Genetic Relationships of Carcass Traits with Retail Cut Productivity of Hanwoo Cattle

  • This study aimed to estimate genetic correlation between carcass grading and retail productivity traits and to estimate the correlated response on retail productivity traits through selection for carcass grading traits in order to assess the efficacy of indirect selection. Genetic parameters were estimated with the data from 4240 Hanwoo steers using mixed models, and phenotypes included carcass weight (CWT), back fat thickness (BFT), eye muscle area (EMA), marbling (MAR), and estimated lean yield percentage (ELP) as the carcass grading traits, and weight and portion of retail cuts (RCW and RCP), trimmed fats (TFW and TFP) and trimmed bones (TBW and TBP) as the lean productivity traits. The CWT had positive genetic correlations with RCW (0.95) and TFW (0.73), but its genetic correlation with RCP was negligible (0.02). The BFT was negatively correlated with RCP (-0.63), but positively correlated with TFW and TFP (0.77 and 0.70). Genetic correlations of MAR with TFW and TFP were low. Among the carcass grading traits, only EMA was positively correlated with both RCW (0.60) and RCP (0.72). The EMA had a relatively strong negative genetic correlation with TFW (-0.64). The genetic correlation coefficients of ELP with RCP, TFW, and TFP were 0.76, -0.90, and -0.82, respectively. These correlation coefficients suggested that the ELP and EMA might be favorable traits in regulating lean productivity of carcass.

Carcass and retail meat cuts quality properties of broiler chicken meat based on the slaughter age

  • This study aimed to determine the carcass and meat quality of broiler chickens based on the slaughter age (28, 30, 32, and 34 days). The carcass characteristics included live and carcass weights, carcass rate, dressing rate, and retail cut weight. The meat quality properties were determined through proximate composition, pH, color, water holding capacity (WHC), cooking yield, and shear-force. The broiler chicken live, carcass, breast, thigh, and wing weights significantly increased with the slaughter age (p < 0.05); the tenderloin weight also exhibited a similarly increasing trend. However, the carcass rate of the day 28 sample was significantly lower than the other samples (p < 0.05). The protein and ash contents of the breast exhibited an increasing trend with increasing slaughter age. The protein content of the thigh of the day 28 sample was significantly lower than that of the other samples (p < 0.05), while the ash contents of the day 28 and 30 samples were significantly lower. The redness of the breast showed an increasing trend, and the pH and lightness of the thigh exhibited a decreasing trend with slaughter age. The WHC and cooking yields of the day 30 and 32 breast and thigh samples were significantly higher than those of the day 28 and 34 samples (p < 0.05). The breast and thigh shear-force of the day 30-34 samples were significantly higher than those of the day 28 sample (p < 0.05). The present study showed that even with a twoday difference in slaughter age, the broiler chicken meat quality showed a significant difference in several characteristics.

재래흑돼지와 개량종 돼지의 도체 및 육질 특성 비교 (Comparison of Carcass and Meat Quality Characteristics between Korean Native Black Pigs and Commercial Crossbred Pigs)

  • 본 연구는 재래흑돼지와 개량종 돼지들과의 도체 및 육질 특성을 비교 평가하여 표준화를 통해 부가가치를 높여 품질을 고급화 할 수 있는 기초자료를 제시할 목적으로 재래흑돼지와 개량종 돼지인 듀록종(DD), 랜드레이스종(LL), 요크셔종(YY) 그리고 삼원교잡종(LYD)을 시험에 공시해 품종간 처리구별 도체 및 육질 성적을 비교 분석하였다. 본 연구 결과, 재래흑돼지의 생체중, 도체중, 거래 정육 생산량, 가죽, 지방 및 뼈의 생산량이 개량종 처리구에 비해 유의적으로 낮게 나타났으며, 재래흑돼지의 도체율과 정육률도 개량종 4처리구에 비해 유의적으로 낮은 경향이었으나(p<0.05), 총지방 생산율, 가죽, 뼈, 신 및 신지방의 생산율은 재래흑돼지가 개량종에 비해 유의적으로 높았다(p<0.05). 재래흑돼지는 개량종과 비교해 모든 부위에서 낮은 정육량을 보였으며, 품종간에는 YY종이 가장 높았고, 다음 LYD종이 높았으며, KNP가 가장 낮았다. 삼겸살 정육량은 KNP, YY종, LYD종이 각각 6.12, 9.43, 9.52 kg으로 나타났으며, 재래흑돼지의 삽겹살 정육률은 $11.11\%$이었으며, 개량종은 $11.5\~12.2\%$를 나타내었다. 또한 전단가는 품종간 유의적인 차이를 보이지 않았으나 보수력과 가열 감량은 재래흑돼지가 낮은 경향을 보인 (p<0.05) 반면, 다즙성은 근내 지방함량이 높은 관계로 유의적으로 높았다(p<0.05), 육색의 $a^{*}$값은 KNP가 가장 높았고 (p<0.05), DD종이 가장 낮았다(p<0.05).

