Evaluation of the Serving Sizes of Packaged Processed Food in Korea

  • This study was carried out to evaluate the adequacy of serving sizes of those packaged processed foods in Korea which are designed to provids one meal or snack for one person. There is a lack of data on reference serving sizes which are essential components in the nutrition information provided on food labels. After compiling the average weight of packaged processed foods available in the market in Korea, a questionnaire was formulated to evaluate the adequacy of the serving sizes on 56 packaged processed food items of 188products using 25 female university students as a consumer group. The results showed that 65.5% of the packaged processed foods had adequate serving sizes. In general, current packaged sizes for bread and carbonated drinks were found to be too large. The proposed reference serving sizes in this research appear to be somewhat different from the ones suggested by the Korean Nutrition Society s $7^{th}$ Recommended Dietary Allowances for Koreans and by the Food and Drug Administration (USFDA) in the U.S. The serving sizes suggested by the USFDA appear to be too large for beverages and too small for snack foods when these are applied to the Korean population. It is suggested that the size of beverages in the Korean market should be reduced, and smaller sub-packets of snacks (each for one serving) should be packaged in a larger pack, for ease of use of nutrition information by consumers as well as for the reduction of food waste. In the future, other representative population groups should be included in the determination of reference serving sizes.

청소년의 건강위험요인과 구강질환증상 경험과의 관련성 (The Relationship between Adolescent Health Risk Factors and Experience of Oral Disease Symptoms)

  • Objectives: The purpose of this study was to provide basic data for the improvement of healthy habits and development of an oral health promotion program among Korean youth. Therefore, this study investigated adolescent health risk factors, oral health risk factors, and oral disease symptoms. Methods: This study used data from the Korea youth web-based survey, 2016. The subjects selected for the study were 61,086 persons who did not exhibit health risk factors, oral health risk factors, and oral disease symptoms. The statistical analyses were conducted by applying a complex sample analysis technique. Results: Those who drank carbonated beverages at least once a day were 1.15 times more likely to experience oral disease symptoms. The more sweet drinks they drank, the higher the risk of experiencing oral disease symptoms. Subjects who consumed alcohol had a 1.30 times greater risk of experiencing oral disease symptoms while subjects with smoking experience had a 1.13 times greater risk of experiencing oral disease symptoms. Conclusions: As a result, in order to maintain the physical and mental health of Korean adolescents, it is necessary to develop an oral health program for the prevention of unhealthy eating habits and oral diseases.

Association between body shape misperception and unhealthy eating behaviors among Korean adolescents

  • BACKGROUND/OBJECTIVES: Body shape misperception (BSM) is the disagreement between the subjectively perceived body size and body mass index. This study investigated the association between BSM and unhealthy eating behaviors (UEB) among Korean adolescents. SUBJECTS/METHODS: This cross-sectional study used data from the 2019 Korea Youth Risk Behavior Web-based Survey with 55,748 participants. UEB were measured according to the weekly consumption frequency of caffeinated energy drinks, fast food, carbonated beverages, and sugar-sweetened beverages. The covariates included demographic and socioeconomic characteristics and health-related factors. Multiple logistic regression analysis determined the association between BSM and UEB. RESULTS: Among the participants, 37,607 (67.5%) reported UEB. The gap between UEB among those with BSM was the largest between the underestimated and accurately estimated groups. Participants who underestimated their body shape were likelier to engage in UEB (adjusted odds ratio [AOR], 1.18; 95% confidence interval [CI], 1.11-1.25). Both sexes with underestimation of body size showed an association with UEB compared to those with accurate estimations (girls: AOR, 1.19; 95% CI, 1.09-1.30; boys: AOR, 1.16; 95% CI, 1.08-1.26). CONCLUSIONS: Underestimating body shape can provoke UEB among Korean adolescents. The need for appropriate school health interventional programs to prevent underestimating body shape is emphasized to avoid UEB.

