Burials for the rapid disposal of carcasses have diverse and profound effects on the rural living condition, natural environment, and local economy throughout construction, management and final destruction of burials. In this study, possible residue excavated from standard burials, storage using FRP (Fiberglass Reinforced Plastic) tanks, and microbial-treated burials are characterized as carcasses, contaminated soil by leachate, and wasted plastic film. Treatment technologies for volume reduction of the residue including composting, rendering, and thermal hydrolysis were investigated. If the solid and liquid residues generated during volume reduction treatment are directly transferred to the environmental facilities, it may cause disorder due to high concentrations of organics, antibiotics, and lipid. Benefits and drawbacks of composting as a volume reduction techniques are extensively investigated. We also discussed that proper treatment of excavated soils and the reusing the treated soil as agricultural purpose. For the protection of public health and worker's hygiene, treatment criteria including produced residue qualities, and quality standards for the treated soil as agricultural use are required. In addition, Scientific manual for the proper treatment of residues is required. It is necessary to consider the establishment of a pretreatment facility to the occurrence of large-scale residue treatment.

Meat and carcass quality attributes are important factors influencing consumer preference and profitability in the pork industry. Single nucleotide polymorphisms (SNPs) are essential for livestock breeding and improvement. In the present study, the pig Perilipin 2 (PLIN2) gene was characterized with the aim of detecting genetic variation at these loci in relation to economic traits in Berkshire pigs. Four SNPs (G6714C, G6813A, G10340A, and G10632A) were detected in this studied. Statistical analysis indicated that G6714C was significantly associated with the National Pork Producers Council (NPPC) color score, G6813A, and G10340A significantly affected NPPC color score and NPPC marbling score, and G10632A significantly affected backfat thickness (BF) (p < 0.05). Therefore, the molecular markers used in the present study might provide a useful basis for identification and improvement of traits in the Berkshire pigs.

The physicochemical properties and palatability of Hanwoo(cow, steer, and bull) beef loin(1+ carcass grade) were studied. pH(5.56~5.69), moisture content(67.6~69.0%), crude protein content(17.8~18.7%), and crude fat content(11.9~13.8%) of Hanwoo beef loin did not show significant difference between the types of Hanwoo. L(44.5~46.9), a(19.9~20.6), and b(10.3~11.6) color parameters, water holding capacity (69.4~70.5%), volatile basic nitrogen content(9.86~11.28mg%), thiobarbituric acid value(0.148~0.158 mg malonaldehyde/kg), and cooking loss(26.3~27.9%) of beef loin did not show significant difference between the types of Hanwoo either. Hardness, myofibrillar fragmentation index(MFI), and chewiness of beef loin were 6.1~6.9 dyne/cm2, 50.3~54.9, and 39.5~ 52.0g, respectively. No differences were found in hardness and MFI between the types of Hanwoo, while chewiness of cow was much lower than that of steer and bull(p<0.05). Cow was the best in palatability.

In order to make the high quality Korean cattle, it has been identified the gene which influence to various economic characters. In this paper, we introduce Restricted Partition Method for gene-gene interaction analysis. Further, economic traits, longissimus muscle dorsi area (LMA), carcass cold weight (CWT) and average daily gain (ADG) are applied with Restricted Partition Method (RPM). The SNP (19_1)$^*$SNP (28_2) was selected and was best marker on Single nucleotide polymorphisms (SNPs). It also influenced SNP (19_1)$^*$SNP (28_2) was an very important marker for economic character and to make the thing know it became.
The use of electrical stimulation in the red meat processing has been inconsistent and the mechanism(s) associated with the improvement of meat quality in electrically stimulated carcass has been disputed. This may reflect an incomplete knowledge of how to optimise the technology and also mirrors the existence of unknown factors. Although it is well established that the stimulation treatment increases the rate of post-mortem glycolysis, other biochemical and biophysical effects have been implicated with the use of this technology. The classical view that stimulation prevents muscle from shortening excessively during rigor development has been expanded to include the possibility that it also results in physical disruption of muscle structure and early 'turn-on' of tenderizing process. However, the interaction of these effects with the acceleration of the rate of proteolysis through activation of the calpain pretense system has not been comprehensively unravelled. This mini-review attempts to examine the current theories about the effect of stimulation on post-mortem muscle.

