈수록 감소폭이 줄어들었다. 저장기간 중 모든 처리구의 L값은 감소하였고 a와 b값은 증가하였다. WI는 저장기간 중 증가하였으며, HCA 처리농도가 증가할수록 증가폭은 적었다. 저장 8일차의 관능적 품질평가 결과, 무처리구와 HCA 처리구의 이취평가는 유의적으로 높게 나타났다(p<0.05). 이상의 결과를 종합해 볼 때 유통기한 연장을 위하여 당근 세척에 HCA을 50 ppm 이상 사용하는 것이 안전성 및 품질 향상에 효과적인 것으로 나타났다.

당근 삼투압 건조시 물질 이동과 갈색화 반응에 미치는 효과 (Mass Transfer during Osmotic Dehydration of Carrots and Its Effect on Browning Reaction)

  • 삼투압 건조중 설탕용액의 농도와 온도 및 침지시간에 따른 내부물질 이동을 당근 내부의 수분손실, 설탕흡수, 몰랄농도 및 속도 매개변수로써 조사하였다. 또한, 삼투압 건조와 데치기가 3% 수분(wet basis)까지 진공건조시 각 공정의 갈색화 반응에 미치는 효과를 평가하였다. 용액 농도와 온도가 증가함에 따라 수분손실, 설탕흡수, 몰랄농도 및 속도 매개변수가 증가하였다. 수분손실과 설탕흡수는 초기 4분간 침지과정에서 빠르게 이루어진 후 증가현상이 둔화되었다. 용액에 따른 설탕 흡수율과 몰랄농도율 변화는 고농도 $(60^{\circ}\;Brix)$보다 저농도$(20^{\circ}\;Brix)$에서 현저하였다. 속도 매개변수, K는 설탕용액의 온도요인 보다 농도에 더 영향이 컸으며, 설탕용액$(60^{\circ}\;Brix,\;80^{\circ}C)$에서 20분간 침지후 55.7%의 수분손실이 되었다. 3% 수분(wet basis)로 진공건조시 갈색화 반응에 대한 삼투압 건조와 데치기의 효과는 현저하였다. 대조구 (O.D.=1.59)와 비교하여 최소 갈색화 반응은 전처리 공정으로써 설탕용액$(40^{\circ}\;Brix,\;80^{\circ}C)$에서 16분간 삼투압 건조 후 진공건조시 O.D.=0.09이었으며, $80^{\circ}C$에서 12분간 브랜칭 후 진공건조시 O.D.=0.31 이었다.

  • Moisture loss of fresh fruits and vegetables is a main cause of deterioration. It resulted not only in the direct quantitative loss, but also in change in appearance, texture and nutrition. To reduce the loss of moisture content during the distribution in the market, fresh products are packaged using plastic films. But, most of the fresh products are packaged manually in Korea. In order to minimize the labor requirement, the packaging machine for fruits and vegetables was developed and tested. Prototype was composed of film feeding unit, bag former, products feeding conveyor, film feeding roller, center sealer, end sealer and discharge conveyor. Green peppers, carrots and perilla leaves were tested with prototype. Prototype could pack 1780, 1390, 1780 bags per hour at the feeding speed of 0.08m/s respectively and 2250, 1810, 2640bags per hour at the feeding speed of 0.10m/s respectively. And packaging speed of green peppers and carrots was improved by 3.7 and 3.4 times compared with manual packaging. The packaging condition with the prototype was good and the products had almost no damages.

영국 사회보장제도의 개혁 : 사회부조(Social Assistance)를 중심으로 (Reforms of Social Security System : Social Assistance Programmes in the U.K.)

  • This paper aims to provide a critical assesment of Conservatives's and new Labour's social assistance reforms in the U.K. and their differential impacts on low income groups. During the period of 18 years in power, the Conservative governments enforced benefit recipients being capable of work to be out of benefits and to get into work. They employed not only 'carrots' to encourage beneficiaries being capable of work to have full-time work, but also 'sticks' to discourage them to depend on benefits. The reforms under the Conservative governments were closer to the workfare model. The new Labour government has continued to emphasize work regarding social security reform. It has raised 'from welfare to work' as the main reform objective. However, it has not necessarily focused on 'carrots and sticks' in order to get beneficiaries into work. Instead, the new Labour government has put its priority regarding social assistance reform on human capital development in order to develop the capability of beneficiaries for work. Britain under the new Labour government seems to be moving from workfare to activation model. These differentials between the Conservative governments and the new Labour government regarding social assistance reforms bring about the different policy outcomes. Under the Conservative government, social assistance programmes were prone to strengthen the state's control over benefit recipients and to increase stigma to them. Punitive, demeaning, stigmatising programmes of work and unending job search activities harm the bases of self-respect. On the contrary, the activation programmes under the new Labour government has contributed positively to both socially significant participation and autonomy of beneficiaries.