용인지역 고등학생의 카페인 함유 식품의 소비 패턴 및 소비 수준 (Caffeinated Food Consumption Patterns and Level among High School Students in Yongin Region)

  • 경기도 용인지역에 위치한 고등학교에 재학 중인 고등학생 310명을 대상으로 카페인 함유 식품의 소비 패턴 및 소비 수준에 대한 조사를 실시한 후 결과를 요약하면 다음과 같다. 연구 대상자의 성별은 남학생이 171명(55.2%), 여학생이 139명(44.8%)이었으며 학년은 1학년이 31.9%, 2학년이 34.2%, 3학년이 33.9%였다. 하루 평균 카페인 소비량은 남학생의 경우 41.27 mg, 여학생은 36.47 mg으로 남학생이 많은 것으로 나타난 반면, 몸무게 1 kg당 하루 평균 카페인 소비량은 여학생 0.696 mg, 남학생 0.651 mg으로 여학생이 높게 나타났으나 유의적인 차이는 없었다. 카페인의 소비패턴은 '커피류(남학생 18.95 mg/d, 여학생 26.28 mg/d)'가 성별과 관계없이 가장 많았으며 그다음으로는 '탄산음료류(남학생 14.29 mg/d, 여학생 5.85 mg/d)'로 나타났다. 남학생은 '커피류' 중 '캔커피(P<0.01)'와 '탄산음료(P<0.001)'의 소비가 여학생에 비해 많았으며 여학생(0.33 mg/d)은 남학생(0.24 mg/d)보다 '초콜릿류'의 소비가 많은 것으로 나타났다(P<0.05). 카페인의 하루 평균 총소비량에 대한 각 카페인 함유 식품군의 기여도를 조사한 결과에서도 성별과 관계없이 '커피류(남학생 0.492, P<0.001, 여학생 0.944, P<0.001)'가 가장 높은 표준화 계수 값을 나타냈다. 그다음으로는 성별과 관계없이 '탄산음료류', '에너지음료류' 순이었다. KFDA의 청소년 기준 하루 안전한 카페인 소비량(<2.5 mg/kg)을 기준으로 고등학생들의 카페인 소비 수준을 조사한 결과, 남학생의 3.5%와 여학생의 5.8%가 과잉으로 카페인을 섭취하는 것으로 나타났다. 카페인 과잉섭취군의 하루 평균 카페인 소비량은 여학생(376.82 mg)이 남학생(341.35 mg)에 비해 많았으나 유의적인 차이는 없는 것으로 나타났으며 몸무게 1 kg당 카페인 소비량은 남학생 5.38 mg, 여학생 6.96 mg으로 나타났다. 고등학생의 약 95% 정도가 하루 평균 카페인 소비량이 정상적인 수준을 나타내고는 있으나 일부 고등학생들의 카페인 섭취가 과잉된 것으로 나타났으므로 안전한 카페인의 섭취가 유도될 수 있도록 고카페인 식품에 대한 국가적인 차원의 철저한 관리지침을 통해 안전한 섭취의 유도 및 적극적인 영양교육이 요구된다.

경기 일부 중학생의 당류 간식 섭취가 정서지능에 미치는 영향 (The Effect of Carbohydrate Processed Snacks on Middle School Students' Emotional Intelligence)