Effects of Dietary Ascorbic Acid on Performance, Carcass Composition and Bone Characteristics of Turkeys during High Summer Temperature

  • Heat stress is major welfare problem in the poultry industry. Huge economic losses occur every year because of mortality and decreased production due to high environmental temperatures. This experiment was conducted to determine the effects of level of inclusion of ascorbic acid supplementation to the diet on performance, carcass composition and bone characteristics of male turkeys during high summer temperature. A total of 120 day-old turkey chicks were wing banded at hatch and randomly distributed into 3 treatment groups. Three diets were formulated to provide a similar nutrient profile with the exception of using three graded levels of ascorbic acid, namely 0, 150 and 300 mg/kg of the diet. The experimental diets were used from 0 to 18 weeks of age. Body weights, feed intake and feed conversion ratio, slaughter weight, carcass yield, portions, composition and thigh and breast pigmentation of the turkeys were not affected by ascorbic acid (p>0.05). Also, shank and tibia bone characteristics were not affected by ascorbic acid (p>0.05).

CARCASS CHARACTERISTICS AND BEEF PALATABILITY AS INFLUENCED BY FEEDING RICE STRAW AND ALFALFA

  • Ninety feeder steers, predominantly Herefords weighing 280 kg, were assigned at random to each of nine diets: basal (high concentrate); 25 or 50% of untreated rice straw (25- or 50 URS) or ammoniated rice straw (25- or 50 ARS); a 50:50 mixture of URS - alfalfa or ARS - alfalfa replacing a proportion of the basal at 25 and 50%. Animals were slaughtered after 154 or 161 days of feeding. The cattle fed 50% URS had the lowest (P<.05) carcass weight, dressing & external fat thickness, kidney, pelvic and heart fat, rib eye area, marbling score, quality and yield grades, followed by cattle fed 50% ARS, 50% rice straw/alfalfa, and 25% rice straw alone or 25% rice straw/alfalfa mixture. Ammoniation of rice straw improved all measured traits. A 25% substitution of basal diet with untreated or ammoniated rice straw and a 50% substitution with rice straw/alfalfa mixture did not significantly affect carcass traits compared to the basal group. Only 50% ARS and 50% URS cattle showed differences in body composition (P<.05) with lower fat and higher water and protein contents. No significant differences were found in shear value, panel tenderness, connective tissue, juiciness, flavor and overall palatability of meat from steers fed the basal, ARS or URS diets.

Performance of Naked Neck versus Normally Feathered Coloured Broilers for Growth, Carcass Traits and Blood Biochemical Parameters in Tropical Climate

  • A population segregating for the naked neck (Na) gene was used to evaluate its effect on fast growing broilers at heat stress. An experimental stock comparable to those of modern broilers was established by backcrossing to colour synthetic male and female lines. Matings between heterozygous (Na/na) males and females produced normally feathered (na/na), heterozygous (Na/na) and homozygous (Na/Na) chicks for the present study. Day old to seven week old coloured broilers of three genotypes viz. normally feathered (na/na), heterozygous naked neck (Na/na) and homozygous naked neck (Na/Na) were compared for heat dissipation, growth performance, body conformation traits, blood biochemical parameters and carcass traits in tropical climate. In hot climate, naked neck broilers had significantly less body temperature and better heat dissipation capabilities as compared to normal broilers. The naked neck broilers had significantly higher body weight and better feed conversion ratio than na/na broilers. The Na/Na or Na/na broilers exhibited higher giblet yield, blood loss and lower feather mass compared to na/na broilers. The results indicated that the reduction in feather coverage in Na/Na and Na/na broilers facilitates better heat dissipation with lower body temperature, more body weight gain, better FCR and carcass traits compared to normal broilers.

Interaction of Beef Growth Type${\times}$Production System for Carcass Traits of Steers

  • Steers (n=335) of known genetic backgrounds from four fundamentally different growth types were subjected to two production systems to study differences in carcass traits. Growth types were animals with genetic potential for large mature weight-late maturing, intermediate mature weight-late maturing, intermediate mature weight-early maturing and small mature weight-early maturing. Each year, in a nine-year study, calves of each growth type were weaned and five steers of each growth type were developed on pasture or feedlot and slaughtered at approximately 20 and 14 months of age, respectively. Data collected were pre-slaughter shrunk body weight (SBW); hot carcass weight (HCW); dressing percentage (DRESS); fat thickness at the $12^{th}$ and $13^{th}$ rib interface (FAT); percentage kidney, pelvic, and heart fat (KPH); longissimus muscle area (LMA); marbling score (MARB); quality grade (QG); and yield grade (YG). Year and growth type were significant for all carcass traits. The growth type${\times}$production system interaction was an important source of variation in SBW, HCW; FAT, YG and MARB. The same interaction was non-significant for DRESS, KPH, LMA and QG. Carcass differences in measures of fatness were greater in the feedlot system than in the pasture system. These data could aid producers in matching beef growth type to the production system most suitable for efficient use of resources.