Many studies on poultry have been conducted in the poultry industry to improve their important economic traits, such as egg production, meat quality, and carcass yield. Environmental changes affect the poultry's economic traits, including muscle growth. The purpose of this study is to investigate the mechanisms by which simvastatin causes muscle injury in quail muscle cells. Following treatment with various doses of simvastatin, LD50 in the quail myoblast cells was determined using a cell viability test; cell death was caused by apoptosis and/or necrosis. Thereafter, the expression patterns of the atrophy marker genes were examined via quantitative reverse-transcription polymerase chain reaction (qRT-PCR). The results showed that the transcriptional levels of the muscle atrophy marker genes (Atrogin-1, TRIM63) and the upstream genes in their signaling cascade were increased by simvastatin treatment. This indicated that simvastatin induced myogenic cell death and muscle injury via protein degradation through muscle atrophy signaling. Further studies should focus on identifying the mechanism by which simvastatin induces the protein degradation signaling pathway in quail muscle..

Beef muscles from mature cows and bulls, especially those originating from the extremities of the carcass, are considered as underutilized due to unsatisfactory palatability. However, beef from culled animals comprises a substantial proportion of the total slaughter in the US and globally. Modern consumers typically favor cuts suitable for fast, dry-heat cookery, thereby creating challenges for the industry to market inherently tough muscles. In general, cull cow beef would be categorized as having a lower extent of postmortem proteolysis compared to youthful carcasses, coupled with a high amount of background toughness. The extent of cross-linking and resulting insolubility of intramuscular connective tissues typically serves as the limiting factor for tenderness development of mature beef. Thus, numerous post-harvest strategies have been developed to improve the quality and palatability attributes, often aimed at overcoming deficiencies in tenderness through enhancing the degradation of myofibrillar and stromal proteins or physically disrupting the tissue structure. The aim of this review is to highlight existing and recent innovations in the field that have been demonstrated as effective to enhance the tenderness and palatability traits of mature beef during the chilling and postmortem aging processes, as well as the use of physical interventions and enhancement.