  • Adequate nutrients intake and regular eating habit are so important for the students to develop physical and mental health, and they contribute significantly for the development of intellectual capacity. The intake of simple sugar contained in the processed foods is known to have been related not only with such physical problems as obesity and diabetes but also with hyperactivity during growing period. This study analysed the effects of carbohydrate processed snacks on the middle school students' emotional intelligence and intended to demonstrate the correlation and the influence of the foods. The subjects of this study were 476 the 1st grade middle school students sampled from two public middle schools of Gyeonggi Province, Korea. Questionnaire contained 47 questions including the kinds of sugar containing processed foods, the frequency of intake, the frequency of normal diet, and the emotional test. All data obtained in this study were processed by SAS 8.2 program. 77.9% of the students had snacks more than once a day and the favored foods were in the order of bread, cookies, fruit, milk and dairy products, flour foods, ramen and ice cream. Less of the sugar contained processed snacks consumed high emotional intelligence showed(p<0.001). And low intake of carbohydrate processed snacks linked with having more regular meals and the higher levels of emotional intelligence. There was no gender difference in consuming simple sugar containing processed foods, however, out of these foods, carbonated drinks, ramen and pizza affected significantly the emotional intelligence of the male students. It was found that sugar contained processed snacks affect the eating habits like meal skipping and the emotional intelligence. It is determined that the effects of carbohydrate processed snacks on emotional intelligence can not be denied.

대학생의 짠 맛 선호도에 따른 식습관 및 체조성에 관한 연구 (Study on Dietary habits and Body Composition in University Students According to Salty Taste Preference)

  • This study investigated the effect of salt preference on dietary habits and the body composition of university students. The subjects were divided into two groups: 85 students who dislike salt (salt-dislike (SD) group) and 104 students who like salt (salt-like (SL) group). We found that the SL group showed a higher preference for sweet, sour, spicy, and bitter flavors compared to the SD group. There was no significant difference in the frequency of eating breakfast according to the salt taste preference. The meal speed of the SL group was significantly higher than the SD group (p<0.01) and the body mass index of the SL group ($22.59kg/m^2$) was higher than SD group ($21.04kg/m^2$). The fat mass of the SL group (15.30 kg) was higher than the SD group (12.80 kg) (p<0.01). Salt preference and snack intake frequency had a significant and positive correlation with fat mass. The frequency of eating breakfast, and meal speed also showed a significant and positive correlation with subcutaneous fat. In conclusion, the SL group eats relatively more, speedily and frequently intakes snacks and carbonated drinks, likely resulting in higher body and subcutaneous fat. These results suggest salt preference is related to food choice, influences unreasonable eating habits, and possibly changes body composition. Taste preferences should therefore be considered for dietary consulting and nutritional education.

음주 여부에 따른 남자 대학생의 건강상태와 식습관에 관한 연구 (A Study on the Health Status and Food Habits of Male College Students according to Drinking)

  • The purpose of this study was to investigate the health status and food habits of male college students in Seoul according to drinking habits. In order to identify risk factors, health surveys were conducted from October 2013 to December 2013. Average height, weight, and BMI of subjects were $175.47{\pm}5.27cm$, $67.93{\pm}9.28kg$, and $22.04{\pm}2.67kg/m^2$, respectively. Weight and BMI were higher in the non-drinking groups compared to the drinking groups (p<0.05). Frequency of drinking was 2~3 times per month, and 52.4% of subjects started drinking when starting university. The motivation to start drinking was cited as "From necessity". Reason for drinking was "Social relations". The favorite kind of drink was beer. Rate of taking supplements was 24.4% of the subjects. Vitamin preparations were highest in drinking groups and non-drinking groups (p<0.05). The reasons for skipping meal were "too busy" in the drinking groups, and "oversleep" in the non-drinking groups (p<0.05). The preference for snacking in drinking groups were milk, milk products, and fast food, with the highest being listed first. The non-drinking groups preferred carbonated drinks and ice cream. The drinking groups need more education about their drinking habits. Drinking groups also need an increased intake of vegetables and fruits.