Influence of dietary nonstructural carbohydrate concentration on growth performance and carcass characteristics of Holstein steers

  • Objective: Since very little information exists about the topic; in this experiment we compare, in a long-term finishing program, the growth-performance responses and carcass characteristics of Holstein steers where non-structural carbohydrate concentration of the diet is reduced from 64% to 51% (dry matter basis). Methods: Sixty Holstein steer calves ($129{\pm}2.2kg$) were blocked by initial weight into five groups and randomly assigned within weight groupings to 10 pens. Calves were fed with a steam-flaked corn-based finishing diets containing 51% higher fiber (HF) or 64% lower fiber (LF) nonstructural carbohydrates. Non-structural carbohydrates concentrations were manipulated substituting dried distiller grain with solubles and alfalfa hay for flaked corn. Cattle were weighed every 112 days and at the end of the experiment (day 308) when the cattle were harvested and carcass characteristics were evaluated. Results: Steers fed the HF diet showed improvement (8.8%) in average daily gain (ADG) during the initial 112-d period. This effect was followed by a numerical trend for greater ADG throughout the remainder of the study so that overall ADG tended to be greater (4.9%, p = 0.06) for the HF than for LF. There were no treatment effects on dry matter intake. Gain efficiency and estimated dietary net energy (NE) were greater 8.3% and 5.2%, respectively for HF during the initial 112-d period. Overall (308-d) gain efficiency and estimated dietary NE were similar for both dietary treatments. However, due to differences in tabular dietary NE, the ratio of observed:expected dietary NE tended to be greater (4.1%, p = 0.06) for the HF vs LF diet. There were no treatment effects on carcass characteristics except for a tendency toward a slightly greater (0.5%, p = 0.09) estimated carcass yield. Conclusion: Reducing the non-structural carbohydrate concentration of a conventional steam-flaked corn-based growing finishing diet for Holstein steers can effectively enhance growth performance, particularly during the early growing and late finishing phases.

한우에서 TG와 EDG1 유전자의 단일염기다형 확인 및 도체형질과의 연관성 분석 (Identification of SNPs in TG and EDG1 genes and their relationships with carcass traits in Korean cattle (Hanwoo))

  • Thyroglobulin (TG) gene was known to be regulated fat cell growth and differentiation and the endothelial differentiation sphingolipid G-protein-coupled receptor 1 (EDG1) gene involves blood vessel formation and known to be affecting carcass traits in beef cattle. The aim of this study was to identify the single nucleotide polymorphisms (SNPs) in both TG and EDG1 genes and to analyze the association with carcass traits in Korean cattle (Hanwoo). The T354C SNP in TG gene located at the 3' flanking region and c.-312A>G SNP located at 3'-UTR of EDG1 gene were used for genotyping the animals using PCR-RFLP method. Three genotypes were identified in T354C SNP in TG gene and only two AA and AG genotypes were observed for the c.-312A>G SNP in EDG1 gene. The results indicated that T354C SNP in TG gene was not significantly associated with carcass traits. However, the c.-312A>G SNP in EDG1 gene had significant effects on backfat thickness (BF) and yield index (YI). These results may provide valuable information for further candidate gene studies affecting carcass traits in Korean cattle and may use as marker assisted selection for improving the quality of meat in Hanwoo.

Effect of Dietary Addition of Turkish Propolis on the Growth Performance, Carcass Characteristics and Serum Variables of Quail (Coturnix coturnix japonica)

  • We examined the effect of dietary Turkish propolis and flavomycin on growth performance, carcass characteristics, internal organ weights and some serum variables in quail (Coturnix coturnix japonica) birds. One hundred and fifty day-old quails were randomly divided into five groups, with ten replicate pens per treatment and three birds per pen. One group received the basal diet (antibiotic-free), the control. The flavomycin at 10 mg/kg diet and propolis at 0.5, 1 and 1.5 g/kg diet were added to the basal diet. Body weight gain, feed consumption and feed efficiency were determinated weekly. Carcass characteristics, internal organ weights and serum variables were determinated at the end of the study (35 day). The results showed that body weight gain, feed efficiency and carcass weight were improved significantly (p<0.01) when compared to control group for birds fed diets containing propolis and flavomycin between 14 to 35 days. The addition of 1 g/kg propolis to the diet resulted in significantly (p<0.01) better-feed efficiency as compared to control and other treatment groups. There were no significant differences in carcass yield, abdominal fat, liver gizzard, proventriculus and intestinal weight and intestinal pH among the groups. In addition, serum ALP, total protein, uric acid, cholesterol and triglyceride were not influenced by the any supplementation. However, birds fed with propolis tended to have higher serum HDL and lower level than birds fed the control diet. In conclusion, supplementation of propolis and flavomycin during the growth period showed similar effects on growth performance in quail. Therefore, it can serve as a natiral substitute for antibiotics in poultry diets.