Serum concentrations of Hanwoo steers and bulls as possible indicators of beef quality were analyzed to estimate their correlations with carcass traits. Blood samples were taken 2 months and right before shipping to abattoir and at the time of slaughter. And phenotypic correlation coefficients between serum concentrations and carcass traits were estimated. Beef yield index of steers was positively correlated with serum concentrations of total Protein (0.23), albumin (0.26), and calcium (0.31). But it was negatively co..elated with BUN (-0.30). Loin eye area was positively correlated with BUN (0.17) or with globulin (0.16). Back fat thickness was positively correlated with BUN (0.42) and inorganic phosphorus (0.20) being negatively correlated with total protein (-0.23), albumin (-0.33) and calcium (-0.33). Marbling score in the scale of 1 (scarcely marbled) through 9 (extremely marbled) was positively correlated with BUN (0.28) and negatively with IGF-I and calcium concentrations. Phenotype correlation coefficient of loin eye area with total protein concentration in the serum taken from steers right before shipment was estimated to be -0.16 and that with BUN was estimated to be -0.15. Serum concentrations of IGF, glucose, creatinine and on organic phosphorus from steers measured right before shipment were negatively correlated with respective correlation coefficient estimates as -0.21, -0.21, -0.19 and -0.18. Marbling score was negatively co..elated with serum creatinine (-0.16) measured at that time. Beef yield index of steers was positively correlated (0.31) with age adjusted calcium concentration in the serum taken at the time of slaughter. Correlation between body weight and BUN at slaughter was 0.17 At slaughter, loin eye area was negatively correlated with albumin (-0.19) and back fat thickness was also negatively correlated with age adjusted calcium concentration (-0.38). Marbling was negatively correlated with age adjusted calcium concentration(-0.17). Serum concentrations of testosterone, calcium and inorganic phosphorus taken in 2 months before slaughter were negatively but highly correlated with yield index(0.71, 0.67 and -0.71), respectively. Body weight at slaughter was positively was negatively correlated (0.67) with calcium level while dressing percentage was negatively (-0.69) correlated with serum glucose concentration, 2 months prior to slaughter. Correlation coefficients between back fat thickness and cortisol, between back fat thickness and inorganic phosphate were both positive (0.29 and 0.69). Marbling score was negatively correlated with creatinine (-0.81) and positively with BUN (0.87). Body weight loss during shipping was positively correlated with albumin and inorganic phosphate (0.77, 0.83). Yield index of bulls was positively correlated with serum testosterone concentration (0.66). Dressing percentage was positively and highly correlated with globulin (0.73). Back fat thickness of bulls, however, was negatively correlated with testosterone (-0.60). Loin eye area of bull carcasses was positively correlated with testosterone (0.40). Mar-blaine was negatively co..elated with creatinine (-0.55). Yield index of bulls and age adjusted HDLC concentration at slaughter was negatively correlated (-0.71). Dressing percentage of bulls was positively and highly correlated with globulin concentration (0.70). This study was carried out to investigate effects of crude protein (CP) levels in total mixed rations (TMR) on growth performance and meat quality in growing Korean black goats. Thirty-six 6-month-old growing black male goats (initial body weight =17.95${\pm}$0.13 kg) were used. The goats were randomly divided into four treatments and 9 animals were allotted to each treatment. In terms of treatments, CP levels in TMR were 14, 16, 18, and 20% of dry matter (DM) and all diets were isocaloric (2.4 Mcal ME/kg DM). The experiment lasted for 20 weeks with a 15-day adaptation period. After the end of the trial, five goats from each treatment were slaughtered to measure carcass characteristics and meat quality. Average daily gain (ADG) significantly (p<0.05) increased as dietary CP levels increased, but the highest ADG was found on the 18% CP treatment. The higher CP levels in TMR significantly (p<0.05) decreased feed conversion ratio, but the lowest ratio was on the 18% CP treatment, suggesting a higher bioavailability of nutrients by balanced energy and protein levels on this treatment. There was no significant difference in dressing percentage among treatments, but there was a tendency for levels more than 16% CP in TMR to have a comparatively higher dressing percentage than the 14% treatment. The percentages of meat, fat and bone were not significantly influenced by dietary CP levels. Dietary CP levels did not influence chemical composition of goat meat. Furthermore, there was no significant difference among treatments in any of the sensory parameters except for tenderness. Tenderness was similar for 18 and 20% treatments, which were significantly (p<0.05) higher than the 14% treatment. The results from this study suggested that an adequate CP level in TMR for achieving optimal growth performance and meat quality of growing Korean black goats might be 18% of DM, and that dietary CP level above 18% seemed not to further increase growth performance and meat quality.
English crossbred steers (n = 32) and heifers (n = 32) were fed a corn-based finishing diet and supplemented with 2% Ascophyllum nodosum on a DM basis to for various feeding stages of the 119 d feeding period determine the supplementation strategy that maximized intramuscular fat deposition as determined by quality grade. All cattle were implanted with Ralgro$^{(R)}$ on d 36 of the trial and re-implanted with Revalor-S$^{(R)}$ or Revalor-H$^{(R)}$ on d 92. Cattle were blocked by sex and divided into one control and three treatment groups receiving Ascophyllum nodosum. Treatment 1 (trt 1) received Ascophyllum nodosum from d 36 to 50 of the feeding period, trt 2 received Ascophyllum nodosum for the last 14 d of the feeding period, and trt 3 which received Ascophyllum nodosum for both d 36-50 and the last 14 d of the feeding period. Cattle were weighted initially ($385{\pm}4.53kg$) and every 28 d following until they reach an average BW of $554{\pm}7.46kg$. No effect for Ascophyllum nodosum supplementation was found on measured performance characteristics. All treatment groups supplemented with Ascophyllum nodosum had higher actual marbling scores (p<0.05) than controls. Trt 1 was found to have a highest marbling score (572.5; p<0.05), whereas the control group having the lowest marbling score (473.8). Trt 1 had a higher quality grade (5.25; p<0.05) than the control (3.94) group, but did not differ from trt 2 (4.56; p = 0.105) and trt 3 (4.75; p = 0.236) where high Select = 4, and low Choice = 5. Trt 2 did not differ from trt 3 (p = 0.655), or the control group (p = 0.140) for quality grade. However, trt 3 did tend to differ (p = 0.057) from the control group for quality grade. Control group animals graded 25% Choice, 62.5% Select; trt 1 graded 75% Choice, 18.8% Select; trt 2 graded 62.5% Choice, 25% Select and trt 3 graded 56.3% Choice and 31.2% Select. Overall, treatment groups had a 39.6% increase in Choice quality grade and a 37.5% decrease in Select quality grade when compared to the control animals.