중.고등학교 내 매점에서 판매되는 어린이 기호식품의 현황 및 영양정보에 관한 연구 (A Study on the General and Nutritional Information of Children's Preference Foods Sold in the Middle.High School Stores)

  • The purpose of this study was to provide preliminary data for better safety control over children's preference foods sold in school stores. The survey was conducted from June to July 2009, to collect 749 types of children's preference foods sold in 150 middle and high school stores nation-wide excluding Jeju Island and general and nutrition information were analyzed. Out of 749 types of snack food items, 689 and 602 snacks were sold at high school and middle school stores respectively. Among children's preference foods, cookies, bread, and ice-cream were the main items. Among them, 98% of snacks were domestic products and the price range of each individual snacks were mostly between 600 and 900 won. 27.8% of children's preference foods sold were found to be in the high calorie/low nutrition food group. Even though the proportion of candy and fruit/vegetable beverages sold were not high, their proportion in high calorie/low nutrition snack group were higher than 68.1%. Among the children's preference foods sold in middle and high school stores, carbonated drinks and ramen were continuously sold in certain middle and high schools, even though sales were prohibited. This study concludes that government, corporations and retailers should work together in developing healthier children's snack distribution environment. In addition, dairy products, which take up 15% of children's preference food, should be diversified to meet their nutrient requirements.

Study on the obesity and nutrition status of housewives in Seoul and Kyunggi area

  • This study was conducted to evaluate the rate of obesity of 212 women (age 45-60 years) in Seoul and the Kyunggi area through analysis of BMI and the dietary life factors related to obesity using a survey on dietary habits, dietary assessment, and nutrient intake. The height of the underweight group was taller than normal. The height of the obese group was equal to that of the normal group, but the weight was 8.5 kg greater than the normal group. Women in the underweight group consumed meals irregularly, and only 33.4% ate breakfast. Additionally, the rate of overeating was low in the underweight group, and milk, dairy products (yogurt, etc.), fruit, and fruit juice were consumed more than once a day. It was found that 62.1% of the women in the obese group never ate out, and the rate of eating one serving of fruit, drinking one cup of fruit juice, and eating various kinds of foods was high. The average point of women's dietary life was $21.9{\pm}2.9$, and 12.7% of all women responded that their dietary life was good. However, in the obese group, only 6.9% of the women reported that their dietary life was good. Evaluation of snacking habits revealed that the underweight group consumed a high level of carbonated drinks and ice cream, whereas for in the obese group, 24.1% of the women consumed milk and its products and 5.6% regularly consumed fast and fried foods. Evaluation of nutrient intake revealed that the consumption of energy, protein, vitamin A, vitamin $B_1$, $B_2$, $B_6$, niacin, vitamin C, and vitamin E was high in all of the groups, but the intake of folic acid in the underweight group was lower than the required level. Overall, 24.1% of the women in the obese group were found to have metabolic diseases, mostly hypertension (43%). In conclusion, a balanced diet to avoid excessive nutrient intake is needed to prevent obesity.

인천지역 중학생의 가공식품 구입실태와 식품표시에 대한 인식 (Actual Status for Purchasing the Processed Foods and Awareness about Food Labels among Middle School Students in Incheon City)

  • The purpose of this study was to examine the extent of purchase of processed foods and the awareness about food label among middle school students. This survey was conducted by involving 350 middle school students in Incheon city, Korea from June 17~19, 2015. Middle school students consumed confectioneries, bread, carbonated drinks, and juices and ice creams once or twice a week at the rate of 53.4, 53.0, 40.6, and 36.9%, respectively. The most frequent place, time, and reason to purchase the processed foods were 'convenience store (36.2%)', 'after school (26.8%)', and 'hunger (77.9%)'. The subjects exhibited top priority (57.0%) on the taste at the time of purchasing the processed foods. Interestingly, the girl-students (44.7%) checked the labels of food more than the boy students (34.0%). The reasons for checking the food labels included acquiring significant information about the shelf life (27.0%), price (18.1%), nutrient (19.1%), and food additives (14.1%). Among the food labeling information, the name of the product (55.7%), the date of manufacture (49.3%) and the content (32.6%) were checked mainly by the subjects. In addition, the major reason for not confirming the food labeling was 'the food label was too small or crude (31.9%)'. It is necessary to inform about the processing methods and ingredients of the processed to middle school students so that they can make the correct choice of processed foods. Development of proper education methods on nutrition for middle school students is necessitated for healthy living.
